Every year I can count on being introduced to one or two new artist via the New Music Mix that Apple Music serves me every Friday. This year I was pulled in to the track "Safe in Sound" by Orlando Weeks. I dropped it into a growing playlist that I have for background music while working. Each time it came up on shuffle it begged to be replayed. Eventually I tapped the entire record and googled Mr. Weeks. He is not a new artist to me at all. The former frontman for the U.K. band the Maccabees had ventured into a solo career. And it is so strikingly different from the Maccabees record I love, 2007's Colour it In, that it is no surprise I didn't recognize him. Weeks’ A Quickening is transformative and almost spiritual at times. He contemplates fatherhood ("Milk Breath") and community ("St. Thomas") and an aging seafarer’s relation to the elements that surround him ("Moon Opera"), in such ways that the record works in prioritizing what is important during difficult, if not odd times. 

I came late to Natalie LaFourcade and I’m a little angry at ignorantly depriving myself of this joyful talent for so long. She is a prolific dynamo. 2020 brought Un Canto por Mexico Vol.1. And so as the tile suggest, there will be another volume on its heels. Natalia had similarly released the wonderful Musas as two volumes spread over 2017-18. These three records along with 2015's Hasta la Raiz have supplanted the Trio Los Panchos records I played for cooking  accompaniment.

One of the most creative and infectious records I heard all year was Buscabulla's Regresa. The husband and wife outfit returned from New York to their native Puerto Rico following the tragedy of hurricane Maria. The environment made for joyful and melancholic results musically.

I've been a fan of White Denim for some time. They are also quite prolific, generating new records almost yearly since 2009. So who could have blamed them after releasing Side Effects in 2019 if they had taken 2020 lying down. Not James Petralli and Michael Hunter. When faced with Austin Texas' pending stay at home order, the band wrote and recorded the entire record in thirty days. World as a Waiting Room is among the band's best. 

2017 Juno award winner William Prince is a huge star in Canada and should be stateside as well. His voice is as unique and warm as any I can recall. And his songwriting is as earnest, if not as clever as fellow Canadian Ron Sexsmith. "Wasted" is an unintentional anthem for 2020.

I am hooked Frazey Ford's vocal delivery. There is a Van Morrison quality to it, so nonchalant to almost be conversational. It as if the lyrics might be different every time she sings the song. U kin B the Sun is laden with grooves and a casual coolness that  always set me down lakeside on a summer day.

Circles feels like it was released a lifetime ago. The loss of Mac Miller was devastating and his partnership with Jon Brion is was one the most visionary collaborations of all time. This record feels timeless.

Lianne LaHavas is one of the most talented musicians alive. This year’s self-titled release is as close to a Sade record as we've had in a while.

Its great to see local acts get such national acclaim. Even better when they demonstrate creative growth. DEHD's Flower of Devotion expands the bands previously bare bones approach to music making with lovely Cocteau Twins-esque shimmer.

Speaking of things local, I have been rooting for Orkenoy since finding out the Humboldt Park brewery was in the works back in 2019. What a journey it has been for the folks behind it all. Brewing equipment, transported from a distance, tumbles off of the truck as it nears its new home. It was damaged but not irreparable. It was nothing compared to what was to come. We may have hit the tipping point on craft breweries, but can you imagine readying your passion project for the world and the world snaps back with a global pandemic. They admirably soldiered on.

Turns out they are not just another brewery. They bill themselves as a "creative enclave operating as a brewery, kitchen and synergetic haunt for local artists." Their offerings, from brews to food, are a delicious blend of the rare and traditional, Norwegian Smørrebrøds and French Farmhouse, to new and experimental. Their branding is charming and narrative. We've taken carry out of cocktails and beers. Both were fantastic. Very recently Orkenoy has added even more allure to their footprint in the Kimball Arts Center by stringing lights from their facade to the elevated Bloomingdale Trail. As the nights have grown to their longest, my morning runs begin in darkness. So when I came upon the illuminated Orkenoy early one morning last week my path became a bit merrier. I was also struck by how much the scene reminded me of Van Gogh's Cafe Terrace at Night.

Lulu Miller has worked as a producer for Radiolab and is a co-creator of the NPR show Invisibilia. Her book Why Fish Don't Exist was my favorite read of 2020. Told in Miller's quirky voice, the pages navigate herculean scientific achievements, our country's racial history, murder and ultimately love. While this may all  sound a frantic lot, Miller weaves it together tersely and with self-deprecating humor.

