Instant Pot Cheater’s Posole
This is a soul warming recipe that is so easy to customize to your heart’s delight. I made this in the laziest way possible (canned green enchilada sauce) because I was sick as a dog. But the flavor is bright, the chicken is hearty, and I had everything I needed. If it’s the season for tomatillos(somewhere) you can roast your own, along with some tasty poblanos. Heck you could oven roast all the veggies for a deep flavor boost. Because I’m trying to get over a lingering cold, I roasted 2 whole cloves of garlic for 40 minutes at 400° (basically just the time it took to pressure cook the chicken and prep everything else)
Method:
Protip: Start roasting anything you want roasted while the chicken cooks.
For the chicken:
Dice one onion, 2 celery ribs, and 2 carrots and layer on the bottom of your instant pot (mine is a 6 quart). Add chicken thighs, dusting with salt, pepper, and spices of your choice (my lazy behind chose a blackening rub) Don’t go too crazy with the salt, as your added chicken broth is bound to have more than you expect in most cases. Add a cup of green enchilada sauce (or green salsa eve n). Seal and cook at pressure for 15 minutes, and do a quick release. Plate chicken and set it aside to get cool enough to touch while you prep ya soup.
For the soup:
If you want some crunchier veg than what’s left in the pressure cooker, dice and add now to your instant pot (I added 4 celery sticks and 2 more carrots). Add your roasted veggies (or garlics), add the remainder of your giant can of green enchilada sauce, your giant can of hominy (drained), a splash n dash of lime, and your choice of spices (I went with cumin, cilantro, pepper pepper pepper, smoked paprika, cayenne, and a hint of ghost pepper). Chop or shred your chicken and add it to the pot too. Ok, now for some eyeballin. How much total soup liquid do you want? In another case of cheating, I filled my hot water maker and used that to add pre-hottened water to my soup, but due to this, I failed to measure, but 4-6 cups seems like plenty. I am using concentrated chicken bone broth so your mileage may vary there. Now it’s all in the pot, you can use slow cooker mode normal for 90 minutes, or low mode even longer, to let all the flavors get it on.
Serve this in a wide bowl and pile with your choice of toppings. I like crushed tortilla chips and sour cream because easy, but cabbage slaw, radishes, avocado, and cotija or queso fresco are better, fancier choices. Scatter cilantro artfully around the bowl too if you’re into that. 
Ingredients:
about a pound and a half of chicken thighs (boneless skinless is easy)
large can green enchilada sauce (or 2 things of green salsa, or 1 giant can of tomatillos plus roast ya own peppers, or hey, fresh tomatillos)
1 onion
4-6 stalks of celery
4 carrots
As much garlic as you can handle but then double it
spices (but especially cilantro and cumin)
lime juice (little squeezie lime bottle is fine TBH)
1 large can hominy, drained
chicken broth (squeeze bottle concentrated bone broth is tastier than boxed imho)
garnishes:
raddish, cabbage, tortilla chips, avocado, cilantro, sour cream

Father Illustrates The Friendship Between His Tiny Baby And Giant Dog And The Comics Are Adorable
Being a new parent can be extremely tiring, but new father, Nate Anderson found his baby boy to be the endless source of creative inspiration. His webcomic series 'Boy & Dog' chronicles the hilarious adventures of his son, Rowan, and their family's dog.
Anderson told Bored Panda the idea for the comic strip came after the birth of his son last year. "My life was changed by this wiggly, squishy boy that filled my home with laughter and poop. The animals didn't know what to think of him at first, but my Golden Retriever, Murphy, decided that he was pretty cool," he said, "Rowan loves the dog and would squeal with delight whenever Murphy was around him. I started to draw the comics to show what I imagined in my head was transpiring between them."
His Boy & Dog illustrations include conversations, hijinks and even some crude jokes between dog and baby. "Everything is new for the boy, and I imagined that it was the dog's duty to teach him all about the world from a dog's point of view," explained Anderson.
This is not the artist's first time trying his hand at a webcomic. Anderson's first series was called "Quackyboys" and featured him and his college roommates having "wacky adventures," but eventually died off when they moved on. A college drop-out after freshman year, he said he is largely self-taught, "I was already working as a professional Illustrator/Designer at the time, and I feel that I learned more working in the industry than I ever did in school with very uninspiring instructors."
While his comics are quite eccentric, Anderson admitted he's not very good at talking to people and uses his talent to communicate, "My comics give me the ability to tell funny stories and make people laugh with silly gags. I like making people happy. I like making people laugh. Unfortunately, I'm a little socially awkward so this is a better platform for my jokes."
