The school year finally ended... I hate college SO much :( but I am alive!! I beg for some crumbs of thoughts on Sunday... -chubby darling anon who is very much alive and finally got a mitsuri scale figure <3

very poignantly the hopeless romantic type. he’s always functioned as a ‘singularity’ of sorts and over the years developed a certain fondness of it, even if it hurts. it’s worth noting he vividly reminds me of the line ‘i miss the comfort in being sad,’ from nirvanas ‘Frances Farmer Will Have Her Revenge on Seattle.’ he’s the type of partner to always be stuck in that self-absorbed martyr mindset a little bit.
pragmatic to a fault. Sunday is deeply a skeptic, take his departure from the harmony in favour of the order, as an example. it’s cool because it means you’ll never have to worry about any technicalities but it also means he has a hard time letting go of control or being spontaneous.
very into more subtle romantic gestures and an absolute gentleman. you’ll have flowers at your door at least once a week and he makes sure to take all of your preferences into consideration when planning dates (he will be the one planning). keeps his hand on your lower back most of the time, the waist is far too scandalous!!
not a big texter. he prefers speaking face to face and will call if he can’t come see you. that said, he’ll make sure to like or respond to all of the silly pictures and messages you send, even if it’s a dry ‘haha’ or just a heart. occasionally, you’ll find that he’s sent you a letter, ask about and he’ll shrug and say he simply wanted something more heartfelt if he’s to communicate written. he’s got a special stamp to seal the ones he sends you.
grabs your phone when you go to show him something. no explanation i just feel it in my bones.
although he’s no singer, he’s still a classically trained musician. i imagine he was taught the violin but went on to learn his preferred instrument, the harp, himself. he’s a bit shy about playing so rather than asking, just wait until he thinks it’s late and you’re not around to hear; he’s got quite the set of fingers.
…speaking of fingers, my bread and butter, he’s beyond skilled with playing you. while he enjoys getting down to business, getting to leisurely spread you open and thrum against all your nerves gets him going. could spend hours having you laid out, in his lap, on the floor, wherever, just gently coaxing you open, wet, and pliant for himself.
off of that, he likes you best worn down to soft edges and weak desperation. getting to play the saviour, making you come undone, has him stiff in his pants.
lots of sweet praise and subtle degradation. things like, “you want to be good for me, don’t you my sweet?,” or, “now, now, don’t get greedy on me. be patient, silly thing, and i’ll appease all of your foolish whims,” annddd, “come now, you’ve been so well for me, angel, don’t ruin that with any useless whines.”
he’s not one for being too harsh against you but push the right buttons and you’ll get a ‘dumb’ or ‘stupid’ here and there. Sunday doesn’t curse but he knows his way around how to make you feel inferior and looked down upon.
he likes the power play of staying fully and pristinely clothed while your completely nude, save for maybe a pretty collar he’s got you belled with. if you’re real trouble, say maybe a no good criminal causing problems on Penacony and once arrested you’re at his disposal and oh so pretty, he’ll find a nice muzzle to fix you with.
strikes, no pun intended, me as the type to have an affinity for riding crops over anything else for punishments. you’ll get the same sugarcoated degradation while he comments on how you’re not even good enough to be so close to his gloved hand that he just must use the crop!! (he likes the pretty bruises it leaves).

favourite book(s): lmao i love the percy jackson series, probably one of the first series that got me into writing when i was much younger. it also quenched my special interest in mythology! i specifically love battle of the labyrinth! i don't read as much as i like but i do like the witch hat atelier series (it's a comic tho so idk if it counts?)
currently reading: tevinter nights! trying to catch up on some lore for the next dragon age game hehe
favourite tv show(s): arcane (god tier!), adventure time, and skins (i've been rewatching this series for like the fourth time BOOF BOOF!). i always feel like i need to create a list of show's i've seen bc i know i have more that i really enjoyed but my memory is... garbage (also the bear 💀)
favorite food: i love a good bowl of clam chowder in a bread bowl, first time i had it i felt like anton ego from ratatouille~! i love a good menudo or pozole, honestly soups have my whole heart !

