Food Pairing with Perfect Wines:
With Christmas quickly approaching, it's time to embark on a global culinary adventure. One of the most beautiful ways to celebrate the Christmas season is through the common language of food. In this article, we will delve into the art of pairing these delicious foods with the best wines for a really festive celebration, as well as examine some of the most renowned culinary traditions from around the world during the Christmas season.
America: Turkey with Cranberry Sauce
A roast turkey is often the main course of a classic American Christmas dinner. The bird is well seasoned, roasted to a beautiful brown, and accompanied by all the fixings. Cranberry sauce is a traditional side dish for Thanksgiving because its tart flavour pairs so well with the turkey's fatty meat.
Wine Pairing:
Roast turkey pairs wonderfully with a Pinot Noir or a juicy Zinfandel. The wine's medium body and refreshing acidity make for a more enjoyable meal.
Italy: Feast of the Seven Fishes
On Christmas Eve, Italians enjoy a seafood banquet known as the Feast of the Seven Fishes. There is a wide variety of fish, shellfish, and crustaceans, all of which can be served in numerous mouthwatering ways.
Wine Pairing:
To complement the variety of shellfish, choose a dry, mineral-driven Vermentino or a sparkling Prosecco. These wines' crisp acidity and lively carbonation do double duty by both cleansing the tongue and amplifying the seafood's inherent flavours.
Spain: Suckling Pig or Roast Lamb
Magnificent roasts, such as a suckling pig or a leg of delicious lamb, are commonplace on the Spanish Christmas table. The meat in these recipes is marinated in flavorful spices and then slow-roasted to perfection.
Wine Pairing:
Roasted meats benefit from being served with a full-bodied red wine like a Tempranillo from Rioja or a powerful Garnacha. The wine's strong tannins and blackberry aromas and flavours complement the meal perfectly.
France: Foie Gras and Bûche de Noël
French Christmas celebrations feature a variety of delectable dishes, including foie gras. This decadent treat is commonly served with Bûche de Nol, a festive Yule log-shaped dessert made of sponge cake and buttercream.
Wine Pairing:
The creamy, buttery flavours of foie gras pair wonderfully with a luscious Sauternes or a sweet late-harvest Gewürztraminer. These sweet wines are a great way to round out a meal and provide a touch of class.
Australia: Christmas BBQ
Due to the mild climate, Christmas celebrations in Australia tend to be less formal and more focused on outdoor activities, such as a seasonal BBQ. The main attractions include succulent pieces of meat, seafood, and a wide range of grilled veggies.
Wine Pairing:
The smokiness of the BBQ pairs well with the crisp, lemony flavours of a Chardonnay or Shiraz from a chilly climate. These wines are a nice change of pace and complement any outdoor meal.
Diversity in Flavours and Wines:
At Christmas, we should not only honour our customs but also welcome the diverse gastronomic traditions of the world. By delving into these many culinary customs and carefully pairing them with the most appropriate wines, we can throw a party that will be remembered for years to come. So cheers to the spirit of Christmas and the harmony of people everywhere by raising a glass and enjoying the flavours. Cheers!

rant incoming abt something i’ve observed for a while
i (american) feel like we need better traditions. so many young and queer people in my experience are completely disillusioned with most of our (western) holidays either because they’re related to religion and that’s awkward for many people or because they’ve become Capitalism Lite or both. it’s hard to really enjoy a holiday when it’s overshadowed by the uncomfortable truths behind all of it.
like, christmas is nice because you get time off but it’s a constant reminder that we live in an extremely christian society that chafes at even the idea of other religions trying to exist (happy holidays vs merry christmas drama). non-christian religious holidays get like zero acknowledgement from wider society. no time off work or school, no decor in stores, etc. thanksgiving is nice bc you get to eat good food, but it’s based on colonial bs. valentine’s day is nice in theory but also an inescapable reminder that our society sees you as sad and lonely if you’re not in a relationship and if you’re not willing to spend lots of money on a partner. then theres smaller ones like labor day which is important but hard to enjoy when you’re reminded of how hard we have to fight for even an inch of appreciation or rest for workers in the us. most of the other minor holidays are subsumed by neverending consumerism and advertisement, such as mothers/father’s day.