Inspired by artist Glen Keane, he said he loves traditional hand-drawn animation, "I am a huge Disney nerd and when I get into a slump, watching one of the movies he worked on gets me drawing again. Disney's Tarzan has been a huge influence in my desire to animate." As for his own work, he creates each comic entirely on Photoshop from rough layout, sketching, linework, coloring, and dialog.
For Anderson, his overall goal is to spread some laughter and joy to his viewers, "I know I'm not the only one who deals with baby problems and dog problems, so if I can get people to relate to my goofy drawings and have a chuckle then I will consider myself successful."

Highland Park, Los Angeles: A Watchful Eye on Gentrification
When Megan Auster-Rosen, 39, began her house hunt 18 months ago, she knew she would have to make some compromises. A New York City native, she had spent four years renting in the Los Angeles neighborhoods of Silver Lake and Echo Park, which together form the City of Angels’s hipster epicenter and reminded her of Brooklyn.
But Ms. Auster-Rosen, a clinical psychologist, and her wife, Ava, a cinematographer, have hopes of starting a family, and were looking for room to grow. They found it by heading northeast, to the historic, racially diverse enclave of Highland Park, where they found a three-bedroom, one-bath bungalow that offered easy access to the sort of funky, foodie, fair-trade shops and restaurants they both love.
“We wanted something walkable, because we’re New Yorkers. And that’s what really sold us on this place,” she said.
Highland Park has twin main drags — York Boulevard and Figueroa Street — both stocked with third-wave coffee shops, artisan bakeries and pretty stores peddling vinyl and vintage handicrafts. In July 2018, the couple paid $749,000 for their bungalow, which is on a side street just minutes by foot from York. Figueroa Street can be reached by car in the same amount of time.
Ms. Auster-Rosen sacrificed one of the house’s three bedrooms for more open-plan living, knocking down a wall at the front of the home and creating a central living/dining space. She had the kitchen rearranged as well, and HVAC installed. There’s a converted garage she plans to turn into a granny flat for guests. Her dog, Tiny, an aptly-named Chihuahua who clocks in at about four pounds, appreciates her new outdoor domain. If and when a baby joins the family, there’s a spare bedroom waiting.
The home is flanked by churches, a fact that initially made Ms. Auster-Rosen wary. “We were like, are they going to be homophobic?” she said. “But in fact it’s been nice. We hear singing on Sunday mornings. We love our neighbors. And we just love having this much space.”
The neighborhood is in the midst of a renaissance, which has made it an affordable alternative for young professionals like Ms. Auster-Rosen who find themselves priced out of central Los Angeles. But its transition is complicated. Highland Park is historically Latino, and as housing prices have crept up, a slew of Spanish-speaking panaderias, bodegas and businesses have shuttered. But crime has also plummeted, bringing new parks, night life and vibrancy to streets that a decade ago were caught in the grip of Los Angeles’s notorious gang violence. Many longtime residents welcome the new sense of security while also bemoaning an erasure of the neighborhood’s long-held identity.
“Highland Park is the new Silver Lake,” said Alison Huddy, a Los Angeles native who runs the real estate team Home Sweet Huddy along with her husband, Jason. “In the ’80s and ’90s the sun would go down and, that was it — you locked your doors because there was so much gang activity … but now, you walk down Figueroa Street at night, and it’s so happening.”
As the makeup of the community has shifted, many of its newer residents — who skew young, white and college-educated — speak openly about their complex love for the neighborhood.
“The gentrification piece is stressful. If we had gone into a house where renters were going to be kicked out, I would have said, ‘I can’t buy this house,’” Ms. Auster-Rosen said. But she and her wife found a home that was being sold — at a tidy profit — by its owner of 15 years. The diversity around them sweetened the deal.
She especially appreciated that Highland Park hadn’t gentrified as much as Eagle Rock, the enclave’s northern neighbor. “In our neighborhood there are Costa Ricans and there are Mexicans. The family across the street is Korean. There’s always different music. I love talking to the neighbors who have been here for a long time.”
What You’ll Find
Highland Park is bordered on the south and east by the 110 freeway, and stretches west almost all the way to Eagle Rock Boulevard. Its northern border sits below Occidental College and the city limits of Pasadena.
Highland Park Bowl, located on Figueroa Street, is Los Angeles’s oldest bowling alley. It was established during Prohibition in 1927 and was beautifully refurbished in 2016, with its original wooden lanes still intact, sawed-off pin holders upcycled into delightful chandeliers, and handsome leather couches that serve as gathering points for house cocktails from its two horseshoe-shaped bars, as well as wood-fired pizzas and live music.
