What are assets and liabilities? Why are they important for you?
Assets are things that you own, has value, and makes you money or potentially can. They can be things like cash and property. 
Liabilities are what you owe to others. They can be things like loans and taxes owed. 
The main difference between assets and liabilities is that assets add value to you while liabilities subtract value. 
When determining your  financial stability, you add up each of your assets and subtract your liabilities.

Feta Frittata
Ready-in-a-wink is about all the time I allow for food prep and cooking some days so it’s great to have a frittata in mind as a fall back meal served with a crunchy green salad on the side.  Give this a try when you’ve run out of time for a more elaborate meal but want to serve up something healthy.  Reheats in the microwave well, too.
1 bell pepper, seeded, diced
1 c. green onions, chopped using scissors to speed process
2 c. fresh spinach, chopped using kitchen scissors
1 slice whole wheat bread, crumbled
1 c. feta cheese, crumbled
dash salt/ground pepper
10 eggs, whisked
4 T. oil
Preheat oven to 450 degrees.  Grease a large glass baking dish.  Arrange bell pepper, green onions, spinach, bread and feta across bottom of baking dish.  Whisk salt and pepper, eggs and oil together, pour over vegetables/bread/cheese covering all.  Bake for 15 - 20 min. until a knife inserted in the middle comes out clean.

Well it won't win any style awards but I am super pleased with what my Mum and I achieved with this cellar over the weekend. Every item has been previously thrifted, given to us secondhand (before lockdown) or we 'shopped' for from around the house. Henry was really struggling with the idea of doing school work from home. So we have turned my old mucky & manky cellar into a bright, fresh & fun play and learning zone for all the kids. On the #weekend we fill all the jugs to #water the indoor plants and starts under growlights. It takes 12 gallons for the starts. WEEK ONE: We done more than survived, We’ve enjoyed it! I’ve been busy on Insta stories but haven’t posted anything here so thought I’d do a catch up. We’ve done so many activities whilst trying not to spend too much. We’ve visited the @worldmuseum_ in Liverpool & pottered around Primark (which to be fair killed about 3 hours!) Millie has spent time with us whilst at the same maintained her training schedule & crazy social life. There have been some lazy days at home which have been glorious rather than boring. We’ve baked, taught Violet how to roast a chicken, paddled in the pool, tended to a Robin in its last moments of life after an unfortunate encounter with Alan. I’ve even managed to spend time with some friends, crafted with the WI & met with the Leader of the Council regarding a future project. Tara has attended her first match watching her beloved Everton for only £2 & Violet has done brilliantly at Open Water Swimming. I can’t stand that meme about having only 18 summers with your children- it’s utter tosh when you do so much with them throughout the year too. The house isn’t a tidy as we’d like but all in all I think Week one has been a success. Despite not having Parmesan cheese, my Alfredo sauce still came out great. Today’s dinner was loaded chicken Alfredo French bread. At first, I was going to make cheese garlic French toast but I didn’t have enough ziti noodles to feed 3 and pack a lunch.
I split the French bread, laid mozzarella cheese and then noodles. I used boneless chicken thighs and poached them in half water, half broth and seasonings a little apart of lemon juice, onion and red bell pepper. Once done, it was drained shredded. I made my alfredo sauce (butter,cream cheese, garlic, pepper and heavy whipping cream) without the Parmesan (didn’t feel like going back to the store). I mixed the Alfredo sauce and chicken together then added a bag of frozen (defrosted) broccoli. This mix was placed over the cheese and noodles in the French roll. Finally, I topped a little more mozzarella over the top and baked no longer than 10 mins, just enough for super melted cheese and everyone enjoyed! My ♥️ almost ate his lunch for work tomorrow it was so good. ☺️

But most popular family activities are quite expensive. Even a simple night at the movies can put a serious dent in the budget by the time you buy tickets, popcorn, and drinks for everyone. Fortunately, there are cheaper alternatives to expensive family outings. They provide the opportunity to have just as much fun at a fraction of the cost. Some are even free.
Movies and Music
Kids are often itching to see the newest releases at the movie theater. Doing so even once a month, however, can get pricey. One alternative in some areas is the drive-in. Admission is usually much cheaper than it is at a regular theater, and some let you bring your own drinks and snacks. Drive-ins usually show fairly new releases, so the kids can say they saw something that's not out on video yet.

