Once breakfast was over, and the men had ridden out for the hunt with a cacophony of shouts and baying hounds, Belle retreated to the library to read the remaining chapters of the book. It told her nothing she didn’t already know, and squinting at the drawing of the ornamental dagger in the light of day still didn’t reveal what was written on it. She noticed that the drops of her blood had disappeared, though, sucked into the paper by the book’s own magic, no doubt. It was tempting to try the spell again, but she had nothing more to bargain with, and no desire to make any more demands on the Dark One’s time than she had already dealt for.
She put the book back on its shelf and sat back in her chair, thinking. It wasn’t the only book on the Dark One that existed, to be sure, but a search of the shelves before she sat down had yielded nothing further on the subject. Belle smiled to herself as she reached a decision. In the months that she and her father had been coming to Sir Gaston’s lands, she had made a friend of sorts. A purveyor of hard to find objects, he called himself, but he specialised in old books. If anyone would know where she could find out about the Dark One, it would be Jefferson.

Half an hour later she was taking the carriage into town, a tall, silent footman named Marcel and one of the maids, Celine, accompanying her. She knew it was for reasons of safety and propriety, but she missed the freedom of being in her own lands, with her own people. Here she was followed wherever she went, which was why she had begun sneaking down to the library at night for a brief taste of freedom. It felt as though Gaston’s servants were spying on her. As though she were a beautiful bird in a gilded cage, too valuable to be allowed to fly free, however briefly.
On this occasion, however, Marcel seemed more interested in the pretty maid than in her, the two of them sneaking glances at each other as the carriage rolled along, and a plan began to form in Belle’s mind. She kept a sharp eye out as they reached the market place, and once she spotted the shop she sought, she tapped on the roof of the carriage to stop and rummaged in her purse for some coins.
“Here,” she said, handing them to Marcel. “It’s a warm day and the road was dusty. Why don’t you both go to the tavern and have a cup of something while I visit the bookshop? It’s right across the street, you’ll be able to keep an eye on me.”
“We’re supposed to stay with you, milady,” said Celine automatically, but her eyes flicked to the footman again.
“I’ll only be ten minutes,” Belle assured her. “I want to enquire after some books I ordered. Once that’s done we’ll go to the haberdasher’s and the apothecary. You may both accompany me once you’ve quenched your thirst.”
Marcel and Celine shared a smile.
“Thank you, milady,” they said as one, and Marcel got out to hand Belle down.
She shook out her skirts, eyeing the shop she sought. The door was closed, but a bell above tinkled merrily when she pushed it open. The shelves inside lined every wall, and were filled with books, with cabinets holding ornaments and nautical navigation aids. There was a pleasing, familiar scent of parchment and leather and old paper, and Belle smiled as she glanced around, a sense of peace flowing over her.
She started as the proprietor bounced up from behind the counter, dressed in a russet-coloured coat over leather breeches and knee boots, a patterned cravat at his throat and a somewhat battered top hat on his head. Jefferson was a handsome man, with a ready grin and a glint in his eye, and from what she could tell, had a good heart and a keen sense of fun. He also had a young daughter named Grace, who liked to read as much as Belle had at her age, and Belle had given her some of her old books to borrow, much to Grace’s delight. Jefferson beamed at the sight of her.
“My Lady Belle!” he declared, sweeping a dramatic bow that was somewhat curtailed by the shop counter. “I’m delighted to see you! It’s been too long.”
“An entire week, at least,” she said, amused.
“Yes indeed.” He clasped his hands behind his back, bouncing on his toes. “Your frequent visits to my humble shop have not gone unnoticed. Why, only two days ago I had Sir Gaston’s steward come to visit me to enquire about them. Imagine my delight at such esteemed patronage.”
Belle’s blood ran cold.
“He was asking about me?” she said. “Why?”
“Oh, I’m sure your noble intended only wishes to ensure your safety,” said Jefferson cheerfully. “I’m to report back to him what you purchase from me. Romantic, no?”
Anger flared in her, and she felt her jaw protrude, as though straining against an invisible leash. She tried to relax, and smiled at Jefferson.
