Lighter-Than-Air 3 Layer Chocolate Cake (Passover Desserts Never Tasted So Good)
I first made this luscious rich chocolate cake which truly is lighter than air for Valentine’s Day. For V-Day I also dipped some strawberries in chocolate.
I was testing desserts to make for an upcoming class I held last week on Passover Desserts...The tag line being...
Some say Passover desserts are boring and tasteless...Sheila will share the recipes and techniques to make several Passover desserts so delicious you will want to serve them any time of the year!
The thing about desserts for Passover is you are not to use regular flour or the normal leavening agents such as baking powder or baking soda.
This can prove to be very challenging. Many recipes call for egg whites to be beaten until stiff and then folded gently into the batter to aid in the rising. This also is a technique which does take some practice to master.
Potato starch, almond flour, and matzo cake meal are also used in many recipes to replace regular flour.
Sponge cakes are very popular at Passover, and I make my mom’s extremely light Passover Lemon Sponge Cake every year. You can find that recipe here.
But I wanted something a bit more spectacular for this demo, and after sampling this cake decided it definitely is a dessert one would want to make any day of the year! (And the cake batter only includes three ingredients)!

Below is the recipe which I adapted to make three layers instead of four from Smitten Kitchen’s blog.
Lighter-Than-Air-Three Layer Chocolate Cake (adapted from Lighter-Than-Air-Chocolate Cake from Smitten Kitchen’s Blog)
To make three 9-inch cake layers:
9 ounces dark or bittersweet chocolate, chopped (I like Trader Joe’s “Pound Plus Dark Chocolate with 54% cocoa solids)
4 and 1/2 tablespoons water
9 large eggs, separated, at room temperature
1 cup superfine sugar (I use Baker’s superfine sugar)
3/8 teaspoon salt
1 tablespoon plus 1 and 1/2 teaspoon Dutch-process unsweetened cocoa powder ( I use Guirardell brand)
For filling:
2 cups heavy cream
6 tablespoons confectioners’ sugar, sifted
2 tablespoons pure vanilla extract
(Note: options: 3 tablespoons Grand Marnier, 3 tablespoons Cognac and 1 teaspoon vanilla, 3 tablespoons cocoa and 1 teaspoon vanilla or 4 teaspoons instant-espresso powder or instant-coffee granules dissolved in 4 teaspoons water plus 1 teaspoon vanilla)
Procedure:
Make cake layers:
Preheat oven to 350 degrees F. Grease or spray with non-stick baking spray the three 9-inch round cake pans and line the bottoms with parchment cut out to fit the bottoms. Spray or grease lightly the parchment paper as well.
Melt the chopped chocolate with the water in a small heavy saucepan over very low heat, stirring until completely smooth. Cool to lukewarm.
Beat egg yolks, 1/2 cup of the sugar, and salt in a large bowl with an electric mixer until thick and pale, about 5 minutes in a standing mixer or about 8 minutes with a hand-held mixer.
Fold in the melted chocolate until blended.
In another clean large bowl, beat the egg whites with cleaned beaters until they just hold soft peaks.
Gradually add the remaining 1/2 cup sugar and beat until the whites just hold stiff peaks.
Fold 1/3 of the whites into the melted chocolate mixture to lighten, then fold in the remaining whites gently but thoroughly.
Spread the batter evenly over three baking pans and bake until puffed and top is dry to the touch, 15 to 18 minutes, rotating cakes between racks and if necessary, loosen edges with a knife.
When cool, sift cocoa powder over the top of cake layers and place a piece of waxed paper over the top of the pans.
Place a baking sheet over the paper and invert the cake onto it, gently pulling off the parchment lining.
Place the layers in the freezer for about an hour, until they are firm enough to be carefully lifted without breaking.
Make filling:
Beat cream with the confectioner’s sugar and vanilla (or optional flavorings, see note above) with cleaned beaters (or whisk attachment if using a standing mixer) until it just holds stiff peaks.
Fill and stack cake:
Bring the first cake layer out of freezer and arrange on serving platter, cocoa side down. Spread 1/3 of the filling evenly over the cake.
