Homemade Tacos Al Pastor Marinade
boneless pork shoulder cut to thin slices (mine was about 5pounds)
canned/fresh pineapple (canned to blend pieces and juice + fresh for layering meat)
one whole onion roughly sliced
garlic (use at least 6)
3tbs dry Mexican oregano
1-2tbs if while peppercorn/clove mix
2tbs whole cumin
6-7tbs of annatto seeds (achiote)
6-7 dry Chiles guajillos
water
apple cider vinegar
salt!
In a pot/pan add oil, add your onion, garlic, peppercorn/clove mix, and stir for a good min on medium-high heat. Once you get that good smell of garlic add annatto seeds and stir again. Add your dry Chiles and water. Enough to light cover Chiles to soften them. Cover and simmer on low until soft. Add to blender with pineapple juice, pineapple chucks, apple cider vinegar, and salt. Taste.
Add blend to pork and marinade for 24 hours. Simply assemble thin pork pieces on top of each other with fresh pineapple rounds in between layers and on top.
Bake for 1-2.5 hours in the oven at 350°.

Great 'sandwiches' of the US, Part 2!!!! A BLT eaten in the sun, my first taco al pastor, soyrizo breakfast burrito on a whale watching boat, homemade lobster roll, Dunks bacon and egg wrap on the Commuter Rail, and pita with loukaniko sausage and spicy feta!
I can't believe I'd never had al pastor before. Also, the secret to a lobster roll is too much butter, almost way too much butter—you should ideally be able to notice the butter specifically. Also, grill the bun. Also, I love Greek sausage. Like, a lot.

OOOOOH hmm...honestly, there was a donut place where I grew up called Kane's, and I'd give a whole lot to be able to have their Boston creme and lemon donuts again.
Also a real roast pork sandwich in Philly, authentic tacos al pastor, hand pulled noodles and homemade soup dumplings.

The Burrito Exchange, 8500 Rosemead Blvd, Pico Rivera, CA 90660
I had a craving for a bean & cheese burrito which led me to the Burrito Exchange. The building looks like it used to be a Taco Bell. They kept the drive-thru. The flour tortillas are fresh and homemade. The menu includes breakfast burritos, burritos, quesadillas, and tacos. Meat choices: asada, al pastor, carnitas, chicken, chorizo, chicharron, shredded beef. Aguas frescas are made fresh daily. Make any burrito wet for $2.50.
Bean & cheese burrito ($9.55): It seemed expensive at first but then it was the biggest bean & cheese burrito I’ve ever seen (about 8 inches x 3 inches) – filled with lots of cheese and warm, creamy refried pinto beans. The homemade flour tortilla was a little thicker and chewier. Each of the three housemade salsas was delicious too. The habanero salsa was quite spicy, enough to make my lips tingle. The beans were flavorful (made with lard).
The sign said there’s a surcharge of 2.5% for credit card purchases.

Happy new year!
Hiiiiii! Remember me? I can't believe it's been over a year since I've made it over here to post a new blog to Eating with Rob. I've missed you very much - so much that about a year ago, I started an Instagram account to make it easier for me to keep you up to speed on what we're cooking and eating. Give me a follow!
Now, to step back in time where I left off here on Tumblr, New Year's Eve 2020. I can't believe how long ago that feels - almost half of Rosie's life! She made sure we all looked beautiful for our COVID-19 NYE.
We really did doll up in a big way, just in an effort to feel normal after at the end of a very unusual year. I even stuffed my 20-week baby bump into this sparklebomb!
While Rob and Rose mixed fancy homemade lemonades, I was dreaming about our late-nite dinner - a big ol' box of al pastor tacos from La Catrina, the Mexican place just across the park from our place.
You can't even make them out beneath the flurry of accoutrements (omg the cebollitas, so smokey and delicious), but trust me, they're there. 10 flawlessly sweet and tangy al pastor tacos, the best I'd ever had in my life - still true as I write this three years later!
At the time, we were a little worried about whether La Catrina and their amazing tacos would survive the pandemic. These days, business is hoppin' and we have to wait in line when we make the special trip back to Logan to satisfy the craving. Which usually includes New Year's, as ordering a huge box of their tacos has remained an NYE tradition in our family. These babies are perfect for ringing in a new year, or welcoming yourself back to your food blog :)
