This method is most often used to cook fish or vegetables, but lamb and poultry can also be cooked en papillote. It is a combination cooking method of baking and steaming. This method of cooking has been popular since the 17th century in France.

I put mine in aluminum foil on a bed of leek and carrot cut in julienne with dill, salt, and a drizzle of oil, then the same on top. Bake until it puffs up and it’s juicy and delicious and doesn’t smell.