Bring the next cake layer out of the freezer, placing it gently over the filling, again cocoa side down. Spread with another 1/3 of the cream.
Repeat this process with the last layer, and whipped cream. (you may have some extra whipped cream ).
Keep the cake in the refrigerator until you are ready to serve it. Two hours should be more than enough to assure the layers are no longer frozen.
Garnish with grated chocolate, chocolate curls, and/or raspberries.
Another dessert which made the cut for this demo included my Pavlova. This is a large meringue nest filled with sweetened vanilla whipped cream and fresh fruit.
It makes a beautiful presentation, but is easier to make than you might think.. You can leave it in the oven overnight...ready to fill the next day!
The crunchy, marshmallowy meringue, creamy whipped cream and fresh fruit is a winning combination!
...and finally I included my Chocolate Raspberry Dreams, a brownie base with a layer of cream cheese, a layer of raspberry jam, and topped off with a dark chocolate glaze.
Baked in a 13 by 9-inch pan it makes a large quantity.. They can be cut into bars or smaller squares, and freeze well.
The brownie base calls for 1/2 cup of Passover chocolate macaroons. In the past I had used the store-bought macaroons which come in the tins. (and, to be kind, are not very flavorful).
This time I decided to make my own chocolate macaroons. Here is the recipe for the Double Chocolate Coconut Macaroons that went into these yummy bars.
These macaroons are wonderful with bits of dark chocolate throughout . I will be making these year round, but I have to say they made the Chocolate Raspberry Dreams even more delicious!
One recipe will give you the 1/2 cup needed for the Chocolate Raspberry Dreams, with plenty of macaroons left over. They can also be frozen.
Double Chocolate Coconut Macaroons (Yvonne Ruperti, Serious Eats)
Ingredients
7 ounces bittersweet or dark chocolate, chopped, divided
2/3 cup granulated sugar
1/4 cup cocoa powder
3 large egg whites
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 teaspoon coconut extract
2 and 1/2 cups sweetened flaked coconut
Directions
In the microwave or in a bowl set over pan of barely simmering water, melt 5 ounces chocolate until smooth. cool slightly.
In a large bowl. whisk sugar with cocoa till combined. Whisk in egg whites, salt, vanilla, and coconut extract.
Whisk in chocolate mixture til smooth.
Fold in coconut and remaining 2 ounces of chopped chocolate.
Chill until firm enough to scoop, about 30 minutes.
Adjust oven rack to upper-middle position and lower-middle position. Preheat to 350 degrees F .
Line two baking sheets with parchment paper or a non-stick baking liner. If using parchment, lightly grease.
Using scoop or tablespoon, portion batter by two tablespoons each, spacing evenly onto pans (about 8 cookies per pan). Gently form into mounds.
Bake until set and center doesn’t look raw, 13 to 15 minutes. Let cookies cool on pan 10 minutes, then transfer to wire rack to cool.
The class was a great success, and I am happy to say many who attended plan to make some or all of the recipes they took home with them.
Everyone was able to taste everything, and some took goody bags home. Let’s just say everyone’s sweet tooth was more than satisfied that day!

So I finished rendering the turkey carcass into stock yesterday. In my world, it’s the Best Leftover Of All from Thanksgiving.
I’ve found that 3 cups, approx, of stock goes nicely in a quart-sized Ziplock freezer bag. Technically you should get four cups in there, but honest to dog, sometimes the seams split when you do that. So I go for three. Safer.
And it came to me that there might exist people who do not make use of the Best Leftover. Possibly this is because they do not know what to do with it or how to use it once it’s stock. So, here are directions.
Making Stock From A Turkey Carcass. De-meat your turkey carcass. Take off the breast, the leg meat, the big pretty pieces that will become sandwiches or whatever. Reserve the bones, the skin, the icky bits. Take all the bones/skin/ickybits and put them in a large stock pan. If, for some reason, gravy is anathema to your people or you use the jarred stuff, and you STILL HAVE THE PAN DRIPPINGS, add them too. You will NOT regret it. Then, pour in enough water to cover the bones/skin/ickybits. Boil, for about two hours. Make sure you don’t run out of water, but seriously, about two hours. Your goal is to Boil The Yumminess out of the bones and crap.
