“Indigenizing the local food movement”: the Muckleshoot Food Sovereignty Project promotes nutrition, Indigenous food harvest practices, and native plants of the Salish Sea

Valerie Segrest teaches classes and workshops aimed at instructing both children and elders on the nutrition and versatility of huckleberries, nettles, salmon, and other native local foods of the coastal Pacific Northwest.

Seated in Auburn, Washington, (south of Seattle), the project maintains at least 6 kitchens which regularly provide over 1,000 meals a day. The Muckleshoot Food Sovereignty Project began as a program at the Northwest Indian College in Bellingham, before being adopted by the Muckleshoot Tribe. The program has now been expanded to include a health education program.
Nephi Craig (White Mountain Apache) and Tom French (Whidbey Island) are two renowned chefs who have joined to project as instructors.

Wild game like elk; fish, shellfish and seaweed from the ocean; and a wide variety of berries, roots, bulbs, nuts, seeds, and leafy greens from the fields and forests sustained Coast Salish people, including the Muckleshoot tribe. A study was conducted in collaboration with the Burke Museum the Muckleshoot, Suquamish, and Tulalip Tribes, and King County to assess what foods were eaten by native people before European contact. What they found was remarkable, with over 300 types of food remains identified, a number that likely does not accurately represent plant foods, which deteriorate much more quickly than animal bones. Indigenous people managed the land through burning, weeding and pruning, encouraging the propagation of choice food species. Traveling to the Pacific Northwest expanded our ideas about what constitutes “gardening.” Valerie Segrest, a Muckleshoot community nutritionist and the coordinator for the Muckleshoot Food Sovereignty Project, is looking to expand people’s conceptualization of gardens beyond rows and boxes (“like Mr. McGregor’s garden” she described), to recognizing stretches of forest dense in medicinal plants like nettles and wild ginger as landscapes that their ancestors intentionally tended and cultivated. Addressing some of the challenges of accessing this food, in 2008-2010 the Northwest Indian College Cooperative Extension Department conducted a community based participatory research project to learn more about traditional food usage, and explore ways of increasing access. Valerie and others at the College worked with tribal elders, cooks, healthcare workers, cultural specialists and archaeologists to determine how to apply research about the traditional foods of the indigenous people of Puget Sound to create a healthier diet and lifestyle for people today. The first part of the project consisted of creating a modern native foods diet, through reviewing archeological and ethnographic materials, as well as interviewing elders, and then identifying foods that were still available, as well as nutritionally similar substitutes (for example blueberries if huckleberries are not available.)The second part consisted of organizing roundtable discussions with harvesters to see what traditional foods people still have access to, and what barriers exist to harvesting other foods. The third portion included a tribal cooks camp for recipe brainstorming, and the fourth and final part entailed sharing the outcomes with the community. All of this material was complied into Feeding the People, Feeding the Spirit: Revitalizing Northwest Native Food Culture, as well as a Northwest Native Foods curriculum and online resources.

Nightmares
As usual, the subway was an overcrowded mess. Bodies pushed up against each other hanging onto flimsy metal bands while the few and lucky people got their seat off to the side, many of them filling the seats around them with whatever useless junk they dragged with them. Chris Mattews was one such lucky person, having gotten on at such a remote station in the city and at such an ungodly hour that it was empty by the time he'd gotten on. He couldn't complain either, he'd hate to be one of the drones of people around him standing in silent anger, especially with what little sleep he had gotten the night before. Where he was was comfortable for him.
So much so it wasn't surprising he'd drift off…
The crowded train was gone from view. In its place Chris was left in an endless expanse of black, the floor seeming to ripple with each careful step he took.
“Hello?” He called out, his voice echoing around from every direction. On and on the only sound he heard was his own and the only thing he could see was black.
The voice he heard started to turn from his own, sounding distorted and scratchy. The rippling of the ground stopped coming from Chris’ steps, they were coming from in front of him.

