Cleaning and Tidying
Make your bed in the morning. It takes seconds, and it's worth it.
Reset to zero each morning.
Use the UFYH 20/10 system for clearing your shit.
Have a 'drop-zone' box where you dump anything and everything. At the beginning/end of the day, clear it out and put that shit away.
Automate your chores. Have a cleaning schedule and assign 15mins daily to do whatever cleaning tasks are set for that day. Set a timer and do it once the timer is up, finish the task you're on and leave it for the day.
Fold your clothes straight out of the tumble dryer (if you use one), whilst they're still warm. This minimises creases and eliminates the need for ironing.
Clean your footwear regularly and you'll feel like a champ.
Organisation and Productivity
Learn from Eisenhower's Importance/Urgency matrix.
Try out the two-minute rule and the Pomodoro technique.
Use. A. Planner. (Or Google Calendar, if that's more your thing.)
Try bullet journalling.
Keep a notebook/journal/commonplace book to dump your brain contents in on the regular.
Set morning alarms at two-minute intervals rather than five, and stick your alarm on the other side of the room. It's brutal, but it works.
Set three main goals each day, with one of them being your #1 priority. Don't overload your to-do list or you'll hit overload paralysis and procrastinate.
If you're in a slump, however, don't be afraid to put things like "shower" on your to do list - that may be a big enough goal in itself, and that's okay.
Have a physical inbox - a tray, a folder, whatever. If you get a piece of paper, stick it in there and sort through it at the end of the week.
Consider utilising the GTD System, or a variation of it.
Try timeboxing.
Have a morning routine, and guard that quiet time ferociously.
Have a folder for all your important documents and letters, organised by topic (e.g. medical, bank, university, work, identification). At the front of this folder, have a sheet of paper with all the key information written on it, such as your GP's details, your passport details, driving licence details, bank account number, insurance number(s), and so on.
Schedule working time and down time alike, in the balance that works for you.
Money
Have. A. God. Damn. Budget.
Use a money tracker like toshl, mint, or splitwise. Enter all expenses asap! (You will forget, otherwise.)
Have a 'money date' each week, where you sort through your finances from the past seven days and then add it to a spreadsheet. This will help you identify your spending patterns and whether your budget is actually working or not.
Pack your own frickin' lunch like a grown-up and stop buying so many takeaway coffees. Keep snacks in your bag.
Food and Cooking
Know how to cook the basics: a starch, a protein, a vegetable, and a sauce.
Simple, one-pot meals ("a grain, a green, and a bean") are a godsend.
Batch cook and freeze. Make your own 'microwave meals'.
Buy dried goods to save money - rice and beans are a pittance.
Consider Meatless Mondays; it's healthier, cheaper, and more environmentally friendly.
Learn which fruits and vegetables are cheapest at your store, and build a standard weekly menu around those. (Also remember that frozen vegetables are cheap and healthy.)
Learn seasoning combinations. Different seasoning, even with the exact same ingredients, can make a dish seem completely new.
Misc
Have a stock email-writing format.
Want to start running, but find it boring? Try Zombies, Run!.
Keep a goddamn first aid kit and learn how to use it.
Update your CV regularly.
Keep a selection of stamps and standard envelopes for unexpected posting needs. (It happens more regularly than you would think!)

Vegan and GF Chocolate Cake Recipe Review
For my mum's birthday (and then Mother's Day) I made this chocolate cake from Broma. Now, I used pre-made icing (frosting) so I'm only reviewing the cake and not their icing.