and tell me if i’m just projecting here. but there are so few actual holidays that we can enjoy that i think it accelerates the homogenization of the seasons w global warming and the isolation and lack of community everyone is struggling with.
this is part of my theory as to why halloween is so incredibly popular with gen z - it’s doesn’t come with religious or historical baggage, doesn’t force people to spend time with families they don’t like or shame people for not fitting into nuclear family structures, isn’t based largely around buying gifts/spending money, and is an important marker in the season of fall. also this is part of why i think we latch on to stupid little anniversaries ie. neil banging out the tunes. it’s lighthearted and silly and is a grounding landmark for the passage of time and it brings us together to have fun.
all this to say we should really promote more holidays that are just. for fun. or for the passage of time. summer solstice. moon landing day. new years does fall into this category. pi day. star wars day. april fools. i really feel like we should be emphasizing and celebrating these unofficial holidays!! bringing people together and hanging out w friends or going out somewhere specific or making specific foods or something. just a regular tradition that we can rely on. yk? it’s so important

This blog is all about exploring Filipino culture, from it's deep-rooted traditions to the lively festival, delicious cuisine, and vibrant art and creativity. If you're interested in learning about what makes the Philippines and its people unique you're in the right place.
What is Filipino Culture?
Filipino culture is a rich tapestry woven from a history of indigenous traditions, colonial influences, and modern global connections. It's defined by a strong sense of family, a deep-rooted respect for traditions, and an indomitable spirit that finds joy even in adversity.
Here are some of the Filipino culture that make it so special:
Family and Bayanihan- Family is at the heart of Filipino life. The concept of "bayanihan" embodies the spirit of communal unity and helping one another. It's common for extended families to live together or stay closely connected, providing a support system like no other.
Festival and Traditions- The Philippines is known for its colorful and lively festivals. From Sinulog in Cebu to Pahiyas in Quezon, each festival has its unique charm and story. Traditions like Simbang Gabi during Christmas and Flores de Mayo in May are celebrated with great enthusiasm and bring people together in glee.
Cuisine and Food- Filipino cuisine is a delightful blend of flavors and influences. Dishes like adobo, sinigang, and lechon are loved by many. The merienda culture, with its snack like pancit and halo-halo adds to the fun. Food is not just about eating-it's a way of connecting with others.
Language and Communication- The Philippines has over 180 languages with Tagalog and Cebuano being among the most widely spoken. Filipinos are known for their warmth and friendliness, often using unique expressions like "po" and "opo" to show respect. Communication is a mix of traditional and contemporary, with social media playing a significant role.
Art and Creativity- Filipino creativity is boundless, from traditional craft like weaving and pottery to contempory music, dance, and cinema. Artists and performers from the Philippines have made a mark on the world stage, showcasing the rich cultural heritage of the country.
The Filipino Spirit- Depite the challenges that Filipinos face, there's a resilience and positivity that's truly inspiring. This spirit is what makes the Philippines such a unique and welcoming place. Stories of communities coming together, neighbors helping each other, and a smile even in difficult times are what define the Filipino spirit.
I invite you to join on this journey to explore Filipino culture. Wether you're curios about the places to visit in the Philippines, the latest trend in Filipino music, or simply want to learn more about the people and their stories, there's something here for everyone.

December 24, 2022: King Felipe Christmas Message
Good evening.
I am very glad to be able to be in your homes and continue this tradition of sending you my best wishes, especially of peace, on Christmas Eve, and also to share with you some thoughts on the most notable events of the year now ending.
2022 has been, and still is, complicated and difficult. Just as no recent years have been easy. Just when we thought the worst of the pandemic was over — certainly the best news of the year — in February Russia invaded Ukraine, and since then we have witnessed ten months of a war which has caused levels of destruction and ruin hard to imagine in our everyday reality. We have felt the suffering of the Ukrainian people, and we still feel great sadness for the loss of thousands of human lives.
