Just to spite that sunglasses guy, here's my favourite recipe! I made it myself :] It's easy too!
Ingredients:
2 cups of cooked rice
1 block of tofu (Or 6 oz of meat of your choice)
about a cup or so of your desired vegetable (this measurement doesn't matter nearly as much as the last two, just an estimation) (I like to use a frozen cauliflower and carrots, sometimes I add lima beans, corn or peas)
Salt, pepper, garlic powder, and soy sauce (Optional ground ginger and sesame oil)
yields 3 servings
First, cook your rice however you like. You can use a rice cooker, use that instant rice shit, or use a cup + 2 tablespoons of water per cup of rice in a normal pot and cover with a lid, then cook until all the water is absorbed)
Dice your tofu, (Or thinly slice the meat) then put it in a bowl with about a tablespoon of salt and a generous shake of pepper, garlic powder and ginger. Let it sit for at least 20 minutes then drain the liquid. (If you're using meat, replace the salt with 2 tablespoons of soy sauce and don't drain)(You can use this time to defrost/steam the vegetables of your choice or get your rice started :] or just do whatever, I'm some emo on Tumblr who likes cooking, not a cop)
add a coating of oil to a pan and raise it to medium-high heat Add your tofu or meat and cook until golden brown (This may take a while).
Once the protein is done, add your rice to the pan and mix well. Remove from heat and add a generous pour of soy sauce, garlic and pepper, and no more than a teaspoon of ginger. If desired, add a SMALL amount of sesame oil, no more than a capful. That shit is STRONG)
Once the tofu, rice, and sauce are well mixed, you can add your vegetables. Add seasonings to taste. And you're done :D

You know something that until you have a dietary restriction where you can’t eat a very common and specific ingredient that you don’t think about?
Spices.
I have to do a full background check and forensic analysis to find spices that are celiac safe, meaning: not processed near wheat or barley. Wheat and wheat protein are often used as anti-caking agents, which also makes things like shredded cheese a risk, but SPICES. The very cheap store-brand spices all come with a “may contain traces of wheat, nuts, and soy” warning. I don’t take risks on that warning if I don’t absolutely have to. The name-brand spices that are two to three times more expensive don’t come with a gluten free label, and googling the companies will often throw up a “the PRODUCT is gluten free, but the FACILITY isn’t a dedicated gluten-free facility so we can’t guarantee it’s totally safe” warning that drives me up the wall.
This happens with all kinds of things—grits, nuts, lunch meat, baking chips, candy, GRITS AGAIN BC IT IRKS ME HOW A NATURALLY GLUTEN FREE FOOD IS SO OFTEN PROCESSED ALONGSIDE WHEAT THAT I HAVE TO LOOK UP SPECIALTY BRANDS THAT COST A WHOLE ARM AND A LEG TO SHIP—but today’s particular irk is about spices. Specifically paprika.

Cargill, the largest privately held company in the U.S. with $165 billion in 2022 revenue, is investing for the long game in plant-based food and a world which it forecasts will need 70% more protein over the next three decades.
The agribusiness giant got into the market later than buzzy startups including Beyond Meat and Impossible Foods, as well as traditional rivals Tyson Foods, Hormel Foods and Smithfield Foods, but it is growing its alternative-protein portfolio including lab-grown beef, chicken and fish made from animal cells.

Cargill is hardly a household name among consumers — even though it’s the largest privately held company in the U.S., with $165 billion in revenue in its fiscal year 2022. The 158-year-old Minneapolis-based agribusiness giant produces a slew of branded and private-label meats and food ingredients and offers a wide range of agriculture-related products and services.
In the last few years, flying somewhat under the public radar, Cargill has also become a formidable player in the plant-based meat industry, which has come back down to Earth after its meteoric rise about a decade ago, when venture-capital-backed disruptors Beyond Meat
and Impossible Foods came on like gangbusters. Traditional meat companies, including Tyson Foods, Hormel Foods and Chinese-owned Smithfield Foods, jumped on the bandwagon, and the marketplace was soon flooded with faux beef, chicken and sausage.
Strategically, Cargill joined later in the game, and is now positioning itself to win the food fight that its competitors started.
In February 2020, almost a year after Beyond Meat’s IPO, Cargill introduced private-label plant-based patties and ground products for global retail and foodservice markets. Later that year, the company came out with a branded line — called Crave House, featuring plant-based burgers, ground, meatballs and sausages — for those same markets, as well as e-commerce channels. Additionally, Cargill began marketing several plant-based protein ingredients, made from soy, pea and wheat, to food and beverage manufacturers worldwide.
“We are a unique player,” said Florian Schattenmann, Cargill’s chief technology officer and head of research and development. “We have everything from the ingredients to the final meat-processing and distribution, and don’t play in fancy brands. That’s our strategy. I wouldn’t say it’s tempered, but deliberate and thoughtful, knowing where our strengths are and not overbuilding in watching the market.”