Click To Download Some theaters offer reduced-price matinees during the day. Some even have free kid-oriented movies on weekend days. These options offer the theater experience without the outrageous cost. Kids often want to go to concerts, but tickets to see the most famous bands are far from cheap. Check your local paper for free concerts in the park. Many areas have them during the warm months. Young children can enjoy the music without the huge crowds and deafening sound systems, and older children might gain an appreciation for less well-known bands.
The Great Outdoors
Nature offers a wealth of possibilities for family outings. Camping is a wonderful activity for families, and it doesn't have to be expensive. It can be as simple as pitching a tent in the backyard, or you can spring for a camper and rent space at a campground. Bring the grill and some hamburgers or hot dogs, or catch some fish to fry. Parks are great for day trips. Those with playground equipment can keep youngsters entertained for hours on end. Hiking trails offer opportunities for exercise and exploration. Most parks have picnic facilities, so you can pack a lunch instead of eating out.
Other Ideas
Here are some more inexpensive family activities to consider: Play miniature golf. Admission is usually quite reasonable, and it provides the opportunity for relaxed yet engaging family competition. Visit a petting zoo. These small zoos do not have the exotic animals you see at larger ones, but kids can feed and pet the animals. Go to a museum. Some offer cheap or free admission, while others cost more. But the larger and more expensive ones often sell season passes, so if you live close by, you can visit numerous times for one low price. Go boating. If you're fortunate enough to live near a body of water, boating is fun and relaxing. Canoe and paddleboat rentals are inexpensive, and when you're done boating there are usually other cheap or free activities in the area. Attend events at a nearby college. These may include plays, concerts, dance recitals, and movie showings. Prices are low, and student discounts usually apply to kids, too. Having fun as a family doesn't require a six-figure income. The Gardens at Wynyard Hall in the Spring….
Last weekend we decided to leave the kids at home in bed for a cheeky Sunday morning lie in and head to Wynyard Hall Gardens to have a look around as we keep hearing about how they’re a lovely place to spend a few hours.
I had a look on the website before we set off and found that there’s lots to do there – there’s a Walled Garden, a Marquee Garden, an Edible Garden, a Victorian-inspired Glasshouse, a little Farm Shop and a Café serving yummy looking homemade cake.  I think it was the cake that swung it for Mr Frugal as he’s not really a wander around a garden kind of guy – he says it wasn’t the cake that persuaded him, it was knowing that I wanted to go as he was going to the football later in the day.  I’m convinced it was the promise of cake though!
Anyway, we got there and found out that the only one of the garden areas that was actually open was the main walled garden which is presumably why we didn’t have to pay the advertised entrance fee.  The lady at the desk just told us there was no charge today and waved us through which was great as it saved us money but I would have rather been able to see the other gardens and paid to get it to be honest.
The walled garden itself isn’t huge but it is very pretty and even at this time of year when most of the flowers aren’t in bloom yet, it’s still a lovely little walk around.
You can see from the photos that the garden is very green at the moment but in the next couple of weeks I’d expect it to change completely as the flowers start to bloom – we were just a little too early in the year for the colour I think.
We spent about half an hour in the walled garden and I’m pleased we didn’t take the kids as the garden itself wouldn’t have held their interest even for that long and there was nowhere for them to climb/run/play which is what the like to do when we go places like this – they’re not ones for a calming walk around a garden.
After we’d spent as much time as we could in the garden we headed in to the cafe for a treat but the cakes were soooo expensive for such small slices so even though we’d planned to have a cheeky slice of cake each and they did look really tasty, we decided not to spend the £3.50 to £4.50 each for a slice of cake that would be gone in a few bites.
The little shop was amazing but again, really expensive and as much as I know that that the food there was all locally produced and organic, I really couldn’t justify the prices which were so much more expensive than I could have bought them for elsewhere which is a real shame as I would have loved to have supported local businesses a little more.  I wouldn’t let the prices in the shop and the cafe stop me from going again though as I can’t wait to see the gardens in the Summer.
It’s funny how much I enjoyed just wandering around the gardens taking photos – I can’t decide if that means that I’m getting old or just feeling inspired about taking photos!
Just in case you’re planning a visit, the usual price is £5.50 for an adult and £15 for a family.  Just make sure you take plenty of extra spends if you’re planning to enjoy a cuppa and a slice of cake!

Lentil risotto stuffed tomato’s. My wonderful Uncle got us these beautiful big tomato’s from the market this morning. I made the risotto just following the recipe in the thermomix and added in a half tin of lentils. Scooped the centre of the tomato (and saved to add to a homemade spicy bbq sauce I was making next) filled them with the risotto mix and topped with breadcrumbs then baked in the over until the tomato’s were cooked. I then made a walnut basil pesto to have on top! I went Lidl's on the way home because I had a 30% off coupon for frozen foods. One of my purchases was 14 pizzas for $9.70. They have all been cooked and cut into strips, and are cooling. They will be popped into the freeze dryer to make yummy pizza snacks. They are always a hit. They are crispy like a cracker and have the comfort food taste that is welcome when things get crazy.
