These scalloped potatoes are a great side dish for any event because they are creamy and crunchy at the same time.
Ingredients: 4 large potatoes, thinly sliced. 2 cups grated cheese. 1 cup heavy cream. 2 cloves garlic, minced. Salt and pepper to taste. 2 tablespoons butter, melted.
Instructions: Warm the oven up to 190C 375F. Put half of the sliced potatoes in a baking dish that has been greased. Add salt and pepper to the potatoes along with half of the minced garlic. Grate half of the cheese and sprinkle it on top. Add more layers of potatoes, garlic, salt, pepper, and cheese each time. Cover the layers with the heavy cream. Add melted butter on top. Put foil over the baking dish and bake for 40 minutes. Take off the foil and bake for another 20 minutes, or until the potatoes are soft and the top is crispy and golden brown. Before you serve it, let it cool down for a while. Have fun!

Ingredients: 4 large potatoes, thinly sliced. 1 cup raw cashews, soaked for 4 hours. 1 cup vegetable broth. 1/4 cup nutritional yeast. 2 cloves garlic, minced. 1 tablespoon lemon juice. 1 teaspoon Dijon mustard. 1/2 teaspoon onion powder. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon paprika. Fresh parsley, for garnish.
Instructions: Before you start cooking, heat the oven to 375F 190C. Soak cashews in water for a while. Add vegetable broth, nutritional yeast, garlic, lemon juice, Dijon mustard, onion powder, salt, pepper, and paprika to a blender. Mix until it's creamy and smooth. Put half of the sliced potatoes in a baking dish that has been greased. Add half of the cashew cream mix to the potatoes. Do it again with the rest of the cashew cream and potatoes. Put foil over the baking dish and bake for 40 minutes. Take the foil off and bake for another 20 minutes, or until the potatoes are soft and the top is golden brown. Before serving, sprinkle with fresh parsley.

Repeat the layers with the remaining potatoes, onions, cheese, and cream mixture. Top with diced butter. Cover and cook on low for 6-8 hours or until potatoes are tender. Serve hot and enjoy!

BTS of my roasted & broiled chicken with a side of scalloped potatoes and asparagus.
I’m beginning to understand that cooking is really a stewarding of ingredients. It begins early in the mind, and continues at the store when selecting produce. It’s cleaning the ingredients gently and cheerfully, and sequencing the preparation over time with patience and forethought.
For this meal, I enjoyed shopping all ingredients for the epis and getting the chicken from my local butcher. I bought two potatoes thinking I would have another mashed potato with gravy kind of week. But I woke with a random hankering for scalloped potatoes and had to give it a try.
I salted the chicken and let it sit overnight. The next day I spread epis throughout the same pieces, and let it spend another night marinating before spending all afternoon letting it cook in my toaster oven (yes, toaster oven). I let it for roast for 1.5-2 hrs, checking it over and over. I broiled it right when my potatoes were done in the oven, checking it over and over for that brilliant brown.
I got lucky with the potatoes. Only two potatoes made this amazing spread! I boiled them for 10 minutes before slicing them up and positioning them in my little dish. I had my Magnolia cookbook open to her scalloped potatoes recipe, but I also had a can of Campbell’s cream of mushroom soup handy 😏. So, I did reach for fresh garlic and onion sautéed in butter, but I skipped the flour and heavy cream. I just put a splash of almond milk into the bechamel and folded in some cheddar cheese rather than Gruyere. Distributed the ‘bechamel’(?) atop and into the potatoes. Topped with fresh black pepper and Parmesan cheese. Placed in the oven and hoped for the best! Just before it was done, I sliced some green onion and chives on top and returned it to the oven for a few more moments.
I quickly steamed some asparagus and plated everything, but how would it taste? I sit down to cut into the chicken first and man I was so happy after that first bite. It was perfect. And I wasn’t just happy to eat it, but more happy to know that I can serve this for a guest one day.