“Ooooooo? Chris, anyone home in there?” Chris was stirred awake by the person next to him, moving the brown bangs of his long messy hair out from his eyes. Ricky was ready to snap in his face again as he had been for the past few minutes, giving a cocky grin to his friend as he came to.
“‘Ey there we go! Up and at em Chris boy, we're almost at our stop.” Ricky’s voice bled with his Brooklyn origins. “You still jet lagged or somethin’?”
“Uh yeah… guess so.” Chris said as he rubbed the sleep from his eyes, grabbing his bag and joining his friend standing. “Honestly ever since I got back I've been having bad dreams.”
“No kiddin’? Sure you don't need to see ol’ Rouge then?” Ricky snickered, reaching into his pocket to show the top of a bag. “Or maybe more medicinal help~?”
“Fuck off Ricky,” Chris’ voice turned stern, a ding and muffled voice over the train’s sound system announcing they were at their stop. “I'm not buying your crap.” He then quickly followed along with the crowd of people exiting the train, leaving his friend to roll his eyes.
“Pfft, stick.”
Chris imagined his high school was like just about every other one; old, poorly funded, and filled with people he didn't know or care about. His only focus towards anyone in the school was limited to the people of his class, all of which were scattered around the room chatting away as he entered.
“Good lord Micheal!” Screamed out the short blonde girl, Brianna, to her much taller peer. “Can you not keep it in your pants for one night? I can barely hear my own thoughts with all that noise from your apartment!”
“So sorry Bri, but I just couldn't help myself!” Micheal chuckled to his neighbor, waving her off. “Besides, if you couldn't sleep you could have always joi-”
“God no!! Keep you and your little… sexcapades outta my life.” She huffed, taking her seat at the front of the class. As she sat she was joined by her desk neighbor, Chris, turning to him now. “Honestly, can you believe him? Why do people fall for him?”
“Couldn't tell you,” Chris shrugged, leaning onto his desk with his head in his hands. “I've just learned to tune his room out at this point.”
Brianna shook her head in annoyance, leaving Chris to listen in on the rest of his classmates.
“‘Ey how you doing there Jenna? Enjoyed yourself last night, I hear from a buddy you got some good stuff.” He heard Ricky say, most likely near the back of the class talking up to Jenna, who was more than likely already high off her mind and blankly staring off into space next to Alex.
“Shut up Ricky…” she said, a groan coming from her. “It's from my doctor not your creep friends…”
“‘Ey who said I'm not friends with doctors? Heheheh!”
Chris let the snickering voice of Ricky fill his head as he slowly felt himself drift back off into sleep…
Once again Chris was back in the dark void he was in before, the floor he was on before now a pitch black liquid that reached his knees. All around him he could hear the same laugh that brought him back here, reverberating from all around this void.
“This is a weird ass dream…” Chris said to himself, his own voice drowned out by the laughter. Looking down at his legs he could see the ripples in the water once again coming from somewhere in front of him. But he wasn't prepared for what was there.
Emerging from the liquid was a mass of black gunk, writhing and shaking to and fro as it grew. The mass began to slender up into a long form, the top pushing forward towards Chris. From the very top popped open two, large, glowing yellow eyes, the slitted irises pointing down on Chris. The two shared a silent staring contest for a time before an elongated row of jagged, yellow teeth grew across the “face” of this mass, forming a smile. The jagged mouth opened to follow along with the laughter echoing through the room, the sound becoming distorted and corrupted as it synced up with the noise.

“Mr. Mattews!!” Was the words yelled down at Chris that woke him from his unconscious state. Looking up Chris was met by the scrutinizing stare of his teacher, Mr. Amuny, his brow furrowed in clear annoyance.
“So nice of you to join us from your current trip to dreamland.” He said, chuckling coming from some of his classmates. “I'm amazed you were able to take another one so soon after your trip to Israel, it must have been quite expensive.” His voice was laced with sarcasm and annoyance.
“Sorry sir…” Chris sheepishly said as he stood up in his seat, trying to be as awake as possible.