“It’s a good thing I seek only appropriate reading material for an innocent and fairly stupid woman, then,” she said dryly.
“It’s not as though I would sell you anything else,” he said, pressing a hand to his heart in mock horror. “This is a respectable bookshop.”
“Good,” said Belle seriously. “In that case I want to ask about the books you most definitely are not holding in this shop. In order to ensure - public decency.”
“Public decency has always been a passion of mine, my Lady,” he said gravely. “Tell me of these terrible tomes.”
She felt her lips twitch, but tried to maintain her concerned expression.
“I have heard tales of a sorcerer known as the Dark One,” she said. “No doubt there are books that cover his history, his origins. It would be dreadful if they were to fall into the wrong hands.”
“You won’t find such distasteful books on any of the shelves in this shop,” he said promptly, pointing under the desk and winking at her.
“I’m delighted to hear it.”
“Anything else?”
“I’ve also heard that there are books on magical prisons, and the breaking of curses.”
“A terrible rumour, if true,” he said. “I have no such books for sale.”
He mouthed you can borrow them behind his hand, and she wanted to giggle.
“Thank goodness,” she said. “You’ve put my mind at rest.”
“I should probably check, though,” he added. “Just to make sure. If you return in half an hour, I’ll be able to confirm it.”
“Good.” She hesitated. “While I’m at it, there may be something you could sell to me.  Do you have anything on the Blue Fairy? Or on light magic in general? I’m sure there could be no objections to me reading something like that.”
“Let me see what I can dig out,” he said, tipping his hat to her.
“And I suppose I’d better add in something about proper wifely duties, as well,” she said. “That should put Sir Gaston’s mind at ease.”
Jefferson grinned, wiggling his eyebrows.
“For managing a new estate or for managing a new husband?” he asked, and she sent him a dry look.
“I’ll leave that up to you.”
His grin widened, and he lifted a finger.
“I have just the thing.”

When Belle left the shop, she took a moment to straighten her gloves, irritation with Gaston warring with satisfaction at having obtained more information on the Dark One. So. She was being spied on. No doubt to ensure she was suitable, the picture of a subservient, dutiful wife. The nerve of the man!
“Milady?”
Marcel and Celine had hurried over to her, and Belle nodded curtly, smoothing her features.
“I’ll call back for my books in half an hour, once they have been wrapped,” she said. “The apothecary next, I think.”
She walked swiftly enough that Celine had to trot to keep up, and made the rounds of the shops in less time than she had anticipated, but the exercise helped to ease her anger, and by the time they had left the haberdashery, she was calm again. She slowed the pace as they turned into the street leading back to the bookshop, and Celine sighed in relief, hefting the basket of her purchases.
“Alms for the poor, milady?”
A woman reached out to her with a pleading tone, blonde hair tied back from a face reddened by the sun, and Belle drew to a halt, biting her lip in distress. She imagined the woman had once been plump and pretty, but now looked gaunt and exhausted, her faded dress hanging from her, her hand a claw extended on a thin wrist. Two skinny, big-eyed children watched from the shadows, brother and sister, clutching at one another. The girl had a bracelet on her thin wrist, woven from brightly coloured woollen threads, no doubt scavenged from weavers' scraps. It made a strange contrast to her dirty smock and tangled hair.
“Get out of here, go on!” said Marcel roughly, aiming a kick at the woman, and she shied away. Belle rounded on him.
“Do that again and there will be consequences!” she snapped.
“I’m charged with protecting you, milady,” he said. “You don’t have to deal with these vermin.”
“When I marry your lord, these will be my people!” said Belle, frowning. She turned back to the woman. "What's your name?"
"Gerta, milady."
“And what has brought you to this sad state? Have you no work?”
“Not since the clearances, milady,” she said, eyeing Marcel warily.
“Clearances?”
“We had a strip of land down by the river," said Gerta. "A herd of goats and some vegetable plots. The Lord’s men drove us off two winters gone. Us and all the other smallholders. Beat our men when they protested, killed some. Killed my husband. The fields have gone to barley for the brewers, the goats slaughtered.”
Belle shook her head, and reached into her purse for some money.