One of my favorite books of years' past is Michael Pollen's lesser known, Second Nature. It was in my initial reading of this that I learned from Pollen about Aldo Leopold's Sand County Almanac. I purchased a copy and thumbed through it when I finished Second Nature. A recent interest had me recall the work, so I set about our house to find it. It's a short book and so it took me a couple of looks to locate it behind thicker, stacked volumes on our bedroom bookshelf. I've been immersed in it ever since. I'm intentionally taking small bites, savoring every page, even highlighted passages—something I haven't done probably since reading Pollen. Leopold was an American philosopher and naturalist long associated with the University of Wisconsin. His writing is keenly observational, almost poetic. As he winds through the seasons on his Wisconsin farm, he introduces us to the behaviors of migrating geese, defensive plover and elusive trout among other inhabitants. Leopold is almost always alone with these creatures and his thoughts, save occasionally his dog. And while I wish I had a printing that contained the forward by Barbara Kingsolver, Leopold's original forward from 1948 suits me just fine.

Greater Seattle's Worst and Best Pancakes

Several times leaving the QFC grocer in Greenwood, Seattle, police vehicles caught my eye. They caught my eye in the sense that I had to realize why they were clustering in a far corner of the parking lot. A nest.

With a nest comes eggs, and where there are eggs, albeit stating this usual rule apologetically to my vegan readers, there is breakfast. And breakfast it was, drawing in Seattle's finest. How good was it, hmm?

My questions brimmed over while yummy memories challenged the new coming idea of Patty and her eggnest. The potential decorations took over my interests as I contemplated whether the restaurant interior was like an actual bird nest. It may have been the Taylor Swift in me, but I thought it would be grand if the door transported me into the likeness of a bird's kitchen and dining space.

Thinking back on the birdcage theme of a younger Swift's home, I wondered how a set of "organic nest", with circular booths and low hanging, branch-like lighting could cuddle one into the homey feeling mama bird was feeding baby birds. I stopped there.

One quiet morning last week, I found time to slip into Patty's Eggnest and try something on the menu. Thrilled with fare descriptions, it was hard to pass up the British Breakfast of English muffins and other alluring pleasantries, but I eventually decided on my favorite IHOP offering, Corned Beef Hash.

It was pretty good. I liked the tenderness of the corned beef and the heaping serving size. A drawback, the potatoes didn't quite make the mark and were rather bland in my opinion. Chewing, I bit into a couple pieces of green pepper, which I assume found their way into my main dish by way of flattop, no harm no foul, but I prefer the added onion and seasoning in IHOP's version. Although I'm unsure when I'll be going back there since the last time I enjoyed my favorite, I folded my leftovers in a napkin for my dog and accidentally left it appearing like just a napkin.

The problem with that is, my napkin was sure to make a mess no matter who cleared the table. The question of why? And, who would do that? And my not being there to explain would make me look guilty of whatever they imagined, even, gulp..., the implied ignorance of to-go boxes.

Impractical nest dreams of theme parkish food spots aside, the cafe had an almost "at home" feel to it, with eye friendly, dimmer lights and welcoming vintage music. I didn't care for the unique house jam, although the concept could be sensational, the strawberry jam was like watery, thawed and processed frozen strawberries with a hint of sugar.

American breakfast boasts of lightly fried or baked batters. Flapjacks, griddle cakes or pancakes - whatever you prefer to call them - are menu staples across the nation. Everyone seemed to take a shot at making them but I began to wonder what restaurant around could offer a better pancake than IHOP?

Since Pierce County Sherrifs seemed to be regulars there, and because the eggnest wasn't all bad, I decided to try Elmer's. I walked in before the morning rush and waited awhile for a hostess to show up and greet me. The pancakes weren't terrible, and had a good taste, but they didn't beat IHOP.

Having indulged in the famous, light pancakes from Elmer's, I felt it was unfair to judge their greatness without having tried the competition just down the street. I decided to drop into Shari's on 72nd to try pancakes because I just tried the cinnamon roll on my first visit to a Shari's in North Seattle.

Shari's was inconsistent, some bites were overinflated with vanilla flavor but the majority of the cakes were dry, overcooked and tasted only of adverage tasting syrup and butter topping.

Disgusted but determined that better, sweet, pan fried batter was out there, just hiding in some corner cafe or low profile wall with a door, I pursued on.

Patty's Diner on Tacoma Ave struck me as the type of spot whose chef would put some thought into a classic or even put a classic spin on everyday pancakes. Pancakes sprinkled with powdered sugar tasted like a good box mix, but then something extra. The atmosphere of vintage Marilyn Monroe pictures, 1950's theme of crowded trinkets and a variety of old school telephones that used to be plugged to the walls to work, created an entertaining experience. Not too angry, great service at a place that's fun to see with creative taste.

The Original Pancake House on 6th Ave in Tacoma was next to evaluate. They have the best written menu out of places in this post. I liked the blues music at a volume perfect for 8:43am. Since the best pancakes were what I was after, I ordered what they call pancakes on their menu.