To the Ukrainian refugees in our country and all their compatriots, you are in our hearts, especially today.
We are here, with a new war in Europe, at the borders of some of our European partners and allies, and therefore close to us; and which affects not only Ukraine, but has a global impact.
And this has also affected our security. As well as strengthening our collective defensive capacity with our allies, Spain has joined the vast majority of the international community in supporting Ukraine, and restating our commitment that the sovereignty, independence and territorial integrity of States are essential principles of an international order based on law and which must always seek peace.
Spain’s NATO summit, which was held here in Madrid, helped reinforce the unity of all members of the Alliance, and of the European Union.
This war, together with the effects of the pandemic, is obviously having a profound impact on the economy; it has led to an energy crisis with serious consequences for industry, trade, transport, and particularly, household economies.
Rising prices, especially of food, have meant insecurity in our homes. Everyday actions like turning on the heating or the light, or refuelling the car, have become a cause for concern, and in many cases have meant important personal and family sacrifices. Because there are families who cannot deal with a situation like this for long, and need continuous government support to mitigate its economic and social effects.
All of this new scenario we are living through - the war, the economic and social situation, instability and tensions in international relations, are naturally causing great concern and uncertainty in our society. We cannot ignore the seriousness of these problems, but we also cannot give up the possibility that things can change and improve.
First, once again, we must trust in ourselves as a nation. The transformation and modernisation of Spain over the last four decades, thanks to the success of our transition to democracy and the approval of our Constitution, justifies that trust. As does the way we have overcome our other economic, social and institutional crises; most recently, that of Covid. We are a country which has always rallied, even through difficulty and sacrifice, to cope with all its challenges, which have been many over the years.
As well as believing in ourselves, in our capability, more than ever in these difficult times we need everyone to be more committed than ever to our democracy and to Europe, the European Union, the two pillars on which our present and future rest.
● The world’s democracies are exposed to many dangers, which are not new; but the risks of today have a particular intensity. And Spain is no exception. But there are three dangers I want to examine, because I think they are very important: one is division; another is the deterioration of cohesion; the third is the erosion of institutions.
A country or a society which is divided or in conflict cannot advance or make progress, resolve its problems properly, or create trust. Division makes democracies more fragile, but unity strengthens them.
In Spain we know this from experience. Our Constitution, the fruit of dialogue and understanding, represents the unity achieved by the people of Spain, as a commitment to the future, to diversity and harmony, for a young democracy. Today, after all these years, our constitutional values are firmly rooted in our society, and are now the point of reference where Spaniards must find the unity which ensures stability, cohesion and progress, and the harmonious coexistence which, as I have often said, is our greatest heritage.
A coexistence which requires our collective life to fully recognise our freedoms alongside respect and consideration for other people, their beliefs and their dignity. It must be guided by reason; it demands putting the will to integrate above the desire to exclude.
In this task, we need to strengthen our institutions. Robust institutions which protect the people, respond to their concerns, guarantee their rights, and support families and young people in overcoming many of their everyday problems. Institutions which reflect the public interest and perform their tasks with dedication, with respect for the Constitution and the law, and are an example of integrity and honesty. And this is the standard to which all our institutions must always be committed.
I think that at this time, we must all take personal responsibility and think constructively about the possible consequences of ignoring these dangers for our unity, our cohesion, and our institutions.
We cannot take everything we have built for granted. Nearly 45 years have gone by since the Constitution was passed, and of course many things have changed and are still changing. But the spirit that created it, its principles and its foundation, which are the work of all of us, must not be undermined or forgotten. They are a unique value in our constitutional and political history which we must protect, because they are the place where the people of Spain recognise ourselves and accept each other, despite our differences; the place where we have lived and continue living in freedom.
