PERU WHERE: Anton’s Chicken (6346 Midlothian Turnpike, Richmond, VA 23225) *has since permanently closed* This place was right here in Richmond. Cerviche de Pescado with a side of Salchipapa (basically just hot dogs sliced funny on top of French fries... but salchipapa is now my new favorite word).
EDIT: Sigh... this place has closed. Sucks. I know I didn’t write a lot about this, but they were pretty good. Salchipapas!

Ceviche is a seafood dish popular in the coastal regions of Latin America and the Caribbean. As for its origin, various explanations are given. According to historic sources from Peru, it originated among the Moche, a coastal civilization that began to flourish there nearly 2000 years ago. The dish is typically made from fresh raw fish cured in citrus juices, such as lemon or lime, and spiced with ají or chili peppers. Salt, onions, and cilantro may be added, and the dish may be accompanied by sweet potatoes, lettuce, corn, avocado or plantains. As the dish is not heated, its best prepared fresh and should be eaten right away.

Had our first cerviche. SOOOOO good ~ they make it with several types of corn and sweet potatoes. Peruvians are very proud of how its many cultures (Lima, Inca, Spanish, African, Japanese, Chinese, Italian, French) have blended to create the "best food in the world."

M A D A M E G E O R G E Late post (out of acute embarrassment). A long overdue Christmas catch-up with photographer Danilo @danilophoto at Madame George @madamegeorgenz was unceremoniously terminated after the entrees by a text message “Where the bloody hell are you?” Uncle had double booked! So second time lucky! With Aunty Mandy, to reprise the abandoned 1st dinner. Owner Pablo Alvarez @pabloarrascopaz is our new best friend. He kept his mouth shtum, but his sidekick Patrick put us in exactly the same table as where we were sat earlier in the week. Cruel! We had “Quick Eats” of arancini, sesame sourdough with smoked butter and tiradito (a Peruvian speciality cerviche made from thinly sliced pieces of fresh raw fish). For mains, Aunty had the perfectly cooked lamb with garlic, on a bed of puréed spinach. Uncle had the grilled half-chicken, with onion weed and anticucho dressing. We had green asparagus, topped with Parmesan and sunflower seeds and puffed potato. Dinner at Madame George is an affirming experience. Pablo and waitstaff work hard to promote the carefully chosen dishes on the menu and we experience a Peruvian influence in the food served - with hints of Japanese because some have chosen to live in Peru. Just imagine a very empty Cockatoo Island with only a handful of people attending the @biennalesydney and viewing the talented @aiww “Law of the Journey”. Another highlight of the day was this incredibly delicious Peruvian Snapper Cerviche at @don_tapa in tiger’s milk, corn, spanish onion, coriander and fresh chilli. We did do a little research on Tiger’s milk ... Leche de Tigre, is the Peruvian term for the citrus-based marinade that cures the seafood in a ceviche.