Most commerce is clustered around Figueroa Street and York Boulevard, or Fig and York, as the locals call them.
Many of its streets are filled with Craftsman-style homes and California bungalows. Some historic Highland Park homes date back as far as the 1880s; most were constructed in the 1910s and 1920s.

This year through September, 255 single-family homes sold at a median price of $829,000, compared with 268 at a median of $800,000 during the same period in 2018, and 220 at a median of $630,000 during the same period in 2016, according to real estate appraisers Miller Samuel Inc.
The Vibe
“Highland Park fills a void,” said Jason Huddy, the real estate agent. He points to a specific profile of buyer — couples who are first-time homeowners, who either don’t have children yet or have one small child, and are currently renting in trendy neighborhoods like Silver Lake or Echo Park. When they start thinking about growing their families, Mr. Huddy said, they are likely priced out of places like Pasadena and Burbank, which each offer their own walkable downtowns and culture spots. Highland Park, he said, “is a shining beacon of awesomeness — where you can afford a house and you can still keep your identity.”
For JD Rocchio, however, a growing family isn’t a priority, but a strong sense of community is. The 32-year-old Los Angeles native bought his first home in Highland Park in December, a little more than two years after moving his business, Belle’s Bagels, from a pop-up spot inside a bakery on Figueroa Street to a permanent location on York Boulevard. He paid $720,000 for a two-bedroom, one-bath Craftsman-style house that he shares with his dog, Dusty, a hound/pit bull mix.
“There is an any town feel,” he said. “The number one thing I love about living here is you can just pop from store to store and you meet the people who run the businesses — their kids and wives are there, their family is eating in the corner. There’s a sense of connectedness.”
The Schools
Highland Park is part of the Los Angeles Unified School District, the second largest school district in the United States. Nine public elementary schools serve the neighborhood, as well as one magnet elementary.
Benjamin Franklin Senior High serves the area, with an enrollment of more than 1,600. In the 2017-2018 school year, 61 percent of 11th-grade students met or exceeded the state benchmark for college-readiness by scoring a 480 on the EBRW (Evidence Based Reading and Writing) sections of the SAT. In math, 35 percent met the benchmark score for readiness, which is 530.
Across the Los Angeles Unified School District, an average of 58 percent of 11th graders met their benchmarks in EBRW, and 35 percent in math.
The Commute
Highland Park is home to a precious commodity in Los Angeles: a metro stop. The L.A. Metro Gold Line has a station just north of Figueroa Street, and can get commuters downtown in about 35 minutes.
On the city’s clogged freeways, the ride from Highland Park to the heart of downtown Los Angeles can take about an hour. A drive to the west side can be a much longer slog — as much as an hour and 50 minutes — but in off-peak hours, can take only 30 minutes.
The History
Highland Park was settled along the Arroyo Seco river, a misnomer for a body of water and its canyon. Both the river and its canyon have been a transportation corridor for centuries; a railroad bridge built in the 1880s brought a faster link and in the 1940s, the construction of California Route 110 — a.k.a. the Arroyo Seco Parkway — brought the very first freeway to the United States.
Thanks to its location as a transit hub, Highland Park was one of Los Angeles’s first suburban neighborhoods. It was incorporated into the city in 1895 and soon became the epicenter of the Arts and Crafts movement — a fact still evident today in its homes with wide eaves and a handful of Victorian relics. This sculpture is the largest and most visually complex sculpture I have made to date. It contains over 95,000 LEGO pieces and took over 1100 hours to construct together with 5 of my assistants. I spent 2 full days creating just the facial expression. I wanted to make sure the bear didn’t look too cartoonish, but also that his expression could be readable the way we read human emotions. Since he is stuck on an ice float and his species is endangered, I wanted him to look a little frustrated, a little sad, a little confused, and overall concerned about the predicament he is in Sean Kenney

This boardroom table is 4ft x 9ft. A monolithic slab made up of a random pattern of the instantly recognizable LEGO pixels, with the company’s logo built in relief into the table top, falling away under a glass surface. 'Air Bud' is good
20 years later, a fresh look at the classic film.
I’ve never seen Air Bud. Think about how weird that is: The movie came out in 1997. I was eight, the perfect age to see a movie about a dog that plays basketball. Everybody saw Air Bud. Everybody loved Air Bud. The Air Bud franchise was to children in the ’90s as the 50 Shades of Gray franchise is to suburban moms now, just with more sports and no sex stuff.