Once the two hours are up, you’ll need a large bowl and a colander. Allow the stock to cool to where you are comfortable putting your hand flat on the stock pot. Then, put the colander in the bowl and strain the stock. Your stock doesn’t have to be perfectly clear to make perfectly good soup. (If you’re going all consoumme or whatever and you might be graded on the quality of your dice and the clarity of your stock, then you don’t need the beginner tutorial. Go do your Iron Chef shit elsewhere and leave me to this.) Your stock does need to be free from bones and skin bits and stuff, and that’s what the colander is for.
Ziplock bag the stock, three cups to the bag. Before I fill them, I label the baggies with ‘turkey’ and the year. (So that you know how old it is and don’t keep it for the next six years in your freezer or something.) You might need to know that it’s turkey stock instead of pork stock or mushroom stock or shrimp stock. Not now, when you are just learning, but later, when you are Master Chef or whatever and you have all sorts of stock like veal and beef and pork. It could happen. So label your shit. It’s a good habit to get into.
Because I don’t have a microwave (no room in my micro-kitchen), I freeze my Ziplocks flat so that they stack nicely in the freezer. Putting a piece of cardboard down on the freezer shelf makes a good flat surface for your floppy Ziplocks.
Okay, so you’ve rendered your turkey into luscious stock and it’s in freezer bags in 3-cup amounts. That was easy, but what now?
Now, you are ready to whip up soups on short notice. Let’s go! What soups can you make?
Potato Leek Soup This is a thick, creamy soup. It’s good. Leeks are kind of like onions and you will probably like them if you like onions. Potato leek soup is great with croutons, and you can Make Your Own Croutons At Home (scroll down to the end and I’ll tell you how) and they’re even better than bought ones. How to do potato leek soup? Buy a bunch (like three) leeks at the grocery. They’re in the produce section and they look like oversize, comically-large spring onions. You’ll also need six to eight fist-sized red-skinned potatoes, real butter (not margerine), and salt and pepper.
At home, set out your stock to thaw in a soup pan. Run the Ziplock under warm water to loosen it up from the stock inside so that you can get the baggie off easily. If you’re in a hurry, you can also turn the burner on low to help melt the stock. While you are waiting for the stock to thaw, clean the leeks and chop them as for soup. If you’re not sure how to do that, here’s a nice illustrated guide Once the leeks are cleaned, you sautee them until soft. In a large frying pan, put a knob of butter. Probably like 2 Tbsp. Or 3 Tbsp. Set heat to medium, put in your chopped leeks and stir ‘em around occasionally until they’re soft and slightly transluscent on the white parts.
When leeks are ready, set them aside. Scrub your potatoes clean and slice them thinly into the stock. You want the potato slices to pretty much use up all the stock you have. So, slice potatoes until the stock is all filled up with potato slices. (You can peel the potatoes if you want but I do not find it necessary and also the vitamins and stuff in potatoes are in the skin.) Cook at medium until the slices are tender and break apart easily with a fork. Using an immersion blender, handheld potato masher, or hand mixer, puree the soup to be more creamy and less chunky. Once that’s done to a texture you like, add the sauteed leeks and any melted butter, just everything in the frying pan. Stir it in. (You can puree the leeks too if you want but I like the texture of them un-pureed. Experiment and see which you prefer.) Add salt and pepper. You will be alarmed at how much salt a soup needs. Start with a teaspoon (yes, really) and then taste. Stir well after every addition. Pepper can be pre-ground, but for a brighter, fresher taste you can grind it on the spot. And that’s it, you’re done. Home-made soup. Go you!
Troubleshooting: You want thicker soup? Add more potatoes. Thinner soup? Add more stock or a smidge of water. Next time add fewer potatoes. Some folks add real cream to this soup but I do not do that because it makes it tricky to reheat. This potato-leek will reheat beautifully.
But you hate onions and potatoes. Or you’re doing some kind of no-potato diet or you just don’t like creamy soups. How about chicken noodle soup? (Turkey stock is pretty similar to chicken stock. You’ll be able to get by with it for ‘chicken’ noodle soup.)