Let's talk first about the hair in the butter. One hair equals Elephante and mouse in small, confined, micro studio apartment. Powering through that horror flick, I removed the hair because I was convinced by the well written description of the original aged batter pancakes that they would hit high on my quality score. Boy.

So back in Missouri there's a popular bread, I believe was brought to the US by German immigrants. Amish Friendship bread is a delicious, yum, and yummier treat made from aged batter. I was sold based on memories of scrumptious bread that these pancakes would hold the same wonderful taste.

Someone slapped the Elephante.

Two chewing attempts and I began to question who came to the conclusion that those things were meant for consumption? Aged and rotten are far separated places in the world of food. Cheese v. Rotten Milk here. What else can I say?

Later that same day, I was impressed to find somewhere serving edible comfort food. I went for Black Bear Diner in Federal Way.

As I was seated at the "bar" - a take on the traditional eat at the bar offerings found in diners across America - I was interested in the visual of a hectic looking kitchen with cooks bantering about missing orders and quick changes verbally called over by wait staff. The menu, an entertaining newspaper with snips of wording that intend to take patrons deep forest and make them feel truly "black beared" with matching themed cups, placemats, and sugar packets wasn't all that appealing to me.

Ordering a "mini volcano" from the lighter fare menu, I expected the thing a diner can't get wrong to be in business. Elephante angry. The pancakes were crispy and dry, even with an overeasy egg on the top of the cakes - for some reason. I couldn't find flavor or taste in any of the bites I gave a chance with my mouth. Coffee was see-through, weaker than any I've ever paid for. I was so appalled it became difficult to speak.

I can't even think about pancakes right now, but I will state, you can't deny perfection. International House of Pancakes has mastered a good quality pancake that is hard to measure up to.

The secrets to running the best hotel in the world

(CNN) — Shuttering a hotel for an 18-month renovation is a risky proposition even in a bustling tourist hub. To do it in the bucolic countryside of County Limerick, Ireland, well, that better be one jaw-dropping transformation, guaranteed to bring visitors in droves.

And indeed, for Adare Manor, it was a doozy. More than 800 workers and craftspeople were on site, doing everything from building a gold-leafed ballroom from scratch to replacing or repairing every single roof tile on the manor house.

Luckily, the hard work, a multimillion dollar renovation, reaped spectacular benefits: Upon reopening, the property was soon named 2018’s Hotel of the Year by Virtuoso’s Best of the Best awards, an influential organization of more than 17,000 travel advisers.

Adare Manor recently reopened after an 18-month renovation. No one at the hotel will disclose the overhaul’s price tag.

But in more granular terms — especially when “best” can be so subjective — what does this even mean?

Broadly, sure, it’s a hotel that’s firing on all cylinders. Everything from the meals to the amenities to the grounds must be flawless. But for a guest, it must be more personal than that to obtain such high esteem.

At Adare, it’s eating breakfast in a room that looks like it was lifted straight out of Hogwarts. It’s learning the ancient art of falconry alongside the hotel’s resident Snowy Owl, Olaf. And it’s definitely sinking your teeth into a freshly baked scone with a dollop of house-made lemon curd.

So how, exactly, does Adare craft its magic? Read on for a peek behind the proverbial curtain.

The secret: A staff seemingly capable of mind reading

The staff at Adare is more than 500 strong, which leaves plenty of manpower to focus specifically on guests’ needs. General Manager Paul Heery also instructs his employees on the theory of “beyond everything,” which translates into making sure every experience on property is exceptional from the guest’s point of view.

“Is the welcome at the gate a little bit more than the normal welcome?” he says, for example, of greeting guests upon arrival. “The objective is that every guest coming through gets some sort of a memory. We are always challenging ourselves and challenging the norm.”

Beautiful bedrooms where every detail is considered are only outdone by the staff’s specialty touches.

One particularly thoughtful touch is the hotel’s use of photographs. If a couple is celebrating an anniversary, for example, the staff will often track down a wedding photograph and place it bedside during turndown service.

For a wedding held on site recently, the staff even went so far as to print a photo from the wedding that took place earlier that day, to have it ready to display in the couple’s bridal suite after the evening’s festivities.

For another guest with Irish heritage who was hoping to reconnect with his roots, a staffer was able to track down a local Gaelic hurling club that had a connection with the guest’s family.

“He drove [the guest] out to the club where his cousin used to play hurling back, I don’t know, a hundred years ago,” Heery says. “You know, small things. But for the guest, it was a huge moment where we’re helping him with his family history.”

The hotel’s GM oversees a staff of 500, ensuring that no guest is left wanting for anything.