And yet, I missed it. I blame this on the fact that I’m an only child whose parents are more into Proust than they are Disney movies (they’re very smart and wonderful people). But because I didn’t have cable or siblings to tell me what was cool, I grew up watching PBS and not knowing the lyrics to the Spice Girls’ songs. My 1990s cultural blindspots still haunt me. Case in point: Kel Mitchell went to Super Bowl media night as his Good Burger character, and I got mercilessly roasted when I asked my colleagues who the guy in the fast food uniform was.
I’m telling you this to explain why I’m sitting at my desk watching Air Bud in the SB Nation offices at 4:25 pm on a Thursday. This year marks the 20th anniversary of the film’s release, the NBA trade deadline is over, the Oscars are this weekend. I felt like only way I could create content of dubious quality honoring all three momentous occasions at once was to finally watch Air Bud and blog my experience.
I also want to see if you guys have been right this whole time. Is Air Bud as good as everyone’s been saying it is for the past 20 years? Let’s find out.
HERE WE GO!
The movie opens on an idyllic country road, and, oh my god, what is happening? A giant wooden clown head is cresting over a hill. It’s perched on top of a pickup truck driven by a guy dressed as a clown.
I’m confused. Is this a horror film or a movie for children? Is Air Bud actually the prequel to Saw? Has everyone has been lying to me about this movie a part of some sick, elaborate prank?
Things start to make more sense when I see a dog in the back of the pickup truck. I’m pretty sure it’s Air Bud himself, dressed up as a clown.
It turns out that Bad Clown Dude performs at kid’s birthday parties, and Air Bud is his sidekick who does tricks with balls. Bad Clown Dude is a real dick. He beats Air Bud and decides to take the dog to the pound after things go awry at the party. I hate this man with my entire being.
Fortunately, the gate of the pickup truck is down, so Air Bud’s crate — with Air bud locked in it — falls out the back. Trucks are screaming by as he’s trapped in the middle of the road, and then he gets hit by a car.
I mean, not, like, badly, but hard enough so that his crate topples over and he pops out. I know I’m not supposed to laugh right now, but a dog in a clown suit is pretty funny. The mom driving the SUV that hit him is like, “Huh, hit a dog, whoops,” and then keeps driving.
What kind of monster hits a dog and doesn’t stop to save it?
We can tell that her son Josh — who’s sitting up front because no one gave a damn about air bags in the 1990s and we all turned out okay, okay? — is the main character by the way the camera lingers on his face. He longingly watches Air Bud trot down the road behind the car.
Josh and his family have just moved to Fernville, Washington to be near his mom’s relatives after his dad passed away. A shot of Josh in his empty room holding a box of stuff shows us how lonely and sad he is. In the kitchen, Josh’s mom is on the phone having conversation that clearly isn’t relevant to the plot but intrigues me, because I hear her say, “I understand that Bolivia didn’t get the napkins, and Venezuela did?”
“Napkins” is definitely code for “cocaine.” Josh’s mom is an international drug lord.
Drug Dealer Mom hangs up on whatever cartel runner she was talking to and asks Josh how school was. Josh says his first line of the whole movie: “It sucks.”
School does, indeed, suck; Josh tries to sign up for the basketball team, but the asshole coach makes him be the manager instead. I feel bad for the kid, but things start looking up when he finds a magical basketball court behind his house. It’s on the edge of a beautiful lake surrounded by mountains, and it’s a good thing Drug Dealer Mom is a kingpin, because otherwise this family wouldn’t be able to afford such prime real estate.
There are bits and pieces of a clown suit strewn about the court. We hear barking from the bushes. And then ****SPOILER ALERT**** Air Bud shows up! He eats a pudding cup that must’ve fallen out of Josh’s backpack. Pudding can’t be good for dogs, but Air Bud is dirty and hungry, so we aren’t supposed to care.
Josh picks up a basketball and tosses it to Air Bud. Because he’s a trained clown dog, Air Bud can balls out, and the two pals have the time of their lives playing together. I start laughing because it’s so delightful, but I’m also tearing up, because it’s very moving to see Josh finally make a friend.
I’m starting to understand why everyone loves this movie so much.
Josh brings Air Bud home. Air Bud eats Spaghetti-Os in the bathroom, and I will honestly be shocked if this dog is alive in ten minutes given all the crap this boy has fed it. There are five open cans of Spaghetti-Os on the ground. The poor animal is going to have to get his stomach pumped.
