The flavors of graham crackers, marshmallows, chocolate, and nuts come together in these Rocky Road S'mores Bars to make a delicious take on the classic s'mores.
Ingredients: 1 cup graham cracker crumbs. 1/4 cup sugar. 1/2 cup unsalted butter, melted. 1 box fudge brownie mix. 2 large eggs. 1/4 cup water. 1/2 cup vegetable oil. 1 cup mini marshmallows. 1/2 cup semi-sweet chocolate chips. 1/2 cup chopped nuts pecans or almonds. 1/2 cup mini marshmallows for topping.
Instructions: Preheat oven to 350F 175C. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press mixture into the bottom of a greased 9x13 inch baking dish to form the crust. In another bowl, prepare the brownie mix according to package instructions, using eggs, water, and vegetable oil. Pour the brownie batter over the graham cracker crust. Sprinkle mini marshmallows, chocolate chips, and chopped nuts evenly over the brownie batter. Bake in preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out with moist crumbs. Remove from oven and sprinkle the remaining mini marshmallows over the top. Return to the oven for an additional 2-3 minutes until the marshmallows are slightly melted and golden. Allow to cool completely before cutting into bars. Enjoy!

A classic chocolate confection, Rocky Road Candy combines the richness of chocolate with the delightful texture of graham crackers, the sweetness of marshmallows, and the crunch of nuts. This is a simple-to-make confection that will definitely satiate your chocolate cravings.
Ingredients: 2 cups semi-sweet chocolate chips. 1 cup milk chocolate chips. 1 cup mini marshmallows. 1 cup chopped nuts e.g., almonds or walnuts. 1/2 cup crushed graham crackers. 1/4 cup unsalted butter. 1 teaspoon vanilla extract. A pinch of salt.
Instructions: Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal. In a microwave-safe bowl, combine the semi-sweet chocolate chips, milk chocolate chips, and butter. Microwave in 30-second intervals, stirring in between until the chocolate and butter are completely melted and smooth. Stir in the vanilla extract and a pinch of salt into the melted chocolate mixture. Fold in the mini marshmallows, chopped nuts, and crushed graham crackers, making sure they are evenly coated with the chocolate mixture. Pour the mixture into the prepared baking pan and spread it out evenly, pressing it down gently. Chill in the refrigerator for about 2 hours, or until the candy is firm and set. Enjoy the delicious flavors of s'mores in pancake form! These fluffy pancakes are loaded with mini marshmallows, chocolate chips, and graham crackers, then topped with a drizzle of chocolate syrup.
Ingredients: 1 cup all-purpose flour. 2 tablespoons cocoa powder. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons melted butter. 1/2 cup mini marshmallows. 1/4 cup chocolate chips. 1/4 cup crushed graham crackers. 1/4 cup chocolate syrup.
Instructions: In a large mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt. In another bowl, whisk together buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in mini marshmallows, chocolate chips, and crushed graham crackers. Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or butter. Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides. Drizzle with chocolate syrup and serve hot.

National Toasted Marshmallow Day...
With fall weather (hopefully) soon upon us making smore's and enjoying a nice toasted marshmallows over an open fire with family and friends is a tradition. Even though marshmallows, have been around for a while, since ancient Egypt, it wasn't until recently that we have started to really notice this sugary treat. In fact, it was recorded that marshmallows were used to treat angina?! Today, we just enjoy it with a bar of chocolate and graham crackers or just by itself over an open fire.
No matter how you enjoy it, today is a day to take the time to really take notice of its enjoyment.

This was indeed another fun project. I made a few adjustment to the graham cracker and I feel when it come to the graham cracker, I believe I have to model the object before putting on the material before it can look like an actually graham cracker. I will add that to my redemption list so I can do it over.
But I really love how it turned out. ^^

Classic Key Lime Pie

Key Lime Pie is one of my favourite desserts; it’s light, refreshing, and simply delicious. It comes together quickly and it’s easy to make ahead of time. 
This dessert is named after Key West, Florida, where it was supposedly invented in the 19th century. Fresh ingredients were not always available there, so condensed milk, and key limes, widely available in the area, became a main feature of this pie. You can taste the zesty and tropical flavour in every bite!

Notes:
Limes: Where I live key limes, (a small, yellow and fragrant lime native to Southeast Asia) aren’t available. However, I use Persian Limes, which are the most common in supermarkets and sold year round. Both work wonderfully for this recipe. 
Food processor: If you don’t have a food processor, crush the biscuits in a zip lock back with a rolling pin or glass and then mix in the melted butter.

Ingredients: 
Crust:
60 grams unsalted melted butter
250 grams biscuits (graham/Biscoff/digestive) 
Filling: 
595 grams sweetened condensed milk 
160 ml Key/Persian lime juice 
3 egg yolks 
2 tsp lime zest (from 5/6 limes) 
Chantilly cream: 
250 ml whipping cream
60 grams powdered sugar
1 vanilla pod/1tsp vanilla extract
75 grams mascarpone (40% fat) 
Method: 
Pre-heat oven to 176C/350F. Put the biscuits into a food processor, pulse until you get fine crumbs. Pour in the melted butter and pulse until the mixture looks like wet sand. 
Put the biscuit mixture into a 9 inch/22cm glass pie dish and use the bottom side of a glass to press the crumbs down until they are compact. For the edges of the pie, use the side of the glass to press the crumbs into the dish and your fingers to press from the top. 
Bake the crust uncovered for 10 minutes and then remove from the oven while you make the custard. 
Whisk eggs yolks and zest in a stand mixer for about a minute. Add in the condensed milk and whisk until well incorporated. Slowly pour in the juice while the mixer is on low. Make sure you scrape down the bowl regularly with a spatula to make sure everything is well combined. 
Pour the custard in the crust and level it with a spatula. Bake for 10 minutes or until there are some small holes in the custard and it jiggles slightly. Cool on a wire rack at room temperature for 20 minutes and then refrigerate for at least an hour and up to three days. 
For the chantilly cream, whip all ingredients in a stand mixer on high until stiff peaks form. Stiff peaks stand up straight when you lift the whisk into the air.  Pipe onto the pie with a pastry bag or dollop it on with a spoon. Finish off the pie with lemon zest of candied lime for extra decoration.
