Spicy “Just wing it” chicken & champignons à la sheiruki

Read first please:

Fuck it, I wanna share my favourite recipe creation so far because I'm proud of it. All amounts are estimates (Hence, "just wing it"). Also, know that I'm literally just fucking around in my kitchen; I know jack shit about cooking besides "tastes good" and "doesn't taste good". I cooked this as dinner for myself without any side dishes so I'll view this as one portion. Can be split in 2 if served with something. I'd probably go with a type of flat bread...

For 1 Portion you’ll need:

Chicken steaks/breasts (~400g)

Champignons (250g)

1 Onion

Harissa paste (hot paprika & spice paste found in many MENA dishes)

Tomato paste (concentrated)

Puréed tomatoes

A few pods of cardamom

Sweet paprika powder

Allspice

Sugar

Extra virgin olive oil

3 cloves of garlic

Salt

Pepper

Chili flakes to taste

Sesame seeds (garnish)

Spring onions (garnish)

Something lime or lemon-y (garnish)

1 flat and 1 deep/spacious frying pan

You could probably do everything in one pan but I used two because I first tried searing the chicken in all of the marinade and thus couldn't get that nice, roasted aroma.

Marinade:

Add a generous amount of olive oil to an airtight or at least well sealed container. Peel and press the 3 cloves of garlic (you want garlic purée) and add them to the oil. Add ~2 tablespoons of tomato paste & 1 Tablespoon of Harissa paste (guessing values here but you want more tomato than Harissa). Add ~ 1 tablespoon of sweet paprika powder and ~½ tablespoon of freshly ground allspice. Roast, Peel and add the cardamom (I think I used 3 pods) & maximum a piled tablespoon of sugar. Idk if honey would work here but the types of honey I have were too malty. You want a sweet touch. Mix it all well.

Prepare your chicken, put it in the marinade, close your container and give it a good shake. Put it in the fridge and let it rest for a day (shake in between). The olive oil will eventually congeal slightly but that doesn't matter; the moment you add it to the hot pan it’ll become liquid again. Your chicken may still look pale but don't be fooled.

Frying:

Always make sure you really heat up the marinade-oil to kill off potential bacteria carried by the chicken.

1. Dice your onion and put it aside

2. Quarter your champignons (unless you got the super small ones) and put them aside

3. Take a normal frying pan, add a bit of the marinade so you don't have to add extra oil unless absolutely necessary, and fry your chicken at high heat until it's nicely seared on the outside but not cooked through yet. “Extinguish” with a splash of puréed tomato (~100-200 ml, you don't want to make soup). Turn the heat to low and let it cook for a bit while you focus on the champignons.

4. Take a deep pan, add the rest of the marinade, wait until it's hot and add the onion. Sear at high heat until glassy. Add the champignons and sear the until they shrink and turn brown (taste to check if they're good. They shouldn't be too mushy).

5. Add the chicken-tomato mix, stir well, reduce the heat and let it all cook together.

6. Add salt, freshly ground pepper (black), chili flakes and potentially more harissa to taste. Stir.

7. Once everything has a nice brownish coating of sauce/marinade*, check if your chicken is juicy but completely white inside.

*There can be a bit of extra sauce but most of it should be coating. It mustn't swim in sauce.

8. Garnish with chopped spring onions, sesame seeds and something “fresh” (I used chopped lemon balm but something lime-ish would fit even better. Get creative.)

cheap and easy vegan recipes I eat everyday bc i’m poor and lazy

I get asked pretty frequently what I eat or what I cook so I decided to just put a day’s worth of food in one post to refer people to haha. 

coffee subjective, but this is my favorite

some kind of intense cold brew concentrate (I’ve been using the brand Cool Brew in the mocha flavor) 

almond milk

nut pod creamer (hazelnut is my fave)

liquid stevia sometimes, like 5-10 drops

breakfast -- avo toast I don’t usually eat breakfast, but if I do this is a safe bet. also I don’t think I need to tell you how to make this but yeah, this is how I do it

bread (I like the Ezekiel low sodium but probably 90% of breads are vegan use whatever you want)

small-medium avo depending on how many slices you’re making  

spices: garlic powder, onion powder, tajin, nutritional yeast, red peper flaks, lime juice, black pepper

lunch -- salad self explanatory you can do whatever you want. my everyday:

baby spinach

extra firm tofu, one serving

bell pepper

avocado

nutritional yeast

dressing (my all time favorite is the herb de provence from the whole foods house brand but again theres a million vegan dressings)

dinner -- veggie tortilla(ish) soup no lie I eat this almost every day and I never get sick of it but I’m weird like that. I don’t measure anything tho so taste varies every time haha. 

this is super great for meal prep it makes like 8-10 pint sized servings that I put in mason jars and I eat it with half an avocado and a shit ton of nutritional yeast.

