Ingredients: 4 beef tenderloin steaks about 6 ounces each. Salt and pepper to taste. 2 tablespoons olive oil. 2 tablespoons butter. 8 ounces mushrooms, sliced. 2 cloves garlic, minced. 1/2 cup dry red wine. 1/2 cup beef broth. 2 tablespoons chopped fresh parsley.
Instructions: Salt and pepper both sides of the beef tenderloin steaks. In a pan, heat the olive oil over medium-high heat. Put the steaks in the pan and cook them for 4 to 5 minutes on each side for medium-rare, or until they're done the way you like them. Take it out of the pan and set it aside to rest. Over medium heat, melt the butter in the same pan. After you add the garlic and sliced mushrooms, cook for about 5 minutes, or until the mushrooms are soft. Add the red wine and beef broth, making sure to scrape the pan's bottom to get rid of any browned bits. It should take about 5 to 7 minutes for the sauce to reduce and get a little thicker. Put the beef tenderloin steaks back in the pan and cover them with the mushroom wine sauce. Before you serve, sprinkle with chopped parsley.