● Europe is the second commitment I wanted to talk about. For Spain, Europe has always represented freedom. It contributed to the consolidation of our democracy, strengthening our economic growth and social development.
Today, we share many of its problems and we contribute to its decisions with our own personality and our own interests. The shared challenges we face, from healthcare to finance or those relating to our energy and environmental models, receive solutions which form part of the common framework of the European Union. So the decisions made in the Union every day can be felt in the everyday life of everyone in Spain. This is reality.
We are Europe, but we also need Europe, our major political, economic and social framework, which also offers us certainty and security. I am sure that Spain’s commitment will be reinforced when we take up the rotating Presidency of the Union next year.
I said at the beginning that these are times of uncertainty. But if the success of a nation depends on the character of its citizens, and on the personality and spirit which drive its society, we must have reasons to look to the future with hope.
We are one of the world’s great nations, with many centuries of history, and the people of Spain must continue deciding our destiny, our future, together. Taking care of our democracy; protecting our cohesion; strengthening our institutions.
We must continue sharing goals, always with a spirit of renewal and adapting to changing times. With confidence in our country, in a Spain which I know well, brave and open to the world: a Spain that seeks serenity, peace, tranquillity; a Spain which is responsible, creative, vital, and generous. That Spain is what I see, what I hear, what I feel in many of you; and it is what, once again, will move forward. It’s up to all of you.
And finally, on this special night, thank you so much for listening. The Queen, our daughters Princess Leonor and Infanta Sofía, and I wish you all a very merry Christmas and a happy New Year.
Feliz Navidad, Eguberri On, Bon Nadal, Boas Festas.

A follow-up to the big biodiversity deal that was inked before Christmas
To me the most impressive things (well, all the points mentioned below matter, but these genuinely raised my eyebrows in surprise) are the fact that 30 by 30 was actually agreed to, as it's necessary but still ambitious when it comes down to it, and the centering and acknowledgement of indigenous people, who are all too often marginalized or tokenized.
The main thing is, of couse, will it be properly implemented. It's hard enough to get this sort of thing honored when one nation ostensibly agrees to it, but all these nations combined?
Agreement to conserve 30% of Earth by the end of the decade
Inspired by the Harvard biologist EO Wilson’s vision of protecting half the planet for the long-term survival of humanity, the most high-profile target at Cop15 has inspired and divided in equal measure. The final wording commits governments to conserving nearly a third of Earth for nature by 2030 while respecting indigenous and traditional territories in the expansion of new protected areas. The language emphasises the importance of effective conservation management to ensure wetlands, rainforests, grasslands and coral reefs are properly protected, not just on paper.
Indigenous rights at the heart of conservation
Indigenous peoples are mentioned 18 times in this decade’s targets to halt and reverse biodiversity, something to which activists are pointing as a historic victory. Several scientific studies have shown that Indigenous peoples are the best stewards of nature, representing 5% of humanity but protecting 80% of Earth’s biodiversity. From Brazil to the Philippines, Indigenous peoples are subjected to human rights abuses, violence and land grabs. The language in the text is clear: Indigenous-led conservation models must become the norm this decade if we are to take real action on biodiversity.
Reform of environmentally harmful subsidies
Definitely in the category of boring-but-important, the world spends at least $1.8tn (£1.3tn) every year on government subsidies driving the annihilation of wildlife and a rise in global heating, according to a study earlier this year. The lack of reform on environmentally harmful subsidies was a major failure of last decade’s biodiversity targets, and governments have now agreed on the importance of making a change.
Nature disclosures for businesses
Although the language was watered down in the final text, target 15 of the deal requires governments to ensure that large and transnational companies disclose “their risks, dependencies and impacts on biodiversity”. If implemented, this could be the start of a significant change in business practices. About half of global GDP is dependent on the healthy functioning of the natural world, according to the UN, and biodiversity loss is rapidly shooting up the agenda of corporate risks. Several countries are already developing rules for sustainable sourcing, on products from palm oil to rubber, which look set to spread after the Kunming-Montreal pact.
