These are the main cause of certain diseases. So, avoiding an animal-based diet and preferring a plant-based diet can lessen the concerns of getting diseases. The problem is that you might miss calcium, vitamin B12, and iron since only certain plants possess these nutrients. In leafy vegetables, tofu, sesame seeds, nuts, and dried fruits are sources of calcium and iron. Moreover, you can get vitamin B12 from yeast extract, unsweetened soya drinks, and breakfast cereals. Pepperoni Cauliflower Pizza
Good morning, afternoon, and evening my striving college students! Another week has come and gone, and that means College Eats is back with another recipe for you to give a try.  This week, we are revamping a beloved late-night snack, a quick and easy dinner, a delicious Italian dish; pizza!  We know what you’re thinking, how could you possibly make pizza any better?  We have an idea, but hear us out.  Most of us as students are purchasing pizza from our favorite delivery company, or we are buying them frozen at the grocery store, right?  Buying these specific pizzas, means you are buying pizza that contains some bad carbohydrates.  There is a difference between bad carbohydrates and good carbohydrates, and we want to avoid the trans fats, cholesterol, and high sodium content that is in the crust of the pizza you are buying and consuming.  This week, we have taken out the bad carbohydrate of the pizza, the bread crust, and swapped it with a good carbohydrate, cauliflower crust!  It is low-carb and is still packed full of flavor. After learning how to make this guilt-free guilty pleasure, you will notice you feel less bloated and not as lethargic throughout the day.  You will feel full, but not like you have eaten too much, because we all know how hard it is to say no to just one more slice!  Let’s get started.
 Here’s what you’ll need:  
 ·       2 ½ cups of cauliflower (most likely one medium sized head of cauliflower)
·       1 large egg, lightly beaten
·       1 ½ cups of shredded mozzarella
·       ¾ cup of finely shredded cheddar
·       2 tablespoons of grated parmesan cheese
·       1 teaspoon of garlic salt
·       ½ teaspoon of pepper
·       1 tablespoon of chopped basil
·       ¼ cup tomato sauce
·       Pepperoni (to taste!)
·       1 rimmed baking sheet
·       Parchment paper
·       1 microwave safe bowl
·       Food processor
  It seems like a lot you must acquire this week, but all of these ingredients are easy to get your hands on.  Feel free to swap out the cheese that we have suggested for you, this is just what we thought tasted the absolute best!  Feel free to buy more than just one head of cauliflower.  This way, you can chop up an abundance of cooked cauliflower all at once, and then store it in the refrigerator to make more cauliflower pizza.  This speeds up the total prep time for pizza you make in the future.  
 As for cost, one head of cauliflower at your favorite grocery store will probably cost you about $2.77.  When selecting a cauliflower, you want to make sure it is tightly bundled with creamy white florets.  The ones with bright green leaves are the best to pick!  Avoid cauliflowers with yellow or spotted florets.  Saggy leaves mean all nutrition and freshness has left the vegetable.  This cauliflower can stay in your refrigerator for five days, but after it is chopped it should stay in your refrigerator for no more than four days. For those of you who do not own a food processor, or a high-powered blender, there is cauliflower “rice” that you can buy.  It is basically pre-chopped cauliflower bagged and sold at 10 oz for $2.48. What’s that?  It’s cheaper? Wrong!  Remember, there is 8 ounces in one cup.  The recipe we have provided for you calls for 2 ½ cups of cauliflower.  So, you would actually need to purchase two bags of pre-chopped cauliflower in order to have enough.  Anyway, it is always better to chop things yourself when you can.  If you can grate your own cheese, do it!  If you can chop your own basil, do it!  There’s nothing better than farm fresh basil, so if you are able to go to a farmer’s market near you, this would be the best place to get the freshest, most flavorful basil for your pizza.