Chicken Noodle Soup is a bit harder than Potato Leek, with more steps and ingredients, but it’s still worth doing. I make my own noodles but you DO NOT have to do that. You can buy dry noodles and use them. I won’t judge. (There was a time when I would have judged, but honestly, do what works for you.)
Thaw out two bags of stock, about 6 cups. While that’s going on, you will chop a fist-sized onion into small dice. Also do two stalks of celery, same dice. Sautee them until soft in a lump of butter. A little browning on the onion won’t hurt but basically you’re going for transluscent, soft onions. Put the sauteed stuff into the soup pot with the thawed stock. Turn burner onto medium heat. Add two bay leaves. Clean and chop two cooked chicken breasts or one leftover cooked turkey breast, fairly small dice. (If you plan ahead, you can just bake the chix breast extra one night when you do other ones for dinner.) Do not include any cartilage, no icky bits, no skin. Just clean, white meat. Nothing gross goes in the soup. Add the diced meat to the stock. Peel and slice two carrots into thin coins and add those as well. Cook. When carrots are about halfway soft, bring soup to rolling boil, add one bag (pound?) of purchased noodles (Kluski makes nice ones, or you can do bow ties if that’s your jam) or make your own egg noodles and add them.
Egg noodles from scratch are, omg, so much better than bought ones. Use 1 egg per 2/3 cup of flour, or 3 eggs / 2 cups of flour. Add salt, not much. A tablespoon of olive oil for the 3-eggs batch. Knead for ten minutes, let rest ten minutes, run through pasta machine to #4 notch (or roll out to 1/8″ thick with rolling pin), cut into noodles with pizza cutter.
Cook until noodles are almost soft. If you will be reheating this, don’t cook the noodles to all the way done b/c then they will mush when you reheat. Salt and pepper to taste. Start with 1 teaspoon salt, but you will probably need more. And again, fresh ground pepper makes a difference.
You can omit the chicken or turkey meat in this soup and it will be just fine. The meat is not necessary. You can add a small bag of frozen sweet corn to the soup for “chicken corn soup” if you want.
Butternut Squash Soup This is another thick-n-creamy soup. Like the potato-leek soup, it’s dead fucking easy and yet still impressive to people who don’t know how to cook. Get yo’self a butternut squash. Him look like dis:
Now, the rest of the internet, which is full of assholes, tells you that you should peel and dice and boil this fucker. They are wrong. They are so fucking wrong. DO NOT listen to that shit. DO NOT. Here is what you do with the butternut.
1. Cut the butternut in half longways, from the stem end (top) to the flower end (bottom).
2. Scoop the seeds and pulp out of the seed cavity using a spoon. If you want to do extra-special fancy, SAVE THESE AND DO NOT THROW THEM AWAY.
3. Put the squash halves cut-side-down on a foil-lined cookie sheet and bake them at 325F for like an hour or until super-tender and kind of browned on the skin at the tops. Poke with a knife to see if it’s soft. You’ll smell it cooking, too.
4. Remove squash from oven, set on counter to cool. (Take foil off cookie sheet, throw away. Cleanup over.) When cool, scoop out softened flesh with spoon, discard skin. Use softened flesh in soup.
Thaw a bag of stock. In small frying pan, melt a knob of butter, add a small onion in fine dice and two cloves of garlic pressed through a garlic press. Sautee until onions are soft. Add to stock. Also add the softened squash flesh to the stock. Using immersion blender, puree. Or using a blender, puree. You’re looking for a velvety, smooth liquid. Salt to taste, add a small amount (start with 1/4 teaspoon) of ground red pepper and a similarly small amount of ground cumin.
If soup is too thick, thin with water OR coconut milk OR real cream. If soup is too thin, add more squash or (if an emergency and you have no more squash) one peeled, boiled potato, mashed.
Extra special fancy garnish Clean seeds from pulp. Pat dry with paper towels. Toss with 1 tbsp olive oil and a liberal sprinkle of salt. Bake at 325 on a cookie sheet, stirring occasionally, until they start to pop and are crispy brown. It doesn’t take long. Sprinkle some seeds on top of soup when it is served.
Other soups you can make with turkey or chicken stock: Broccoli, Corn & Hominy, Lentil, Cauliflower, Carrot... the mind boggles. If you don’t like my suggestions, google that shit.