4 c veggie broth+ 4 c water, or 8 c of either, whatever you want as a broth base

red onion, chopped

minced garlic

1 jalepeno

1 bell pepper

can of petite diced tomatoes

can of black beans

1 zucchini

1 yellow squash

~ 1/2 c frozen corn

2-4 T (or to taste) agave nectar or another sweetener

~ 1 T soy sauce

lime juice

1 block extra firm tofu, cut into lil like 1/2 inch cubes

you can add cilantro for authenticity but that shit’s nasty so you do you

spices (to taste, but start with maybe 1 tsp each): salt/pepper; chili powder; garlic powder; onion powder; chipotle powder; cumin; coriander; nutritional yeast; tajin; cayenne (use less haha)

- I make mine in the instant pot but if you don’t have one just saute the onion, garlic, and peppers, then put everything except the tofu, beans, and corn in the pot and bring to a boil. while that shit goes I recommend baking or air frying the tofu until it’s crispy (like 30 min at 400). when the veggies are as tender as you want them, then add the beans, corn, and tofu.  - if you do have an instant pot just saute everything I said above on the saute setting, then add everything except the tofu, corn, and beans and use the soup setting on 5 min. add the left out stuff when it’s done

apples w/ cinnamon and natural peanut butter

cucumbers: when I tell you I have been OBSESSED with these and i’ve hated cucumbers my whole life. but I chop up two English cucumbers then dress them with salt/pepper, onion and garlic powder, and Italian dressing. thank me later

pretzels and hummus: I’m pretty gluten intolerant so I like the gf good and gather ones from target and the original hummus from good and gather as well, but most pretzels and plain hummus are vegan

dates w/ peanut butter: cut pitted dates in half, fill them with pb, then freeze them. they’re amazing like this but if you dip them in chocolate.. omg. I use the Lily’s extra dark, but there are plenty of other chocolates that are cheaper and vegan. I usually eat these as a dessert but sometimes I get home from work and they HIT.

A loud crack resonates in the room as you stretch your legs. You had to practice for your upcoming competition which was in about six weeks. The world rushes under you as you twirl your body for one last flip, feet hitting the ground. Stretching your arms out to balance, you frown to yourself. It didn’t feel as fluid as it should’ve been. Maybe you should’ve run a little faster? Perhaps another step just before? You thought about it as the music changes for your next set. 

You hear a shrill whistle come from behind you, making you jump a few feet into the air. The intruder giggles shyly, making herself visible.

“Darnit Mina!” You suck the air from your teeth. “Don’t scare me like that!!”

She places her hands together in apology. “Sorry, sorry!! I just wanted to see how you were going with practice!”

The girl snaps her fingers all of a sudden. “Talking about the practice, that looked so COOL!” Her arms flail about as she describes your performance. “You ran so fast, and you flipped so many times I don’t think I could’ve counted it all on my fingers!”

You laugh, nervously rubbing the back of your neck. “Thank you. My competition is in a while, so I thought it would be good to practice to see if there’s anything to improve on.” 

Mina hums. “I get what you mean, reminds me of when I used to compete in dance competitions more often!”

She thinks for a minute, her weight all pushed on one leg as you look at her in curiosity. 

“...Mina?”

“Maybe you should try starting back there a bit more? If you can?” She says, pointing to a point in the mat which was slightly behind your starting position. “You seemed to start the whole thing too fast, kinda takes away the beauty of your running start.”

You blink. You didn’t expect that. Well, it wasn’t too bad of an idea, plus, you needed to touch on it anyway.

“Sure, just rewind the music, please?”

“Gotcha babes!”

The song starts up, and you ready yourself at the new starting point. You allow a few more steps before you go into your round-off. Your hair whips up with a flick of your head, landing skilfully. Mina gives you thunderous applause for your performance, her whistle sharp even with the music blaring in the background. 

"I got it on tape!" 

You sidle up beside her, watching yourself on the tiny mobile screen. It did certainly look good, even though your face looked a bit too concentrated. She holds back a laugh.

"You focus too much." Her suppressed giggles only worsen. "Makes you look funny~"

You roll your eyes, lips curling. 

"I could say the same for you and dancing."

Mina pokes out her tongue in refute. "Whateverrr!~ Let me see your other sets!!"

So the day continues with you retouching on your routine, sometimes getting some good advice from Mina. You'd catch her jiving to the music occasionally, it would make you stumble and giggle, resulting in you falling to the ground or Mina catching you before you hit your head. 

The day comes to an end, or at least, your energy was. Your sweat gleams off your skin, giving you an evening glow. Mina walks over to you with a bottle of cold water.

"Drink," she says, "you'll feel better."

With a small nod, you take the bottle, letting the liquid contents flow down your throat. The cool water invigorates your system and you stand, finishing about half the bottle in one chug. You wipe your mouth with your sleeve, handing the bottle back.

"Thanks."

You were about to go back to training, but you notice that Mina didn't walk away. She had simply put down the bottle, glancing at you at the corner of her eye. You watch her.

"You... okay?" You ask, approaching her. The pink alien twiddles her thumbs together, seemingly embarrassed. Normally, Mina was upfront and confident, so seeing her like this was... cute, to say the least. 

"It's just, this looks super cool, and I wish..." She bites her lip. "I wish I did gymnastics so I could practice with you. I feel kinda bored standing here and just videoing you, even though it's so cool watching you."

The statement hangs in silence for a moment, almost like it was written on the air. You break the silence with a giggle.

"We can try doing a pose together, I can teach you."

You extend your hand out to her, like in one of those bishounen animes. Even without the sakura petals, she takes it. You lead her onto the mat.

"Since you're flexible, it'll be easy for you to do most poses." You pat the mat. "But since you're stronger than me, I think it's best if you're on the bottom."

A devilish smirk makes it way to her face. "Sure..~"

You land a light slap to her arm as you got into position. “Just sit down here with your knees up.”

Mina sits on the mat like you told her to, hugging her knees to her chest. 

“Alright.” You stretch a little bit. “I just need to....”

You place both of your arms on her shoulders, facing your hands away from her whilst your body faces her. You go upside and into a headstand, lowering yourself down to her level.

“You okay?” You ask, your lips almost brushing hers. You watch as her pink complexion grows into a magenta shade. She doesn’t say anything, but your lips connect, and that was all you really needed as an answer.