  Here’s how you start:
 Preheat that oven of yours to 425 degrees.  It needs to be this high to give your cauliflower crust a nice crispiness to it.  Then line your baking sheet with parchment paper.  Place your cauliflower head in the microwave safe bowl and add just a little water to steam it.  Cover the bowl, and put it in the microwave for three minutes or until the cauliflower is tender.  After this, let it cool.  Next, place the now cooked and cooled cauliflower in your food processor, or a high-powered blender works too, and pulse the cauliflower until it is chopped into tiny pieces.  It will almost look grated.  In a mixing bowl, add the egg, 1 ¼ cups of the mozzarella, parmesan cheese, garlic salt, pepper, and chopped basil.  Then stir all of these ingredients together until they are combined.  Pour this mixture onto the baking sheet and form the shape of crust that you want.  You can do a classic circular pizza, personal sized pizzas, square, rectangle, whatever you would like!  Once you have the general shape formed, pat down the crust to make it a flat surface. Bake the crust for 15-20 minutes or until golden and firm and solid.  Spoon on the sauce, and sprinkle on the rest of the cheese.  Place as many pepperonis as you want (remember we said to taste!) and stick your pizza in the oven for another 10 minutes until the cheese melts completely.  Now, enjoy!
 Depending on how crispy, thin, or thick you like your crust, this pizza may not be as solid to pick up as a slice of pizza with bad carbohydrates, so sometimes it is best eaten with a fork.  Take a seat, indulge in your cauliflower crust pizza, and let’s take a look at everything this cauliflower is doing for you…because it is a lot.  
 Nutrients and Benefits:
 Cauliflower is a cruciferous vegetable which means it is in the same family as two other beneficial superfoods:  broccoli and kale.  While natural sugar in moderation can be good for us, cauliflower actually contains less sugar than broccoli does, one of cauliflower’s relatives.  We need this natural sugar for our bodies to create energy, but there is such a thing as too much.  This is why a low-carb alternative is better for us. These carbohydrates are broken down to the sugar that we need to turn into energy for our bodies.  
 Cauliflower contains what we are calling the three G’s.  These are glucobrassicin, glucoraphanin, and glugonasturtiin.  We know these names look scary, but these are what are called phytochemicals.  They stimulate the enzymes in our bodies that are cancer-blocking, and they protect our cells from oxidative stress and other damage caused by free radicals.  Cauliflower contains so much vitamin C, manganese, and other antioxidants that help nourish our body.  With our young age, it is important to load up on these as best we can while our body is still in its prime!  
 One of the three G’s, glucoraphanin, along with vitamin K in cauliflower, helps maintain blood circulation, and proper functioning blood vessels.  The glucoraphanin is converted to something that activates anti-inflammatories, and prevent lipids from accumulating inside the blood vessels.  Unobstructed blood flow reduces our risk of conditions like atheroscelerosis, which is an artery disease.  There is an abundance of antithrombotic and antiplatelet functions that significantly contribute to heart health.  
 Cauliflower is a great source of dietary fiber which helps our digestion and it aids in eliminating toxins from our bodies.  Did you know fiber did that?  Again with the help of one of our three G’s, glucoraphanin, glucosinolate, and sulforaphane, cauliflower protects the stomach lining and protects from growth of bacteria.  Additionally, the nutrients in cauliflower are also preventing risk of abdominal disorders.  This can include stomach ulcers, colon cancer, etc.  
 We mentioned earlier that cauliflower contains both vitamin C and vitamin K.  These are great for our bone health.  Vitamin C plays an important part in producing the collagen that protects our joints and bones from inflammatory damage.  The vitamin K helps in preventing bone loss.  The vitamin C also reduces our risk of diabetes when attributed with the potassium in cauliflower.  When we regulate our glucose metabolism, our risk of diabetes decreases, and this si what the potassium content in cauliflower does for us.  Our pancreas also utilizes potassium for secreting the insulin hormone that resists high blood sugar.  Anything that prevents blood sugar spikes is great for our bodies!
 As students and young professionals, we are constantly exhausting our brain with critical information, learning new knowledge, and other activities that require us to use our heads.  Making sure our brain is in good health is important.  Cauliflower contains choline and phosphorus, both excellent and effective for repairing the cell membrane in our brains.  We need these components for the most efficient functioning brain and nervous system for transmitting nerve signals as well.  The potassium and vitamin B6 also performs well for maintaining our brain health and our nervous system.  Communication between these two systems is key!  
