Qu’ont en commun le Comptoir de SĂšze, restaurant d’hĂŽtel des allĂ©es de Tourny, et le Wooosh, restaurant-bar-dancing rue des Piliers-de-Tutelle ? Pas grand-chose si ce n’est la passion qui pousse, chacun de leur cĂŽtĂ© et Ă  leur maniĂšre, Louis LĂ©ger et Estelle Douady Ă  aimer ce qu’ils font sans avoir peur de qui ils sont.
FĂȘte de rentrĂ©e de Junkpage chez Alriq. Le directeur de l’hĂŽtel de SĂšze insiste pour m’inviter dans son restaurant : « Je voudrais vous faire goĂ»ter la cuisine du chef, Louis LĂ©ger. » C’est toujours dĂ©licat de refuser une invitation. Plus dĂ©licat encore de dire Ă  quelqu’un qui vous a invitĂ© que, bof, ce n’est pas terrible et qu’on n’écrira pas une ligne. Ou pire qu’on Ă©crira quelque chose de nĂ©gatif. À moins de travailler pour une rĂ©gie publicitaire : dilemme.
Dilemme lĂ©ger toutefois. Les repas de presse sont choses communes. L’occasion de dĂ©couvrir des endroits qu’on n’aurait peut-ĂȘtre pas trouvĂ©s dans une ville qui dĂ©tient le record de France avec Ă  peu prĂšs une enseigne pour 280 habitants, ou au contraire de consternantes opĂ©rations promotionnelles qui incitent Ă  l’ironie ou au silence.
J’avais un bon souvenir du salon des illustres de l’hĂŽtel de SĂšze oĂč j’avais rencontrĂ© Bruno PodalydĂšs et le courageux baron de SĂšze, juriste des LumiĂšres, dont la derniĂšre plaidoirie a consistĂ© Ă  dĂ©fendre Louis XVI. Pourquoi alors refuser un repas du chef Louis LĂ©ger ?
J’ai Ă©tĂ© soulagĂ© dĂšs l’entrĂ©e. Un petit pavĂ© de saint-pierre dans son bouillon au lait de coco et curry. La qualitĂ© du poisson et de sa cuisson, la sauce, jaune discret, et le fumet qui signale la grande cuisine dans la cuillĂšre, m’ont convaincu de conseiller sans scrupule dans la chaussure. L’autre entrĂ©e, une poitrine de porc fondante dans sa croĂ»te de sucs marinĂ©s, m’a confortĂ© dans ce sens. Ces deux assiettes du menu Ă  29 € ressemblaient plutĂŽt Ă  des plats qu’à des entrĂ©es. Louis LĂ©ger travaille ainsi et il a une excellente raison : « Je demande Ă  mes deux cuisiniers d’ĂȘtre autonomes, ce sont eux qui dĂ©cident pour les entrĂ©es et les desserts. On reste cohĂ©rent pour le ratio mais sinon je donne carte blanche, chacun son univers et sa crĂ©ativitĂ©. On fait du minimalisme avec des plats en quelque sorte. »
Le mot minimalisme est exagĂ©rĂ©. Les portions sont gĂ©nĂ©reuses. « À midi, il n’est pas rare que les dames se contentent d’une entrĂ©e et d’un dessert. » Le menu est alors Ă  21 €. « Un cadeau ! », estime le chef. La clientĂšle du quartier se presse au dĂ©jeuner. Le problĂšme Ă©tant diffĂ©rent le soir. Le standing de l’hĂŽtel effraie peut-ĂȘtre et il est moins facile de remplir la salle autrement qu’avec des touristes qui se rĂ©galent de foie gras marbrĂ© au chocolat et chutney de figues (15 €), de magret de canard et jus Ă  la truffe (24 €) ; « on est obligĂ© d’avoir des plats de la rĂ©gion dans un hĂŽtel, les touristes les demandent, tout comme le tartare de boeuf et la salade Caesar ».

Revenons au menu du soir. Le sautĂ© de boeuf thaĂŻ n’était peut-ĂȘtre pas assez pimentĂ© mais il Ă©tait juteux avec une cuisson parfaite sur une purĂ©e pour remplacer le riz d’usage. Le financier Ă  la noisette et compotĂ©e de banane flambĂ©e liqueur de vanille du dessert Ă©tait spectaculaire mais il y a deux spĂ©cialistes en pĂątisserie sur trois cuisiniers Ă  l’hĂŽtel de SĂšze. La cuisine de Louis LĂ©ger et de sa brigade lĂ©gĂšre est plutĂŽt du genre classicisme novateur. Ce Bordelais de 30 ans ne bouscule pas les leçons post-Ă©cole hĂŽteliĂšre de Seguin au Relais du MĂ©doc Ă  Lamarque (dĂ©sormais Ă  la retraite monsieur Seguin a Ă©tĂ© remplacĂ©) et de Philippe Gauffre (Ma maison Ă  MĂ©rignac) avec lesquels il a appris le respect du produit et une sorte de modestie. « MaĂźtriser la cuisine, c’est difficile. Se l’approprier, ce qu’on essaie de faire, c’est encore plus difficile. Inventer, tenter des trucs, improviser, c’est trĂšs trĂšs difficile ».
