National Chicken Fried Steak Day offers a great opportunity to appreciate and enjoy this classic, hearty dish with a few different southern sides.
History of National Chicken Fried Steak Day
Chicken Fried Steak has been around in southern cooking for many decades. Several places seem to claim its origin, including the states of Texas and Oklahoma. Some think it came from German immigrants who settled in Texas and began cooking steak in a similar way that they had cooked pork or chicken – like a wiener schnitzel. Campaigned for by a restauranteur, Jeffrey Yarbrough and his friend, singer Jimmy Baldwin, National Chicken Fried Steak Day was established in Texas to give this southern dish just a bit more respect. The two wholeheartedly believed that people would argue a little less often if they just had a plate of chicken fried steak to enjoy!
By the year 2011, the 82nd Texas state legislature officially approved Chicken Fried Steak Day through a proclamation of House Resolution 1419. Of course, even though it might not be an official day in other states, Chicken Fried Steak Day can certainly be celebrated in places all around the world!
In an effort to make the day even more special, Jimmy Baldwin wrote a little song about this delicious food, and the song was officially endorsed by the state of Texas in 2017. The title is “Peace, Love, and Chicken Fried Steak.” and the chorus goes like this:
“Peace, love and chicken fried steak
That’s what the world needs now”

German Food Recipe: Jägerschnitzel
For the Schnitzel: 1 pound thin veal cutlets (or pork) - 1/2 teaspoon salt - 1/8 teaspoon freshly ground pepper - 1/3 cup all-purpose flour - 2 eggs, lightly beaten - 1 cup fine, dry bread crumbs - 3 tablespoons butter - 3 tablespoons vegetable oil For the Sauce: 1 lb Mushrooms, washed and cut into bite-size slices - 3 slices Bacon, chopped into small pieces - 1 small Onion, finely chopped - 1/2 cup Vegetable Broth - 1/2 cup Cream - 1/2 teaspoon dry Thyme - A small bunch Parseley, finely chopped - A little extra milk as needed
Season each cutlet with salt and pepper (both sides). Let stand at room temp for 10 mins. In the meantime, prepare your work area - you’ll need 3 plates - add the flour to the first, the eggs to the second, and the bread crumbs to the third plate. Arrange in a row, close to the stove. Heat butter and oil in a large, heavy skillet over medium heat for 2 mins. Coat each cutlet with flour, dunk in eggs, then coat with bread crumbs. Put in hot pan immediately and cook each side for 3 mins, or until golden. Remove and place on a plate lined with paper towels; cover to keep warm. Repeat with the other cutlets. Using the same pan, fry the mushrooms until they begin releasing water. Remove, set aside. Add a little butter to the same pan, add onions and bacon. Cook until onions begin to brown. Place mushrooms back in the pan and add broth, cream, salt, pepper, and thyme. Bring to a simmer, and continue simmering until liquid has noticeably reduced (takes about 15 mins) - stir occassionally. Stir milk into the sauce until sauce reaches the desired consistency (it shouldn’t be too thin and very creamy). Remove pan from heat. Stir in 2/3 of the chopped parsely, adding more salt and pepper if needed. To serve, place a Schnitzel on a plate and top with the mushroom cream sauce. Sprinkle over remaining parsely and serve with Kartoffeln (potatoes), Pommes (French fries), or Spaetzle, and a fresh green salad.

I am making chicken schnitzel tonight (I swapped out chicken for pork in the meal box), and the German in me is highly offended that the recipe card doesn’t tell people using chicken to pound it into an even thickness. How dare you set them up for failure like that?
Anyway, mine turned out okay. And I’m not completely done with the bedroom but I’m pleased with where I left it. I have a good pile of clothes to donate somewhere.

This recipe pairs the traditional German dish schnitzel with the perfect wine, German Riesling. The crisp Riesling goes well with the soft pork cutlets, and the fruity notes in it make the dish taste better. It tastes great together and brings out the best in both the food and the wine.
Ingredients: 4 thin pork cutlets. 1 cup breadcrumbs. 2 eggs, beaten. Salt and pepper to taste. 4 slices of lemon. 4 sprigs of parsley. 4 potatoes, peeled and sliced. 2 tablespoons butter. 1 tablespoon olive oil. 1 bottle German Riesling wine.
Instructions: Warm the oven up to 400F 200C. Use salt and pepper to season the pork roundlets. In a bowl, beat the eggs, and then coat each cutlet in breadcrumbs. Set a pan on medium heat and add the olive oil. Each side should take about 3 to 4 minutes to turn golden brown. Put the cutlets in a baking dish and add a lemon slice to top of each one. Bake for 15 to 20 minutes. While that is going on, boil sliced potatoes until they are soft, then drain them. Put butter in a pan over medium-low heat. When it melts, add the potatoes and cook them until they turn golden brown. Serve schnitzel with roasted potatoes and a chilled German Riesling. Garnish with parsley sprigs. Have fun!

Easy Pork Schnitzel Recipe

 Schnitzels are a mainstay of eastern and central European cuisine and are often made with pork or veal. They are breaded and fried to a crispy perfection (like Germany and the Czech Republic). They're simple to create, and this blog post is packed with advice, so you can start relishing them right away!
 Ingredients for Pork Schnitzel
 Pork chops without the bones are pounded thin so they cook quickly.
Pepper and salt for flavour
Part one of the dredging mixture is flour, which helps the egg stick.
Eggs: a second ingredient in the dredging mixture that helps the breadcrumbs stick.
 Part three of the dredging mixture is breadcrumbs (I prefer panko for extra crunch, but you can use regular breadcrumbs if you want)
For frying, use olive oil (or try another neutral tasting oil with a high smoke point e.g. vegetable oil)
 When you fry them, butter gives them more flavour and browning.
Lemon wedges: used as a garnish
 Which Meat Cut is Best for Pork Schnitzels?
Use boneless pork chops or steaks (also known as "boneless loin chops" sometimes). If you'd rather, you could even use veal!
 Making Pork Schnitzels
Prepare the dredging station: Get three small bowls ready (or a bowl for the egg and one plate each for the flour and panko).
 Put the pork chops between two sheets of plastic wrap and use the flat side of a meat mallet to pound them until they are 1/4 inch thick (or even thinner).
 Sprinkle them liberally with salt and pepper.
 Add 2 tablespoons of olive oil and 1 tablespoon of butter to a big skillet to prepare it for frying. If additional oil is required, make sure the pan is thoroughly covered.
 Over medium-high heat, let the pan heat up for a few minutes. Since you'll be cooking in two batches, add at least one more tablespoon of olive oil and the final tablespoon of butter to the pan for the second batch.
 Dredge the pork by dredging it in flour, egg (letting the excess run off), then panko breadcrumbs (you may need to gently pat it down to make them stick).
