So here's a thing. In episode one Gabriel says "I love you" to Aziraphale and his instinctive reply is "Oh thank you. I..." and then he stops himself. He also absolutely lights up the moment those words are said to him, he beams so brightly, looks so completely deilghted and then has to check himself from saying "I love you too" back to Gabriel. Why? Well, possibly because in that moment Gabriel says it so genuinely to him. He's vulnerable and open and suddenly offers Aziraphale his (platonic) love. Aziraphale delights in it and his instinct is to say something nice back, even if he doesn't really feel it. So just imagine if Crowley had said it to him in that final episode. If Aziraphale can barely hold back from saying "I love you" to someone he doesn't even like just because they say it openly and genuinely to him, imagine what would have happened if Crowley had actually used those words. Imagine how completely those words would have lit him up if they'd come from someone he actually loves and longs to hear those words from. How on earth would he have resisted saying it back? How differently would that conversation have gone? I'm so broken over this.