Au Wooosh, Estelle Douady n’a pas les contraintes d’un hĂŽtel. Elle y est seule avec une carte blanche. Il est bon que cette Landaise tombĂ©e dans la marmite quand elle Ă©tait petite puisse Ă  nouveau s’exprimer autrement qu’avec des soupes et des tartes. Je l’ai connue en mode sourdine au restaurant de La Manufacture Atlantique, mais j’avais entendu dire beaucoup de bien de son travail prĂ©alable aux 4 Saisons d’Estelle.
Je suis tombĂ© sur le cul (en fait, une banquette confortable Ă  l’étage de l’ancien Wato Sita). Je m’attendais Ă  un bon repas mais pas Ă  ce point, vraiment. La carte de septembre Ă©tait grecque, celle de ce mois-ci sera indienne. Elle change chaque mois pour ne pas s’ennuyer. Les plats nommĂ©s ci-aprĂšs ne seront donc plus de saison mais il n’y a aucune raison que le pays de Ganesh l’inspire moins que celui de Dionysos. Je suis mĂȘme sĂ»r que le meilleur restaurant indien ce mois-ci sera le Wooosh en dĂ©pit de son nom bizarre (une exclamation d’admiration dans le milieu de la mode : « Wooosh !!! » mais Estelle n’y est pour rien).
Le meilleur tarama de ma vie, un peu plus Ă©pais que d’habitude, les premiers champignons Ă  la grecque depuis le mariage de la Callas, un dakos crĂ©tois qui ne ment pas (tomate, feta et olive sur du pain) et la dĂ©couverte de la recette de fava de Santorin (purĂ©e solide de pois cassĂ©s). Cette exquise assiette Ă  partager (ou pas) coĂ»te 15 €. La salade de poulpe avec patates (un peu craquantes), herbes fraĂźches et citron (16 €) et la grillade de gambas au citron avec des jeunes pousses (15,50 €) confirment les goĂ»ts d’Estelle Douady. Les herbes, les assaisonnements impeccables, les cuissons simples. Une cuisine qui a de la personnalitĂ©, du caractĂšre. Autodidacte.
Autre exemple, mais cette fois pĂ©renne Ă  la carte car c’est un peu sa spĂ©cialitĂ©, le trĂšs japonais tataki de boeuf (18 €), boeuf marinĂ©, Ă  peine saisi et servi froid. Les plats de la carte sont aussi servis en demi-portion Ă  moitiĂ© prix. La formule fonctionne depuis dĂ©cembre 2017 en dĂ©pit d’une visibilitĂ© rĂ©duite, Ă  l’étage, et d’une carte mal mise en valeur sous une enseigne qui Ă©voque plus volontiers un bar qu’un restaurant. Le bar d’ailleurs n’est pas en reste. Les cocktails y sont excellents, par exemple le Kerala’s Jungle (vodka vanille, jus mangue et passion et Ă©pices, 8 €), une prĂ©figuration du programme d’octobre.
Dans les deux restaurants du mois, les basiques sont respectés : bon accueil, service attentionné, pain choisi avec soin, salle agréable, bon choix de vins.

Collection Auto-matic pour Wooosh, Chaussures Ligne Créateur et Ligne Bis
Pour la ligne crĂ©ateur chaussures j’ai choisi de travailler sur une sĂ©lection de modĂšles allant du plat au talon de 10cm. J’ai voulu inclure des spartiates Ă  talons haut, plus thïżœïżœĂątrale.
La ligne bis reprend le mĂȘme style mais elle est plus simple car elle doit ĂȘtre plus abordable.

For the footwear designer line I wanted to work on a selection of shoes going from flats to 10cm heels. I also wanted to include high heeled sandals that are more theatrical then the rest of the collection. 
The second line is based on the same style but simpler, as it has to be more affordable.

