Not dog related but I know there are kitchen savvy folks with dietary restrictions so putting it out here.
I'm experimenting with homemade ice cream to share with my coworkers. My traditional batch is working out pretty well. But I'm also trying to make something my one coworker who can't do regular dairy can enjoy as well. Her go to milk substitute is Ripple which is plant based.
Anyone have tips for using that and still getting soft/creamy ice cream?
*Just in case this post breaks containment from my lovely mutuals/followers - Yes, I'm making a separate batch for one person's specific needs. No, I don't want to just buy her something and call it done. It's important to me to be able to provide her something homemade same as I am doing for everyone else. Be kind or be silent. :)

Although I’ve put Castletown Café on the backburner for a while, unsure of when to get back into it (I haven’t found a good opportunity and I’m running short of recipes - namely, easier ones, leaving me with the harder that require more practice, such as bread or candy, or mastery of cookie decorating). I haven’t stopped cooking however, with every season giving me tons and tons of ideas to use in cooking, such as the flavors of the season or the ingredients. I’ve been on a real matcha kick lately, and after getting an ice cream maker last summer, I began mastering the craft of ice cream! Pictured here is a homemade matcha ice cream with a fresh strawberry topping. I’ve even got my own “ice cream base” recipe that I use, where different flavors can be easily applied. The base is 3/4 cups milk with 3/4 cup granulated sugar, a pinch of to 1/8 tsp salt to make it soft and scoopable (at the expense of it being quicker to melt, so eat it fast, but not too fast or you’ll get brain freeze), however much is needed of the flavor itself, an optional teaspoon of vanilla extract, then, lastly, 1 & 1/2 cups of heavy cream!
Now then, it’s time I shared another recipe!
Matcha Ice Cream:
3/4 cups milk
2 tablespoons culinary grade matcha powder
3/4 cup granulated sugar
1/4 cup light brown sugar
1 tsp vanilla
About 1/8 tsp salt
On day 1, and freeze the bowl of your ice cream maker. Freeze from overnight or up to 24 hours. If you don’t have an ice cream maker, you can use round metal cake pans.
On day 2, make the ice cream mixture. Whisk together matcha powder, sugars, salt, vanilla, and milk in a regular mixing bowl until sugar is dissolved and matcha is as lump-free and smooth as possible, and everything is blended together.
Add the heavy cream and stir together until well-combined. Cover and refrigerate overnight.
On day 3, grab your ice cream maker and use as directed. Give your ice cream mixture a stir before pouring it in your ice cream maker and watch as your ice cream slowly forms! If you don’t have an ice cream maker, pour your mixture into frozen metal cake pans, freeze, and take out to stir every 15 or so minutes and place back in the freezer until your ice cream forms.
Enjoy your ice cream plain, toped with fresh berries or sprinkles, with chocolate sauce or hot fudge, or in a waffle cone! Serve the way you like it.

ITS PRETTY GOOD !!!!!!!!!!! i had put a teaspoon of vanilla in there for flavor, n i was a little scared itd be too strong r smth but its actually just right. i didnt have heavy cream this go around so i used evaporated milk instead n the carmel taste of it really adds to the overall flavor very nicely.
i didnt make it exactly how i was supposed to as stated previously i didn't have heavy cream and i couldnt whip the evaporated milk, so it noticeably separated a little the lighter airy cream on top from the darker more firm bottom, but the taste between the two isnt staggering.
the top is much lighter and airy and melts fairly evenly on the tongue, that carmel taste is a bit more subtle but you can def still notice it.
the bottom is a lot less airy, more solid. that carmel taste is way more potent here melding with the vanilla while still remaining separate flavours. it melts more unevenly on the tongue and can come off a little chewy even.
overall: a very good experience! it tastes good and its not too sweet like most store bought ice creams ive had, which for me specifically whose a bit more sensitive to sugars is an awesome extra :3c would recommend if this is your type of thing! def would make this again, n absolutely wanna retry once i have the exact ingredients,,

First try with Cookie Dough, successful but I need a sifter and I wonder if melted butter would be better than softened since it's the only binding agent. Next step in this process: find an ice cream recipe cuz I own an ice cream maker that we've never used.

Dear Gus & Magnus,
Mom worked today, so we went to Nene's house. After Magnus took a nap we went down to Nana's. I promised Gus all day that we would eventually get in the pool, but around 7pm I finally told him I didn't think we were going to be able to get in the pool because it was so late. I felt bad and apologized. To my great relief, he said, "It's okay, Dad."
I was so proud of him for having a mature response and keeping a positive attitude. Like, really proud, because he had every right to be mad at me.