the skeleton key | chapter five: a violet affair
Mark and Dave had gotten their goods within the day, but I was more concerned as to whether or not I could hang out with Alex again. I knew for a fact that I had to have time away from the bakery, but then again, I had my worries that I could lose my job there if I took too much time off. The tour in question was two weeks, and I had all of ten days for vacation for the year, and naturally, I hated the idea of having to take all those days off in concession lest I wanted to head out somewhere over the summer or for Christmas.
One thing was for certain and that was the fact that I wanted to be in Seattle and Eugene. I had only been to Seattle once before, and it was before my life as a baker, and I needed to seduce Alex with the donuts from Eugene. I giggled at the thought of making him a special black and white donut in honor of his gray streak. A black donut with a line of a pearl across the top and the kiss of cookies and cream, and I would make him a full baker’s dozen, all for him. I remembered that Valentine’s Day was upon us, and thus, I knew that I could make him something for that day. I had no idea as to what his situation was, but I had the desire within me, the desire to give him something that he could take home with him and indulge to his heart’s desire.
I couldn’t really explain it but he brought out a strange itch in me. I suddenly had the feeling to bake all manner of Jewish food and make sure that I had day-olds all for him, because I knew for a fact that he would swing by during the day, even if he was about to leave and head off to this next stint of touring.
I had clocked in early that morning with the memory of the night before still etched in my mind. I never got that other guy Eric’s number, but I was certain that he and Marcy had hit it off when my eyes were on Alex and Stu. All I could recall from the walk back to the car was hearing his laughter behind me and his offering to see us again when the time came. I had no clue as to what that meant, but I had my hunches.
I had set out the croissants with ham and cheese as well as the new ones filled with greens and cream cheese as a play on spanakopita when the front door opened.
I recognized that head of smooth, fine blonde hair as it made its way into the room.
“Oh, hey, Jerry,” I greeted him.
“Hi! I thought I’d get here early so I could tell you the big news.”
“New Alice In Chains album?” I quipped as I wiped my hands on the very bottom part of my apron. He laughed out loud at that, complete with a clap of his hands.
“No, but it is in consideration, though! I was going to tell you that I’m embarking on a big tour this year. A big grand tour, if you will, a big chunk of which will take place out here in the Golden State.”
“I was just going to ask, what about here in California?” I confessed to him, to which he kept up that smile and leaned in closer to me.
“It’s not for a while, like I won’t perform here in L.A. until late September,” he continued. “I’m still inviting you and Marcy Playground to come in and join me along the way.”
“You know I’d be more than happy to,” I assured him. “Shall I bring a pie or a cake along with me?”
“Surprise me,” he decreed, complete with a slight hooding to his eyes as if he was seducing me. He leaned in closer to me just so I could drink in his musky but soft cologne on the side of his neck and all along his face. “I mean that, too. I want you to surprise me.”
I had the idea to make him an erotic cake once I saw him again, but I nipped it off right then because I had no idea as to how he would react towards it.
“You know, we have a rye bread that we make with pale ale and oats,” I told him. “We also have Bailey’s cake and cupcakes for St. Paddy’s Day coming up here soon, too.”
“Ooh, that sounds good,” he confessed. “I’m not much of a drinker, though.”
“The alcohol bakes right out of it all, so we’re left with the mere flavors of the Bailey’s and the ale, too. The cake and the cupcakes are utterly decadent and indulgent because there’s lots of chocolate and even some espresso mixed in.”
“Oh, man, you’re killing me.” He leaned away and ran his fingers through his hair. “I should tell you that my birthday is the day after St. Patrick’s Day, too.”
“Oh, wow! I better get on prep, then.” 
“And I just might see you then, too.” Jerry flashed me a wink and then bowed out of there, and I was left with a warm flushed feeling in my face as a result. I turned my attention to the plate of croissants right next to me, and a part of me wanted to chase him down and offer him one, but he was already long gone at that point.
I set the plate on the counter before me when the door swung open again, and that time I recognized the frizzy head of black hair split in two with a streak of gray like a vein of quicksilver. Those eyes, not as big and pool-like as they were the night before.
“Hi,” I greeted him.
“Hi.” Alex returned the favor with that lopsided little little smile filled with those buck teeth.
“I haven’t decided yet,” I confessed to him as I folded my arms over the top of the counter.
“That’s okay! Take your time with it and think about your work and all the trappings that come with it.” He approached the other side of the counter, also with his arms folded over the top edge. I reached down right next to me for the plate of spanakopita croissants, especially since I remembered they were kosher.
“Care for a croissant?” I offered him.
“Ooh, oh my,” he remarked.
“They’re filled with spinach and cream cheese.”
“So like spanakopita!”
“Exactly! They’re also kosher.”
“Oh, beautiful.” He ran the tip of his tongue along his bottom lip and showed me that mischievous smile once again.
“A part of me wants to eat better,” he confessed. “You know, continuously take better care of myself as I get older.”
“Being a baker has allowed me to get more intimate with my ingredients,” I explained. “For example, I am an absolute stickler for all things fresh.”
“As you should be! Something about being a baker and resorting to stuff out of the box or a jar…” He shook his head at that, and then he reached for the croissant on the top and leaned against the counter’s edge as if he was examining something up on the shelf behind me.
“You know, there’s tables out back,” I told him.