“Milady, you shouldn’t—” began Marcel.
“I’ll do as I please with my own coin!” snapped Belle. She pressed some silver into Gerta’s hand, followed by a gold piece. “Here. That should feed and clothe you all for a little while, at least. Once you feel able, come to the castle and ask for me: I'll speak to the steward about finding some work for you."
"Oh thank you, thank you!" Tears pricked the woman's eyes.
"No need to thank me," said Belle.  "You shouldn't be in this situation. I shall speak to Sir Gaston about what has happened to you.”
“It won’t do any good,” said Gerta wearily. “But bless your kind heart, milady.”
She clasped Belle’s hand between her own, smiling a little, and slunk away, the children following. Belle noticed that the boy was limping badly, his lower leg twisted and useless as he shuffled along, supported by his sister.
“They’ll probably just spend it on ale, milady,” said Celine.
“They look too hungry to want to bother with the tavern,” said Belle shortly. “Have many families been driven off their lands?”
The servants shrugged, and she clicked her tongue in irritation.
“What provision has been made for their welfare?” she asked. “Are there soup kitchens? Anything?”
“The brewers set up a soup kitchen,” said Celine. “They were told to take it down, because it just encouraged the beggars.”
“Well of course it encouraged them, how would they eat otherwise?” snapped Belle, and shook her head with a sigh. “Still, this is a matter for Sir Gaston, not you. I need to pick up my books, and then we’ll take the carriage home.”
She stomped off, seething with anger. What sort of lord would let his people starve?
Jefferson seemed to catch her mood when she returned, and made no quips as he handed Marcel a pile of books wrapped in paper and tied with string. Belle paid him, smiling slightly to show that her bad mood had not been caused by him. He was far more reserved in front of the servants, and she imagined it was just as well. No doubt an account of their day in town would reach Gaston before long, and she didn’t want Jefferson singled out for any special attention from the steward.
The ride home was subdued, and once the servants had carried the books and other purchases up to Belle’s room, she announced that she had a headache, and would be lying down until it passed. Celine drew the curtains and helped her off with her gown, and Belle lay down with a damp cloth over her eyes. The sound of the door closing softly made her sigh in relief, but she still waited a few minutes before tearing off the damp cloth and sitting up, reaching for the parcel of books. There had to be answers in there somewhere.
Jefferson had wrapped up five books in total, the top one being a very proper treatise on the management of estates from a noblewoman’s perspective. Belle tossed that aside with a curl of her lip, but after a moment, placed it on her nightstand. If Gaston wanted to hear about what she was reading, let him hear about that.
The second book was infamous, and made her blush fiercely and glance around before turning back to it. The Lady’s Boudoir by An Anonymous Gentlewoman of Note was rumoured to be the most complete compendium of detailed intimate relations between husband and wife. Along with illustrations. After suppressing a giggle at the look on Gaston’s face if he were to find such a book in her possession, Belle resolved to hide it somewhere safe until she could take it back to Jefferson. She had already read it, anyway.
The third book had an embossed illustration of a fairy on the cover, wand lifted high with a blue star at its tip. A Study of Fairies and Their Use of Light Magic, read the title page, and Belle pursed her lips thoughtfully and set the book aside on the nightstand before reaching for the next. It was a heavier volume, bound in battered blood-red leather with gilt letters on the spine: First Steps in Curse-Breaking.
She was almost trembling with excitement, eager to open up the book and pore over its contents, but the final book in the paper package had already drawn her eye.  It was the slimmest by far, perhaps two hundred pages if that, with a plain black leather binding. Opening it up, Belle ran her eyes over the title page: The Dark One: His Origins and Powers.
Belle clutched the book to her chest, heart thumping, and sent up a prayer to the gods that the information she sought would be contained within. Then she got back onto the bed, wriggling against the pillows to get comfortable, and began to read.