 That is just scratching the surface of what cauliflower does for us! It is a wooden or stone container with a rounded bottom and the ancient Ligurian housewives with that and patiently reduced the ingredients to very small pieces. Let's start with a clarification. Necessary for the sauce of nuts 180 grams of walnut kernels 1 garlic clove 40 grams of bread crumbs 40 grams of grated Parmesan cheese 150 grams of whole milk 4 tablespoons of olive oil salt as needed Preparation of nuts sauce The walnuts should be soaked in boiling water in order to remove the film that covers them more easily. In the original Genoa recipe this was not done as the bitter taste that leaves the peel of nuts is part of the tradition of the recipe. This preparation should also be done in mortar with pestle. Reduce the walnuts to very small pieces along with the garlic and salt and bread crumbs that you will have soaked in milk. Chop everything put in a bowl and knead the dough obtained adding the milk and olive oil until you get a homogeneous sauce. Both this sauce and the pesto in Genoa should be used cold on the pasta, at the time of seasoning it.
Rabbit with olives
Classic second dish of Liguria Necessary for rabbit with olives 1 rabbit of about 1,200 to 1,300 kilograms 120 grams of taggiasche olives 1 medium onion 2 cloves garlic 1 glass of red wine 60 grams of pine nuts 2 sprigs rosemary 3 bay leaves a pinch of thyme powder broth the meat just enough salt and pepper just enough olive oil just enough Preparation of rabbit with olives Wash and remove excess fat from the rabbit, in addition to the entrails and cut it into many small pieces. Meanwhile, in a saucepan, fry the finely chopped onion in the olive oil until golden brown. Add the rabbit pieces and brown them slowly from all sides. Wet now with red wine and let it evaporate completely. Season with the rabbit and cook for at least 30 minutes adding meat stock when needed. Now add the olives to the rabbit, one half left whole, the other half cut into small pieces. Then the whole pine nuts, the whole garlic (which should be removed before serving on the table) and the chopped herbs. Simmer for 30/40 minutes adding little meat stock if needed.
The Easter cake
As its name also indicates, this recipe is mainly prepared in the Easter period. It is a salty cake filled with eggs, cheeses and vegetables. Along with pesto is the best known Ligurian recipe and has many variants. Necessary for Easter cake 1 kilograms of flour type 00 1,200 kilograms of cilour 500 grams of fresh ricotta 6 eggs 1 small onion 2 glasses of water 30 grams of olive oil 100 grams of grated Parmesan cheese pepper salt and increase just enough Preparing the Easter cake First prepare the pastry that will serve to line the baking tray and contain the cake filling. Work the flour with the water and olive oil until you get a rather soda paste. Divide the dough into about 10 balls and rest for about an hour and a half. Now let's get the cake filling ready. The chard leaves are wiped in running water and after drying them they are cut into thin strips. Meanwhile, in a large frying pan, fry the onion in a little olive oil. Once golden add the chopped cleft and cook for about 20 minutes, adjust the salt. You can also use spinach for this preparation. In a bowl mix the brown cheese, salt and pepper and the grated Parmesan cheese. Finally, combine the cooked cilles and mix well. Now we prepare the puff pastes from the dough balls we had prepared. With a rolling pin roll out one ball at a time trying to make some rather thin round sheets. Take a baking dish and brush with olive oil. Put the first puff pastry that will also cover the edges of the baking dish, brush this with oil and add another puff pastry. Repeat this process until 6 of the 10 sheets are used. Place half of the candeit and ricotta mixture inside. With a spoon form 3 hollows where you will put 3 whole eggs without shell, trying to make them stay whole. Put the remaining mixture of chard and ricotta and make the recesses here for the other 3 eggs. Cover with the remaining sheets trying to close the dough tightly. Bake in an already hot oven at 170 degrees for 40-45 minutes.
