Spicy Sweet Potato Hummus Ingredients: 2 medium sweet potatoes 3 tbsp olive oil 2 cups cooked chickpeas (or 1 can chickpeas, rinsed and drained) 3 tbsp tahini 3 cloves garlic, peeled Juice of 1 lemon Zest of 1/2 lemon Ground sea salt, to taste 1 1/2 tsp cayenne pepper (adjust to taste) 1/2 tsp smoked paprika 1/4 tsp cumin Directions: Preheat oven to 400°F (200°C). Place the sweet potatoes directly on the middle oven rack or in a baking dish and bake for 45 minutes to 1 hour, until they yield to gentle pressure. Allow sweet potatoes to cool slightly, then peel off the skin. In a food processor, combine chickpeas, tahini, garlic, lemon juice, lemon zest, olive oil, sea salt, cayenne pepper, smoked paprika, and cumin. Add the peeled sweet potatoes. Blend until smooth and creamy. Taste and adjust spices as needed. Transfer to a serving bowl and garnish with a light sprinkle of cayenne pepper and sesame seeds, if desired. Serve with pita chips, veggie sticks, or your favorite crackers. It's the ideal snack or appetizer for any occasion because of the delicate earthy flavor and gorgeous color imparted by the roasted beets. It's a wonderful addition to any party or gathering because it's not only aesthetically pleasing but also healthful.
Ingredients: 2 medium-sized beets, roasted and peeled. 1 15 oz can of chickpeas, drained and rinsed. 3 tablespoons tahini. 2 cloves garlic, minced. 2 tablespoons lemon juice. 1/4 cup olive oil. 1/2 teaspoon ground cumin. Salt and pepper to taste.
Instructions: Start by heating the oven to 400F 200C. After you wash and trim the beets, put them in aluminum foil and roast them in a hot oven for 45 to 60 minutes, or until they are soft. After they've cooled down, peel them and cut them up. Put the roasted beets, chickpeas, tahini, garlic that has been minced, lemon juice, ground cumin, salt, and pepper in a food processor. Start the food processor and add the olive oil little by little while running it. Keep doing this until the mixture is smooth and creamy. You might have to scrape the bowl's sides a few times to make sure everything is mixed well. Add more salt, pepper, or lemon juice if you think it needs it after tasting. Add a little olive oil to a serving bowl and add the roasted beet hummus. If you want, you can decorate with fresh herbs or sesame seeds. You can eat it as a dip for your favorite snacks or with pita bread and fresh vegetables.

Ingredients: 1 Dose Kichererbsen 400 g, abgetropft und gesplt. 2 Knoblauchzehen, geschlt. 3 EL Olivenl. 2 EL Zitronensaft. 1 TL Kreuzkmmel. Salz und Pfeffer nach Geschmack. 2 EL frische Petersilie, gehackt. 1 EL Sesampaste Tahini. 1 TL Paprika optional. 1 TL Olivenl zur Dekoration.
Instructions: Die abgetropften und gesplten Kichererbsen in einen Mixer geben. Die geschlten Knoblauchzehen, Olivenl, Zitronensaft, Kreuzkmmel, Salz und Pfeffer hinzufgen. Alles gut mixen, bis eine glatte Paste entsteht. Gegebenenfalls etwas Wasser hinzufgen, um die gewnschte Konsistenz zu erreichen. Die gehackte Petersilie und Sesampaste hinzufgen und erneut mixen, bis alles gut vermengt ist. Das Hummus in eine Servierschssel geben und mit Paprika bestreuen optional. Einen kleinen Tropfen Olivenl auf die Oberflche geben, um es zu verschnern. Das Sommer-Hummus ist fertig! Mit frischem Gemse oder Pita-Brot servieren.

Add enough water to cover the chickpeas by about 2 inches. Cook on low for 6-8 hours, or until chickpeas are very tender. Allow the mixture to cool slightly. Transfer the mixture to a food processor or blender and blend until smooth and creamy, adding more water if necessary to reach desired consistency. Taste and adjust seasoning, if needed. Serve with a drizzle of olive oil and a sprinkle of paprika, if desired.