2019 Blancpain GT World Challenge: Sonoma Edition
What’s old is new. At Sonoma Raceway a weekend ago was the stop of the 2019 Blancpain GT World Challenge America, the first time the series, under its new name, has visited the rolling hills of Sonoma. If you are reading this and wondering what is this new series, the good news is its a furtherance of the Pirelli World Challenge continuing its 13th season under the sanctioning of the United States Auto Club (USAC). It’s the first season under the Blancpain sponsorship banner and under management of the Stephane Ratel Organization (SRO). SRO maintains promotion and management of the Intercontinental GT Challenge, Blancpain Endurance Series, Blancpain GT World Challenge Europe, Blancpain GT World Challenge America and Blancpain GT World Challenge Asia. That’s five continents of racing. The history of these events under the Pirelli World Challenge sponsorship was typically the “undercardïżœïżœïżœ to the main event at many race weekends, such as IndyCar and the WeatherTech SportsCar Championship.
Before the start of the 2019 season SRO presented a detailed plan to establish uniformity across continents in GT racing so that drivers and teams could compete on a truly global scale. Each weekend involves two 90 minute main event races with a total of 6-hours of overall track time per event. Classes are divided between Pro, Pro-Am, Silver and AM. As with the Intercontinental GT Challenge that raced the California 8 Hours earlier this year Laguna Seca, SRO events follow a pattern of maximum engagement with fans. We have long commended those series that provide opportunities to be up close to the action with the lowest ticket price possible.
However, we digress. Enough talking about the rules and organization. The real reason for paying attention was the line-up of race ready top spec racing machines. Sonoma Raceway is also home to, in our view, the most intriguing and brutish (and
er..British) cars on the track, the K-Pax Bentley Continental GTs. The Porsche 911 GT3 R is also something to behold with its familiar 911 silhouette coupled the most aggressive aero and design features you can find in a racing GT car. Of course the Ferrari 488 GT3s are fun to listen to as they are to look at. On the other hand, the Bentley’s are something on their own. Perhaps it’s because when one thinks of Bentley the initial thought is luxury and fresh leather, or soft suspension to absorb every imperfection on the road #wooosh. That would be a mistake. Bentley has a long history of motorsports achievement and Sonoma’s own K-Pax racing is writing a new chapter in Bentley’s motorsport lineage in North America. The Continental GT3s are not the refined road cars seen cruising your local golf club. They’re big British full backs serving up some attitude. That sound though. They emit a snarling rumble more akin to an all-American big block than a refined British racing machine.
Two Bentleys paired Alvaro Parente/Andy Soucek and Rodrigo Baptista/Max Soulet in the two team cars. Expectations were low as even K-Pax knew that the sweeping and rolling turns of Sonoma were not friendly to the Bentley’s abilities. Exceeding expectations, the Bentleys captured second and third place on Saturday and third place on Sunday with good pit stop strategy and fighting through the field.
It would be breakthrough weekend for the new-gen Porsche GT3 R as Patrick Long and Scott Hargove would take the win for Wright Motorsports. Turn on a television most weekends and somewhere around the world you are likely see Porsche factory driver Patrick Long fighting for a podium or win in a Porsche. It was the first win for the new gen-Porsche the series and not likely to be it’s last this season.
Saturday’s race saw the R. Ferra Motorsport Ferrari 488 GT3 driven by experienced duo Miguel Molina and Toni Vilander take the win on Saturday and finish second on Sunday. R. Ferra Motorsport left Sonoma leading in the driver’s and manufacturer’s championship.
The RealTime Racing Acura NSX GT3 driven by Dane Cameron and Mike Hedlund won the World Challenge America Pro-Am class Saturday with fifth place overall. Dirk Werner and James Sofronas took Pro-Am on Sunday in the GMG Racing 911, finishing sixth overall.
Finally, just to demonstrate the international talent on display in Sonoma, five drivers made the trip directly from Sonoma Raceway to Le Mans after the last race on Sunday: Patrick Long, Matt Campbell, Toni Vilander, Miguel Molina, and Rodrigo Baptista.
In the middle of all the touring car madness was a corral of mostly modern import cars and vans. We’re not well versed in this scene, but we sure as hell enjoy the differing levels of restoration, customization ornamentation and lack of elevation. Please enjoy this gallery from the import corral.
As we were taking in all the racecars in the paddock, something very white and very sporty drove past us and down the row too fast for us to figure out exactly what is was. From the rear, we agreed it had similarities to Aston Martin
but then a little of the newer Porsche DNA maybe??? As we got closer we saw how wrong we were
so very wrong. It was the all new (to us at least) Saleen 1. You can buy this mid-engined, turbocharged 450HP I4 powered aluminum and carbon fiber super car for about $100k. If you’re not inclined to actually own one, Saleen has a way for you to wet your beak without having to sacrifice any precious garage space. They’ve created the Saleen Cup Series that will run on specified Blancpain GT World Challenge America race weekends. 20 equally prepared, track ready Saleen Cup cars will race in 50 minute races with the option to swap out for a second driver (event/season costs can be split between two drivers. Those who want to circulate in this spec super car series, will have to pay the admission price of $42,000 per race weekend, or $168,000 for the whole season.