Changes that I made:
I do not own 8 inch cake pans, I have two 9 inch and four 6 inch pans so I decided to split it into the 6 inch ones because I didn't want the overall cake to be too flat (and because if it went terribly I had more layers to choose from).
As such I needed to adjust the temperature and timing a little-- I have a Fan Celsius oven and the conversion from Fahrenheit isn't a round number so I erred on the cooler side, and then the cakes also needed a bit longer to be fully cooked. The recipe says for 30 minutes in, mine needed 40.
Another minor change is that the GF plain flour mix that I use has no xanthum gum in it so I added 1/2tsp (since it's about 1/4tps per 150g of the flour).
(Also I used soy rather than oat milk but really I can't imagine that would ever have much of an impact on this kind of cake recipe)
The ingredients:
The egg replacer is flaxseed which I find to be the best substitute for cakes, but had never tried in GF baking before. 3 flax eggs is more than I've used before but since GF cakes need more moisture and protein structures in it I was surprised.
There is a 'secret' ingredient of coffee, and since I don't drink it I was a bit anxious about the definition of 'strong coffee'. I did some tentative googling and came up with 15g of instant grounds toped up to 120ml of boiling water. Since caffeine is inflammatory and my young child was going to be at the birthday party, I used decaf.
Everything else is very standard for cake ingredients.
The method:
It's very straightforward-- combine all the dry ingredients together, combine all the wet ingredients minus the coffee together, mix wet and dry and then add the coffee.
I did make sure to let the flax eggs sit and go gloppy first, but since I was having a pretty terrible fatigue day I mostly sat down after every major step anyway so it had plenty of time.
The results:
After I let them cool, I cut the tops off all four cakes. Now, the biggest problem with this recipe is that the cakes end up very sticky. I got cake coming away on my hands when I held the tops to steady them during the cuts. I was worried that this would mean icing them would be a fucking nightmare, but piping and then using a hot palette knife was enough not to destroy them.
I used pre-made chocolate icing from Sainsbury's and then sprinkled some freeze dried strawberries on top for some minimalist decoration (I knew there were candles coming!)
I ended up only using two of the cakes from the birthday party as my mother has a small appetite, my father has concerns about his blood pressure, and it was not a big gathering. I did consider stacking all four but I'm was certain it wouldn't fit under the glass dome of my cake stand and would have been a nightmare to transport across town. I'm glad I didn't, as Mum was very appreciative of the cake I did bring and would have certainly made a comment about the size if I had.
The other two I made into a cake using the vanilla pre-made icing that I'd bought as a back up and my household ate half of that for snacks/dessert, before I took the other half back to my parents' house for Mother's Day.
Overall I would absolutely recommend this recipe-- it avoids the dryness of a lot of GF bakes (especially shop bought ones) and tastes amazing. It's straightforward to make, enough so that I was able to make it fairly quickly while needing to sit down a lot.