The Blanket Glacier Chalet is only accessible by helicopter. Nestled deep in British Columbia’s Monashee Mountains, the A-frame has a satellite phone for emergencies but no cell service or Wi-Fi. Guests bring their own sleeping bags. The bathrooms are outhouses, and the makeshift shower consists of a plastic bucket attached to a pulley system. If you’re staying over, you’re not seeking amenities; you’re chasing the 60 feet of snow that falls in the area each winter. When I spent a week there with friends in early March, I wasn’t expecting much more than a wood-fired stove, but I was pleasantly surprised by all of the gourmet food.
The Schaffer family has owned and operated the “eh frame” since 1986. Al and Marion Schaffer recently passed the torch of daily operations on to their kids: 34-year-old Marty handles the skiing through his guide company CAPOW, and his 28-year-old sister, Heidi, handles the food. In my mind, her cooking elevates the chalet to five-star status. Topsheets, it turns out, are irrelevant when you’re eating maple-miso salmon in the middle of the wilderness. Heidi fed 16 hungry skiers five meals a day during our visit, using one oven and supplies brought in once a week via helicopter.
Her cooking created our daily rhythm at the chalet. We’d wake up early and trek to the outhouses—dubbed Contemplation Point—while she laid out a first breakfast of coffee, yogurt, granola, fruit, and warm muffins. As we listened to the day’s avalanche report, she plated our second breakfast of buttermilk pancakes or fluffy scrambled eggs. Then, while we suited up and formed a water brigade outside, passing buckets up from the mountain stream, she transformed the dining table into a smorgasbord of steak, homemade bread, deli meats, cheeses, and veggies for our picnic lunch. We’d check our beacons and head into the mountains. By 4 P.M., my mind only had room for après. Would we be welcomed home with freshly fried potato chips and artichoke dip? Or maybe warm cranberry-walnut bread and hand-whipped butter? 
Heidi’s mastery of such nourishing comfort food in this isolated outpost is the type of inspiration we could all use right now. My friends and I missed an important week of COVID-19 news while we were in the backcountry: When we left, hand washing was the preventative measure. When we got back to our overflowing inboxes, markets had crashed, borders were closing, and quarantine was on the horizon. All I wanted to do was return to the chalet and find Heidi, apron on, blond hair tied into her signature fun bun, telling us to dig in. 
The weather is cooling off again, and we’re all staring down a fall (and winter, and likely spring) of more social distancing, limited travel, and difficult news. While we wait for the winds to change, I keep turning to Heidi’s gourmet yet simple recipes for comfort. When I eat a warm, buttery piece of her walnut bread next to an open window, I can almost hear the swish of skins. I’ll be trying her ricotta and chive gnocchi next. Below, Heidi, the queen of isolated cooking, shares five of her greatest hits.
Roasted Garlic and Artichoke Dip 
This savory dip is one of Heidi’s go-to, quick appetizers, usually whipped up after sneaking in a few runs in the afternoon. 
Ingredients: 
1 whole head of garlic
1 cup mayonnaise
1 cup grated Parmesan cheese
14-ounce can artichokes, drained and chopped
Cooking oil
1 green onion, thinly sliced (both white and green parts)
3 tablespoons fresh tomatoes, chopped
Directions:
Heat the oven to 350 degrees Fahrenheit. Cut off the top of the head of the garlic so the cloves are exposed, and place it on a parchment paper–lined sheet pan. Drizzle with olive oil and a pinch of salt, and roast for 30 minutes or until golden and soft. While the garlic is roasting, combine the mayonnaise, Parmesan, and artichokes in a mixing bowl. Once the garlic is done, remove it from the oven (but keep the oven on). Let the garlic cool, then mince the cloves and add them to the mayonnaise mixture. Spoon the combined ingredients into a shallow casserole dish sprayed with cooking oil. Bake for 20 to 25 minutes or until the top is golden. Garnish with the fresh green onion and chopped tomatoes. Serve with crackers, raw vegetables, or fresh bread.
No-Knead Honey, Walnut, and Cranberry Bread
Homemade bread might be intimidating, but Heidi’s recipe is approachable. And if she can bake it in the backcountry and at high altitude, you can definitely do it in your kitchen. “Making the dough the night before is a huge time-saver,” she says. “This goes really well with a hefty slice of Brie cheese and some butternut-squash soup.” Her recipe calls for using a Dutch oven, but you can also bake the bread on a parchment paper–lined pan. The crust just won’t be as crunchy. 