“I’d rather be here,” he confessed to me. “To be honest, I’m feeling a little… something something between the two of us.” He held the croissant up to his full cherry lips as if he beckoned a bite, but he never did. He instead locked his eyes with my own and kept that smile plastered across his face. 
We were alone in the bakery.
“Let me kiss you,” he begged to me. “Please, we’re alone now. I’m wanting to feel you. I’m wanting to feel something right now, and I’m wanting to try something, too.”
“I got the craziest idea earlier,” I began again, “it’s so stupid, though.” I chuckled and shook my head.
“Can’t be that stupid,” Alex assured me with a shake of his head and a folding of his arms across his chest. I nibbled on my bottom lip, and I noticed the little twinkle in his eye all the while. 
So it began.
“We should start baking erotic cakes here in the bakery,” I suggested in a low voice, and he raised his eyebrows at that. “A half dozen cupcakes with my lips molded on top in frosting and fondant. Or a cake in the shape of your dick. Or a cake with your dick on top and me made of modeling chocolate while I’m giving you the mother of all blowjobs.”
“Scandalous,” he blurted out, albeit with a straight face.
“Oh, well… it’s not like we have a lot of big gorgeous Jewish men with long beautiful dark hair and cute little noses come through that door,” I pointed out with a shrug of my shoulders. I kept my eye on the full tip of his nose, and I thought about kissing him there just to give him what for.
“So you wanna kiss me?” I asked him.
“Please, let me kiss you.”
“Come back here and kiss me,” I returned the favor to him. He picked up his spanakopita and rounded the edge of the display case to meet up with me, but I led him into the back room instead, just so we could have all the privacy in the world.
“I should probably tell you that Marcy’s coming at some point today,” I told him. “She never said as to when but all I know is it’s going to be at some point during my shift.”
“So, we better make this quick and to the point,” he quipped.
“Or, we go slow and low and let Marcy walk in and see us,” I suggested to him, which in turn made him gape at me.
“Alison!” he hissed at me. His phone vibrated right then, and he took it out of his jeans pocket for a quick glimpse at the screen.
“Who’s that?” I asked him as I spotted what appeared to be a woman’s name on the screen.
“Oh, no one… just my girlfriend,” he told me, to which I gasped at that.
“You’re a bad, bad boy,” I teased him with a shake of my head and a wag of my finger.
“You think so?” he retorted to me with a flick of his eyebrow.
“You are,” I said. “Be careful, baby, I could hit her up and tell on you.”
“You wouldn’t,” he chuckled, but I showed him my tongue and let it slip in between his lips like the filthiest secret he could ever imagine in his life. He held the croissant right before his chest, and I had no idea as to how he was going to eat it.
“I’m a bad boy and I’m gonna give it to you good, my sweet baker,” he whispered to me.
“Sweet baker with a mysterious boy from Israel,” I retorted.
“Poland, actually. We probably could trace the family name back to Israel, though, if we were able to do it.”
“Interesting! And… are you going to eat that croissant?”
“Of course! I think I’ll eat it once we…” He set it down on the table next to him and unbuttoned his jeans, much to my surprise. I could see that he had a little chubby going in between his legs, right underneath the thin fabric of his briefs.
“When’d you say Marcy was coming in?” he asked me.
“Like any minute,” I replied.
“Okay, so we better get this shit going…” But before he could lunge for me, I beat him to the punchline and I put my arms around his thick waist. I locked my lips with his, and I could feel him undoing the knot of my apron at the small of my back. My hips already began to buck from the feeling, and more so as he leaned his back to the wall off to the side: we were protected by the cabinets and the hood over one of the ovens, and thus, no way anyone could see us.
I let the apron slide off my body, followed by my pants. I spread my legs out to clue him in.
“Go ahead and touch me there,” I whispered to him. “Your fingers. My clit.”
He licked his lips and used those long guitar player fingers to feel me right where it tickled. I gasped and shuddered from the feeling of his fingers on the head of the nub.
We were doing it. We were doing it in the back room of the bakery right next to one of the ovens.
“To the left,” I whispered to him. He rubbed those rough fingers on the nub on the left side, and I could feel myself growing moist from the feeling.
I then reached down for his dick tucked away in his underwear. I was going to make that dick so wet whether he wanted the inside of his underwear soaked or not. I was going to make him pay for going behind a woman’s back and for not eating the spanakopita as of yet.
I tugged it out of hiding and fondled him with both hands. I tugged on his flesh as if I was pulling on a thick rope. I gazed into his face all the while: I kept my eyes locked onto his, and I was going to keep it up until he was wetter than me.
I could feel something liquid on the inside of my palm, and I knew he was ready. I spread my legs even more and I bent my knees. He pressed his back to the wall as I ground in deep.
“I just thought of another idea for an erotic cake,” he suggested in between gyrations.
“Go on,” I whispered to him.
“You… have your…” He scrunched his eyes shut and made a noise that sounded like he was choking on something. “…you have your hand on my… on my… on my…!”
I pressed a finger to his lips to silence him. I lifted up a bit so he could breathe, and then I leaned over his body so I could be face to face with him.
“I know,” I whispered into his lips. Alex closed his eyes and let out a silent moan, and I could feel something warm right near the back of my thigh. I glanced down to behold his fully erect, messy dick with the line of pearls trickling out from the tip and onto the floor. I needed to mop, anyway.
“You’ve got a hold on me forever, Alison Chains,” he whispered to me; his voice was tender and throaty, and I wanted to caress it down forever as he had said, even when I let him off the wall so he could gather himself and eat his spanakopita.
When he said my nickname, Jerry burst into my mind. And I knew that there was no way that I could explain it to him when I saw him again.