First Blog Post
So for my first of many shit posts, that may or may not be similarly related in the future, I want to share a recipe I found and how I doctored it with whatever the hell I had in my pantry. I'm sharing this recipe just because it turned out too good not to.
The original recipe:
Thai Red Curry Meatballs in Curry Sauce:
Meatballs
1 lb ground turkey
1 cup panko bread crumbs
1 large egg
3 scallions finely chopped
3 cloves garlic finely grated
1 tsp. grated and peeled ginger
1 tsp red curry paste
kosher salt to taste
Preheat oven to 400 degrees. Line rimmed baking sheet with parchment paper or foil and drizzle with oil. In a medium bowl combine all ingredients for meatballs as listed.
Scoop meat mixture using spoon. roll and arrange on baking sheet.
Bake meatballs, shaking halfway through, until cooked through (about 15 minutes)
Curry Sauce
1 tbsp vegetable or coconut oil
1 bell pepper thinly sliced
1/4 cup curry paste
2 (13.5 oz cans) coconut milk unsweetened
2tbsp packed light brown sugar
1 tbsp fish sauce
1 tbsp fresh lime juice
1 cup frozen petite peas
chopped cilantro ( optional- to taste)
Heat oil in a pan and add bell pepper when oil sputters on contact with a seed.
Cook until softened, about 7 minutes and add curry paste. Cook paste until it's lightly roast, about another minute.
Stir in milk, brown sugar, fish sauce and lime juice.
Bring to a boil and add meatballs. Cover meatballs well in sauce and cook until sauce is thickened (about 4-6 minutes).
Add peas and cook until warmed through, about 2 minutes and remove from heat.
Top with cilantro if/as desired and serve with Jasmine Rice.
The recipe I was able to scrap together:
Meatballs
2 lb ground turkey
2 cup seasoned panko bread crumbs
3 small eggs (I had no large or medium and considering the extra lb of meat 3 eggs was fine - 4 small eggs if you want a more moist meat mixture)
1 tbsp freeze dried chives (I had no scallions and didn't want to dice onions so I looked up how much dried herb should be used to substitute scallions and it was roughly 1 tsp for every scallion; even without scaling this amount up to double for the recipe this amount was perfect)
5-6 cloves garlic finely grated
2 tsp. grated and peeled ginger
2 tsp curry paste **I had no curry paste of any kind, so for the substitution I looked up a homemade thai curry powder recipe and saw you can substitute 1 tbsp of curry paste for roughly the same amount of powder. I did also have unseasoned tomato paste, so I got the idea to take the homemade curry powder and mix it in with the tomato paste and use that as a curry paste. There are way to legitimately make curry paste, but it involves cooking full chili peppers which we also did not have. All in all I used 1 tbsp of this homemade "curry paste" and it seems to have come out just fine for it. **Recipe for curry powder and curry paste at the end**
kosher salt to taste
All instructions for cooking the meatballs are the same as above after the ingredient substitutions. I did also double the meat recipe due to preference of making larger meatballs. Plus who wouldn't mind extra meatballs to snack on if there are too many for the sauce? The only difference is since I made them bigger and a more of them I cooked them for closer to 25 minutes to make sure they were cooked through. Amount of time regardless, make sure they are cooked to 165 degrees before removing from oven.
Curry Sauce
1 tbsp olive oil (I didn't have coconut oil and this is just my preference for frying spices and veggies)
I had no bell peppers so skipped those
1/4 cup curry paste ** See above explanation about curry paste
1 can thai coconut milk and 15 oz of regular 2% milk(I only had one can - it's explained below further how I made the milk substitution work so well)
1 small onion diced
1 tbsp ginger garlic paste (if you don't have this then do 4 peeled and crushed/grated cloves of garlic and roughly 1 tsp of grated fresh ginger - this was additional from original recipe from my own experience cooking curry sauces.)
Roughly 1/4 cup shredded dried coconut (I eyeballed the amount of coconut based on my preference)
1 tbsp raw sugar (I like using sugar in the raw to cook with and my brown sugar was dried out and unusable in the moment. Because this sugar is sweeter than brown sugar I only used half the amount)
Frozen spinach to preference (I used a small handful and cooked from frozen)
1 tbsp fish sauce
1 tbsp store bought lime juice (who keeps fresh limes around like that?)
For the peas, I also had no canned or frozen peas or any other veggie that I could easily substitute. What I did instead was roast some chickpeas and put the cooked and roasted chickpeas in the curry sauce. I honestly thing this came out so much better since the savory chickpeas offset the sweet coconut sauce pretty well. ****
Heat oil in a pan until it sputters on contact and add onions.
Cook until softened, about 7 minutes and add ginger garlic paste (or fresh ginger and garlic if using instead) and cook until fragrant (roughly 1 min).
Add coconut and cook until looking toasted and aromatic (roughly 5 mins).
Add curry paste. Cook paste until it's lightly roast, about another minute.
Stir in milk, sugar, fish sauce and lime juice.
Bring to a boil and spinach. Bring to boil again (stirring often to keep spinach from staying clumped) and add meatballs. Cover meatballs well in sauce and cook until sauce is thickened (about 4-6 minutes).
Add chickpeas and cook until warmed through, about 2 minutes and remove from heat.
Top with cilantro if/as desired. I prefer basmati rice so that is what I serve it with. I personally did not have cilantro so I didn't add any.
** Homemade Thai Curry Powder
3tbsp coriander seeds (roughly 2.5 tbsp coriander powder if no seeds)
2 tbsp cumin seeds (roughly 1.5 tbsp cumin powder if no seeds)
1tbsp turmeric
2tsp ground ginger
3 medium sized bay leaves
2 whole cloves
Heat a pan until hot (do not use oil).
Add all spices to pan and toast until aromatic (shouldn't take more than 3 minutes).
If using whole seeds than set toasted spices to the side and let cool. Once cool to touch add spices to a grinder or grind with morder and pestle until as close to powder as you can get mixture.
** Homemade Thai Curry Paste
Take 1 small can of tomato paste and add roughly 3 tbsp (more if you feel is needed) of curry powder and mix into paste with fork thoroughly (1 can will make just enough for above recipe).
** Homemade Roasted Cickpeas
1 can of garbanzo beans/chickpeas
1 tbsp olive oil (I used truffle oil from Truff brand)
3/4 tsp chili powder
1/2 tsp dried thyme leaves
1/2 tsp kosher salt
1tsp homemade curry powder (from above recipe)
Heat oven to 375 degrees (if using an air fryer preheat to 350as well) and prepare a sheet tray with tin foil.
Drain and rinse canned chickpeas well.
Add chickpeas to sheet tray and bake in oven for about 30 minutes, frequently checking on them and shaking tray so they dry evenly (roughly 2-8 minutes apart, 10 minute intervals wont hurt either)
Remove chickpeas from oven and set aside in a bowl to cool.
Once chickpeas are cooled (can still be warm to touch but not hot) add oil to bowl and mix well so chickpeas are covered in oil
Add spices and mix well so chickpeas are well coated.
Bake chickpeas at 350 for roughly 15 minutes or until crispy.
Good for a snack on their own or to cook with!