Focaccia di Recco
Typical Ligurian focaccia stuffed with cheese (growing or stracchino) Required for Recco focaccia 400 grams of flour 1 glass of water 40 grams of olive oil 1 teaspoon salt up 400 grams of growth or stracchino Preparing Recco focaccia Work the flour by adding the oil and salt, gradually incorporate the water until you get a fairly soda and smooth paste. Make a ball and let rest about an hour covered with a cloth. After this time cut the ball of dough intwo parts and roll them out with a rolling pin trying to get a rather fine puff pastry. Put the first puff pastry in a rectangular pizza baking tray lined with baking paper. Cut the growth into many small pieces and place it on the surface of the dough at regular intervals. Close by placing on top of the other puff pastry and closing edges in the four sides. Pass oil over the surface of the focaccia and salt up. Make regular distance holes on top of the focaccia and place in the oven already hot at 220 degrees for about 20 minutes. Allow to cool a little before cutting and serving.
Genoa's Pandolce
It is a typical dessert of Genoa, also called the panettone of Genoa, because it is usually made on Christmas holidays. There are two versions, one high and one low. Here I propose the recipe of the low sweet bread that is easier to make. Necessary for the Genoa pandolce 400 grams of Manitoba-type flour (found in all supermarkets) 180 grams of flour type 00 150 grams of butter 2 eggs 160 grams of sugar grams 30 grams of honey 1 packet of baking powder 2 tbsp orange blossom water 300 grams of raisins 30 grams of candied 30 grams of pine nuts. Preparation of the Genoa pandolce First of all mix and sift the Manitoba flour with the flour type 00. Also mix the sugar and baking powder sachet with the flour. Add the beaten eggs, butter at room temperature made into small pieces, honey and orange blossom water. When the dough is homogeneous add the pine nuts, raisins and candied. Tradition has it that this dough covered with a napkin remains to rise for about 12 hours. After this time line a cake tin with baking paper and put the dough by crushing it just to get to the edges. Place 3 triangle-shaped cuts on the surface, bake at 180 degrees in an already hot oven for about 45 minutes. The duration depends a lot on the type of oven. Check the cake after about 30 minutes to test the cooking.
Canestrelli
The baskets are delicious biscuits typical of Liguria. Necessary for the baskets 200 grams of flour type 00 200 grams of butter 150 grams of potato starch 100 grams of icing sugar 5 egg yolks zest of 1 grated lemon a few drops of vanilla aroma Preparing the baskets First cook the eggs in boiling water for about 8-10 minutes. Remove the shell and take only the yolks. Put the potato starch and icing sugar in a large bowl and mix very well. Add the grated lemon zest, vanilla drops and chopped butter. Mix it very well (better with a planetary) until the butter has melted everything. Pass the hard-boiled egg yolks into a colander to make them creamier and add them to the other ingredients. Stir again and then put the dough on a work top and work with your hands until soft and elastic. This dough covered with cling film is put in the fridge for about an hour. After this time with a rolling pin roll out a sheet of about 1 centimeter and with a cookie mold (on the market molds with the shape of the baskets) form many small shapes until the puff pastry is exhausted. Place these cookies on a baking pan where you will have put some parchment paper, putting them at a regular distance not too close and bake in an already hot oven at 150 degrees for about 8 - 10 minutes. Flavorful Foods Get Functional

Specialty food is the fastest growing segment in the food industry and at the Winter Fancy Food Show in San Francisco, California, which took place in January and was the first-of-the-year venue for tasting trends.   
Presented by the Specialty Food Association (SFA), a not-for-profit association with over 3,800 members, including food artisans, importers, buyers and entrepreneurs, the show featured 1,400+ companies exhibiting over 90,000 specialty foods – something for every palate.
“The Winter Fancy Food Show is where retail buyers, foodservice, and others in the food industry come to see just how much innovation is happening in our space,” said Phil Kafarakis, SFA president. It’s also where we spot the trends that will be shaping foods stories for the year.  
Here’s a brief report of what we saw and the people we spoke with.
Performance is the new organic  
“We are seeing an incredible amount of interest and innovation from brands using ingredients that not only taste great, but produce results you can feel, said Jeremy Grout, VP, sales VitaCup Inc vitamin-infused coffee and tea.  Consumer shopping habits have swung heavily in the direction of a few key trends. The snacking, collagen, keto and CBD space has exploded in the last few years and manufacturers that aren’t incorporating the ingredients/formats harmoniously with these trends are being left behind. 
