These sober bars are re-defining what it means to go for a night out, and what it is to be a bar. The main takeaways from these bars is how they hold events to bring people in, whether they are sober or sober curios, this hosts a social atmosphere which is imperative to the experience. By placing the focus back onto the social aspect, people and customers can then rely on the overall experience of the night as opposed to just relying on the beverages. This is really important to recognise.

This article in particular really helped me understand sober bars- what they are, why they exist, what they offer. I found that this really helped me start to question how i could use this if this was the direction i wanted to head into, such as:
creating a space for sober students to go to
creating more sober options at pre-existing bars
creating non alcoholic mixology classes
creating sober societies
These initial ideas are all to compliment the fact that nightlife is imperative to this demographic, regardless of alcohol or not.

hey!
remember when i said i was doing a Silly Drinks Journal for my new resolution? well, here's part 1 of 12!
Somehow, I scoured every store in town to find over fifty varied drinks to review. Specifically 52, with an average score of 6.4 and a median score of 7, y'nerds. Note that
I'm in the UK
only 4 of the drinks which were alcoholic, because while I am now a flavourslut, getting drunk is Not Worth The Cost imo
these were all bought by just walking around every store I could get to in town!

The worst drink, with a score of 1/10, was carbonated kvass. Look… I'm really sorry to Latvia. I really wanted to like it. On paper, rye juice is awesome. In practice, three sips was all I could tolerate before I physically couldn't drink more. I'm so sorry I can't appreciate you kvass :<
Thankfully on the next day I got one of the top-scoring drinks: botanical lemonade! It was crisp, lemony and tart. Also scoring 9/10 were:
'Tropical Orange' energy drink (Hough the taste of peach is lovely)
Local fruit farm apple & mango juice! It was a little thick, but a gorgeous combo. Literally just pressed fruit in a bottle! Local sure is best.
Vanilla milk. I mean. It's vanilla milk. Duh
I bought strawberry milk too, but sadly (2/10) had to get rid of it because it was sickly. Speaking of… I bought a 4-pack of CBD drinks. One, raspberry and guava, managed to peak to 6/10, but the rest were brought down by this horrid metallic tang, with glowing reviews like "Ugh. What? 3/10" and "I feel like I'm drinking the aluminium from the can. 2/10". Not very relaxing at all, itseems.
Some 8/10 drinks included:
two energy drinks – Cherry and Mango Loco. I really wish these were in energy-less form, they are too dang tasty.
Cream soda! It tastes just like ice cream (and goes well with it too.)
A drink flavoured like the classic Fruit Salad sweets… raspberry and pineapple is a nice contrast!
A gorgeous Łowidz Truskawka (strawberry syrup). A little sweet because, but a pretty classic taste in a very lovely thin bottle!
Rounding off the list with curious (but sadly mid) drinks:
Tomato juice! A solid 4/10. I wrote that it "tastes like I'm in the wrong context" (i.e. cooking passata).
Nestle and rosehip kombucha: my partner described it as tasting like a "petting zoo". Curious, but very… earthy. Surprisingly still a 4/10 (sorry kvass)
Lychee-flavoured drink with Nata de Coco: I really, really, really love lychee, but for some reason it didn't really vibe 100%. The tiny gel cubes of coconut milk gives it a bubble tea-like quality, which stopped me drinking too fast and helped me savour the flavour. And, eh, maybe I was harsh but I think bubble tea and lychee are like ice cream and chocolate to me: beautiful flavours that sadly don't really go well together. 7/10
Pomegranate juice! "It's like cranberry but it tastes of purple. Not bad!" I have no idea what I meant by this, but I stand by it nevertheless. 7/10
Ginger shots and (nonalcoholic) ginger beer! Keh… it's like fire in my throat… Both got 4/10.
I'm pretty sure I've bought every interesting-looking drink I could in town! Thankfully of course there is a wide variety of sites online, and when I pass by cities I can just Buy A Shit Ton of Drinks. Especially from the asian supermarkets! There are none in this town, which is a huge shame.
As it turns out, variety is the spice of life, and while some of these drinks were horrendous, most of them were really rather gorgeous, and it was lovely to get to try them all out. Also I'm really sorry to kvass again. I wish I could drink you, kvass. Will you forgive me?

