I made jeera cookies and kachumber salad (with homemade chaat masala) and was going to make red lentil dal with panch phoron but I burned my tarka and ruined the lentils, so I made matar aloo instead. I think I've perfected my vegan restaurant style curry base--it uses a full half cup of coconut based heavy cream. still not as creamy as takeout, but that's to be expected.

Royal Saffron Paneer (Shahi Paneer)
Serves 4
Ingredients:
1 tablespoon neutral oil
1 onion, finely chopped
400g ripe tomatoes finely chopped, or one 14oz can
4 green cardamom pods, bruised
2 cloves
1 teaspoon ground turmeric
1 teaspoon Kashmiri chili powder, plus extra to serve
1 teaspoon grated jaggery or sugar
1 teaspoon fine sea salt
450g/1lb paneer
1/4 teaspoon saffron strands
1 teaspoon rose water or kewra water
125ml (1/2 cup) thick cream
Instructions:
Heat oil in a pan and cook the onion until soft and golden. Add the tomatoes, cardamom, cloves, turmeric and chili powder. Season with jaggery and salt. Bring to a simmer and cook for 15 minutes.
Meanwhile, cut the paneer into bite sized cubes and put in a bowl. Pour over boiling water, cover and set aside for 10 minutes to soften. (There is no need to soak if you are using homemade paneer).
Toast the saffron in a dry pan for just a few moments, you want to wake it up not scorch it. Tip into a small bowl and crush to a powder with the back of a spoon. Add a tablespoon of hot water and leave to infuse.
When you are ready to serve, drain the paneer and add it to the hot pan of spiced tomato. Simmer for 2 minutes. Stir in the saffron infusion, rose water and all but a dribble of the cream. Warm through.
Serve with the reserved cream, white dropped lacily on saffron yellow, and a red dusting of chili powder.
My notes: --Add the tomatoes last in the first step if doing a tarka. Start with the oil, then add whole spices, then the onion, then the ground spices. The tomatoes will add lots of moisture and bring down the overall temperature, so they need to go in last. --You can also blend the tomato/spice/onion mixture before adding the paneer if you would rather it be smooth. Remove the cloves and cardamom first. --You can find various substitutes for double cream in the US; I used a coconut milk based heavy cream substitute. --Taste at the end; if too acidic due to the tomatoes, add a bit more sugar. --I served this with basmati rice cooked with ghee, onion, clove, cumin seeds, cardamom pods, and a cinnamon stick.
I made shahi paneer with saffron threads and rose water and it's sooooo good.
