The ingredients needed to make Veg biryani:
{Make ready As required of Florets of 1 small size cauliflower.
{Take 1small bowl of of green peas.

{Prepare 1 cup of curd.
{Take 3 glass of basmati rice(you can use any rice).
Usually people make different types of biryani on weekends especially. You can use a mix of carrot, beans, cauliflower, fresh peas and potatoes for making this veg biryani. Hyderabadi Veg Biryani or Vegetable Biryani is a delicious medley of succulent vegetables, spices, ghee, saffron, and flavourful basmati rice which no one can resist. Veg Biryani is a delicious medley of rice, vegetables and a variety of spices.
Steps to make Veg biryani:
In a wok add 3 glass of basmati rice and water to soak rice well for booking(approx 6-7 glass)..
Now add 2 tbsp ghee, some cumin seeds, 1 bay leaf, 4-5 cloves and mix them well at medium flame, till rice is 80% cooked..
Once boiled 80% switch off the flame and strain the water completely..
Now in another wok add 2tbsp butter and 2tbsp cooking oil. Then add 1bay leaf, 3-4black pepper, 2red chillies, 1chopped green chilli, some cumin seeds, cinnamon stick and saute for one minute at medium flame..
Now add green peas to it and cook for 1minute..
Now add french beans, carrot and cook it for 1minute at medium flame..
Now add florets of cauliflower and cook till it partially softens..
Now add sliced onion and cook for 2more minutes at medium flame. If you want you can add cashews also for additional crunch and flavour..
Once veggies are partially softens, then spread 80% cooked boiled rice evenly on top of these veggies and cover it with lid and cook for 10 minutes on slow flame..
Once rice are cooked properly,serve them curd or veg raita..
Compared to the other varieties of rice dishes like Pulao, Biryani has a stronger taste of curried rice due to a higher amount. How To make Amazing Veg Biryani |
Biryani is one of the most amazing royal delicacies introduced to Indians by the Mughals. Since then it has been much popular and is considered to be a luxurious treat to enjoy on special occasions. Making a chicken biryani in authentic dum style does take some time and needs little expertise. Traditional chicken biryani is made by layering marinated chicken and then layered with parboiled rice, herbs,saffron milk & then ghee. I have shared that traditional HYDERABADI BIRYANI HERE. The recipe shared here in this post details a short cut method to make a simple one pot delicious chicken biryani in a pressure cooker or a pot. So what I have shared in this post is not a dum style biriyani yet it will surprise you with a good aroma and taste. This recipe yields a chicken biryani that isn’t too oily, spicy, hot or pungent as it looks to be in the pictures. However you can reduce the amount of red chili powder if you do not prefer the heat. This is best served with a RAITA, SHORBA, LASSI and papads. You can also find the older version of this chicken biryani recipe towards the end of this post as recipe 2. Step-by-step photos Preparation for chicken biryani recipe 1. Make few slits on all the chicken pieces and add to a large bowl. Then add 3 tablespoons plain yogurt (Indian curd) 1¼ tablespoons ginger garlic paste ½ to 1 tablespoon garam masala (or biriyani masala) ½ teaspoon salt ½ to 1 teaspoon red chili powder (reduce for kids) ¼ teaspoon ground turmeric 1 tablespoon lemon juice (optional) 2. Mix everything well and marinate the chicken. Cover and set this aside for 1 hour. You can also rest it overnight in the fridge. 3. Meanwhile add 2 cups basmati rice to a large pot and rinse it at least thrice. Drain and soak in fresh water for 30 mins. Drain to a colander after 30 mins. Optional – Soak a pinch of saffron strands in 2 tablespoons hot milk. Cooking chicken 4. Heat ghee or oil in a heavy bottom pot or pressure cooker. Make sure you use a large one for this. Using whole spices is optional but recommended. Use whatever you have. I use 1 bay leaf 4 green cardamoms 6 cloves 1 inch cinnamon piece 1 star anise ¾ teaspoon shahi jeera (caraway seeds) 1 strand mace 5. Add thinly sliced onions. On a medium heat, fry them stirring often until uniformly light brown. 