Ingredients:
3 cups all-purpose flour 
½ teaspoon instant yeast 
1 teaspoon salt
½ cup walnuts, chopped
1 cup dried cranberries 
1½ cups room-temperature water 
¼ cup honey
Directions:
Add the flour to a large mixing bowl. Then add the yeast to one side of the bowl and the salt to the other. Using a wooden spoon, stir the yeast into the flour on its side and the salt into the flour on its side, which helps ensure an even distribution of ingredients. Then stir the whole thing together. Add the chopped walnuts and cranberries to the flour and mix again. Pour the water and honey into a separate bowl, stirring with a fork to combine. (Water that is too warm or too cold can kill the yeast and prevent the bread from rising, so make sure you get the temperature right.) Then pour the honey water into your flour mixture and stir with the wooden spoon until all ingredients are combined. This is not typical bread dough—it will be a bit sticky, and the recipe does not require any kneading—so don’t be too concerned about the appearance. Just make sure the ingredients are combined well and that there’s enough room for the dough to double in size, then cover the bowl loosely with plastic wrap and set in a warm, draft-free spot. Let it rise for 12 to 18 hours.
Place a piece of parchment paper on the counter, and dust it with flour. Rub flour on your hands, and scrape the dough away from the sides of the bowl, gathering it in your hands as best you can. Transfer it to your parchment paper, and form it into a circular loaf. Once it’s shaped, the dough needs to undergo a second rise. Sprinkle flour over the top of the loaf, and loosely cover it with plastic wrap to prevent a skin from forming. Let rise for about 45 minutes. (Note that after the second rise, you should handle the dough as little as possible; touching it too much may cause it to deflate.)
Preheat the oven to 450 degrees. Place your Dutch oven inside, and let it heat up for about 20 minutes. Once the dough has risen, remove the plastic wrap and score the loaf with a sharp knife (a shallow slit right down the middle will do the trick). Trim the parchment paper into a circle closely around the dough. If it doesn’t look like the dough has risen that much, don’t worry. The loaf will puff up when it hits the heat of the oven.
Remove the preheated pot from the oven and carefully transfer your dough into it, handling it as little as possible and using the parchment paper to carefully lift and lower it in. Place the lid on the pot, and return it to the oven for 35 minutes. Don’t open the oven during this time, and don’t take the lid off the pot (steam building up in the pot will help give it a crispy crust). After 35 minutes, remove the lid from the pot and continue baking for another 15 minutes. (If you’re using a baking sheet, simply bake the bread for 45 to 55 minutes.) Remove the loaf from the oven, and place it on a wire rack to cool. Brush a little extra honey on the top of the bread if you want. 
Resist the urge to cut into the bread until it has cooled. The bread continues to bake on the inside even after it’s been removed from the oven, and cutting it too early may result something gummy or rubbery.
Maple-Miso Salmon 
“This is one of my go-to salmon marinades, and I get asked for this recipe every time I make it,” Heidi says. “The richness of the miso and soy, with the zip from the ginger, makes the fish heavenly.”
Ingredients:
4 single-serving salmon fillets (around four ounces each)
¼ cup maple syrup 
1 teaspoon Dijon mustard 
1 heaping tablespoon white-miso paste
1 tablespoon rice vinegar
2 tablespoons soy sauce
1 clove garlic, grated
1 tablespoon ginger, grated
Directions:
Whisk all of the marinade ingredients together in a bowl. Place the salmon in a dish, cover with the marinade, and let sit for 30 minutes. Preheat the oven to 400 degrees, and set the pieces of salmon on a foil-lined baking tray. Brush the top of the salmon with a little of the marinade using a pastry brush. Place the remainder of the marinade to the side. Bake for ten minutes for medium-rare salmon, and 12 to 15 minutes for well-done. (Note that cook time for salmon can vary, depending on the cut and type of fish, so pay attention. Press gently on the thickest part of the fish with a fork; if it flakes easily, it’s done.) While the salmon is baking, reduce the leftover marinade in a saucepan over medium heat until it has thickened. Glaze the salmon with the reduced marinade before serving.