CBD-infusions
Cannabidiol, or CBD, has become a massive opportunity for food and topical beauty products. But there are challenges. While increasingly popular, CBD is still very much in a pre-clinical-proof era. People are reporting anecdotal benefits for treating inflammation, sore joints, anxiety, depression, seizures and many more ailments. (Brands making these claims must follow the U.S. Food and Drug Administration’s requirements for a drug.) Foodies are crushing on CBD because food editors and micro-influencers have turned the compound into a darling ingredient and companies are dashing to throw it into every formula. Since CBD has been a marketing buzz word with little regulation, it’s sometimes hard to even know if CBD-touting products contain any compound at all. CBD has the potential to be even bigger business than it is news, so stay tuned to the science, politics and buying trends on CBD. It’s moving quickly.
Plant alternatives  
The relationship between plants and people is getting closer. Food is just one of many ways people are living with plants. “Plant based products seem to dominate conversations. I saw almost all retailers trying to make sure they had a good selection of plant based products for their customers,” said Michael Pan, founder of Pan Mushroom Jerky™.  “That of course has helped us and I don’t see that trend stopping anytime soon. Mushrooms continue to be used for everything and that’s exciting to see.”   
It was evident that plant-based categories continue to grow and elicit broader interest, and many buyers were on a mission to find more plant based-products to add to their sets.   
Bradley Tomko, west regional sales manager, Miyoko’s Kitchen of Petaluma, CA, said, “We received a very supportive response to our positioning as Plant Dairy–not Alternative or Non-Dairy–and that merchandising our products in line with traditional dairy would generate the most effective category growth. It is exciting to see how quickly the market is evolving.”
Fancy food to go
“Vegan, refrigerated, and keto friendly bars kept bubbling to the top” said Angela Bailey, senior brand manager of WoloSnacks™, makers of fiber-rich WanderBars for travelers, which touts its unique texture, high protein, low sugar, high fiber combo. “We have a broader market to target that can be a staple in diets rather than a trend. After all, everyone travels right?” 
Bars aren’t the only food people are eating on-the-go. “Over the past few years we’ve noticed a lot of growth in the cannoli category; not only are more stores bringing in both traditional cannoli shells and filling, but they’re also expanding their offerings with items like cannoli chips and ready to serve items, like chip & dip platters and grab & go cups. Traditional cannoli shells and filling can be a challenging item to bring in for locations without full-time bakery employees and these ready-to-serve items allow them to give consumers an innovative way to experience cannoli that also happens to be easily shared with family and friends,” said Emily Trotochaud, social media and marketing manager, Golden Cannoli Shells Company.
Better butter
In a sector where many products being marketed as dairy aren’t, there is a great demand for real dairy made premium. The interest and popularity of diets high in healthy fats continues to grow, highlighting the benefits of a premium, higher butterfat butter like Minerva Butter, which has the highest butter fat content at 85%. You can taste the difference. Consumers continue to expect transparency around where their food is coming from. For 125 years, Minerva has prioritized getting cream from American family farms who pasture-raise their cows. It is known as America’s oldest creamery and is experiencing more growth than ever.  
Frozen protein  
The National Peanut Board partnered with Crazy Richards Peanut Butter to roll out an entirely new category with the introduction of its new frozen snack line, Wholly Rollies – Frozen Protein Balls. Wholly Rollies was developed to make healthy snacking simple.  “As consumers continue gravitating toward snacking, the National Peanut Board is excited to be part of bringing new products to the freezer case. As a delicious, nutritious and portable snack, Wholly Rollies embody everything consumers are looking for,” says Ryan Lepicier, sr. VP, marketing & communications, National Peanut Board.
Everyday parchment
Food prep was a big part of Fancy Food this year. We’re seeing more natural ways to cook including with parchment paper. It’s a simple way to reduce toxins when cooking and storing food. PaperChef makes it easy to wrap and cook your food in natural parchment paper so you don’t have to rely on foil.  