What would you say is the best place you’ve been to on vacation? I’ve always wanted to visit New Orleans but just the thought of the humidity kills me 😵‍💫
Club Med in Turks and Caicos (I don’t know why there is “Turks” in the name since it is a Carribean island but whatever, lol) . That particular Club Med (which was adults only, so no kids) had perfect crystal clear ocean water without any waves (just the way I like it) and the BEST food. I can’t speak for all Club Meds in the world but only the ones I have been to.
The quality of food may vary from Club Med to Club Med. But let me tell you, I have been to five star hotels all around the world but those fancy hotels’ open buffet can not hold a candle to the food at that particular Club Med. Even just their bread table was like twenty feet long and they had a zillion types of bread like even white chocolate bread and they had every type of cuisine and every type of food you can imagine. 🤤.
Club Med is all-inclusive, so you do not use your wallet during your entire stay, and alcohol is free too, so even at the beach I would drink lots of margaritas and pina coladas that I want. They also had restaurants at Club Med (not just the open buffet one but actual restaurants where you can be served), again all free of charge, but I didn’t even bother going to their restaurants because their large restaurant with the open buffet was consistently out of this world and world-class. My hat is off to their chefs.
They had pools too but I never ever use a pool if a crystal clear and flat (no waves) sea or ocean is in front of me which is a zillion times better than any pool.
I looked for my pics that I took at that Club Med, but I couldn’t find them. They may be on my old computer. If I find them one day, I will share here.
But within USA, I would say the best place I have been to is New Orleans followed by San Francisco. And Seattle has a special place in my heart and I lived in Seattle for six months. I initially went to Seattle due to my immense interest in grunge music. I also have been to so many other cities in USA, from Chicago to Ohio, etc.