“Prof. Amuny,” Micheal’s smooth talking voice came. “If I may, wouldn't it make much more sense for our dear Chris to write about his experience abroad?”
“Yeah! I'd think it'd be an awesome read.” Ricky butted in.
“Probably better than most of ours…” was faintly picked up from the back coming from Jenna.
“Shut up!!” Roared Amuny, slamming his fist on the table and shocking the group of students to attention. A disgruntled sigh escaped the older man as he pinched the bridge of his nose. “I commend you all for coming to the aid of your peer, but that doesn't mean I'm changing your grades.” Brianna gave a slight snort at that, smirking. “But as well… I agree with your thoughts. Very well Mr. Mattews…” his gaze returned to Chris and the bearded smile he was given creeped Chris to his core. “Fifty pages on your experience in Israel on my desk tomorrow.”
Chris felt his heart sink at such a task, staring up at his teacher. “H-how am I suppose to do that?!”
“Not my problem Mattews. Here's hoping you got enough sleep in class.” Once Amuny finished that sentence the school bell rang, the trampling sound of students leaving beginning to pick up. “Well it seems you're all free for today, we'll be continuing our lesson on reptiles tomorrow, make sure to bone up on the chapter on snakes.” Amuny’s words practically fell on deaf ears as his students had begun to leave.
“Not you Mattews.” Chris heard, stopping dead in his tracks from packing, once again looking up at Mr. Amuny. “Seeing how you missed so much class, including today, I thought it might be worth while to give you a crash course.” Once again the older man’s grin was terrifying, Chris’ only comfort being the hand placed on his shoulder.
“Good luck…” Jenna tiredly said, yawning and adjusting her glasses before taking her hand and leaving. Horton and Ricky at the door gave a silent prayer while Micheal drew a cross over his chest.
‘Oh boy…’ Chris thought to himself, gulping.
Three hours. Three grueling hours of a constant bombardment of information, and if Chris even started to drift off he was smacked back awake. Needless to say this wasn't exactly how Chris thought his first day back would be like.
“I don't want to hear another god damn thing about reptiles ever again.” Chris groaned as he walked down the street. It was the dead of night at this point, and for a street in New York it was rather empty, but that's how Chris preferred it. He hoped it'd be this easy and less crowded on his whole trip home as frankly he just wanted to write his report and sleep for a thousand years.
Suddenly though Chris felt a… pain in the back of his head. It was sharp and quick at first but it struck him again as he moved forward, stumbling on his feet and falling against an alleyway garbage bin. “Oww… fuck…” Chris groaned, rubbing his still stinging head.
“What was that?” Chris went as dead silent as possible, covering his mouth to quiet his breathing. The voice he'd heard was rough and wet, like a saw moving through water. And it sounded close. Peaking over the edge of the bin gave Chris a sight that nearly made him vomit.
Standing in the far side of the alley under the flickering light of a lamp was a tall figure, standing well over Chris’ own six feet in height, hunched over scanning the area with bright, piercing red eyes. Its body looked humanoid, but parts were seemingly stretched, patches of whatever clothing it had being torn open by a series of jagged spikes that seemed to cover itself, two massive ones having sprouted from its arms reaching the ground. Its mouth held a row of long, sharp teeth that were very clearly covered in blood and gore, the source of which was undoubtedly the ripped apart body that it was hunched over.
Holding back his scream and vomit, Chris slowly pulled away from viewing the sight, hoping he wasn't seen himself. He needed to run, to hide, call the police, the god damn army. He needed help, now.
Another sharp pain dug through Chris’ head, having to bite back his urge to scream in agony but unable to keep his leg from jerking out in pain.

But he didn't get far.
“I thought I heard something~.” Chris felt the hood of his jacket get grabbed as his body was lifted with it, getting a glimpse of the monstrosity he had saw just a moment ago up close. It was only a glimpse because he was thrown backwards across the alley, soaring through the air before slamming against the wall. Chris could feel a rib crack, blood filling his mouth as he tried to stand but couldn't, his legs were paralyzed from fear. He spat out a glob of blood and noticed he was next to the mangled, half eaten corpse he had seen before, but couldn't bring himself to throw up as he looked to see the monster in front of him. “I thought I was going to be done tonight, but I guess you're just in time for dessert!!”
The creature cackled and laughed as it brought its mass spike up ready to strike Chris. This was it for him. Only one thought was left in his head.