1. Rosehip tea: Which book did you love when you were younger? Okay, I don’t know if anyone here remembers the Hank the Cowdog series. It was so wild. Hank is a mutt who lives on a ranch in Texas and acts like he’s the goddamn sheriff, but he gets into all these hilarious situations. He even has a “deputy” named Drover who is like the Barney Fife to his Andy Griffith. I’m probably dating myself here, but this was probably the first series that helped me have a sense of humor.  
2. Oolong tea: Which book series could you read again? Probably Hank the Cowdog! LOL I mean, it would be interesting to read as an adult. I would also read the Time Quintet by Madaleine L’engle again, which I have. Yes, A Wrinkle in Time is the first book in quintet of books! Same characters, too! The book Many Waters is about the twins jumping back into time before the Great Flood and it’s my favorite one. 
3. Rooibos: What is one of you favourite books? Oh man, I really can’t pick one. I love The Hobbit. Dune. All of Joe Hill’s books (The Fireman is sooo goood! Mr. Hill, please cast Philip Glenister as the Fireman if there’s a series of the book because he is a perfect fit and picturing him as such made the book even better). My favorite Seuss is “Horton Hatches the Egg.” It’s a lot of fun to read aloud, too. I could go on and on about my favorite books because I don’t have just one I love!
4. Strawberry tea: Tell me about your first kiss, if you had one. First cheek kiss was 3rd grade (8 years old) his name was Kyle. First one on the lips from my first boyfriend at 13 (omg boyfriend, that’s cute) and his name was Daniel and it was gross. 
5. Apple tea: Tell me about your first break up, if you had one. It was Daniel because I wouldn’t give him a blow job...at 14...cuz I thought it was gross and I didn’t have a libido...cuz we were 14. Ew...
6. Earl Grey: Which countries have you visited? Only Canada. I went to Nova Scotia in 2018 and it was so the best time ever! I didn’t have time to go to Prince Edward Island or Cape Breton to hike. Next time! My goal is to go to a new country every year for holiday (if money is feasible then). I couldn’t last year because my aunt passed away and I wanted to be with my mom. 
7. Chai: Where do you want to travel next? I would love to go to the UK but I would want to take off for a looonnnng time from work because I would probably be there for months haha. But as far as possibly a two-week journey, I’m not sure. Suggestions? :D 
8. Darjeeling: What languages do you speak? English, Spanish, beginner Welsh
9. Hop tea: Do you have a favourite tea? Which one? Yessss! Earl Grey, baby! Oh, and Builder’s. Best tea for milk and sugar.
10. Herbal tea: Which person would you chose to travel the world with? I usually travel better alone because I like to pace myself, taking lots of pictures, writing in a journal, etc. I think if I were to travel with my mom or best friend, we kill each other.