Ricotta and Chive Gnocchi 
Making pasta doesn’t have to be complicated, and this gnocchi is an easy place to start. “I always thought homemade gnocchi was intimidating and time-consuming, but this recipe is neither,” Heidi says. “It’s a game changer.”
Ingredients:
1 pound ricotta
1 egg
1 tablespoon olive oil 
¼ cup grated Parmesan cheese
½ cup chives, finely chopped 
1 teaspoon lemon zest
1 teaspoon salt
½ teaspoon pepper
2 cups all-purpose flour
Vegetable oil for frying 
Directions:
Place the ricotta in a fine-mesh strainer over a bowl, leaving enough space for liquid to drip from the cheese. Put a small plate over the cheese in the strainer and then a can or another object atop the plate to weigh it down. Let your setup press the ricotta in the strainer overnight in the fridge.
Put a large pot of water on the stove to boil. In a large bowl, mix the pressed ricotta, egg, olive oil, Parmesan, chives, lemon zest, salt, and pepper thoroughly. Add the flour and gently stir it in, being careful not to overmix. Let the dough rest for ten minutes. Lightly sprinkle flour on your work surface. Grab a baseball-size piece of dough, and roll it out with your hands into a one-inch-thick log. Cut the roll into bite-size pieces, around three-fourths of an inch wide, and set them aside on a lightly floured baking pan. 
Place your gnocchi in the boiling water in several batches. They will swirl around and sink. Once they float back to the top, scoop them out with a slotted spoon, and place them in a bowl of ice water for two minutes. Strain all the gnocchi, and place them on a baking tray lined with a paper towel. Then fry the gnocchi in vegetable oil in a nonstick frying pan until golden brown on each side. Lightly season with salt and pepper, and pair with your favorite sauce. Butter browned over medium-low heat with sage leaves is a great, simple option.
Puff Pastry Apple Cinnamon Rolls
“These buns have become a staple at the lodge,” Heidi says. “I created them as a total experiment one day when I was out of yeast and flour. They are a great alternative to your traditional yeasted cinnamon buns and take half the time. What I often do is make them the night before, cover them, and keep them in the fridge overnight. Then when I’m up at the crack of dawn to start the day’s prep, I just turn on the oven and toss them in.”
Ingredients:
1 box puff pastry
½ cup salted butter
¾ cup light brown sugar
1 tablespoon cinnamon
1 teaspoon nutmeg 
1 teaspoon ground clove 
½ cup walnuts or pecans, coarsely chopped
1 Granny Smith apple, grated 
Directions:
Take your puff pastry out of the freezer to thaw. This will usually take a few hours at room temperature. Preheat your oven to 350 degrees. Dust your work surface with flour to prevent sticking, and roll your puff pastry into a rectangle about eight inches long.
To prepare the filling, slowly melt the butter in a pan on low heat. Then add the brown sugar, cinnamon, nutmeg, clove, nuts, and grated apple to the melted butter. Stir until combined, then spread evenly over the rolled pastry, leaving just a little room on the sides.
Starting at the long end closest to you, roll the rectangle tightly into a cylinder. Pinch the seam so it’s well sealed, and roll the dough over once onto itself to make sure it’s tight. Using a serrated knife, cut it evenly into about 12 to 15 buns. Place the buns onto parchment paper on a baking tray, leaving about a fourth inch between each one. Bake for 30 minutes or until golden on top.

Flavorful Foods Get Functional

Specialty food is the fastest growing segment in the food industry and at the Winter Fancy Food Show in San Francisco, California, which took place in January and was the first-of-the-year venue for tasting trends.   
Presented by the Specialty Food Association (SFA), a not-for-profit association with over 3,800 members, including food artisans, importers, buyers and entrepreneurs, the show featured 1,400+ companies exhibiting over 90,000 specialty foods – something for every palate.
“The Winter Fancy Food Show is where retail buyers, foodservice, and others in the food industry come to see just how much innovation is happening in our space,” said Phil Kafarakis, SFA president. It’s also where we spot the trends that will be shaping foods stories for the year.  
