I mean, assuming someone gets stuck in the Winter Court, what would determine if they get moth wings or firefly wings (or other)?

Other than specific wing types and such being tied to each Court, it's up to you! You can either tie it to something that makes sense for the character/sona or just decide based on what looks nice (⁠ ⁠ꈍ⁠ᴗ⁠ꈍ⁠)