A way forward on digital biopiracy
Ahead of Cop15, digital sequence information (DSI) was the controversial hot potato – and something few really understood. DSI refers to digitised genetic information that we get from nature, which is used frequently to produce new drugs, vaccines and food products. These digital forms of biodiversity come from rainforests, peatlands, coral reefs and other rich ecosystems, but they are hard to trace back to their origin country, with many in the developing world now expecting payment for the use of their resources. In Montreal, an agreement was struck to develop a funding mechanism on DSI in the coming years, which has been hailed as a historic victory for African states who called for its creation before the summit.

Research has revealed the most hated Christmas traditions as adults slam Elf on The Shelf and fresh sets of pyjamas.
Tumblr media
The study of 2,000 Christmas fans, commissioned by bakery brand St Pierre, also listed the festive traditions from around the world many would like to adopt.
The poll found 27 per cent loathe Santa’s mischievous little helper, while a fifth turn their nose up at getting new pyjamas for the whole family to wear.
Emailing the big man a wish list, receiving a Christmas Eve box, and keeping tabs on Santa’s sleigh via an online tracker also made the list of most disliked modern rituals.
However, receiving a stocking, pantomimes, and eating turkey on Christmas day were among the most loved British festive traditions.
Visiting a Christmas market, carol singing, and leaving milk and cookies out for Santa also made the ‘nice’ list of Christmas activities.
Some also revealed the worldwide traditions they would like to adopt — including tucking into Japan’s fried chicken dinner and marking ‘little Christmas’ on December 23rd like they do in Norway.
Tumblr media Tumblr media
Iceland’s tradition of giving a book on Christmas, having a barbecue instead of a turkey dinner with all the trimmings as they do in New Zealand, and enjoying a Christmas Eve sauna in the style of Finland also made the list.
A spokesperson for St Pierre said:
“For a lot of families, keeping up with Christmas traditions is an important part of the season and it is what makes this time of year so special.
However, there are some modern customs, which have made their way into people’s homes over recent years.
It’s been interesting to see the nation’s take on these and even more interesting to hear, which global dining traditions Brits would most like to adopt.”
When comparing countries, 32 per cent think our festive customs are mostly inspired by other cultures, rather than being original.
And 20 per cent even believe certain places are better at celebrating Christmas than we are, with the US, Germany and Norway taking the top spots for this.
As a result, 30 per cent are keen to spend this magical time of year in another country, with 22 per cent already having done so.
The study, carried out via OnePoll, found a third enjoy any rituals that involves food or family recipes and 36 per cent claim most of what they do at home revolves around it.
But 21 per cent have their own rituals outside of what is considered ‘typical,’ with 16 per cent seeing Christmas as the perfect time to start a new tradition.
Although 24 per cent claim they take part in certain things each year because they feel like they have to.
Nearly half (48 per cent) also admitted they still carry out some of their family heritages they experienced as a child.
A spokesperson for St Pierre added:
Tumblr media
“It’s great to see food coming in as the number one thing people most enjoy about Christmas – and it’s no wonder as not only is it the perfect time to indulge but it’s also a special time for making memories.
Food is more than a meal on your plate; it’s the nostalgia of growing up, the family recipes that come out once a year, and a wonderful way to bring people together – no matter where we are in the world.”

United States Candy : An Immensely Popular Sweet Business
Tumblr media
The history of candy in America dates back to the colonial period. Early settlers first started making candy during the Revolutionary War era using homegrown ingredients like nuts, molasses, honey and maple syrup. Candy making then evolved into commercial production during the 19th century industrial revolution when companies like Brach's, Cracker Jack and Life Savers were founded. The 1920s saw even more innovation as new candy machines automated production and chocolate candy became widely popular. By the 1930s, candy was being mass produced on assembly lines and regional candy companies expanded nationally. After World War 2, American confectioners consolidated to become the large multi-national brands consumers know today.