Here’s a brief report of what we saw and the people we spoke with.
Performance is the new organic  
“We are seeing an incredible amount of interest and innovation from brands using ingredients that not only taste great, but produce results you can feel, said Jeremy Grout, VP, sales VitaCup Inc vitamin-infused coffee and tea.  Consumer shopping habits have swung heavily in the direction of a few key trends. The snacking, collagen, keto and CBD space has exploded in the last few years and manufacturers that aren’t incorporating the ingredients/formats harmoniously with these trends are being left behind. 
CBD-infusions
Cannabidiol, or CBD, has become a massive opportunity for food and topical beauty products. But there are challenges. While increasingly popular, CBD is still very much in a pre-clinical-proof era. People are reporting anecdotal benefits for treating inflammation, sore joints, anxiety, depression, seizures and many more ailments. (Brands making these claims must follow the U.S. Food and Drug Administration’s requirements for a drug.) Foodies are crushing on CBD because food editors and micro-influencers have turned the compound into a darling ingredient and companies are dashing to throw it into every formula. Since CBD has been a marketing buzz word with little regulation, it’s sometimes hard to even know if CBD-touting products contain any compound at all. CBD has the potential to be even bigger business than it is news, so stay tuned to the science, politics and buying trends on CBD. It’s moving quickly.
Plant alternatives  
The relationship between plants and people is getting closer. Food is just one of many ways people are living with plants. “Plant based products seem to dominate conversations. I saw almost all retailers trying to make sure they had a good selection of plant based products for their customers,” said Michael Pan, founder of Pan Mushroom Jerky™.  “That of course has helped us and I don’t see that trend stopping anytime soon. Mushrooms continue to be used for everything and that’s exciting to see.”   
It was evident that plant-based categories continue to grow and elicit broader interest, and many buyers were on a mission to find more plant based-products to add to their sets.   
Bradley Tomko, west regional sales manager, Miyoko’s Kitchen of Petaluma, CA, said, “We received a very supportive response to our positioning as Plant Dairy–not Alternative or Non-Dairy–and that merchandising our products in line with traditional dairy would generate the most effective category growth. It is exciting to see how quickly the market is evolving.”
Fancy food to go
“Vegan, refrigerated, and keto friendly bars kept bubbling to the top” said Angela Bailey, senior brand manager of WoloSnacks™, makers of fiber-rich WanderBars for travelers, which touts its unique texture, high protein, low sugar, high fiber combo. “We have a broader market to target that can be a staple in diets rather than a trend. After all, everyone travels right?” 
Bars aren’t the only food people are eating on-the-go. “Over the past few years we’ve noticed a lot of growth in the cannoli category; not only are more stores bringing in both traditional cannoli shells and filling, but they’re also expanding their offerings with items like cannoli chips and ready to serve items, like chip & dip platters and grab & go cups. Traditional cannoli shells and filling can be a challenging item to bring in for locations without full-time bakery employees and these ready-to-serve items allow them to give consumers an innovative way to experience cannoli that also happens to be easily shared with family and friends,” said Emily Trotochaud, social media and marketing manager, Golden Cannoli Shells Company.
Better butter
In a sector where many products being marketed as dairy aren’t, there is a great demand for real dairy made premium. The interest and popularity of diets high in healthy fats continues to grow, highlighting the benefits of a premium, higher butterfat butter like Minerva Butter, which has the highest butter fat content at 85%. You can taste the difference. Consumers continue to expect transparency around where their food is coming from. For 125 years, Minerva has prioritized getting cream from American family farms who pasture-raise their cows. It is known as America’s oldest creamery and is experiencing more growth than ever.  
Frozen protein  
The National Peanut Board partnered with Crazy Richards Peanut Butter to roll out an entirely new category with the introduction of its new frozen snack line, Wholly Rollies – Frozen Protein Balls. Wholly Rollies was developed to make healthy snacking simple.  “As consumers continue gravitating toward snacking, the National Peanut Board is excited to be part of bringing new products to the freezer case. As a delicious, nutritious and portable snack, Wholly Rollies embody everything consumers are looking for,” says Ryan Lepicier, sr. VP, marketing & communications, National Peanut Board.
