One cheese that doesn't receive the credit it deserves is Caciocavallo Silano. This ancient, pasta filata-style, bulbous dangler dates back to at least the Roman empire. It can be made with raw cow's or sheep's milk, but I've only seen the bovine version in the states. The flavor is milky, slightly tangy, and wildly approachable. Upon cracking, the first aroma that I noticed was vinegar. In my studies for the TASTE test, I recently learned that acetic acid is a natural byproduct of microbial development in cheese. Case. In. I got a few new goodies today: Le Chartreux and #Brebis Caussenard. The former is a raw cow's milk #alpine washy from #Savoie, France. The latter is a natural rinded, uncooked, pressed #tomme made from pasteurized ewe's milk and hailing from the #Languedoc region of France. The wine staff love #LeChartreux, whilst the deli folks prefer the sheep tomme.
