Rediscovering Filipino Cuisine at Kingsford Cafe’s Filipino Food Festival
Over the past few years, Filipino food has been slowly but surely getting the recognition it deserves as a truly world-class cuisine. Characterized by Spanish, Chinese and Indian influences as well as regional cultures, Filipino cuisine has been noted to offer rich diversity and bold flavors. However, most Pinoys tend to take their homegrown dishes for granted. That doesn’t apply to Kingsford…

Favorite Foods: Zuko
Whereas everyone else's favorite foods required research and conjecture, Zuko's post mostly builds off what we see in the show. The foods Zuko likes are inspired by multiple real-life cultures. Links to recipes will be included.
Larou (臘肉) - Also called Lap Yuk in Cantonese, it's cured pork belly aka bacon. According to the old Nickelodeon ATLA page, sizzle-crisps appear to be the Fire Nation's version of bacon bits. And, according to the official Avatar cookbook, sizzle-crisps are Zuko's favorite snack. He likes their long shelf-life and versatility, which are necessities for food meant to be stored on a ship. He not only eats them on their own as a snack, but uses them as seasoning for any dishes he considers under-seasoned and bland, which is most non-Fire Nation food. As such, he always carries around a bag of "sizzle crisps", like how some people always have hot sauce on their person. He likes his larou extra peppery.
Shaved Ice - A popular summer treat in many parts of the world, Asia included. In its most basic form, shaved ice is frozen water or milk, topped with a sweet syrup. Shaved ice brings back bittersweet memories for Zuko, reminding him of the fun times spent at Ember Island with his family. Zuko's favorite flavors are guava and watermelon. He normally eats a pretty basic version in public, but will go all out with toppings when no one's watching.
Jook - Jook is the Cantonese name for rice porridge and the term Iroh uses when serving it to Zuko. Considering Zuko's tendency to push himself too hard, it's likely that the prince had a good number of bed-rest days during his banishment. As such, I think Iroh is quite used to preparing jook for his nephew. While Zuko initially didn't appreciate being "babied" (from his perspective), he comes to associate jook with his uncle's love for him. Rice porridge is eaten all over Asia.
Inihaw Na Bangus - Tagolog for "Grilled Milkfish", this is a popular fish dish in the Philippines. The milkfish is stuffed with flavorful ingredients, scored, and grilled over a fire. During the book 1 episode, "The Warriors of Kyoshi", Zuko is shown being served what looks to be this dish by his ship's cook. I feel that Zuko would have a love-hate relationship with this meal. He genuinely loves eating it, but it was also served to him very often, due to the availability of the fish while out at sea. Thus, Zuko went through cycles of eating it constantly, and then not even wanting to see it for months at a time. After the war, it became a meal he'd have about once a week.
Sea cucumber sashimi - As I mentioned in a previous post, "sea slug" is a more antiquated name for the sea cucumber. In ATLA, smoked sea slug is served as commoner's food, while parts of the sea slug are served raw to the wealthy. In real life, sea slug/cucumber is actually an expensive delicacy that's served raw in Japan and Korea. Considering Zuko's willingness to steal good quality food in Book 2, I always felt that he probably has a rather refined palette. "Sea slug" sashimi was probably the dish he missed most from the FN palace.
Tea - I'm sure we all saw this coming. Under Iroh's influence, Zuko comes to appreciate tea. While not the connoisseur that his uncle is, he does enjoy winding down with a mellow jasmine tea at the end of the day.
Also, I think we can all agree that Zuko would never eat a turtle-duck. ^_^

Delicious in Mineshaft ( Minecraft x Dungeon Meshi Crossover ):
Juicy Mooshroom Beef Wellington cooked to perfection with sautéed mushrooms plucked off the own creature’s back. Garnished with sea salt and served with finely sliced beetroot, potato.
Glistening Glow Squid Inihaw na Pusit marinated in honey, vinegar, and glowberry juice. This dish is filled with diced vegetables and honey.
Hoglin Bacon BLTs cooked over an eternal netherrack fire.
Guardian sashimi with strength potion-infused dipping sauce.
Silverfish and endermite tostadas with hand crafted tortillas toasted in a furnace over scorching blaze rods.
Shulker Oysters Rockefeller served in their shells with crumbly mountain goat cheese and shredded Hoglin bacon. Rockefeller is seasoned with herbs and dried kelp lightly blended with a mortar and pestle.
Freshly sliced chorus fruit drizzled with sugar, honey, milk, and cocoa pounded with ice to make a lovely ice cream.

Roxas Night Market Davao City
first things first, got to visit my lolo and lola with J. this is one of the moments that i've been waiting for—maintroduce ko si J sakanila. friday palang habang naka duty pa, bigla ko naisipan na dalawin sila kasi ambigat bigat na talaga ng pakiramdam ko nun sa work. feeling ko kailangan ko sila. so i decided na pag dating ng manila, sakanila muna kami dadaan. kay mommy pa sana kaso ang layo and hindi na kakayanin ng oras since overnight lang kami dun.
after sa cemetery, tumambay muna kami ni J sa dunkin donuts para mag kape at magpalamig kasi pareho na kaming tinotopak haha. then we went home around lunch na. pag uwi namin, may inihaw na liempo which i requested to my brother. hehe cute medyo magkasundo na talaga kami, nakakarequest na ako sakanya. mom must be so happy. hehe
so ayun, nagpahinga lang then around 3pm nag prepare na kami to meet my bestfriends; rachel, chi and her husband kasi manunuod kami ng single launch ni ate keiko sa brewing point. tumambay muna kami ni J sa fishermall while waiting for them, pag dating ni rachel dumeretcho na kami sa venue and ordered their pesto na okay naman lasang pesto haha, masarap naman though. medyo nalate sila chi kasi inabutan sila ng ulan sa daan.
the show was great, marami ring guest kasama si clara benin at janine teñoso. ang pretty niya pala in person. hihi. nakaka tuwa lang kasi after almost 10 years nalang ulit kami nag kita nila ate keix pero kilala niya parin kami. grabe. a lot of people might still don't know her pero she's great, barkada siya nila moira at tj kaya sobrang nakaka overwhelmed at nakaka proud na we're the first ones to see them grow as an artist. huhu nakaka touch lang.
kinabukasan naman we met with mitch para manuod ng basketball game nila cong at donny. hehe ito talaga yung agenda ng pag uwi namin, wala lang gusto ko lang sila makita ng personal lalo na para kay J kasi fan siya nila cong. kaya nung inaya ko siya, di na nagpapilit. nag go agad siya once in a bluemoon lang siya ganon kadali ayain e haha.
anyway, before the game pala. nag ikot ikot kami sa gateway kasi mag papasabuy sana yung boss ko ng sapatos, but since di naman siya nag push through, ako tuloy yung nabudol haha.