HOME MADE CROUTONS SO DELICIOUS AND SO BAD FOR YOU I told you I would cover this, so here it is. Get the best bread you can. For home-made croutons, I use my own home-made sourdough rye bread. Ordinary cheap ass white bread in the big pre-sliced loaf is probably not your best bet. Get something a little sturdier than that, possibly sold in a whole unsliced loaf from a bakery. Slice bread into sort of oversized croutons. You still want them to fit on a spoon unless you’re doing Crouton Dunkers (like toast soldiers) which is a level of decadence that you really deserve given that you’ve made from-scratch soup and all. In a heavy frying pan, melt about half a cup of lard. You want it pretty hot, to where a drop of water sizzles right away. I use medium heat. Cook bread cubes until brown on each side, flip as needed. When done, remove from fat and drain on paper towels. That’s it. Seriously. Croutons are fried bread. That’s how they’re made. You can also make your own croutons for salads, if you want.

You know I am ashamed of what I have eaten because I haven’t written a post since the Valentine’s…
Valentine’s Day with Best Pal (Tuesday)
Best Pal and I celebrated Valentine ’s Day at her house. We went to the supermarket and bought lots and LOTS of ingredients for a special tapas/ antipasti tea. When we got to her house her brother had made a MASSIVE burrito so we took a portion for our starters :D
When we got crack-a-lacking in the kitchen we made salmon rolls wrapped in cucumber, we had olives, chorizo, feta, toasted flat bread, mozzarella, artichokes, chicken, sun dried tomatoes and a whole lot of yumminess! We skewered most of it up and it looked fabby if I do say so myself :D Best Pal had never eaten an artichoke before! At first she confused it with an anchovy and thought it was fish… She said she liked it though and that’s good :)
For pudding we had a tub of Ben and Jerry’s ice cream (the one with the peanut butter cups in) which was meant to be to share but I swear best pal had about 3 spoonful’s. I took the rest of the tub home and ate it a couple of days later. Oops :/
I gave best pal some protein bars in a ribbon which she seemed to love a lot. It’s funny because the days before she had mentioned she would much rather have protein than flowers, but I had already bought her the present weeks ago!
Pizza Party (Wednesday)
The devilishly handsome, curly haired man got off the train. She was stood waiting eagerly on the platform. Their eyes met… He ran to her and she jumped into his arms. He turned and handed her a single red rose… she cried.
The Valentine’s meal was perrrrfect! It was the absolute best!!!! My boyfriend and I went to a restaurant where you got unlimited pizza and, oh me oh my, I was not disappointed! We got four pizzas between the two of us and apart from two slices we polished them all off :O
The first pizza I ordered was called ‘Quattro Stagioni’ (I’m literally just going to copy the menu) which had a tomato and basil sauce, grated mozzarella, mixed wild mushrooms, herb roasted ham, artichokes and black olives. That was SCRUMMY!!! My boyfriend (much like best pal) discovered he liked artichokes through this pizza. Why has no one eaten artichokes before?

At the same time we ordered ‘Hickory pig’. This had a hickory BBQ sauce base, grated mozzarella, chantico spiced cheddar, smoked pancetta and hickory smoked pulled pork. I loved this one. I am a huge fan off BBQ sauce. Mmmmmmmm J
The next round we only ordered one for the table and we went with ‘My cousin vinay’ which was a curry pizza. It came with a Goan coconut curry sauce, paneer, wilted spinach, onion bhajis and mint yoghurt. This was also yum! The onion bhajis were so tasty! I have never had an onion bhaji on a pizza before!
Last but not least we probably ordered a mistake. I am going to blame my boyfriend and the waiter for this. First of all my boyfriend said it sounded nice, and then the waiter rushed us and I don’t think I had time to look properly. We went for the ‘El Bastardo’. Keep in mind I don’t like spice when you read what was on this pizza. It came with a Tomato and basil sauce (yum), grated mozzarella (yum), spicy nduja paste (I have no idea what this is but its called SPICY), Spicy Italian sausage (yum to the sausage but again SPICY), Jalapeños (I spotted this and asked the waiter for it without), red and green chillies (I wish I had spotted these…) and a chilli jam (I think we have entered spice hell?). So as you can tell the pizza was VERY spicy!