striking a balance- i asked david to house sit while i went to seattle and i asked him what groceries he wanted. smoked salmon, and fresh bread- i'm leaving it on the counter and fully prepared for him to bail on me at the eleventh hour. all i'm going to do differently is put the bread in the fridge instead of leaving it on the counter and i'll ask my sister to pick up my package if it arrives. i'm expecting to be disappointed but will be pleasantly surprised if david decides to be reliable.
this morning i was "someone special" and yesterday i was his bunny again, and he picked me up and kissed me in the parking garage. he told me he didn't want to stay too late because otherwise he wouldn't find the willpower to get out of my arms. it's sort of painfully satisfying, seeing him struggle with his feelings for me- but the truth is that i'm in pain too. i want a peaceful and stable relationship. knowing that he could abandon me at any moment isn't exactly a great feeling. one of the last serious talks we had about our relationship escalated and i said- "what, you've already decided that you're going to leave again?" and he just didn't say a word. and i want to take it as confirmation of my worst fears, but there's also a distinct possibility that in the silence was not a confirmation of my fears but rather an intensely vulnerable expression of his. the truth is that all relationships can end at any second and you'll probably survive and find new ones, and you're always going to have yourself in this world but you're always going to carry around bittersweet memories of people you used to love. and you're always going to wish you'd been different. none of your frantic efforts to avoid abandonment will be sufficient, ever. because the truth is that people can and will abandon you even if you do everything right. it has nothing to do with you. but it's a bitter pill to swallow. nobody really wants to be abandoned. it doesn't feel good and i resent that we have to put a positive spin on being abandoned and relationships with people we love imploding catastrophically or choking on the smog as they die- relationships are not lessons, they're not for us to learn about ourselves or to determine what we like, and what others can do for us.
and maybe i can say i should just be in a relationship where i can trust the other person to pull through for me- but the truth is that i've never trusted anyone completely, and it's pointless to try, because when you set your expectations that high you are inevitably going to be disappointed. i would maybe trust my mom more than anyone else because she's responsible but i am sure that entrusting her with my house keys would warrant a lecture about something after the fact. but i'm just not a very trusting person. i want to be but i'm not. and everyone disappoints each other. the idea that nobody will disappoint you is a total fantasy- the measure of love is the way in which we take accountability for disappointing others. it's not about an absence of disappointment.
i have enough experiences to last me a lifetime. i want to learn the rest of my lessons by wisdom. i want to learn as many lessons as i can through love and connection and security and curiosity. i don't want to be compelled to change by pain. the pain is going to come anyways. but i don't have to confine myself to a life of suffering and disappointment.