6. This is the correct color of the onions. Do not burn them as they leave a bitter taste. (check video) 7. Add marinated chicken & saute until it becomes pale for 5 minutes. 8. Lower the flame completely. Cover and cook until the chicken is soft, tender and completely cooked. 9. Check if the chicken is cooked by pricking with a fork or knife. It has to be just cooked and not overdone. Evaporate any excess moisture left in the pot by cooking further without the lid. 10. Taste test and add more salt if needed. I added ¼ more salt here. Add ¼ cup plain yogurt (Indian curd) 1 teaspoon garam masala (or biryani masala) ¼ to ½ teaspoon red chili powder (optional) 1 slit green chili pepper (optional) 2 tablespoons chopped mint leaves (pudina) How to make chicken biryani 11. Mix everything well. Spread it evenly in a single layer. 12. Layer drained rice all over the chicken. To a separate bowl, pour 3 cups water and add ¼ to ½ teaspoon salt. If cooking in a pot, use 3½ cups water. Stir and taste the water. It must be slightly salty. Pour 2 cups of this across the sides of the cooker or pot. Pour rest of the water over the rice gently. (check video) 13. Level the rice gently on top. Add 2 tablespoons more mint leaves.Do not mix up everything, the taste of the biryani cooked in the shown method is good. Optionally you can sprinkle 2 tablespoons fried onions & saffron soaked milk. 14. Finally cover the pot or cooker. If cooking in a pot, cook on a medium heat until the rice is done completely. Turn off when done and rest it covered for 15 mins. If cooking in a cooker, cook for 1 whistle. Later remove the cooker from the hot burner to stop cooking further. 15. When the pressure releases naturally, open the lid. Gently fluff up with a fork. Serve chicken biryani in layers – top layer with rice and bottom layer with chicken. Veg Dum Biryani - The Vegan Version That Makes You Drool
Tired of having boring food at home? Rice is considered a blessing among Indian households and for that matter a lot of people around the world consider the staple as comfort food. It gets cooked effortlessly. Rice is also easily digestible. Among several recipes that include rice as a staple, Biryani deserves to top the chart because of its rich aroma and flavourful taste. The popular dish involves copious usage of spices for a delicious result.
A Little Bit About Veg-biryani
Biryani roots back to Mughal cuisine culture. Cooked essentially in flat bottomed vessels, it's a dish reigning our hearts for decades so much so that Indians or for that matter, gourmands love to look for Authentic Dum Biryani at Singapore restaurants. Since food lovers prefer having meat in Biryani as other than the rice and spices, meat is a fundamental for the recipe, several individuals opt out of it thinking that there may not be a vegetarian alternative to it.
The good news is that some of the master-chefs from the Mughal kitchen corner have worked out on equally tasty veg-biryani recipes. You can even find Best vegetarian Indian Biryani in Singapore. If at any point of time you feel like cooking the veg dum biryani at home, go through this lovely recipe which will render the rich flavours of vegetables topped up by Indian spices in a layer of delicious gravy.
Ingredients
Take 1/4th cup Basmati rice and soak it in water
Cut carrots into 4 half inch cubes
Take 10-12 florets of cauliflower
Take at least one cup of green peas
1/4th cup of milk
Saffron threads
Oil
2 Green cardamoms
4 large sliced onions
4 Cloves
1 Black cardamom
1 Bay leaf
Make ½ inch pieces of a cinnamon stick
Powdered red chilli, 1 tablespoon
Skimmed yogurt 1 ½ cup
Ginger and garlic paste around 1 ½ tablespoon
Kewra essence at least 1-2 drops
A teaspoon of coriander powder
4-5 Chopped green chilli
Powdered garam masala at least 3/4th teaspoon
Turmeric, 1 teaspoon
Thin strips of ginger cut into 2 inch
Chopped fresh coriander 2 tablespoon
Chopped mint 2 tablespoon
Salt
Preparation
Pour saffron in warm milk and set aside. Boil soaked rice grains in salted water while adding green and black cardamoms, cinnamon, cloves and bay leaf. Cook until the rice is 3/4th done and drain the excess water. Fry, onions till they turn golden.