Blog post 2: “So far so good” – 14 Febuary post
This post never saw the light of day during February, mostly because I’ve been working ever since I got here. So here’s a delayed post about what happened after the first two weeks in my internship in Iceland. ALSO BECAUSE TUMBLR DELETED MY POST IN EDIT SO THANKS FOR THAT TUMBLR HAHAHA YOU FUNNY PIECE OF S-
Alright, so far so good. Now it’s been a bit since the last post I slowly begin to write down what the heck is going on here at the unit of nutritional research. So far I have contributed to time sensitive projects and attended different lectures which have been, quite eye opening for me. One of which we will discuss now.

Most of the staff working here at the Unit of Nutritional research also work as professors at the university of Reykjavik. This also means we have access to diverse lectures and guest coming across the world, or locally, with something to say. I’m very relieved that this is the case since I often get “stuck” if things don’t shake up occasionally.
We had a lecture (if you can call it that) with a “Kronan” representative and how green shopping improves their bottom line and the shopping in Iceland. Unfortunately, it was all in Icelandic…. However, it was more of a gathering on how commercial chains can influence and improve the consumer’s health. Things that were discussed was the following:
- Placing fruits and vegetables near easy to see spots
- Avoiding food waste by using discount bins for products about to expire
- Placing unhealthy foods (ultra-processed, sodas & sugary cereals) in the back of the store
- Improve cashier shelves with healthier options: granola bars instead of Mars bars and the like.
I get most of my own groceries from the Kronan that’s less than 500m from where I live, and you immediately see te differences of Denmark and Iceland. For one thing, fruits and greens are WAY more pricey. FOOD is a lot more expensive here in the Island nation. I must juggle my economics accordingly. I have proudly been making a wide variety of stews and healthy breakfasts mostly consisting of “skyr”. My absolute favorite protein-rich breakfast option 😊 Speaking of food:
Where else do you find a shopping center which has an aisle ONLY for fitness supplements? I’m pretty sure Hafthor “The Mountain” from Game of Thrones got big from this. Went in to purchase some cornflakes and got home with a 12kg bag of mass gainer.
The style of which the supermarket is laid out quickly reminds you of George A. Romero’s dawn of the dea- I MEAN IT REMINDS YOU OF A CLASSIC AMERICAN SHOPPING CENTRE YEP-I hate you using the term “American” or “consumerist” because it doesn’t really describe the problem well enough. But looking at the photo above and there is really no better way of putting it.
The discussion is interesting because the supermarkets are the bottleneck when it comes to consumption. Ultimately, you only eat what is available in the grocery store. If there are no healthy products in the store, what do you do then? Pick up a potato from the ground? Shoot a seagull? Fish? You wish. You pick the lesser evil and hope there will be something better next time. Iceland grow most of their vegetables in green houses, the land supports less than 5% of it’s area to agriculture. Because it’s a volcano, basically. But it means produce is harder to come by and lo and behold the processed shit (I’m biased, hate me) that can last for longer on an island is cheaper to come by.
So far I’m more than relieved that not only is the UNR aiming to get their population to eat healthier, but one of the biggest chains is aiming toward that as well: To support locally grown products and businesses and ensuring that the consumers don’t suffer the consequences of these new (somewhat new) easy foods bring with them, like the Indians suffered from that Boyd Swinburn experienced - is that a cliff hanger? Oh yes it is. More on this later. As monty python once said: “and now for something completely different”
I wonder if I should call this meal: “WHERE DID MY MONEY GO” or “DESPERATE STUDENT” consisting of delicious and fresh icelandic tuna (It’s canned tuna) along with nutritious wheat, shaped-spaghetti with supplementary Dairy (mac ‘n cheese) along with the exotic roasted, fibre-rich and spiced maize (pop-corn)
Besides going to lectures along with some of the smartest nutrition minds ever, I also help out with several small projects as well. On the horizon we got a big project to deal with: “Measuring preschool Lunches” Me and a fellow bachelor student, Joanna from Norway, have decided to work together with both producing a protocol for preschool assistants and teachers to measure and monitor nutritional intake of children in kindergarten and also verify the method of measuring food by photography. It’s a mouthful.

