This recipe for a French Dip Sandwich has a tender, juicy beef chuck roast with melted provolone cheese on toasted French rolls. It is served with a tasty dipping sauce. Just right for a comforting meal!
Ingredients: 1 3-4 pounds beef chuck roast. 1 tablespoon olive oil. 1 onion, thinly sliced. 4 cloves garlic, minced. 1 cup beef broth. 1/2 cup dry red wine. 1/4 cup soy sauce. 1 tablespoon Worcestershire sauce. 1 teaspoon dried rosemary. 1 teaspoon dried thyme. Salt and black pepper, to taste. 8 French rolls. 16 slices provolone cheese.
Instructions: Warm the oven up to 175F 350C. Warm up the olive oil in a big pan over medium-high heat. It will take about 34 minutes on each side to brown the chuck roast. Move the roast to a Dutch oven or roasting pan. Put the garlic and onion slices in the same pan. About 3 minutes of cooking will soften the food. Red wine, soy sauce, Worcestershire sauce, rosemary, and thyme should all be added to the pan. Bring to a simmer and stir in any bits that have turned brown. Pour the mix over the roast in the Dutch oven or roasting pan. Put a lid or foil on top. It should be baked in a hot oven for three to four hours, or until the beef is soft and can be easily torn apart with a fork. Take the roast out of the oven and give it a few minutes to rest. Strain the cooking liquid and set it aside for dipping sauce while the roast rests. Cut the French rolls in half down the middle and set them on a baking sheet. Toast them a little in the oven. Cut the roast into thin slices across the grain. Put slices of roast beef and provolone cheese on the bottom halves of the rolls. Put the sandwiches under the broiler for one to two minutes, or until the cheese melts and bubbles. Serve the sandwiches with the cooking liquid that you saved to dip them in.

This Paleo-friendly Instant Pot Balsamic Pepperoncini Pot Roast is a savory and flavorful dish that's perfect for a hearty and comforting meal. The balsamic vinegar and pepperoncini peppers add a tangy kick to the tender beef roast, creating a delicious combination of flavors.
Ingredients: 3-4 pounds beef chuck roast. 1 cup beef broth. 1/2 cup balsamic vinegar. 1/4 cup pepperoncini peppers, sliced. 1 onion, thinly sliced. 4 cloves garlic, minced. 2 teaspoons dried oregano. 1 teaspoon dried thyme. 1 teaspoon sea salt. 1/2 teaspoon black pepper. 2 tablespoons olive oil.
Instructions: Use black pepper and sea salt to season the beef roast. Turn on the "Saut" setting on your Instant Pot and preheat the olive oil. Once the beef roast is browned from all sides, take it out of the Instant Pot and place it aside. Add the garlic and onion slices to the same pot. Cook for two to three minutes, or until they start to get tender. To deglaze the pot, add the beef broth and balsamic vinegar, scraping down the sides. Add the sliced pepperoncini peppers, dried oregano, and dried thyme. Mix thoroughly. Place the seared beef roast back into the Instant Pot on top of the mixture of pepperoncini and onions. Shut the Instant Pot lid, choose "Manual" or "Pressure Cook" mode, and turn the valve to "Sealing." Simmer for sixty minutes under high pressure. After letting the pressure naturally drop for ten to fifteen minutes, manually release any residual pressure. Lift the lid carefully, then turn the pot roast out onto a platter. As desired, cut or shred the meat. Top the pot roast with the Instant Pot's balsamic pepperoncini sauce and serve. Savor your Instant Pot Balsamic Pepperoncini Pot Roastit's Paleo friendly!

A tasty and easy stir-fry dish for a weeknight dinner is this Beef & Broccoli Fried Rice. It's a family favorite because of the flavorful sauce, crisp broccoli, and tender ground beef.
Ingredients: 1 lb ground beef. 2 cups broccoli florets. 3 cups cooked rice, cold and preferably day-old. 2 cloves garlic, minced. 1/4 cup soy sauce. 2 tablespoons oyster sauce. 1 tablespoon vegetable oil. 1 teaspoon sesame oil. 1/2 teaspoon sugar. 1/4 teaspoon black pepper. Green onions, chopped, for garnish.
Instructions: Combine the soy sauce, oyster sauce, sugar, and black pepper in a small bowl. Put aside. Over high heat, preheat a large skillet or wok. Add the minced garlic and vegetable oil. For about 30 seconds, stir-fry. While cooking, break up the ground beef into small pieces and add it to the skillet. Cook until browned. Stir-fry the broccoli florets in the skillet for two to three minutes, or until they begin to soften. Pour in the sesame oil after adding the cold cooked rice to the skillet. For three to four minutes, stir-fry, breaking up any rice clumps. Cover the rice, broccoli, and steak with the sauce mixture. Stir-fry for a further two to three minutes, making sure the sauce coats everything thoroughly. Take off the heat and add some chopped green onions as a garnish. Enjoy while hot!