Blanch veggies and keep them separately in a bowl after draining them in fresh cold water. Add yogurt to the vegetables along with ginger and garlic paste, coriander powder, green chillies turmeric and chilli powder, turmeric and half of the garam masala along with half of golden browned onions and some salt.
Make the mixture and pour it into a pressure cooker followed by spreading rice over the spiced up vegetables. Pour the saffron milk along with mint leaves, coriander leaves, ginger strips, kewda essence and remaining garam masala. Don't miss the remaining golden browned onions.
Cook everything on medium flame till the vegetables and rice grains are cooked. In around 15 minutes, the Biryani will be cooked.
After it's cooked, serve the veg dum biryani with cool raita made with ingredients of your choice.

Yellow Moong Dal Khichdi a one pot simple meal with split yellow moong beans and rice. Creamy, soft, light on stomach with detoxifying properties!!
Khichdi or Kitchari is considered a comfort meal by many in India due to the comfort and ease of making and it’s digestive properties. Khichdi means ‘all mixed up’ in local language. It is prepared by mixing and soaking lentils with rice then dumping it in the cooker/vessel with cumin, turmeric tempering in Desi ghee. All the ingredients used in making this khichdi have Ayurvedic benefits on the body .
There are many variations in making khichdi. Lentils like Split Pigeon Pea, Split chickpea Lentils are also used in making Khichdi. But, as these lentils are heavy on stomach and also takes a little more time to cook as compared to moong lentils. So Moong lentil Khichdi is the first choice to make when someone is not feeling well or recovering from some illness or have some digestive issue.
Ayurveda strongly recommends fasting for a day and then breaking the fast with this simple Khichdi. It is one of the best and cheapest detox 🙂 !!
I love to have Khichdi with Cilantro chutney and my kids like to have papads with it. A glass of buttermilk with some cucumber slices or any yogurt raita, makes it a whole and filling meal.

How to make Simple Yellow Moong Dal Khichdi..
Simple Yellow Moong Dal Khichdi can be made in just a few minutes. No chopping, frying or sautéing the masala, not time-consuming tasks are involved. It is recommended to soak lentils and rice for at least 15-30 mins as it speeds up the cooking process and makes the grains easily digestible.
I make Khichdi with or without vegetables. Most of the times, I just temper and cook Khichdi in cumin and turmeric with desi ghee and sometime I do add finely chopped carrots and peas to it. But we mostly like it simple topped with a spoonful of Desi Ghee.
Feel free to add vegetables in your Khichdi, but if you want a detoxifying and light meal, just leave the vegetables and keep it simple. Also many people like to temper it with red chill, cumin in ghee while serving. I skip it as we like to have it plain with absolutely no spices.
Simple Khichdi is a satvik no-onion and no-garlic meal and it is also suitable for Vegans. You can use Vegetable oil to make. But studies have shown that Desi ghee can be conveniently consumed by vegans or those who have lactose intolerance. I am not recommending it. You can confirm from the your reliable resources before consuming it.
How to cook Simple Khichdi..
Khichdi is usually cooked in Pressure Cooker to save the time, as lentils and rice take time to cook in open pan. These days we can make it in Instant Pot too. Just dump everything, add some water and set the timings.
Cooking in Open Pan..
In a heavy bottomed open pan, add ghee/oil, add hing and cumin seeds, once the seeds crackle, add turmeric powder and the add soaked rice lentil mix.as water in 4:1 ratio to moong and rice mix.This gives Khichdi of creamy consistency. We love it this way. If you like thicker texture, add less water. Cover the pan with little space for steam to escape and cook khichdi till the grains are done.