Holy Week

Last Sunday marks the start of Holy Week. The failure to commemorate Holy Week had been to our personal detriment. We’re missing out on celebrating the most significant events in the human history, and we’re also missing out on comprehending what those events will mean for our salvation and for all of us. So, if you wish to gather the sense of joy that the followers had when they had understood that Jesus rise from the dead during the first Easter Sunday, and then go with them by the sorrow, pain, darkness, fear, and confusion of that Thursday, Good Friday, and Saturday.
For us to be reminded of the importance of these days, here are the brief explanations of what is celebrated and commemorated on Palm Sunday, on Maundy Thursday, on Good Friday, on Holy Saturday, and on Easter Sunday.
What’s Holy Week?
The Holy Week is one important week for Christians all throughout the world. The Holy Week is the last week of Lent, starts on Palm Sunday and this is the Sunday just before Easter. The Holy Week is the time when the Catholics gathered to remember and to participate in Passion of Jesus Christ. This Passion was the last period of the life of Christ in Jerusalem. It spanned from when Jesus arrived in Jerusalem up to when He had been crucified.

How Are Catholics Celebrating Holy Week?
There are four special ceremonies to commemorate the events about the Passion of Christ from His coming to Jerusalem, when the palm branches were positioned in His path, by His arrest during Holy Thursday and the Crucifixion during Good Friday, up to Holy Saturday, that day that the body of Christ lay at the tomb.
The peak of Liturgical Year is Easter Triduum—from an evening of the Holy Thursday to an evening of the Easter Sunday. Although chronologically in three days they’re liturgically a day unfolding to us the union of Christ Paschal Mystery. A solo Triduum celebration marks the finale of the season of Lent and guides to the Resurrection Mass of our Lord during Easter Vigil.
Liturgical services that will take place during Triduum are:
• Mass of the Lord Supper •Good Friday of the Lord Passion •Mass of Resurrection of our Lord
Palm Sunday

It recalls Jesus’ coming in Jerusalem. The Palm Sunday is famous as such due to the faithful will taken palm fronds that are use in participating during the reenactment of the arrival of Christ in Jerusalem with the procession. While in the Gospel, Jesus come to Jerusalem riding in a donkey to those townspeople praises who laid small branches or palms, fronting him as the sign of homage. It was the customary practice for those people of great esteem.
Maundy Thursday

It commemorates the final or the Last Supper, when Christ Jesus consecrated wine and bread. During the morning, the bishops normally gather with the priests from their own diocese for Chrism Mass or the day close to the Holy Week that will work best for Archdiocese. This Chrism Mass for Seattle Archdiocese had been celebrated on 11th of April, 2019. They bless the holy oils during their Mass. The feet washing took place during Mass of the Lord Supper at night.
Good Friday

This is one of those darkest days for Catholics. It will cover the arrest, trial, and the crucifixion of Jesus. His death and his burial are memorialized also. The events during Good Friday are remembered during Stations of the Cross, the 14-step devotion, habitually prayed during Lent season and especially during Good Friday. The Living Stations may be prayed during 9:30 in the morning. The Stations of the Cross can then be prayed during 3:00 in the afternoon.
Good Friday is the fasting day within the Church. Normally, there is no celebration and no Mass of the Eucharist during Good Friday. The communion comes from the hosts consecrated during Holy Thursday. The Church bells are not rang or silent and the Altars are left empty. The muted, solemn atmosphere is then preserved until Easter Vigil.
The Holy Saturday

It remembers the day that Jesus spent while at the grave resting. Easter Vigil took place during the end of a day at 8:30 in the evening since the latest liturgical day starts at sunset, and the vigil starts at sunset during Holy Saturday when outside the church, wherein the Easter fire has been kindled and Paschal candle has been blessed and then will be lit. The Paschal candle may be used throughout that Easter season, remaining during the sanctuary of church and all throughout the coming rime at baptisms and at funerals, reminding everybody that Christ will be our light and life.
After the finale of Liturgy of the Word, that water of baptismal font will be solemnly blessed and candidates for total communion or any catechumens are initiated to the church.
What’s the Noticeable Alterations in the Church for the Holy Week?
During Good Friday and also Holy Saturday, noticeable alterations will take place in a manner churches are decorated. There are lots of churches, particularly in Europe, cross and statues are covered in black or purple or simply take out the decor. Holy water has been taken out from the church also and the church bells and Holy Saturday remain silent until Gloria during Easter Vigil.

