I particularly enjoy a Whisky cocktail in the Winter, because the flavour and smoky aroma of the spirit is warming. If you want to easy into the weekend with such a cocktail, I recommend mixing yourself an Old Fashioned. It has stood the test of time for a reason --or several, actually, from the mellow embrace of Bourbon to the suave bitterness of Angostura, the whole thing lifted up by the bright citrus notes. Simple and beautiful. Happy Friday!
Ingredients (serves 1):
1 heaped teaspoon caster sugar
2 or 3 dashes Angostura Bitter
1 teaspoon water, at room temperature
60 millilitres/2 fluid ounces (4 tablespoons) good quality Bourbon
8 ice cubes
a freshly peeled orange twist
In a mixing glass, combine caster sugar with two or three dashes Angostura Bitters.
Add water, and stir well with a bar spoon until sugar dissolves.
Add Bourbon and six of the ice cubes, and stir gently until well-chilled.
Place remaining ice cubes in a rocks glass, and strain cocktail over the ice.
Express the oils of the orange twist, and drop into the glass.
Enjoy Old Fashioned immediately.

Calvados Old Fashioned !
Ingredients: - 60 ml Calvados - 5 ml Honey Syrup* - 3 Dashes of Angostura Bitters
Garnish: - Apple Fan
Instructions: • Combine all of the ingredients in a mixing glass. • Add ice and stir for 30-45 sec. or approx. 60 revolutions. • Strain into a cocktail glass over large block of ice. • Garnish with an apple fan.
Honey Syrup:
Ingredients: - 1 part Water - 3 parts Honey
Preparation:
• Measure your ingredients (by volume). • Combine water and honey in a pot and heat it on the stove (on a low setting). • Stir until the syrup becomes uniform. • Pour syrup into a sterilized container. (I usually sterilize my bottles with boiling water.)

Sithbelle's "Southern Style" Old Fashioned (double)

1 Tbsp pure maple syrup
1 Tbsp Angostura orange bitters
1 Tbsp purified water
2 shots of bourbon (Makers Mark in the picture)
1 big ol' fuck-off sized ice cube
2 candied pecans
Mix the syrup, bitters, and water together before adding the shots.

Scurvy's Bane
1 oz Cointreau or triple sec
1/2 oz spiced rum (I use Kraken)
Ginger ale
Ice
Orange slice
Add the Cointreau and rum to a shaker with ice, then shake until very cold. Pour into an old fashioned glass and top up with ginger ale. Garnish with an orange slice.

Añejo Old Fashioned

Ingredients:
1/4 ounce agave nectar
1-2 dashes Angostura bitters
3 ounces añejo tequila
Garnish: Cherry and orange peel
Instructions:
In a mixing glass, combine the agave nectar and Angostura bitters.

Benton’s Old Fashioned !
2 oz. bacon-infused bourbon*
0.25 oz. maple syrup
2-3 dashes Angostura Bitters
Add a large piece of ice to a rocks glass, add liquids, and stir for about 10 seconds. Express the oils of an orange peel over the top and place the peel in the drink as a garnish.
*Bacon-infused Bourbon
8 oz. bourbon
0.5 oz. bacon fat
Put two or three strips of bacon in a pan, and heat gently and slowly—you want to make extra sure not to scorch or smoke the fat. When the bacon is almost cooked, pour off the liquid rendered fat into a separate container. 
You need 0.5 oz. (1 tbsp) of fat for every 8 oz. of bourbon, so start with that ratio and scale up if you desire. Combine the two in a non-reactive container and stir. Let sit at room temp for four to 24 hours, then transfer to the freezer until frozen (about 2hrs). Strain the liquid off the now-solid fat through a coffee filter or cheesecloth, and it should be totally clear. 
Since it will change slowly over time, the best practice is to keep the bourbon in the fridge. There’s a non-zero chance it could go rancid (though it’s never happened to me), so try to use it on the quicker side, within a couple weeks.