Cooking Khichdi in Instant Pot/Pressure Cooker
Cooking Khichdi in open pan takes time.So it is usually made in pressure cooker to save the time. Initial steps remain the same as followed in Open Pan method, only difference is the ratio of water. Add 3 Cups water when cooking in Instant Pot or Stovetop Pressure cooker.
Cook Khichdi in Pressure Cooker for 3-4 whistles on medium flame and in Instant Pot ‘Pressure cook Mode(High)’ take 7-8 minutes ( sans the time it takes to come to pressure).

Yellow Moong Dal Khichdi
Yellow Moong Dal Khichdi a one pot simple meal with split yellow moong beans and rice. Creamy, soft, light on stomach with detoxifying properties!!
1/2 Cup Yellow Moong Dal/Split Yellow Moong Lentils
1/2 Cup Rice
1 tbsp Desi Ghee/Oil
1 tsp Cumin Seeds/Jeera
1/2 tsp Turmeric Powder
Salt as per taste.
Wash rice and lentils together 2-3 times in water.Soak for 15-30 minutes.
Instant Pot Method
Set the SAUTE MODE of Instant Pot on on high for 5 mins.
Add ghee to it. Once the display shows HOT, add cumin seeds. Once the seeds crackle, add turmeric powder.
Drain water from rice and lentil mix, add add to the inner pot, mix and saute for a minute.
Add water around 3 cups and Cancel the SAUTE Mode.
Cover and seal the lid, and set the PRESSURE COOKER Mode on High for 8 minutes.
Once the timer goes off, let it go on warm mode, if your are planning to have it after some time. Else, release Pressure using QRP after 2-3 minutes. Check for the doneness of grains and have it warm with a spoonful of ghee!!
Pressure Cook Method
In Pressure Cooker, add ghee, keep it on medium flame, add cumin seeds once ghee is hot.
When seeds crackle, add turmeric , rice and lentil mix, saute for a minute then add water(3 cups), cover and cook on medium flame for 3-4 whistles. Let the pressure go naturally.
Serve hot!!
I use Basmati Rice for Cooking. You can use any rice(Broken , Jasmine, Sona Masoori).
Use oil for the vegan friendly version.
Skip Hing or Asafoetida for Gluten-free version.

Ingredients
2 Cups Basmati Rice
300 Grams Cottage Cheese
3 Onions
1/2 Cup Curd
1/2 Cup Coriander Leaves
1/2 Cup Mint Leaves
1/2 Cup Boiled Peas
1/2 Cup Carrots
2 Teaspoons Salt
2 Tablespoons Lemon Juice

Paneer Biryani Recipe a super delicious Indian rice entree. Perfect to make for lunch any day of the week, but more so on the holidays and weekends.
1. Soak basmati rice for 1/2 hour 2. Here I cut 300 grams cottage cheese into pieces 3. Fry the cottage cheese pieces (This step is optional) 4. Heat 1 tablespoon oil in pan 5. Fry the cottage cheese pieces till they brown, Move them into a plate 6. Dice the onions and fry till they turn brown, They need to be deep fried 7. Heat oil in a pan and fry onions on high flame till they turn brown Move them into a plate 8. Cottage cheese pieces need to be marinated first 9. To a bowl, add 1 cup curd. 10. Beat it till it becomes smooth 11. Add 2 teaspoons chilli powder, 1 1/2 teaspoon salt or salt to taste, 2 teaspoons coriander seeds powder, 1 teaspoon cumin seeds powder, 1/2 teaspoon garam masala powder, 1/2 teaspoon turmeric powder, 1 1/2 teaspoon ginger garlic paste and mix 12. Add fried paneer and mix, 13. Add 2 tablespoons lemon juice and mix 14. Add 2 tablespoons oil and mix 15. Add 2 green chillies, 1/2 of the fried onions, 1/2 of the coriander leaves, 1/2 of the Mint leaves, boiled peas, carrots, any other vegetables and mix 16. Let it sit for 15 minutes 17. Letís prepare rice in the meantime 18. Fill more than half of the pan with water Add 1/2 teaspoon salt, 1 teaspoon oil, whole garam