Why you should be a flight attendant
When I was a little girl, growing up in the Czech Republic, there was this telenovela on TV (Muneca Brava) placed in Buenos Aires, Argentina.  I would watch this show for hours since I was obsessed with the main actor/singer Natalia Oreiro. If someone‘d told me back then, that I’d be flying to Argentina on a regular basis, I’d say they must have gone mad. Sometimes I have to pinch myself to remind myself that I in fact have the opportunity to fly to these amazing places , which I would have never thought of seeing one day.
Since I  started flying,  the concept of  traveling in itself has rather changed  for me. Once down route, you may only have 24 or 48 hours for exploring the certain destination. But let me tell you something; you have no idea how much a person can see or experience in such a short period of time. Before my flying career I’d think what’s the point of even getting out of your hotel room, if you only have a few hours to do something. But that is absolutely wrong thinking. Once you get the hang of it, you’ll see how fulfilling and exciting it can be to see the destination even only for 24 hours. That actually reminds me of one time in Buenos Aires with my close friend Vendy. After a 13 hours` flight from London to Argentina you may assume there is no energy left for further exploration of the city. But since we arrived in the morning, the plan was simple: having a 3 hours nap and then heading for dinner to one of the most famous restaurants in the whole Buenos Aires, called Don Julio in the area called Palermo. While queuing up to get in, we got talking to a lovely Australian family and other fellow travelers.   We enjoyed our delicious steak and Malbec red wine and asked the waiter where  the best place was  to go for Tango lessons. We ended up nearby, in the local old ball hall, which was rather scary at first glance. But after a few glasses of Malbec and a few attempts at Tango dances with the locals and our new aussie friend, all worries were forgotten. It was probably the most authentic experience I could have asked for. Around 1 am in the morning, we got into a taxi and headed back to the hotel. That was surely the longest day of my life, but it was totally worth it. The point I’m trying to make by telling you all this is  that no matter how much time you have , you should make the most of it while you can. You create incredible memories which you will never forget.
So, what else is there to do during one or two days? Maybe driving around Hollywood hills, Malibu and watching the sunset on Santa Monica beach in Los Angeles, or maybe wine tasting in Napa Valley, California. I’ve also watched the sea lions in San Fransisco bay and hiked through woodlands in the Washington state. I’ve  also tried kayaking and paddle boarding in Austin, Texas. I’ve seen more and experienced more in 2 years than some people in a decade, all thanks to my job. And even though it is hard sometimes, I never forget to feel grateful for having been given this opportunity.
Once on board, you get surrounded with all different kinds of people and you get to talk to them if you want to and get to listen to their stories. Sometimes you turn into a therapist, since some passengers may share a bit too much of their personal life. You also get to learn about different cultures since many of my colleagues are literally from all over the world. So you may learn a few words in Spanish, Dutch, Swedish, Romanian or Czech.
You spend about 15 days per month abroad; trust me, you really appreciate your bed back at home and you also fall in love with the home comings after a long trip.  Imagine returning from your trip on Monday mornings when you can just watch people rushing to work, while you can go back to your bed at home.
What else is great about this job?
1.       You gain muscles from closing all the overhead lockers on board and lifting your suitcases often
2.       You become a „house wife“ (you master your skills in the kitchen while on standby. You may rediscover painting with water colours once being bored on standby. And you may also start making homemade Kombucha like my friend Vendula, once being utterly bored on standby.
3.       You acquire an incredible amount of time for yourself, while down route or back home, which gives you the chance to watch all of the tv series which you have always had a eye on.
If you work in a regular office job, you usually spend time with the same people every day, which is nice, if you’ve bonded with them and created a little family environment, but you might agree with me that things aren’t always easy with some of your colleagues or your boss. Well, this is not the case in Aviation. If you dislike someone, you might never really see them  again, or, if need be, you just ask your senior to work in another part of the plane :)
Anyone who lives in the UK knows that winter is absolutely miserable out here. It’s grey and rainy and it’s windy and cold, which is rather depressing. Imagine that every week you get to escape all of that. I don’t need to dream about it, I am lucky enough to live it. The upcoming month I am rostered to fly to Rio de Janeiro and sunny Los Angeles. You are constantly on the move and you can enjoy sunny destinations even in the winter months, which is also one thing I adore about flying. Unless you are sent somewhere like Boston where it is minus 13 in January.