Everyday parchment
Food prep was a big part of Fancy Food this year. We’re seeing more natural ways to cook including with parchment paper. Along with the global food influences from the Indian and Asian markets, hot peppers and bold spices are finding their way into specialty chocolate creations in the US market. The concept is now moving from the niche stage to mainstream on Main Street. Chocolatiers across the US continue to experiment with combining the sweet and savory and venturing into new product creations. SweetShop USA recently created Abuelito Mexican Hot Chocolate Truffle, which combines Hatch Green Chile, cinnamon and jalapeño in a Belgian chocolate ganache center. 
“While boxes of chocolate remain a gift staple on shelves, specialty chocolates purchased in smaller packages, as grab-n-go snacks continue to lead the growth segment,” said  Michael L. Moss, president, Sweet Shop USA. “Growing demand for traditionally seasonal offerings, like brittle and toffee, is transitioning these favorites from limited time holiday offerings to year-round staples in many retail chains.”
Edible whimsy
Function and fun met at several booths, including at Let Them Eat Candles, edible candles. “We were swamped with people telling us that Let Them Eat Candles was the most innovative product they saw at the show,” said Loree Sandler, a Let Them Eat Candles representative.
Rethinking Juice  
There has been a trend to consume less sugar which pushes companies to rethink the whole juice category. How do you offer lots of nutrition without too many ingredients and too much sugar? “You can no longer rely on citrus fruits and vegetables to do this because you end up consuming an extremely large amount of sugar. However, by finding awesome superfoods from around the world and including them in products, producers offer customers one-of-a-kind blends that draw from traditional uses of the ingredients. It also helps companies differentiate themselves from competition by offering more than just a drink; the juice now becomes part of the customer’s daily health ritual,” claims Nina Vukicevic, project manager, ArmedinaUSA
Companies are seeking to include more and more functional foods in their ingredients. Instead of simply offering orange juice or some sort of fruit blend, companies over the past few years have been featuring exotic ingredients such as maca, reishi, cordyceps, cacao, ashwagandha, matcha, etc. in their products. In turn, they provide their customers with way more nutritional value, often from ingredients that the customer wouldn’t otherwise consume, either because they simply don’t know about the ingredient or don’t buy it otherwise. Juices offer a quick, convenient way to consume a lot of nutritional goodness, especially when the ingredients include nutritional powerhouses from around the world. 
DJ Rassech, president, Deep Water USA Inc. with Deep Rose, hits the mark. He said, “Flower based drinks are going to get real big. They may not replace sodas entirely but they will take some junk off the market.”
“Sipping” soups  
“When we launched our innovative Heat and Sip soup cups in 2017, we were one of the first brands to address the trend of consumers wanting a healthier on-the-go beverage option, and I believe we are still the only brand which offers bone broths in this format,” said Ami Tseng, senior marketing manager, NONA LIM. “We’re seeing consumers drink soup or bone broth in the morning in place of coffee/tea, and throughout the day as either a light snack, lunch, or afternoon pick me up. Drinking bone broths as a post-workout recovery drink is also popular.”
Turmeric continues to be popular with consumers. “Our Turmeric Chicken Bone Broth Heat and Sip Cup is our best-selling bone broth online, and it will be available at Whole Foods nationally beginning in April this year. Ramen continues to grow in popularity as well, and is reflected in the range of products hitting shelves, for example Nona Lim’s clean-ingredient ramen cups and ramen kits (broth + noodles).”
Small meals, big protein
Freshe hits on a lot of trends we saw on the show floor. These celebrity chef designed, easy to open tins of wild caught tuna are perfect for portable small meals and snacking. 
Tractability to the tree  
There is growing demand to know where our food comes from. Each bottle of Origin 846 extra virgin olive oil has a lot number which corresponds to the actual set of trees on the company’s grove. Origin 846 does not blend from other producers and from other countries. “We own our groves, the organic format of our olive oil is picked by hand, and most of all, we are able to lead the quality control process from beginning to end,” said Dustin Gilman, representative of CHO AMERICA, producers of Origin 846.