masala and close lid 19. Let the water boil 20. Add soaked rice and mix 21. Let the rice cook till up to 70% 22. Drain off the water 23. Take a pan with thick base Spread 2 tablespoons clarified butter (ghee) on the base of the pan Spread a layer of 1/2 of cooked rice on the bottom 24. Add the marinated cottage cheese pieces next 25. Add a layer of fried brown onions on top of it, Add Mint leaves and coriander leaves, Spread another of rice and sprinkle coriander leaves and Mint leaves 26. Add brown onions and 2 tablespoons clarified butter (ghee) Add 1/2 cup water to the bowl used to marinate paneer and add this water the rice 27. Close the lid tightly or put a weight on it 28. Make a wheat flour dough and seal off any holes 29. Heat the pan for 5 minutes on low flame 30. Put another pan below the biryani pan after 5 minutes and cook for 10 minutes on high flame 31. Cook for 15 minutes on low flame 32. Cut off the stove and open the lid after 10 minutes Serve hot with gravy or raita

{Get 1/4 cup of chopped french beans.
{Make ready 1/2 cup of green peas.
{Prepare 1 cup of fresh curd.
{Make ready 3/4 cup of water if cooking in a pot.
{Prepare 1 tsp of red chilli powder.
{Make ready 3 tbsp of oil or ghee.
{Make ready to taste of salt.
{Make ready 1 tsp of Biryani masala:.
{Get 1 inch of cinnamon stick.
{Get 4 of cloves.
{Make ready 4 of green cardamom.
{Get 1 of single blade of mace.
{Get of Topping the layers:.
{Take 1/4 cup of fried browned onions.
{Get 4-5 of strands of saffron.
{Take 2 tbsp of warm milk.
{Get 1/4 cup of fresh mint leaves.
{Take 2 tbsp of oil or butter or ghee.
Instructions to make Veg Dum Biryani:
Cooking rice for veg biryani recipe:.
Rinse the rice very well in water till it runs clear of starch. then soak the rice for 30 mins in enough water. after 30 minutes drain the rice. heat water first in a deep bottomed pan. add all the whole spices. cook the rice till the grains are 75% cooked. drain the rice in a colander and keep aside..
Preparing biryani masala powder:.
In a spice grinder, grind all the spices mentioned for the biryani masala to a powder. keep aside..
Making vegetable gravy for biryani recipe:.
Heat oil in the pressure cooker or pan. add the thinly sliced onions. saute them on a low to medium flame, till they get golden. then remove 1/4 cup of the fried onions and keep aside..
Now add the ginger-garlic paste to the 3/4 of the browned onions in the cooker or pan. stir and saute till the raw aroma of ginger-garlic goes away. now add the freshly ground biryani masala & red chilli powder and stir..
Add the mix chopped vegetables and stir for some 3-4 mins on a low flame. reduce the flame and add the whisked yogurt slowly, keep stirring it..
Now add water and salt. stir very well and cook the vegetables till it gets tenderize..
Assembling and layering Veg Dum Biryani:.
In a small bowl take 2 tbsp milk. add saffron strands and mix well. keep aside for 10 to 15 minutes..
Arrange half of the veg gravy in a pan, now spread half of the cooked basmati rice on top of the veg layer. sprinkle half of the mint leaves, 1 tbsp oil/ghee and the saffron milk..
Also add half of the fried onion evenly on this layer. top this layer with another layer of veg gravy. then again the rice layer. and finally with mint leaves, 1 tbsp oil/ghee, saffron milk and fried onions and cover the top with aluminium foil..
Then first heat up a tava and then keep the veg biryani pan on the tava on low flame for 20-25 minutes or till done..
Serve dum veg biryani hot with some raita, pickle, salad and papad..