But that’s not all, according to brain scientists. They point to another important benefit: Exercising both body and brain can help people stay healthier longer.

The new thinking about aging considers not just how long one lives, but how vibrant one stays later in life.
“If you’re living, you want to be living well,” said Tim Peterson, an assistant professor of internal medicine at the Washington University School of Medicine in St. Louis. “Most people who were interested in life span and were studying genes — which control life span — switched to ‘healthspan.’”
“Healthspan,” a coinage now gaining traction, refers to the years that a person can expect to live in generally good health — free of chronic illnesses and cognitive decline that can emerge near life’s end. Although there’s only so much a person can do to delay the onset of disease, there’s plenty that scientists are learning to improve your chances of a better healthspan.

The work takes on special resonance in light of a new report published in the Journal of the American Medical Association showing that life expectancy in the United States has decreased in recent years. A rise in midlife mortality (ages 25 to 64) has dragged down the overall expectancy.
“The idea is to make people productive, healthier and happier longer and more capable taking care of themselves,” said Andreana Haley, a psychology professor at the University of Texas at Austin who is among this breed of researchers working to understand healthspan. “We now live a long time with a lot of chronic diseases, and it’s not fun. It’s costly — in terms of productivity, caregiving responsibilities, cost of health care.”
Haley, who collaborates with exercise physiologists, nutritionists, behavioral neuroscientists and physicians, said researchers from many other disciplines are also studying healthspan, such as nurses, speech pathologists and pharmacists.
Their work is inspired by an aging U.S. population with changing needs. According to the U.S. Census Bureau, 10,000 people a day turn 65, the nation’s fastest-growing population segment.
“We have a lot of people who will need to be taken care of in the next 50 years,” she said, “and fewer young people to do the care.”

Haley, with UT’s Aging and Longevity Center, focuses her work on midlife, which she defines as ages 40 to 60, a time when health choices can have a big impact on older years. She’s especially interested in brain health.
Her team is collaborating with UT’s Human Laser Lab to pilot the use of low-level light therapy to increase brain energy and improve cognitive performance.
Because of this close brain-body connection, any degeneration in the brain affects not only cognitive function but also areas that control weight, appetite, personality, mood and blood pressure.
Online games and brain-training exercises have become popular as another way to keep the brain sharp.
However, research on brain training reflects mixed results, including a study published last year in the journal Neuropsychologia, which “calls into question the benefit of cognitive training beyond practice effects.”
Still, aging experts urge people as they age to work to keep mentally active, as well as physically active, to lengthen their healthspan.

One of the country’s largest continuing-care companies, Acts Retirement Communities, offers residents weekly social-based classes for brain fitness and memory developed by Cynthia Green, an assistant clinical professor of psychiatry at Mount Sinai in New York City. Green said her brain health approach, available since 2015, is offered at 150 retirement communities around the country.
Some of the Acts communities are participating in a two-year study about memory improvement supervised by a researcher at the University of Alabama.
Helen Marner and her husband, Jim, both 76, are study participants at Indian River Estates, an Acts community in Vero Beach, Fla.
“I’m always interested in bettering my health, my brain and my body,” Helen Marner said. “I’m interested in keeping myself as alive and current and bright as I can.”
Marner bikes, swims and attends exercise classes. The former kindergarten teacher also sings in two choirs, designs and sews quilts, and is active around town as well as at Indian River Estates.

Mary Beth Vallar, 74, and her husband, Bill, 88, joined the study at Vero Beach.
“We figured it couldn’t hurt,” Mary Beth Vallar said. “They’re teaching us certain techniques to remember people’s names and remember lists and remember sequences. Their techniques are very helpful.”
To remember a list, techniques include taking a mental snapshot of it, organizing the items into categories or linking one word on the list to another. As for names, said Robin Leatherow, the Vero Beach community’s fitness director, a creative strategy could be making up a story in your mind about the name or repeating it to yourself.
“There’s a lot of different things you can do for brain health,” said Theresa Perry, Acts’ corporate director of wellness services. “One is to engage with other people. We thought it would be good for our residents and better than sitting in front of a computer and playing games by yourself.”
Because research shows that people who stay active and exercise their brain “tend to be healthier and have better brain function and will be physically healthier because of the brain-body circuitry,” the recent shift to improve healthspan makes sense, said Peterson, of Washington University.
“It’s quality of life versus quantity of life,” he said. “It’s probably as simple as that.”

