Did you know it matters which onion you use?
YELLOW onions are the best all-around cooking onion. They also contain up to 10x more antioxidants than white onions.
WHITE onions are the crunchiest with the sharpest flavor. They are best in salsa and stir-fry.
RED onions are best for eating raw (guacamole, salads and sandwiches). They also contain Anthocyanins, a powerful antioxidant that reduces the risk of chronic disease.
SHALLOTS (Levi refers to these as the “gandolf onion”) have a more subtle flavor, but are higher in vitamins and minerals than other onions. They are great in vinaigrettes and garnishes.

Peppercorn is a butcher and runs the deli, she's no nonsense and doesn't care for the restaurant rivalries around her Pepperblanc runs a hand crafted pasta and spice booth at the farmer's market when she's not working as head chef at Sugar and Salt's cafe/bistro; she's quiet and reserved they are two of four sisters.

Yellow Onion (name tbd) is a nun and is constantly working and hovering around the church. she is emotional and unstable but tries to be kind and helpful she is also hopelessly in love with Red Wine and because of this is in a constant spiral of shame she is unaware of Red Wine's criminal actions Red Onion is her younger cousin

Feel free to elaborate about your Onion Preferences if you reblog, but please keep it about the onion cultivates in question. I know where are more, but I want to focus on the common ones.
(Red onions are a bit more expensive, but I prefer them, because they give both taste and beauty to dishes when fresh. I don't like fried/cooked onions due to texture issues, and use dried onions in my cooking instead, which are always from the yellow kind)

My first attempt at a tangy shakshuka.

The recipe I used has a tangy profile, but you can add or subtract spices at your own discretion.
Recipe:
1 bell pepper (red, orange, yellow, or all 3)
1 large white/yellow Onion
3 Garlic cloves
1 can (28 oz) Plum tomatoes
Chopped Fresh tomatoes
5 oz Fresh Feta Cheese
1 tsp Cumin, 1 tsp Paprika, 1/8 tsp Cayenne
Chopped cilantro
Extra virgin olive oil
Kosher salt
fresh cracked pepper to taste
7-8 Eggs
Heat oven to 375 F (190 Celsius)
In a large pan, turn heat to low-medium and add extra virgin olive oil
Slice thinly 1 large onion, 1 bell pepper, and add to pan with heated oil - cook until soft
Add 3 thinly sliced garlic cloves, cook for 1-2 minutes
Stir in 1/8 tsp cayenne, 1 tsp paprika and 1 tsp cumin - cook @ 1 minute
Add 1-28 ounce (800 grams) can of plum tomatoes
Add 1-2 vine ripened tomatoes, chopped
Season with 1/4 tsp ground pepper and 3/4 tsp salt
Simmer @ 10 mins until tomatoes thicken
Add more salt and pepper to taste
Stir in 5 ounces (140 grams) of Feta cheese
Add 8 eggs by cracking them over the pan mixture - season with salt and pepper to taste
Transfer the pan to the oven, and bake until the egg whites turn white color, and the eggs basically set - usually 7-10 minutes but possibly longer
Remove the pan from the overnight and sprinkle with cilantro
Transfer to your plate and then to your 👄

Mexican Rice

Makes: ~3 quarts
Ingredients
3 Tbsp vegetable oil
2 carrots, peeled and cut into rounds
1 green bell pepper, diced
1 red bell pepper, diced
1 small yellow onion, chopped (~ 1 cup)
3 garlic clove, minced
2 cup long-grain rice, rinsed and drained
2 Tbsp tomato paste
2 1/2 cup chicken broth
1 can (10 oz) fire roasted diced tomato with diced chilies
8 oz tomato sauce
1 Tbsp chili powder
1 tsp Kosher salt
3/4 tsp ground cumin
1/2 tsp dried oregano
Instructions
1. In a large saucepan over medium heat, heat oil. Add carrots, bell peppers, onion, and garlic. Cook, stirring frequently, until onions have become translucent, about 5 minutes.
2. Add rice and tomato paste. Cook, stirring, until grains are toasted, 2 to 3 minutes.
3. Pour in broth, diced tomatoes, and tomato sauce. Season with chili powder, salt, cumin, and oregano.
4. Bring to a boil. Cover and reduce heat to low. Simmer until rice is cooked through and liquid is absorbed, stirring occasionally, about 17 minutes.
5. Serve warm
