Lemon Rice, Baked Chipotle Beans with Tofu, with Salsa (Fisch Style)
Ingredients for 4 servings, adjust as necessary Important! If you don't have canned chipotle beans, use: - 200g of canned and drained black or kidney beans - 1 generous tablespoon of tomato paste - either some chipotle paste or, if you have access to those, 1-2 whole chipotles - alternatively, you can use some jalapenos and some smoke salt or a few drops of liquid smoke
Mix the beans, the tomato paste, the chipotle paste or the alternative options together and either use a blender or a blending stick to blend them into a smooth homogenous paste. If it sticks to your blender too much, add a bit of water or ketchup, set aside until needed. If you have canned chipotle beans or have prepared them as described above, continue with the other ingredients: - 2 cups of rice - 2 cups of water - 1 lemon - 1 cup / 200g of plain yoghurt of choice - 4 large tomatoes - 2 large red bell peppers or 3-4 pointy peppers - 1 avocado - 1 cucumber - 2 small or 1 large brown or red onions - garlic (no measurements given because in this house we answer the question of 'how much garlic?' with YES) - half a block of smoked tofu - some oil for frying (I prefer rapeseed), more oil for the salad - some red wine vinegar or apple vinegar - salt, pepper, sugar, a bay leaf - dried oregano, rosemary and tarragon (or fresh if you have), ancho chilli - 1 can / 200 g of chipotle beans
1. Pour rice into a pot, bring the water to a boil either with the rice on the stovetop or with a kettle and pour it on rice. Add a pinch of salt, pepper and the bay leaf. Put lid on the pot and turn off the heat, let rice soak up hot water. 2. Meanwhile, peel the onions and garlic and cut them into fine slices. Cut the tofu block into thin sticks, ca 5 mm wide. Bring oil to medium high heat in a large pan and first add tofu. Push it around a little to keep it from sticking. Once tofu begins to brown, add half the onion and garlic and let it slightly brown as well. Add the chipotle beans and heat up the mix while stirring a few times to keep it from sticking to the bottom of the pan. 3. Cut the cucumber, tomatoes and red bell pepper into small cubes (5mm-1cm in size), transfer to a large bowl. Add the remaining half of the onion and garlic. Cut the lemon in halves and squeeze the juice of one half over the veggies in the bowl. Add the vinegar and a little bit of oil, the herbs, salt, pepper and sugar to taste. Stir until mixed well. 4. Squeeze the remaining half of the lemon's juice over the rice, remove the bay leaf and add the yoghurt of choice. Stir until well combined. 5. Cut up the avocado, remove the stone and cut into slices according to taste. 6. Prepare by dividing up the rice and chipotle-tofu-beans to 4 large bowls or medium size plates with rice on one side and beans on the other. Add salad/salsa (I really need to learn the difference) and decorate with avocado slices. Enjoy! Addition: you can mix up the ingredients as you like. I think black olives would be a great addition, as would sunflower seeds or some nuts be. You could also add crumbled or diced feta or fry some sliced or diced halloumi and add it. Or maybe make an omelette and cut it into strips. Most important is, have fun and prepare something to eat that you enjoy. Addition's addition: If you realise you made more than you can eat in one meal, even if you changed the measurements, no worries. The salad and rice can be combined to a rice-salad and stored in the fridge in an airtight container for up to 4 days. I would keep the bean paste separate though, because it gets too soggy if stored in the same container as the salad. However, if you give it a slightly more viscous texture (by adding water or ketchup), I imagine it would be a nice spread on some breakfast bread.

Do you find yourself in need of cookies because your offspring forgot to remind you about a school function and it's already 9pm?
Did you just move into a new house and want to introduce yourself to the neighbors as Those Nice Gays Who Bake?
Boy have I got a deal for you.
Cake mix cookies.
This is my go to when I want cookies but don't want to spend 6-72 hours making them.
You will need:
One box of cake mix
Half a cup (4oz/120mL) of oil
Two large eggs
That's it. The flavor of mix is up to you, and as for oil I use regular old vegetable or canola (rapeseed) oil.
Mix it all up. If it's sticky and hard to work with, cover with plastic wrap and throw it in the fridge for anywhere from a few minutes to 2 days.
Once it's chilled, roll the dough into balls. Any size you like. Drop them on a greased (or parchment lined) baking sheet. Bake at 350°F/180°C for 8-10 minutes for nice fudgy chewy cookies or up to 15-20 for crispy ones.
And you're done! I can usually get about 24-36 cookies from one box depending on size.

Cake Mix Cookies
Ingredients
1 box cake mix
1/2 cup (4 oz or 120mL) of neutral oil
2 large eggs
Procedure
Empty cake mix into a large mixing bowl.
Add oil and eggs. Stir until well combined.
If desired, cover and chill up to 2 days.
Grease a large cookie sheet, or line with parchment paper.
Roll dough into balls and place on cookie sheet.
Bake at 350°F (180°C) for 8-10 minutes.
Let cool before removing from pan.
Roll chocolate cookies in powdered sugar before baking for crinkle cookies.
Use spice cake mix and roll in cinnamon sugar for easy snickerdoodles.
Use lemon cake mix and top with a powdered sugar glaze.
Use strawberry cake mix and top with cream cheese frosting.
They're easy and there's a whole bunch of different flavors to try out.

