Halloumi Tomato Salad (Vegetarian)
This beautiful Halloumi Tomato Salad makes a light, flavourful and nourishing lunch, ideal if you're going to the stadium to watch some Olympic Rugby Sevens --should a player get injured -Heaven forbid!- you might be able to pitch in! Happy Saturday!
Ingredients (serves 1):
2 fluffy sprigs Garden Parsley
2 ripe tomatoes, rinsed
1/8 red onion
½ teaspoon freshly cracked black pepper
1/4 teaspoon fleur de sel or sea salt flakes
½ tablespoon olive oil
1/2 tablespoon Modena Balsamic Vinegar
50 grams/1.25 ounce Halloumi Cheese
Finely chop Parsley. Set aside.
Cut tomatoes into slices, and arrange onto serving plate.
Thinly slice red onion and scatter onto the tomatoes.
Season with black pepper and fleur de sel.
Sprinkle with half of the chopped Parsley.
Drizzle with olive oil and Balsamic Vinegar.
Heat olive oil in a small frying pan over a high flame.
Cut Halloumi cheese into slices.
Once the oil is hot, add Halloumi slices, and fry, a couple of minutes on each side until golden brown and crispy.
Top tomato salad with hot Halloumi slices. Sprinkle with remaining chopped Parsley.
Enjoy Halloumi Tomato Salad immediately, with a glass of chilled dry white wine like a Chablis or Chardonnay.

Sardine and Fresh Tomato Pizza
Hungrily biting into this Sardine and Fresh Tomato Pizza is like biting in a freshly harvested tomato, and market day fish all at once! It is generous and simple and tasty and fragrant; one could say, Summer on bread dough! Happy Monday!
Ingredients ( makes 1 pizza):
255 grams/9 ounces Pizza Dough
1/2 red onion
1/2 large heritage tomato (like Black Krim or Marmande), rinsed
a medium, just ripe tomato, rinsed
3 large, ripe Garden Cherry Tomatoes, rinsed
1 heaped teaspoon Herbes de Provence
½ teaspoon fleur de sel or sea salt flakes
½ teaspoon freshly cracked black pepper
3 beautiful Sage and Lemon Sardines (or tinned sardines)
Chili and Herb Oil
Preheat oven to 250°C/485°F. Line a baking tray with baking paper.
On a lightly floured surface, roughly roll out Pizza Dough (you can also hand-stretch it, if you prefer. Place Pizza Dough onto prepared pizza pan or baking tray.
Peel and thinly slice red onion, and scatter onto Pizza Dough.
Cut heritage tomato and tomato into slices, halve Cherry Tomatoes, and arrange them onto the dough, just leaving out the edges.
Sprinkle with Herbes de Provence, and season with fleur de sel and black pepper.
Break Sardines into chunks, and scatter liberally on top.
Drizzle with a little Chili and Herb Oil.
Place pizza in the hot oven, and bake, at 250°C/485°F, for about 14 to 17 minutes, until crust is beautifully golden.
Serve Sardine and Fresh Tomato Pizza immediately, with a glass of chilled, crisp Côtes de Provence or Pays d'Oc Rosé.