One week I decided I was going to stop drinking milk and, in turn, I was going to stop eating yogurt. It was tough, though. Despite upsetting my digestive system, the yogurt, cereal, and fruit combo was the perfect amount of food and I didn’t have any desire to change. Eggs was the next best thing, but I was still reluctant. Then I started hearing that the eggs correlation to high cholesterol wasn’t a thing at all, but a myth instead, so it was all eggs, all morning, full steam ahead. Eggs with sriracha. Eggs with sausage. Eggs with beans. Eggs with sausage and beans. Two eggs a day. Three eggs a day. Sometimes four eggs a day. I’m definitely a little sick of eggs by now, but I have tried to contribute other things to make it more enjoyable to eat. Add tomatoes, sometimes. Add smoked salmon and avocado. Cilantro and tomato. I was on a three way call with my brother Danny and I was sitting right next to my roommate Nate. Then, like some classic guilt trippers, they were reveling in the fact they were both vegans. “I don’t eat dairy yadda yadda. I don’t kill animals yadda yadda. Eating an egg is like smoking five cigarettes. ‘What the Health.’ ‘Food Inc.’ Netflix documentary. Netflix documentary.” I had to take a step back from the conversation to wonder if the egg statement could have been true. I could have sworn that was a myth! I mean, shit, I’ve been eating eggs for breakfast for years in a row! I’ve made it a thing to not smoke cigarettes or weed! What have I been doing!?!? Is my cholesterol at crazy levels. You see the pattern here, though. If a doctor or nutritionist told me tomorrow that eggs aren’t bad for you and that it doesn’t do what people have said it does then and now then I’d be OK and I would just carry on, but the doubt has been exposed. Breakfast is the most important meal of the day, right? I’ve been trying to cut back on eating as much bread for breakfast. That’s hard, too. What the hell does one eat for breakfast if you don’t have some toast or some eggs and yogurt? Yeah, a fruit bowl. Some cereal. Oatmeal? It’s hard to remove the foundations.
I looked up vegan breakfasts just for fun and I saw an article on Buzzfeed. It gave 29 different options. Even the article proved that even a vegan breakfast is damn near impossible to make without incorporating wheat. Smoothies. That’s what it comes down to, I guess. Tofu (go figure).

In the second day of being a reader for a casting I overheard a very random conversation regarding the writing process. It had nothing to do with any actors coming in or the play casting or anything like that. It took place during a break. One of them was talking about the struggles he had writing and how it related to not having certain things. He could only write under certain circumstances, but he found that when he was under those circumstances he started to invent other reason why he couldn’t write. The pens weren’t good enough. The desk wasn’t a strong enough surface. The notebooks weren’t the type he liked. The chair wasn’t comfortable enough. Man…I was thinking of all the experiences I had had in my life that I would say the same thing. Hey, I have several perfectly good notebooks with plenty of free pages, but I’m gonna go to the store and get another one because that’s what it’ll take to start or finish a project. It doesn’t make too much sense. Shit, I was thinking about all the time I have spent in my life transferring materials. Taking stuff I had written in one book and put in another. Taken all these pages in a notebook and putting them on the computer thinking that that would put them at less risk of being gone forever. You wonder how much time you spend reworking and readjusting instead of just working and adjusting. It’s like, how many times can you draw a line over the same line before thinking to yourself or finding out for yourself that there is more than just that line? There are other lines to draw.

Like I said…my hands don’t feel particularly strong. My brain doesn’t either, tonight. It’s an off night, but don’t worry. I live in an era where there are so many great quotes for the upcoming response to a bad night, like one of my personal favorites, “minor setback for a major comeback.”