The secret: A farm-to-table menu unlike anywhere else in Ireland

The Emerald Isle’s cuisine may be most famed for creative uses of potatoes, but contemporary Irish food encompasses far more than spuds; highlighting the country’s excellent produce and meat is one of the hotel’s main culinary goals.

During Adare’s renovation, culinary director Loughlin Druhan loaded his team into a camper van and road tripped around Ireland to find the best vendors for every ingredient they needed.

They now work with over 100 different suppliers from across the country, sourcing the best of the best for everything from game meats to that addictive Irish butter. “The idea there was to get the best produce that we can within Ireland,” says Heery.

The Oak Room is Adare’s fine dining restaurant. Dark wood and romantic lighting set the scene for the six-course menu ahead.

Spread across the sprawling property are four different restaurants, each catering to a specific mood or type of guest.

The Oak Room is Adare’s fine-dining option, housed inside a stunningly renovated oak-paneled dining room. Local artists were even commissioned to design bespoke wood and ceramic plates and serving pieces, with some of the material coming from the hotel’s own woodlands.

A six-course, prix-fixe menu with wine pairing will set guests back €250 (about $283) per person. The meal includes elevated takes on traditional Irish fare like Tipperary quail with salsify and bacon, or 24-hour-cooked Dexter beef with truffles and morel mushrooms. And, of course, service is top notch.

The Gallery, where afternoon tea is served, is based on the Hall of Mirrors at Versailles.

For those looking for a more traditional experience, the hotel’s Gallery serves a proper Irish afternoon tea that will upend all expectations (and probably ruin you for any version thereafter).

Guests are treated to a selection of four petite sandwiches, including local salmon and ham; freshly baked scones with clotted cream; and five different desserts like a tiramisu “shot” filled with coffee jelly and mascarpone mousse.

The room itself is also mighty impressive: based on the Hall of Mirrors at Versailles, it’s 132 feet long with gargantuan marble fireplaces and walls decorated with hand-carved Bible scenes.

The secret: How they keep the golf greens, well, so green

At 845 acres, Adare’s property requires a significant amount of upkeep. And no area receives more loving care than the hotel’s golf course, an idyllic stretch of emerald greens winding around the River Maigue.

“There are over 50 employees just on grass and greenery,” says Heery. And while Ireland may be rainy, these links will never be soggy: SubAir technology — a way to quickly vacuum water from the greens — runs under the whole of the course.

Far from being putting greens just for guests, the Tom Fazio-designed links were created with the intention of making Adare one of the top golf destinations in the world.

So far, so good. The course was crowned the World’s Best New Golf Course in 2018 by the World Golf Awards, and its JP McManus Pro-Am tournament, scheduled for July 2020, already has the likes of Tiger Woods, Rory McIlroy and Justin Rose signed on to compete.

Even the practice facility is known as one of the best in the country, with Scottish bunker sand specially imported for the most refined experience.

A clubhouse for golfers and a dining destination for both guests and locals is the well-appointed Carriage House.

It’s often aspects of their personality or their “voices in my head” (oh god please don’t take that as me being schizophrenic) telling me that they have a thing to say. Sometimes I have trouble getting into one’s head because another is trying to step up to the plate. Specifics under the cut!

@valyndrian : Valyndrian is fairly solitary, even if he does love adventure and people in general. He’s kind of all over the place. He’s very gentlemanly, but also very craft-oriented. But most of all–MOST OF ALL–he loves to cook and is a huge foodie. So it doesn’t take much to get into his character sometimes, and other times I just can’t handle his level of affection for people.

@aerenas : Aerenas is also a character with two faces. There’s the take charge version of Aer, who is the man that made commander and then kept his boys when he retired from the military. But then there’s the nice, laid back farmboy version of him, and it’s interesting because he can get really awkward around women. For him, I have to figure out which version of Aerenas has come out. Once I’m firm in that knowledge, he’s easy to play.

@syrellian : Here’s another alt I haven’t gotten much play with. Syrellian is very much a ‘fly by the seat of his pants’ type of guy. He’s extremely skilled with a bow, but lacks much of the focus that is expected of those with his training. Easily distractable, he’s the guy you don’t expect to come home with dinner, but somehow he did. I love this bab. He’s so hilariously low-key and sometimes very gullible. To get into his mindset, all I have to do is just clear my head and move on the first instinct that pops up for him.

@shevyn-vethan : Shevyn is a pit fighter-turning-sailor with a will of iron and a heart of gold. He’s fierce in many ways, but gentle in most others. To get into his mindset, all it takes are grounding his principles in my mind. He is very rigid about them.

Eryllis has sometimes been a little hard to get into, and that’s because despite her innate love for life and faith in the Light, her life is downright depressing.
