Summer Berry Quinoa Salad with Mint & Coconut Dressing (Vegan!)

Here's what you'll need:

1 cup cooked quinoa (or follow package instructions) 1 cup mixed fresh berries (strawberries, blueberries, raspberries, etc.) 1/2 cup chopped cucumber 1/4 cup crumbled feta cheese (optional - omit for a fully vegan option) 1/4 cup chopped fresh mint.

For the Coconut Dressing:

1/2 cup unsweetened coconut milk 1/4 cup lime juice 1 tablespoon olive oil 1 tablespoon maple syrup (or agave nectar) 1/2 teaspoon freshly grated ginger Pinch of sea salt and Freshly cracked black pepper to taste.

Instructions:

1.In a large bowl, combine the cooked quinoa, berries, cucumber, feta cheese (if using), and mint. 2.In a separate bowl, whisk together all the dressing ingredients until smooth and creamy. 3.Pour the dressing over the quinoa salad and toss to coat evenly. 4.Season with additional salt and pepper to taste.

Tips:

-For extra protein, add a handful of chopped nuts or toasted seeds. -This salad is perfect for meal prep! Assemble the ingredients in an airtight container and store in the refrigerator for up to 3 days. -Feel free to get creative with the berries! Use any combination of your favorites that are in season.

Foodsy #187: Mom’s Berry Salad

* We made the same salad as last Christmas, but this time we used feta cheese on top! My mom showed me a cool trick where you can steam asparagus in this plastic container--I believe we have the same device at home!

* My mom also showed me the proper way to chop walnuts for a prettier salad. You are NOT supposed to chop into many tiny little pieces, but rather, cut them into halves and sprinkled all around.

* A nice way to create a great homemade dressing is with a whisk! Don’t pour it on until later:
