I do think it’s unfortunate that people (europeans) automatically assume that “american” style versions of foods are immediately the most bastardized version done purposefully out of lack of culture, when the reality a lot of times it’s rooted in a response of millions of poor immigrants stepping foot in a foreign land attempting to recreate beloved recipes with what few ingredients were available and affordable

Recent research proved it's probably the oldest Chinese restaurant in the US, and to tell its story, you have to tell the story of the Chinese Exclusion Act, "paper sons," and the hardworking family that persevered.

the thing about culture that's difficult for a lot of people it seems to me is that "culture" is not some ontologically coherent Blob where you can sit at the table and someone will serve it to you and you get to just sit there and Receive it. or, it's not something you can dig up and carefully extract unchanged, if you sit carefully enough at your books, and then put on your mantle to admire. i'm a motherfucker whose career is about digging things up from books so i get the appeal, and yet that's not what Culture is, because culture is what you Do. so you already have one. what food do you eat? where do you live? what rituals do you perform? do you take your shoes off when you go inside?
culture is distinct from religion and ethnicity (though obviously it's interrelated with both), and deeply related to the place you live now and its customs and foodways and norms for politeness and hospitality, and what other populations live around you in the place you live now. trying to connect to the mystical immigrant old-country past of your ancestors is unlikely to get you the results you're looking for - culture is something you do every day and i promise you already have one. and you're already doing it. which means that you can also just as easily change the things you do if you don't like them.

the best part of being an American is how people will move here from other countries and build restaurants where you can eat their delicious food and there's always more people moving in and there's always more delicious food to discover. like. why do people not like immigrants. do you not want FOOD. you have never known the ecstasy of walking into a tiny hole in the wall and an iraqi mom comes out and feeds you iraqi mom food, and it shows.

Fellas I went full RJ mode and was so cranky tonight nothing but fried okra and hush puppies could solve it
I'm not exactly from a place where people have summers long enough to grow corn, much less okra, so one way immigrating influenced my fic was giving RJ my newfound love for southern cuisine. I don't think I would have had him so excited about sharing southern cuisine with Olivia last chapter if I hadn't experienced it