Exploring kombucha in Australia by Alex Joseph
Kombucha is one of those interests you can explore by experimenting at home or by going out and trying different brands. These days due to lockdowns in response to the CCP (Chinese Communist Party) virus many kombucha companies sell online too.
Back in September 2019, when we were free to travel cross-state, my wife Sarah and I embarked on a tour across Australia. Our kitted-out Kia Preggio van took us across six jurisdictions over four months. 
In that time I got to try a lot of kombucha. Australia is home to at least 70 registered kombucha companies, but that does not include some of the health shops that make and sell their own. Kombucha, also known as booch, is very accessible; even supermarkets sell it.
Brief History of Kombucha
Kombucha is an ancient drink made of tea, sugar and a weird fungus-looking thing. That thing is called a SCOBY (Symbiotic Colony Of Bacteria and Yeast) not scooby. When fermented together for a period of time a tasty and tangy, and sometimes fizzy, drink is produced. 
Kombucha’s history spans back to 220 BC, around the time of the Qin dynasty in ancient China. It is possible that when kombucha making techniques spread from China to Japan, and then to Eastern Europe, some people shared it to the Pacific regions at the same time. Kombucha is a part of China’s cultures 5,000 year history. It represents the birth of fermented drinks and it connects the dots in the development of drinking and processing tea in China.
From the Outback to the Coast
The kombucha tasting journey started in Victoria, where we went along the Great Ocean road, to South Australia. From there we went to the heart of the country at Uluru, then across to Far North Queensland and down the East coast.
There are two places one must visit in Northern Territory, obviously Uluru (also known as Ayers rock), and Afghan Traders in Alice Springs. 
This amazing little store had kombucha on tap and another fridge filled with kombucha and other health drinks. They had this lemon and lavender flavour which was just so refreshing. After being in the baking hot outback, top notch kombucha is what you need. Lavender is not an easy flavour to incorporate as it can be overpowering or underwhelming, I’ve tried making it myself and failed.
La Few kombucha bar in Cairns is by far one of my favourite bars in Australia. I loved their plant-based menu and their booch selection on tap. They had their original blend, then some unique flavours such as; lime and ginger; dragon fruit; pineapple, lemon and ginger; and my favourite, turmeric and chamomile. They let you sample them all! If you over do it on booch (as if that ever happens) then they have a great range of teas too. I highly recommend visiting this place, even if you are not really into kombucha.
We met a lot of good people on our travels. At a farmers market in Noosa, we met Lenni & Shaw, a really nice couple who own Nourishing Wholefoods. They specialise in, not just kombucha, but also kefir and other fermented goodies such as kimchi and sauerkraut.
Their first flavour to catch my eye was umeboshi kombucha. I wondered if there was a Japanese theme going on. Their pineapple, passionfruit, lime and mint kefir was the best in my opinion. I didn’t realise how popular passionfruit was in Australia; back in the UK I remember it being pretty pricey and scarce.
Meeting Jessie from LORE Australia.
When you meet certain people, you get more than you bargained for. Jessie, the owner and operator of LORE Australia, welcomed us like old friends.
He gave us tips of where to camp and the local sights of Bellingen, New South Wales. He even gave us his insight on Guradji bush tea.
During the tea talk he told us about his first nation roots and explained the philosophy of his business which is based on the three principles of traditional lore: Country, community, and spirit. Jessie’s booch flavours are the only ones I’ve come across which use all native ingredients.

In the background of the image above you can see our little van outside of Lovemore Fermentary in Lismore, NSW. If it wasn’t for the fact that our van had a solar powered fridge, we probably wouldn’t have been able to keep our booch cold.
Kombucha should be stored in the fridge and it will keep fermenting, unless of course its pasturised and there is no live culture in it.
When you buy kombucha from Lovemore Fermentary, you also get a piece of fruit floating around in the bottom of the bottle. Their miminalist and raw approach was a nice change away from all the fancy packaging.The cafe kind of reminded me of Bristol in a sense that it had an industrial feel about it.
Most of Australia’s kombucha businesses are based in NSW, so competition is tough. Kombucha Zest from Central coast claim they have made the ���best tasting kombucha… Ever!” I can see why they would say that because they have a clever brand. All their flavours are based on well known cocktails, there is dark and stormy, mojito, and pina colada and more. I’d have to try all of them to pick a favourite. I think they did a good job with the pina colada as coconut can be difficult to incorporate into kombucha.
All in all I didn’t really count how many different types of kombucha we tried on the trip, but I’m sure it was well over 30 different types.
I hope from reading this its inspired you to try out more kombucha. Head to your local health store or cafe. If they haven’t got it, remind them that they are missing out on a drink that has been around for over two thousand years.
