As the strawberry season winds down
Them: How many strawberry pies do you really need to bake?
Me, furtively wiping crumbs from my mouth: Well, that is just a silly question . . . (ahem) and it depends on whether we are talking about epistemology or ontology, which, as you know
(I lead them away from the oven, before they can notice that there is another pie in there . . )

Did some foraging this year and made pies with what I found. First one is a wild cherry pie and the second a blackberry pie. Also can you tell I like the moomins?

sixteen months have passed
since my little sister last
baked me a blackberry pie,
the summer solstice before
our paths diverged
and we first said goodbye.
i remember how
the crust was sprinkled with crystals
of sugar and baked to such a gold
that it nearly matched my birthday dress,
kissing me with a sunshine glow,
and how the filling was as rich
and aromatic as the finest wine,
the perfect balance of sweet and tart
combined with nutmeg
and cinnamon spice.
how the faces of my family
surrounded me, adorned
with smiles as bright as my own,
and how we knew it was
the beginning of a new chapter,
though the future remained unknown.
i suck on the memory now
like a freshly picked berry,
for though much has changed,
i can recall their love and bravery
to fill me with the strength
to make things right.
i honor them by igniting my light.

Mixed Berry Pie
Adapted from: Best Rose Pie Recipe - How To Make Beautiful Triple Berry “Rose” Pie (food52.com) and Graham Cracker Crust Recipe | King Arthur Baking
Recipe Crust 1 3/4 cup crust graham cracker crumbs 1/4 cup confectioner's sugar 6 tbsp melted butter
Pie Filing 1 lb strawberries quartered* 8 oz blueberries* 8 oz raspberries* zest and juice of 1 lemon 1/2 cup sugar 1/3 cup flour
After crushing the graham crackers into a crumb, mix it with the sugar and butter.** Press the crumble into a 9" diameter pie dish. Prebake the crust at 375F for 10-12 minutes and allow to cool before filling with the pie filling.
In a large pot, stir in the berries, lemon juice, sugar, and flour together until combined. Heat on medium until the mixture has thickened and allow to cool. Pour the mixture into the crust and bake at 425 F for 25-40 minutes.*** If you have a crumble topping, spread that on top and put in the oven for another 5ish minutes until golden brown. Take out of the oven and allow to cool before serving.
*I used 2 lbs of frozen mixed berries instead of fresh berries. **I had some left over craquelin from a previous recipe in the freezer, so I added that to the graham cracker crust and it combined well and tasted great. Because this created extra crumble mixture, I packed as much as I could into the crust and then the rest to top as a crumble. and baked for 5ish min until golden brown. ***Graham cracker crust is faster, so keep an eye out, because it is already baked before it is filled, whereas a crust where you blind bake, this may take longer, follow your pie crust instructions.