Chocolate gets hot & spicy
Along with the global food influences from the Indian and Asian markets, hot peppers and bold spices are finding their way into specialty chocolate creations in the US market. The concept is now moving from the niche stage to mainstream on Main Street. Chocolatiers across the US continue to experiment with combining the sweet and savory and venturing into new product creations. SweetShop USA recently created Abuelito Mexican Hot Chocolate Truffle, which combines Hatch Green Chile, cinnamon and jalapeño in a Belgian chocolate ganache center. 
“While boxes of chocolate remain a gift staple on shelves, specialty chocolates purchased in smaller packages, as grab-n-go snacks continue to lead the growth segment,” said  Michael L. Moss, president, Sweet Shop USA. “Growing demand for traditionally seasonal offerings, like brittle and toffee, is transitioning these favorites from limited time holiday offerings to year-round staples in many retail chains.”
Edible whimsy
Function and fun met at several booths, including at Let Them Eat Candles, edible candles. “We were swamped with people telling us that Let Them Eat Candles was the most innovative product they saw at the show,” said Loree Sandler, a Let Them Eat Candles representative.
Rethinking Juice  
There has been a trend to consume less sugar which pushes companies to rethink the whole juice category. How do you offer lots of nutrition without too many ingredients and too much sugar? “You can no longer rely on citrus fruits and vegetables to do this because you end up consuming an extremely large amount of sugar. However, by finding awesome superfoods from around the world and including them in products, producers offer customers one-of-a-kind blends that draw from traditional uses of the ingredients. It also helps companies differentiate themselves from competition by offering more than just a drink; the juice now becomes part of the customer’s daily health ritual,” claims Nina Vukicevic, project manager, ArmedinaUSA
Companies are seeking to include more and more functional foods in their ingredients. Instead of simply offering orange juice or some sort of fruit blend, companies over the past few years have been featuring exotic ingredients such as maca, reishi, cordyceps, cacao, ashwagandha, matcha, etc. in their products. In turn, they provide their customers with way more nutritional value, often from ingredients that the customer wouldn’t otherwise consume, either because they simply don’t know about the ingredient or don’t buy it otherwise. Juices offer a quick, convenient way to consume a lot of nutritional goodness, especially when the ingredients include nutritional powerhouses from around the world. 
DJ Rassech, president, Deep Water USA Inc. with Deep Rose, hits the mark. He said, “Flower based drinks are going to get real big. They may not replace sodas entirely but they will take some junk off the market.”
“Sipping” soups  
“When we launched our innovative Heat and Sip soup cups in 2017, we were one of the first brands to address the trend of consumers wanting a healthier on-the-go beverage option, and I believe we are still the only brand which offers bone broths in this format,” said Ami Tseng, senior marketing manager, NONA LIM. “We’re seeing consumers drink soup or bone broth in the morning in place of coffee/tea, and throughout the day as either a light snack, lunch, or afternoon pick me up. Drinking bone broths as a post-workout recovery drink is also popular.”
Turmeric continues to be popular with consumers. “Our Turmeric Chicken Bone Broth Heat and Sip Cup is our best-selling bone broth online, and it will be available at Whole Foods nationally beginning in April this year. Ramen continues to grow in popularity as well, and is reflected in the range of products hitting shelves, for example Nona Lim’s clean-ingredient ramen cups and ramen kits (broth + noodles).”
Small meals, big protein
Freshe hits on a lot of trends we saw on the show floor. These celebrity chef designed, easy to open tins of wild caught tuna are perfect for portable small meals and snacking. 
Tractability to the tree  
There is growing demand to know where our food comes from. Each bottle of Origin 846 extra virgin olive oil has a lot number which corresponds to the actual set of trees on the company’s grove. Origin 846 does not blend from other producers and from other countries. “We own our groves, the organic format of our olive oil is picked by hand, and most of all, we are able to lead the quality control process from beginning to end,” said Dustin Gilman, representative of CHO AMERICA, producers of Origin 846. 
We expect to see these evolve and more develop at the Summer Fancy Food show in New York City, Jacob Javits Center, June 23–25, 2019.