Josh is wearing a suit of old time-y rain gear. He gives Air Bud a bath and brushes his teeth.
Drug Dealer Mom comes home from dealing drugs and gets pissed when Air Bud spills paint all over the house. But she lets Josh keep the dog, because if she didn’t, the movie would be over.
Now we’re at the school gym, where Josh meets a kind, older man who works as a janitor there, because what would a ’90s movie be without a non-threatening black man whose backstory is developed just enough — but not more — to serve the narrative needs of the white protagonist? It turns out that this guy was a great basketball player for the Knicks, and I’m like, “Uh, why would a former NBA player now be working as a janitor at a middle school in Washington state as opposed to sipping margaritas in Tulum or hosting a show on ESPN?”
But I let it go, because I start wondering what happened to Josh in real life. What if Josh is hot now?
He is. I just Googled him. Check out how hot Josh is.
He’s over-groomed, but the man looks good. This is not a Haley Joel Osment situation.
Things are getting better for Josh. Buddy (that’s what Josh calls Air Bud) performs basketball tricks during halftime after Josh makes the team. Josh even has a friend, this kid with an aggressive bowl cut who carries around an orange peel that Scotty Pippen once threw away, as well as a piece of chewed-up gum that Dennis Rodman once spit out. I don’t know where he’s getting all this famous trash. The boys put it in their socks for good luck.
The asshole coach ends up getting fired when the principal catches him pelting Trash Kid with basketballs in a dark gym. This feels a little heavy for a children’s movie, but it works as a plot device, because it means that the basketball-great-turned-janitor can take over the team as Good Coach and preach the beauty of teamwork.
The inevitable Scary Moment Where Everything Could Fall Apart comes when Bad Clown Dude shows up to reclaim Air Bud. Josh steals Air Bud back, but worries that he’s just going to get taken again. So he hops a ferry with the dog and goes to an island.
“Go on Buddy, you’re free now,” Josh says, crying, as he makes Buddy leave him. I feel this sharp pain in my chest. Buddy hops into the water, whining as he watches Josh get carried away.
I’m softly crying. I’m glad I didn’t watch this movie when I was little because I don’t know that I could’ve handled heartbreak at such an early age.
Josh is back at school playing basketball. I’m still broken up over the fact that he left his goddamn dog on a goddamn island. But then we hear barking and — could it be?! — BUDDY RETURNS! Thank god I only had to suffer like that for seven minutes.
Josh’s team only has four players on the court because one just got hurt. There’s no rule that dogs can’t play basketball, so Buddy, wearing little doggie basketball shoes and an adorable doggie jersey, checks in. I’m laughing and crying again as I watch Josh and Buddy win the game.
It’s 6 p.m. now, and the office is emptying out.
I breathe a sigh of relief knowing there are only 15 minutes left and more truly bad shit can’t happen. But there’s going to be some slightly bad shit, because Bad Clown Dude shows up again.
Drug Dealer Mom says something along the lines of, “Hell no, you’re not taking my dog!” Bad Clown Dude goes, “I’LL SEE YOU IN COURT!” Donald Trump plagiarized Air Bud.
I guess legal fees don’t matter when you’re Drug Dealer Mom and want to be sure your kid doesn’t lose his dog, because here we are, in court. Thankfully, Good Coach shows up and saves the day; it turns out that he used to be the old, curmudgeonly judge’s favorite player.
Good Coach proposes that Buddy choose who he wants to belong to. After a few suspenseful pump-fakes, Air Bud obviously chooses Josh, jumping up to give him a hug. The movie ends with a huge crowd cheering outside the courthouse.
Hulu asks me if I want to watch Homeward Bound II: Lost in San Francisco. Yes, Hulu, that’s literally all I want, but it would be weird to stay in the office until 9 p.m. watching another kid’s movie about dogs, and I’m emotionally exhausted, so I go home.
THE VERDICT:
Air Bud is good. I love Air Bud. I think I probably would’ve questioned less — why is Josh wearing foul weather gear to take a bath with his dog? Why are bullies in ’90s movies always chewing gum? Why do the feds never show up to investigate Drug Dealer Mom? — if I’d seen this as a kid.
But I’m glad I didn’t. Watching it now reminded me what it felt like to be a child. It brought me back to the days when all I worried about was if my crush would pick me to be on his soccer team at recess and if there was a new episode of Wishbone that night. When a new set of baseball cards could bring infinite happiness.
Air Bud stands the test of time. It’s a cinematic masterpiece that gave me a respite from being an adult almost two hours. What could be better than that?