Tantan men
Yesterday I made Tan Tan Men. It is a soupy Japanese version of Dan Dan Noodles. I did not follow a particular recipe, I used an amalgam of the best parts of different recipes I found. This recipe can be made vegan. I documented how I made it below.
Monday, I made scallion oil. I had some frozen bacon grease that I finally decided to use. In hindsight, I should have used a neutral oil like soy. Many recipes recommend peanut, canola, & rapeseed. I will use soy next time for how neutral it is. This is the only non-vegan ingredient
I wanted to make a simple scallion oil. What I used this time was 1.5 litres of oil, 12 bundles of scallions, 5 ripe Korean Chilli Peppers (I added 2 after the picture, I prefer the flavour of ripe Korean Chilli Peppers), 3 bay leaves, 1 clove, 1.5 star anise, 1 small to medium sized stick of cinnamon, ginger to taste. All of this can be adjusted to taste.
Cut the scallion greens into 4 cm pieces. The white part of the scallion needs to be cut similarly but also into 1/2 or 1/3 (lengthwise) depending on how thick it is. 1/2 the peppers, & slice the ginger into 3 mm slices. Warm up the oil to a low temp & slowly cook everything.

While the scallion oil was slowly simmering away I started the broth by soaking shitake mushrooms and kombu overnight.
Going back to the scallion oil, after occasionally stirring, the scallions became carmelised. I strained everything out and the oil was a beautiful dark amber colour. I fished out the aromatics and kept the scallions for a topping.
Yesterday, I very lightly simmered the broth, I took out the shiitake and kombu, then added soymilk. I prefer the kind that only has soy and water as ingredients.
Some recipes do not add soy milk. I like it because it makes the colour close to a tonkatsu ramen broth. It also makes the texture & flavours smoother.
I left the soup on low just below the simmering point. This broth cannot be allowed to boil. This is a good reference video.
I rough chopped the shiitake mushrooms to make an alternative to a niku-miso topping.
I pan-fried the chopped mushrooms in an oiled pan to get out any remaining water. (I had previously squeezed them over the broth.) Then added a little Pixian Doubanjiang, white miso, & soy sauce.
While the alternative niku-miso is cooking, it would be the perfect time to start boiling water for the noodles. After cooking the noodles you can reuse the water to blanch some bok choy. This is another overall reference video.
As the noodles cook, start preparing the tare & soup base. The previously linked video gives the soy sauce tare that I used. I also added tahini, scallion oil, & chilli oil. I used a store-bought chilli oil, but it can be made ahead like the scallion oil. Here is a video with a great recipe. My next project may be to follow this to make my own chilli oil.
In the serving bowl combine the tare base and the broth & stir everything together. Although it is not pictured I would also recommend Szechuan pepper and Ya Cai. Then you can add the noodles.
After the noodles are added, you can add the toppings like the niku-miso, bok choy etc. If you would like it to be even spicier you can add shichimi togarashi. If you do not like Szechuan peppercorns, you can substitute Japanese Sansho. You can also substitute the Szechuan chilli oil with Japanese Rayu (chilli oil). I typically use a store-bought one made with toasted sesame oil. This is not meant to be a strict recipe, feel free to change whatever you want. Have fun exploring. Most important of all have fun. If it's overwhelming there is no shame in getting takeout.

200g lean minced beef
1/2 teaspoon of Smoked Paprika
1/2 teaspoon of Cumin
1/2 teaspoon of dried Coriander
1/2 teaspoon of Chilli Powder
2 tablespoons of dried mixed herbs
1 handful of fresh flat leaf parsley (chopped)
2 Cloves of garlic (crushed)
1 handful of fresh coriander (chopped)
1 lemon (squeezed and juiced)
Salt and pepper to Season
1 egg(beaten)
A sprinkle of Smoked paprika
First off Make the Koftas 2 hours in advance before cooking.Gather a large bowl and combine all the ingredients together.
Once all the ingredients have been mixed together shape into balls according to the size you prefer. My Tip (I made slightly smaller than ping pong balls) then gently roll on the Palm of your hand this Will allow 10 koftas.My tip is put on a plate cover with cling film place the Kofta on top and once completed cover again this will help prevent sticking and keep their shape)
Refrigerate for 2 hours before cooking or leave overnight if preferred)
The Salad
2 large tomato (halved then Sliced)
4 cherry tomatoes (halved)
1/2 cucumber (cut lengthways and sliced at a angle)
1 Spring onion (rinsed and sliced fine)
1/2 bunch of flat leaf parsley (roughly chopped)
4 handfuls of mixed leaves
Salt and pepper
A drizzle of olive oil to blend the ingredients together
The Yoghurt Dressing
6 Tablespoons of Natural yoghurt
1 lemon (squeezed and juiced)
1 teaspoon of chilli flakes
1/2 bunch of fresh mint (picked and chopped)
Salt and pepper to season
For the dressing mix all the ingredients together in a bowl and leave in the refrigerator.
The pomegranate Syrup (available in all good stores)
By this Stage you will be ready to Start cooking. So Remove the Kofta from the refrigerator and drizzle a little olive/rapeseed or vegetable over the top and gently massage the Koftas.
Bring a medium sized frying pan to a medium heat and gently place the Kofta in clockwise and gently Cook for approximately 5 mins each side.Turn down the heat and gently Cook for a further 3-4 mins occasionally turning.
The Plating
The Good thing about this dish is that you can present it the way you want either on a large bowl or large plate.

Heat oil in a medium-sized pot. Sauté the onion on medium heat until they’re soft and translucent.Add the diced carrots and cook for a couple of minutes.
Then, add minced garlic and cook for one minute until it’s fragrant and golden.
Add flour and mix well. The mixture will become sticky and that’s exactly how you want it to be.
Then add sliced mushroom and tomatoes and cook for 2-3 minutes.
Cover with vegetable stock and add reduced-sodium soy sauce.
Add oregano or any herb that you’re using, cover the pot and simmer until the carrots are softened. Then open the lid continue to cook until the liquids are reduced a little.
Serve warm over vegan mashed potatoes, sweet mashed potatoes, quinoa, rice, or with warmed up naan bread. Garnish with fresh parsley for color.
