Dahiwale Bhindi-Okra cooked in a buttermilk chickpea spice sauce served along w Methi Thepla/Paratha. Recipe: wash and prey dry the okra. Cut into 2 inch slices and sauté in 2 Tblsps oil w sliced onions and 1 chili just sprinkled w little salt uncovered, stirring occasionally and gently, until it becomes soft. Meanwhile, in a blender, add garlic, ginger, green chili, tomatoes (2) and cilantro and make a smooth paste and keep it aside. In a bowl add 1/2 cup of yogurt, 1 tsp Besan/Chickpea flour, 1/2 tsp paprika, 1/2 tsp Garam Masala, crushed Kasuri Methi/dried fenugreek leaves and mix it well until it’s a smooth paste. In another wide sauté pan, add 3 tsps oil, then add cumin seeds, Ajwain/Carom seeds, turmeric, hing/ground Asafoetida and ground coriander. Once it starts to bubble add the ground tomato masala paste and let it cook for 3 minutes. Then add the yogurt besan sauce along w a cup of water let it cook until the oil starts to separate. Now, add the almost cooked onion and Okra into this mixture. Stir gently until everything incorporates. If it’s too thick add another 1/2 cup@of water and let it cook for 7-10 minutes. Squeeze 1/2 a lemon.