The prosecco was unlimited just like the pizza and I drank way more than I should have. It was so easy to drink though! It tasted so yummy and I needed SOMETHING to wash all the pizza down with! The spicy pizza must have been the cause of three of the glasses of prosecco, the other three I drank… well the blame is all on me isn’t it.
After the pizza party we went for cocktails. It was my boyfriend’s idea that we went to the same pub that we had our first date in. I thought this was sooo romantic and it made my heart melt! After making my boyfriend drink two slightly feminine drinks, a couple of girls offered us half a bottle of pink rosé prosecco they weren’t going to finish. We couldn’t say no… It is safe to say when I woke up at 6:40am for work the next morning I was feeling it.
Momma’s Birthday (again) (Thursday)
The day after the celebrations with my boyfriend I was in dire need of a bacon sandwich. This may have been less bad if I hadn’t already eaten my lunch earlier in the day :/ oopsie. So off I toddled to Sainsbury’s and I picked up a bacon and ketchup sandwich in white bread (white bread should be illegal because its addictive and bad for you. Why not just call it cocaine and have done with it?) and some vegetable crisps. I wasn’t trying to be healthy with the vegetable crisps, I was just craving the masses of salt they have on them. We can pretend they almost class as real vegetables though right?
That evening, to make matters worse, we were celebrating my mum’s birthday (again). My sister had come home from London for a few days so we went out to a pub for a family meal. I got lemonade because there was no way I could face alcohol touching my mouth. To eat I ordered a chicken, bacon and cheese burger and it was the best :) It came with fries and onion rings which I slathered in ketchup.
My diet gets better…
Friday, my diet wasn’t so bad compared with the rest of the week. My boyfriend came to stay with me for the weekend and we ate tea at my house. My mum seems to have stopped the healthy meals she was making in January as we had Macaroni cheese with bacon in it. Considering I don’t really like bacon, I seem to have eaten a lot over the past week.
Saturday gets worse though… My mum made pancakes for lunch as she thought my sister and boyfriend might not celebrate pancake day themselves. This involved a lot of syrup, cherries, lemon juice and whipped cream!
My boyfriend and I went into town in the afternoon. Our mission was to hunt for a pair of gloves for him, and lots of Pokemon for me. It turns out that NOWHERE sells gloves in February. Before we got the bus home we had a quick little hot chocolate and split a slice of coffee and walnut cake. The cake was alright but a bit disappointing. It seemed to be burnt in places.
We regretted the cake when we got home. My mum had prepared a Sunday dinner. She gave us ice cream and homemade cookies for afters. I tried to eat it all but I ended up leaving the ice cream. I had a MASSIVE tummy ache after all of that food!
Spur of the moment my boyfriend and I decided to go out drinking. Originally the plan was we would go to a bar for one or two and come back home. This ended up in going to a few bars and a night club, someone standing on my foot at 2AM and then coming home. It was triples for singles in a bar we went to and I ended up having 3 drinks there :O
Safe to say on Sunday we were hung over once again. It was very naughty of us to drink twice in one week. That never happens! Boyfriendo and I decided we wanted a Mcdonalds for lunch. By the time we got there it was probably 2pm. We were on the hunt for some gloves again but we had no success. We got back to my house at 5pm where a chicken dinner was on the table ready for tea. We had made the same mistake as the day before.
After tea we were little naughties and had some sweets and chocolate. I’m pretty sure I have no necessity to eat ever again ever!
Gym
How I wish I can say I rectified all that bad eating with cardio and weights. I didn’t. The last time I went to the gym was Monday 13th February. Best pal is now in New York for a week so I won’t be getting back to the gym for a while :/ I’m going to try and walk home a few nights a week to make up for SoMeThInG?
I need to get my motivation back from somewhere to eat better. This week I’m meeting boyfriendo on Wednesday so that will be my cheat meal. HOPEFULLY I can be motivated enough to eat better the rest of the week.
Who knows what I weigh? I’m petrified to stand on the scales!