So, as someone who's gluten intolerant, I get asked a LOT what foods I can eat.
I've also had people flat out tell me that foods that ARE safe for me to eat, aren't.
So, here's a handy little basic guide for all you people out there who don't know much about this, but are curious:
What Is Gluten?
Gluten is the name of a group of proteins often found in wheat, and some other grains. It's also the thing that makes your bread stick together and give that bready goodness, and help your foods stick together, like a kind of glue.
Foods That Contain Gluten:
Wheat
Wheat varieties and products like spelt, durum, semolina, couscous, farina, farrow, kamut, einekorn, wheat bran, wheat germ, emmer, seitan
Rye
Barley
Triticale
Malts (From barley)
Anything made with flour from the above grains.
Alcoholic beverages made with the above grains. (Most distilled drinks are fine, however, but that needs to be checked out on a case by case basis)
Crumbed and battered foods with the above grains.
Yeast, depending on source.
Foods That DON'T Contain Gluten:
Fresh fruits and vegetables.
Potatoes
Beans, seeds, legumes and nuts that are unprocessed.
Rice
Amaranth
Arrowroot
Buckwheat
Corn — cornmeal, grits and polenta labeled gluten-free
Flax
Hominy (corn)
Millet
Quinoa
Rice
Sorghum
Soy
Tapioca (cassava root)
Teff
Unprocessed meats. Like steak, chicken, pork...
Bacon.
Milk.
Foods That May Cause A Reaction:
Oats.
Yep, oats, while in themselves gluten free, (and apart from cross contamination issues, which can occur with all the above grains), have a protein called Avenin, which is similar to gluten, and can cause a reaction in some people like gluten would.
Seems easy enough to get around, right?
Wrong.
Remember I said above gluten acts like a glue?
Wheat flour is cheap.
Wheat flour is a very common thickener. I've personally seen it in ice cream, soups, stews, even soy sauce.
It's also used in a lot of corn or rice products, like crackers, tortillas, corn chips, noodles (yes, I've seen it in rice noodles), and sometimes the seasoning on potato chips. (There is nothing more infuriating than finding rice noodles containing wheat. It's just cost cutting, and stupid.)
Some of these products don't need wheat flour to hold them together, but wheat is cheap, and can bulk out other foods. It can also make sauces look better, and give a nice texture.
It's used in a lot of packet gravy mixes.
Barley is a commonly used flavouring. I've seen it in soups, stews, chocolate...
Yeasts can also contain wheat traces.
Even foods that don't have wheat as an ingredient, can contain traces.
A lot of processed foods have wheat in them. Again, cheap and glue.
Glucose syrup can be gluten free, depending on the source.
So basically, I have to read every label. Some products are gluten free, and then the company decides nah, and doesn't change the label (This has happened to me). Thankfully a lot of gluten free products label as such, so if you've seen foods you're sure are gluten free labelled that way, this is why. It encourages gluten free people to buy it, and the buyer doesn't have to read every freaking list of ingredients. Which is exhausting.

You didn't think I was going to make a post like this without some humour in it, did you? Of course not! So here's the dishonour list, of conversations I've had.

That's only part of it, though. One theory about the boom in food allergies is about how actually our diets aren't that diverse. We're eating the same few things processed into many different forms. We're over-eating the same ingredients to the point that our bodies are overwhelmed.
Well, that's silly, right? Like how could I personally develop soy-intolerance? Sadly, most of the food in the grocery store contains soy in some form. There's the obvious tofu (soybean curd if you didn't know) and edamame (dried soybeans) and soy sauce, but also bread, cereal, pancake mix, cake mix, muffins, etc. made from soy flour. They also use vegetable (soybean) oil. Chocolate and other candy use emulsifiers, so soy lectin. Honey butter contains no honey or butter, but instead is a blend of high fructose corn syrup, soybean oil, and artificial flavor and color. There's soy fillers and soy protein concentrate and on and on. I can't entirely avoid it, so here's to never knowing what not having to react to soy proteins is like, to perpetual gut problems.
Gluten allergies many have quite a lot to do with the sheer amount of wheat used in processed and baked and breaded foods. Sesame is a relatively new allergy.
And people do still die from allergic reactions. Food companies just don't actually care until it affects the bottom line enough. Any sales lost from consumers dying is more than made up for with the pennies saved by overusing the cheapest, most subsidized ingredients.