Current  Size And Growth
The United States Candy  is valued at over $37 billion today according to  estimates. The  has grown steadily each year, rising over 3% annually on average. Regionally, the western states account for over 25% of total U.S. candy sales while the south remains a key consumer region as well. Per capita candy consumption averages over 25 pounds per person each year, higher than many other countries. Seasonally, Halloween and Valentine's Day are the candy 's biggest holidays while Easter ranks third in overall seasonal sales.
Leading Companies
The top three candy companies globally are all American- Mars, Hershey and Mondelez. Mars commands over a 20%  share with well-known brands like M&Ms, Snickers, Twix and Skittles. Hershey has been the iconic American chocolate brand for over a century with Hershey's Kisses, Reese's and Almond Joy among its signature products. Mondelez, formerly Kraft Foods, owns global brands like Cadbury, Toblerone and Halls while sour patch kids and other candy remain major sellers. Lindt, Ferrero and Nestle round out the top international candy players competing in the crowded U.S. .
Product Segments
Chocolate remains Americans' most popular candy comprising about 25% of total yearly sales. Seasonal Halloween and Christmas candies have grown exponentially, nearly doubling in sales over the past decade to over $4 billion annually  sources report. Sugar confections like Skittles, Starbursts and Sweetarts continue strong multi-billion dollar yearly sales. Hard candy options from Lifesavers, Dum Dum lollipops, and Jolly Ranchers maintain appeal with both children and adults as portable treats. Novelty and licensed candies tie into popular movies, shows and characters each year and significantly boost seasonal sales. Gummy and jelly candies like gummy bears also generate hundreds of millions in annual revenue.
Distribution Channels
Most United States Candy  is sold through grocery, drug, mass merchandisers and convenience stores who stock seasonal and everyday assortments near checkout aisles and high traffic areas. Valentine's Day and Halloween seasonal sets, boxes and bags specifically designed for gifting and trick or treating hugely ramp up sales for retailers during those peak periods. Traditional candy shops and specialty outlets remain popular local destinations, particularly for chocolate and novelty items. Online shopping is growing exponentially as well for bulk candy, specialty items and merchandise tied to favorite brands. Wholesalers like Candies Depot and Myers Candy distribute to small and large retailers nationwide.
Strategies
Digital and social media has become a primary ing channel for larger candy makers. Company websites highlight seasonal promotions and new product launches while maintaining highly interactive presences across Facebook, YouTube, Instagram and more. Television advertising still generates brand awareness especially around major holidays, supported by point-of-sale materials and displays retailers provide. Licensed partnerships with movies, games and influencers expand brand reach to new audiences year-round. Tying into trending flavors like sour and novelty shapes keeps products feeling fresh. Sample giveaways, contests and branded cross promotions boost trial. Significant ongoing R&D ensures innovation keeps the  exciting and growing for years ahead.

Canadians
I was at my local Costco the other day and I overheard a conversation between a store employee and a middle-aged white couple. The couple said they were visiting from Canada and needed a whole bagged turkey. Costco didn't have any whole turkeys left over from Thanksgiving and so the couple seemed surprised and asked "So if you don't have them, what do you (Americans) serve for Christmas?'
Normally this is the type of conversation that wouldn't interest me and I would just mind my own business. But as I was walking away, the Canadian couple's question gave me pause. In this day and age where everyone's basically global citizens, asking what Americans eat for Christmas doesn't make sense. They're from Canada – an industrialized, western multicultural society with radios, TVs, internet, 24-hour news and media, and they don't know anything about their next door neighbor? Have they tried Google? Are these people for real?
Perhaps they're from a cult or eccentric religious group and live sheltered/restricted lives. But then again I've met Amish who knew more about Mexican traditions during Dia del Muerto than I do. It gets even weirder when you realize that their question implies that they think Americans are a homogeneous group who all eat the same kind of food. Perhaps it's just another example of the isolated/inbred who are unaware that there are those who are different than them. Or maybe they're clueless aliens pretending to be Canadians doing field research. I report, you decide.
