Dungeon Meshi vegan recipe challenge, Chapter 4: Omelet
Ok, I really did try to make an omelet this time, but I still ended up with a scramble. I went with carrot as my mandrake substitute. This dish was just ok. Nothing special. I might try daikon next time and see what that's like. Ketchup is not something I would normally pair with eggs, but I went ahead and did it. I still wouldn't choose it as my sauce of choice, but since the lightlife bacon doesn't taste too much different from the lightlife hot dogs, it meshed will with that portion of the omelet, anyway.

When I decided to go plant-based, one thing I did was swap out some of my go-to foods with plant based options.
Here are some of my faves:
Butter: Earth Balance Buttery Spread (perfect as a margarine substitute) and Miyokos Plant Butter (as a butter substitute). Both look, taste and spread exactly like butter.
Milk: Califia Brand Plant Milks - the Organic Unsweetened Almond Milk and the Gluten-Free Oat Milk are awesome, and have clean ingredients.
Ice Cream: My personal favorite is Talenti Dairy-Free Sorbetto in strawberry or vanilla bean. So Delicious are also amazing.
Cheese: Follow Your Heart for slices, Violife for shredded and Miyokos for block mozzarella, feta and liquid mozzarella (melts like conventional mozzarella in the oven.) Daiya makes a havarti block cheese that I really like, too. In terms of queso, we LOVE Good Foods brand Plant-Based Queso. It’s got really clean ingredients.
Sour cream: Kite Hill is our favorite, but we also use Tofutti when Kite Hill isn’t available.
Bacon: Lightlife makes a really good tempeh bacon.
Chicken and Fish: Tofurky brand makes chick’n and turkey that are straight up delish. Their Chick’n is gluten-free, so I personally stick with that one. They also make turk’y cutlets that a lot of people love for sandwiches.
Ground Beef: Beefy Crumbles by Beyond are tasty and gluten-free, and have a great texture.
Burgers: If you like the taste of traditional burgers, I recommend Impossible brand. It’s gluten-free and tastes like a beef burger. My husband loves them. There are some healthier options out there, too. Dr. Praeger’s and Hilary’s are my absolute favorites!
Frozen Meals: In a pinch, Amy’s and Sweet Earth both have good options that are on the healthier side.

Here’s the thing to remember when it comes to substitutes: switching over to these plant-based versions of some of your go-tos isn’t all you need to do to lose weight and get healthy. These options are healthier in than they’re cholesterol and hormone free, but a processed food is still a processed food. I teach women how to indulge in these foods while making whole, clean foods the bulk of their diet🌱

I did the thing I tell other vegans not to do: I used a bunch of analogue items to make this steakhouse pasta salad.
Meati steak, lightlife bacon, tofutti sour cream and veganaise. Besides that, garlic, chickpea pasta, green beans, bell pepper, apple cider vinegar, leftover caramelized onions, and nutritional yeast.
It was delicious.

LotR Marathon
I've never seen the LotR movies or read the books so I figured it's about time. My mom has always loved the books and kept trying to get me to read them. I read The Hobbit in 4th grade, then could not get through The Fellowship of the Ring, but decided to give it another shot now, so I re-read The Hobbit and read the entire trilogy, and I really enjoyed them! After that, we watched all of The Hobbit movies, and are now planning to marathon all of The Lord of the Rings movies (extended editions) with friends, and 7 hobbit meals (all vegetarian). We made most of the food ahead of time and froze it so there will be very little cooking the day of. Our planned date got postponed because we caught covid but we're hoping to do it soon!
Edit now that we did it! : I updated with a few changes based on what we actually did. In total, it took us about 13 hours with all the breaks for food. We were exhausted by the end and so stuffed, but we made it and had a great time!
1. Breakfast: Full English Breakfast (veg British style Baked Beans, vegan sausage, vegan bacon, fried eggs, sauteed mushrooms, pan fried tomatoes, toast)
2. Second Breakfast: Lembas
3. Elevenses: Potato Soup for Sam (omit the bacon or use veg bacon)
4. Luncheon: Pork Pies (to make it vegetarian: for the meat we used 3x Impossible beef and 1x Lightlife Sausage since Impossible sausage has garlic powder and someone coming couldn't have garlic, for the dough we used vegetable shortening, and for the jelly we used agar agar and veg broth)
5. Tea: Seed Cake, Beorn's Honey Cakes (made this into two small loaf cakes instead), also bought mini scones from Wegman's (Vanilla, blueberry, and orange cranberry) and served with clotted cream and jam (raspberry and orange marmalade)
6. Dinner: Tom Bombadil's - "yellow cream and honeycomb, and white bread, and butter; milk, cheese, green herbs, and ripe berries gathered" - we set out all of these, clotted cream as "yellow cream", butter, bread, 4 different cheeses (blueberry vanilla goat cheese, red dragon cheddar, "bree", and coastal cheddar), blueberries and raspberries, basil, sage, rosemary, thyme, and milk.
7. Supper: Farmer Maggot's - "a mighty dish of mushrooms and bacon" (used vegan thick cut bacon found here, fell apart a lot but still tastes good)

Lightlife Smart Tenders (Original)
Always skeptical about fake meat.
Got these for half off but they were still like $6.00. Could get a big bag of crappy tenders for that cost. There were 8 tenders in the pack. Vegan junk food is expensive. Then again the whole point of my experiments is to cut down on meat and cut out factory farm stuff.
Eating these in the same way I eat normal chicken tenders (ranch and mayo for dip, I know that's not vegan, fight me).

If I had a wild night on the town and was served these I would know something is wrong about these but would still eat them. Sober me is never buying these again.
I feel like these would be a hit with nostalgic vegans that miss tenders and don't fully remember what they taste like.
Look: These look exactly like breaded potato wedges. Each bite a part of me expected potato and was disappointed by tofu.
Taste: These taste vaguely of chicken but more like excessive amounts of liquid smoke and soy milk. Not terrible but definitely not a replacement that tastes exactly like meat.
Texture: The breading is the right texture and just about the right thickness, the "meat" is just kinda tofu texture. Biting into these is not as satisfying as biting into normal tenders, not enough resistance on the teeth. Mild texture hell with the crunchiness of the breading and cloying softness of the tofu. Might just be a me thing though.
HEAVY soy aftertaste feel like I chugged a gallon of soy milk.

Dungeon Meshi vegan recipe challenge, Chapter 18: Grilled Meat (Kelpie)
Apparently both horse and sea mammals taste a bit like beef, so I made sure to have at least one beef substitute (Impossible burger). Vegan substitutes for liver are all over the place, but portobello mushrooms came up in the recipes a few times, so I used that.
For the other cuts I just went with whatever "meats" I had on hand. They did six types of meat in this one, but I only ended up doing five. All good except the Meati patty (thank goodness that's the last of it).
