These Chewy Caramel Popcorn and Pretzel Bars combine the irresistible flavors of caramel, popcorn, and pretzels into a delightful treat that's perfect for snacking.
Ingredients: 1/2 cup 1 stick unsalted butter. 1 bag 10 ounces marshmallows. 1/2 cup smooth peanut butter. 6 cups popped popcorn. 2 cups mini pretzels, coarsely chopped. 1 cup caramel candies, unwrapped. 2 tablespoons heavy cream.
Instructions: Melt the butter over low heat in a large saucepan. Add the marshmallows and mix them in until the mixture is smooth and fully melted. Add the peanut butter and mix it in well. Take it off the heat and quickly mix in the popcorn and pretzels until they are all covered. Put the mix into a 9x13-inch baking dish that has been greased and let it cool. Over low heat, melt the caramel candies with the heavy cream in a small saucepan while stirring all the time. Cover bars with caramel, let it set, and then cut them into squares.

Cook Time: 10 minutes

It’s finally Fall weather (my favorite season) and we don’t have any more days in the 80s anticipated, so I’m declaring it officially Fall Baking Season. To kick off the season I made Apple Cider Donut cakes (@marthastewart recipe). Did a half-size bundt and then some bundtlettes for sharing. They taste like the classic apple cider cake donuts I remember from the fall fastival I worked at in high school at Tice’s Farm (I ran the cotton candy machine and the kiddie train). I love the cinnamon sugar coating on this cake (like the churro bundt that is a favorite of mine). . Side note: Tice’s Farm (Woodcliff Lake NJ) isn’t there any more. It’s a shipping center where I later worked at the Pier One imports. . This is the perfect start to autumn - a little nostalgia and a delicious treat! Here’s to a long and delightful season. Today is my little sister’s birthday and she is always asking me for chocolate chip cookies so here we are 🤣 This @marthastewart recipe for chewy cookies but I added an egg because mine aren’t large. Link to her recipe is on the bio 2 1/4 cups all-purpose flour 1 teaspoon coarse salt 1/2 teaspoon baking soda 1 cup (2 sticks) unsalted butter, softened 1 cup packed light-brown sugar 1/2 cup granulated sugar 3 large eggs 2 teaspoons pure vanilla extract 3 cups semisweet or milk chocolate chips (about 12 ounces Directions Instructions Checklist Step 1 Preheat oven to 350 degrees. Whisk together flour, salt, and baking soda in a medium bowl, and set aside. Step 2 Put butter and sugars into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 2 minutes. Reduce speed to low. Add eggs and vanilla. Mix until well blended, about 1 minute. Mix in flour mixture. Stir in chocolate chips. Step 3 Using a 1 1/2-inch ice cream scoop (2 tablespoons), drop dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Bake cookies until edges turn golden but centers are still soft, 10 to 12 minutes. Let cool on sheets on wire racks 2 minutes. Transfer cookies to wire racks to cool completely. Almost every afternoon around the 4:00pm hour, my grandma Lucy would make a pot of coffee and serve a little slice of a freshly baked sweet treat to whomever was around. Sometimes this was my grandpa Herbert, home from the firehouse, or her sisters stopping by for a chat in their Chicago neighborhood or friends who were staying with them from out of town. Sometimes Lucy baked these desserts herself, sometimes Herbert did, and sometimes they purchased them from the local German bakery in their neighborhood. Pastries, coffee cake, doughnuts, pound cake, crullers, Black Forest cake, turnovers, danishes... the desserts rotated on a weekly basis, but the routine never faltered throughout most of her adult life. Even when they went on vacation. During this small break in the day, Lucy would socialize with her sisters or play a game of cards with her visitors or chat about life with Herbert before they got busy again doing stuff around the house or getting dinner ready. After Lucy passed away in 1980, my grandpa still carried on this tradition every afternoon for the next 14 years of his life. I love everything about this. The baking, the life-long tradition, the relaxing respite. Last year and the first half of this year were so stressful I’m looking forward to clinging to all activities that promote joy, relaxation and tender in these coming months months and years. In celebration of this new found enlightenment, of the long weekend, of these two lovebirds and their coffee hour tradition, I made @marthastewart cinnamon streusel coffee cake yesterday. Chocolate Chocolate Banana Flax Seed Bread
I am still building my baking foundation, my repertoire, my vault of tried and trusted rock recipes that I am confident enough to memorize and and alter. And until I have reached a status only Martha Stewart, Julia Child, and my Aunt Jan have built, I will continue to adapt recipes to be that of a ‘Meganism’. Perhaps I will always adapt recipes. For that’s part of the beauty and fun of baking, is the opportunity get experimental; kind of like being a mad scientist in a laboratory finding the right formula!
For now, please enjoy this Megafied Chocolate Chocolate Banana Flax Seed Bread recipe adapted from SimplyRecipes, original link at the bottom of this post. Note what I changed or added with the ***asterisked-items. Read on below for the recipe and my take on the outcome of this recipe and just if it made my recipe box vault or not.
Chocolate Banana Bread Recipe

Cook time: 1 hour
Yield: Makes one 9x5-inch loaf
***I doubled the recipe because I had enough nanners I was trying to use as well as two room-temp adjusted eggs begging to be used. I also did not add any sugar to this recipe, relying on the sweetness of the bananas and chocolate chips.
Do not use Dutch processed cocoa for this recipe, only natural unsweetened.
Melted coconut oil can be used in place of the butter. The flavor will change a little and you may get a hint of coconut in the result.
There is only 1 egg and 1 teaspoon of baking soda in this recipe for leavening, so make sure your baking soda is still good! (See more info on baking soda and baking powder.)
Ingredients
***6 large ripe bananas (easily mashable)
1/3 cup melted butter
1 teaspoon salt (½ a teaspoon if using salted butter)
1 large egg, beaten
1 teaspoon vanilla extract
1 ¼ cup all purpose flour
¼ cup natural unsweetened cocoa powder
1 teaspoon baking soda
***I dashed in some cinnamon & cloves in lieu of allspice for which I didn’t have on hand. Original recipe calls for ¼ teaspoon ground allspice
***I threw in ½ bag of milk chocolate cc. Origi recipe calls for ½ cup semi-sweet chocolate chips
1 5x9-inch loaf pan
***Added ¼ c. ground flax seed
***Added 1/3 c. buttermilk
Method
1 Using a blender, food processor, or a fork, purée the peeled ripe bananas until smooth. You should have 1 ½ to 1 ¾ cups of banana purée. Butter or spray with cooking spray the inside of a 5x9-inch loaf pan. Preheat oven to 350°F (175°C) with a rack in the middle.
2 Place the banana purée into a large mixing bowl. Stir the melted butter. Stir in the brown sugar and salt. Whisk to break up any clumps of brown sugar. Stir in the beaten egg and vanilla