Is Sourdough Bread Better For You? It Depends On The Loaf

I can’t remember a time when sourdough bread wasn’t in my life. Long before there were artisan bread bakeries in the Pacific Northwest, I was a kid in California cutting my teeth on chewy San Francisco sourdough. After we migrated north, every trip to visit family in Napa and Calistoga included buying several loaves of sourdough to take home and freeze. But beyond being delicious, sourdough has some unique health benefits, too.
Sourdough is the oldest way of making bread, using a starter populated by naturally occurring wild yeasts and lactic acid bacteria species to ferment flour, water and salt. Not all sourdough tastes obviously sour — that depends on the varieties of lactic acid bacteria in the starter, as well as the bread-making process. The bacteria piggybacks on the flour, so one advantage of making a sourdough starter from organically grown wheat or other grains is that it will have a more diverse array of bacterial species. Rye flour-based starters also have more bacterial diversity than wheat-based starters.
Of course, there’s one problem: Some breads that call themselves sourdough are actually “Sourfaux.” If the label lists ingredients such as vinegar, vital wheat gluten, oil and dough conditioner, those are clear-cut clues that the bread is an industrially produced loaf that probably took an hour to make, whereas true sourdough bread takes 18-36 hours.
Real sourdough has three ingredients — flour, water and salt — but can also include some commercial yeast. That last part is controversial, but many bakers who use a sourdough starter also add some commercial yeast to the dough so the bread will enjoy a long, slow fermentation and reliably rise. (Wild yeast in sourdough starter can be persnickety, responding differently based on ambient temperature and other factors.) While sourdough starter may contain upward of 20 wild yeast species, researchers at Tufts University found that the dominant yeast species in sourdough starters is Saccharomyces cerevisiae, which is also the species used in store-bought yeast.
Now for those health benefits. It’s important to note that just because sourdough fermentation involves beneficial bacteria, sourdough bread is not a “probiotic” food, because much of the bacteria and yeast used to make sourdough bread are inactivated during the baking process. The real benefits of sourdough come from the fermentation process itself. For example, fermentation not only produces a better-textured, more flavorful loaf of bread than quick industrial baking processes, but it can make nutrients in the flour more absorbable by our bodies.
Fermentation can also break down oligosaccharides, a type of fermentable carbohydrate found in wheat, rye, and barley that can trigger uncomfortable intestinal symptoms in some people with irritable bowel syndrome. Many of my IBS clients find they can tolerate sourdough bread, but not other wheat-based products. Fermentation also activates enzymes in the grain that can break down some of its gluten — although not quite enough to be gluten-free, so it’s not considered safe for people with celiac disease.
It’s commonly thought that sourdough fermentation reduces the glycemic index of bread, but a study published in January in the journal Advances in Nutrition found that results from research studying that feature is not at all conclusive.
Finally, if you want to produce your own sourdough bread at home, here are two tips that radically elevated my husband’s home-baked bread: Bake in cast iron Dutch ovens and adopt Ken Forkish’s 2012 book “Flour Water Salt Yeast” as your bread-baking bible.

Spaceburgers Every August, the Grant County Fair returns to Moses Lake, Washington. With it comes the fair’s most well-known food: Spaceburgers. Two slices of white bread go in a special sandwich-making machine that seals inside a mixture of seasoned ground beef, sauce, and shredded lettuce. At a blistering 400°F degrees, the machine toasts the bread in a mere 30 to 40 seconds while also crimping shut the sandwich edges and cutting off the crusts, making flying saucer-shaped burgers.  Simple though they may be, Spaceburgers draw thousands of eager fair-goers, some of whom order as many as 20 at time, without lettuce, so they can freeze the burgers for later enjoyment at home. The Lioness Club of Moses Lake has sold Spaceburgers for decades as a fundraiser for local community services. According to Frogg McMains, a past president of the Lioness Club, the recipe for the sauce and the burger meat hasn’t changed in 50 years. “I’ve tried to get them to change the meat recipe because we need to watch our sodium intake,” adds McMains, who by day works as head cook for the Moses Lake School District. “I’ll get that done one of these days.” The burger seasoning is top-secret, as is the sauce, made by Lioness members in giant batches at Chico’s Pizza Parlor in Moses Lake. So I bought a stack of product promo cookbooks yesterday.
Was in an antique store out in the middle of nowhere and there was an open zipper bag with like 14 thin paper cookbooks in it. (Dylan... call me.) The label said “8 cookbooks, $9.50″ so maybe somebody put something into this that wasn’t supposed to be there. With that in mind, I removed four or five that I didn’t like, zipped it back up, and paid the woman for the batch.

