Welp, that's the bias binding been made. The fabric was $20 a yard, but I only used half of it, so comes up to around $25 when you factor in time to make it being an hour at $15 an hour. But of course no one's paying me to make my own clothes. But it really puts into perspective how much clothing probably should be costing if we gave people a decent wage.

Hello there!
My answer is going to sound obvious, but single fold bias tape is for areas where you don't want or need a fold in the middle of the bias tape. (I know.)
Something I use it for a LOT is edge finishing where I don't want visible tape. Double fold is good if you are binding the edge, so that there is bias tape on both sides of the garment with a fold in the middle, but if you want to use bias tape basically as a facing, you would need single fold. Sew right side to right side, with one edge of the tape unfolded and lined up with the raw edge of your fabric, and sew in the fold. Clip curves as needed, and then fold the tape around to the backside of the fabric, folding the fabric seam allowance with it so you don't see the tape. Press for a crispy edge, and then either topstitch or hand blindstitch the tape to the garment.
Since I'm at work and can't take demo photos right now, here's a tutorial that looks decent.
This is a really useful method for hemming circle skirts btw. Creates a nice, smooth finish, and the stretch the bias prevents those pesky lumps and wrinkles. (Also good for necklines that aren't lined or faced and don't have a collar attached, edge of pockets, etc.)
It's also useful for decorative finishes where you aren't binding an edge (say, to create decorative lines on a collar or something where you can't or don't want to use soutache/middy braid/some other trim), or for creating channels for things like drawstrings.

Which sewing pattern exec in the 60s got cucked by big bias binding and decided in retaliation that every single edge needed to be finished with a facing? I'm genuinely not sure there's an armhole or neckline that wouldn't look and feel better with a bias bind than a facing, but every. single. pattern makes me cut out a stupid facing piece and hand tack it down so it isn't just flapping about awkwardly. Guess what I wouldn't have to do that for? That's right, bias binding, the s-tier finishing method that apparently big pattern doesn't want you to know about.