This gets half an X because I don’t consider this failing .. idc what anyone says we shouldn’t be drowning our bods with water when it’s not regularly taking on a gallon. A slow increase is a W to me + I drink minerals/electrolytes. 💙

P.s I fast in the AM so when I say break(fast) I mean I’m breaking my fast (usually around noon) Fasting is what feels most natural to me. Eating as soon as I wake up doesn’t feel natural in any form.. I feel so slow after early morning meals. I also try to get my dinner in when the sun is setting or before. I might start back up on celery juice. Stay tuned 📻
Thoughts + Feelings
Honestly today was a major slay. My brain is quite depleted from having therapy + physical therapy, but I feel successful in today’s efforts.
I am excited to get into the gym and get full on indoor workouts on my days I don’t have physical therapy. I feel they rly hit that reward center in my brain, but a win is a win. 🏆 I have to respect the fact that a slow torturous work out in PT is a workout none the less. Having 25lb weights pull your body in all different directions is by no means a piece of cake. (My therapist was also telling me that getting my spine aligned is realigning my chakras and energy field. Fascinating stuff)
I will be investing in some fleece lined leggings for my outdoor walks because burrrr ❄️
I’m not too far down the rabbit hole of my book yet, but so far so good.

I'm a fruit fiend so here's an attempt
Easy Snacking:
Apples (apple cutters make this 10x easier, also can be dipped in almost anything you want, I love adding a slice of cheddar and honey on mine, favorite type is honey crisp)
Pears (same as apple, but if you just aren't an apple fan, my favorites are bosc and asian pears! both are soft, crunchy, and sweet)
Cherries (if you like "meatier" textures they're great but best to get when they're actually in season, they do have pits if that's a turn off
Grapes (for extra texture freeze them!)
Berries in general: blueberries, raspberries, strawberries, blackberries, etc (I won't lie, not my favorite due to seeds, but my siblings loves them for the seeds
Clementines/Tangerines/Mandarins (I'm gonna be so honest I can't tell the difference between the three, but any of them are better than oranges in my opinion: easy to peel and sweeter)
Pomegranate Seeds (buy them from the store and skip the hastle of cutting one)
Raw Coconut (easy snacking if you buy it precut from the store like me, otherwise it's more of a hassle. it tends to be a required taste as people tend to either love or hate it, I'd describe it as chewy and weirdly dry and wet at the same time)
Figs (I love the flavor but their mushy texture can be off putting at times, I usually have to be in the mood to eat them raw)
Lychee (maybe the least "easy" on this list but still pretty low effort, sweet but mild and not overpowering, texture is similar to a grape)
Persimmons (these are one of my all time favorites. depending on ripeness they're either crunchier with a more subtle sweet flavor, or mushier with a sweeter one (I prefer them crunchy)
Cutting Required (I use fruit cutters for many of these, but there's a variety of way you can cut them, find what works best for you):
Mango (I cute them by cutting off sides around the pit then dicing them so that it doesn't cut the skin, allowing you to bite off cubes while holding the outside(horrible explanation but if you look up how to cut one you'll see it)
Pineapple (another fruit that can be made easier by getting a fruit cutter, pineapple cutters cut out the core and make a cute spiral so it's fun to eat as well! listen, if a cutter makes it easier to eat what you like, and you have the money, get it!)
Mangosteen (don't be fooled by the name, I'd describe it as a love child of lychee and pomegranate. the outside it hard so can be a bit annoying to eat for a small fruit but in my opinion worth the pay off)
Pomegranate (if you don't want to buy just the seeds you can always cut it yourself! my sister prefers it this way)
Dragon Fruit (seedy, but a very mild flavor)
Papaya (not my favorite, but my mom could eat these for a week straight. also! the seeds are great for cooking)
Watermelon
Cantaloupe (my favorite melon)

i mean this in the gentlest way possible: you need to eat vegetables. you need to become comfortable with doing so. i do not care if you are a picky eater because of autism (hi, i used to be this person!), you need to find at least some vegetables you can eat. find a different way to prepare them. chances are you would like a vegetable you hate if you prepared it in a stew or roasted it with seasoning or included it as an ingredient in a recipe. just. please start eating better. potatoes and corn are not sufficient vegetables for a healthy diet.