Not sure what the surprising difference really is but this 1966 cookbook was put out by Carnation condensed milk, and the photo above is a panorama that shows on the back cover she also made orange cupcakes.

No, really, look it up. So the fine folks at Fisher Mills of Seattle -- still the makers of must-have scones at fairs around Puget Sound -- are telling you what they’d tell you anyway in this 1958 tome. The cover is another panorama of the Washington or Oregon seacoast, with the beach on the back. One bonus note about this one: The previous owner glued recipes from newspapers and the backs of boxes on some pages that presumably are blank, one of which is a Betty Crocker cake mix recipe for banana nut bread that ends with “High Altitude: not recommended.”

Ad copy inside says of the red boxes, “the Sun-Maid Seedless is the same raisin as the Nectars but without the special process which makes seedless raisins into Nectars; there is a flavor difference between Nectars and Seedless and the flavor-fans are divided about 75% for Nectars and 25% for Seedless.” Okily, sure, I guess. But hmm, despite the Nectars being more popular Sun-Maid doesn’t make them anymore? And has replaced brownish muscat raisins for golden raisins in a yellow package? Save me, Mr. Hooper!

After two and a half years, I finally got to get back out on Long Island in Willapa Bay! The barge tours held by the Friends of Willapa NWR, as well as Refuge staff, were put on hold due to the pandemic. But small-group outdoor activities are basically considered to be very low risk these days, so instead of several dozen people getting on the barge and going around to the southwestern side of the island to take the shortcut to the Don Bonker Cedar Grove Trail, we instead were shuttled over in small informal tour groups of less than a dozen at a time to the dock just on the other side of the water. It meant a longer hike--two miles to get to the cedar grove trail--but it was a perfect day for it weather-wise, with just a smattering of rain in the morning to green everything up, and then cool and mostly overcast the rest of the day.
There's nothing quite like the grove--almost literally. Almost the entirety of the Willapa Hills have been clearcut at least once over the years to fuel the endless demand for timber, which means almost all of the ancient cedars and Sitka spruce that once covered the land were taken down. Boeing is situated in Seattle, BTW, because they wanted all the old growth spruce for early planes, which is why they're often scarcer than old growth cedar.
Yet here on Long Island, most of which was also clearcut to include as recently as the 1960s, 274 acres of old growth cedar remain, and former Washington congressman Don Bonker was a huge champion for saving this special place from similar devastation. You can still see dozens of cedar trees, some of which are a thousand years old, that remain as a testimony to what greed and ignorance stole from this land. We have only fragments of the grand forests that were once here, but as I walked along the trail that went through younger forests--some consisting of nothing more than thin, close-growing "doghair" young trees--I imagined what it must have been like for this entire island to be the same as the grove.
Many of the ancient cedars, like the one at the center of the photo, have multiple leaders--the top portion of the trunk that continues to grow upward. Because the island is so close to the ocean just on the other side of the Long Beach Peninsula, and the grove is high on the island, the tops of the trees frequently break in the heavy winds characteristic of our winter storms here. Multiple breaks throughout a tree's lifetime are not uncommon.
I got to spend several hours on the island, more than I've been able to in the past. Guests had the choice to either self-guide, or to go along with volunteer tour guides like me. My group hovered around six people, and the individual members changed throughout the day as people wandered off or joined in. But it was pleasant, and I got to share some of my favorite things about this place with guests. Plus there were all three colors of banana slug--perfectly ripe (yellow), overripe (yellow with black spots) and banana bread time (black)!
