Se in questa stagione non avrò almeno una scena simile tra Rosa e Tancredi, scatenerò un putiferio. Ma ve li immaginate? Abbracciati teneramente, in una tenue atmosfera di amore e calore. al sicuro dal caos del mondo e dalle sofferenze che la vita porta. Ma felici di essere insieme. In completa armonia e sintonia.
Io sì, ci riesco benissimo: e non ci sarebbe niente di più sublime.
(side note: è un vero peccato che tancredi molto probabilmente non incontrerà armando, data la triste dipartita di Pietro Genuardi. Chissà come il burbero ma buono e protettivo zio lo avrebbe accolto. avrei adorato vederli interagire e armando accettare piano piano la loro relazione, ma soprattutto accettare tancredi come uno di famiglia. Sigh)

Cailles Farcies (Stuffed Quails)

Juicy, meaty and more-ish, in spite of their petite size, these beautifully golden Cailles Farcies were the plat de résistance of our Christmas Eve Dinner; they also make a tasty Sunday Lunch! Have a good one!
Ingredients (serves 4):
3 large slices Sourdough Bread 
1/3 cup double cream
1 egg
2 small shallots
4 large leaves Garden Sage 
100 grams/3.5 ounces fresh chicken livers
½ teaspoon fleur de sel or sea salt flakes
½ teaspoon freshly cracked black pepper
4 beautiful quails, prepared and gutted
½ teaspoon fleur de sel or sea salt flakes
½ teaspoon freshly cracked black pepper
4 tablespoons unsalted butter, softened at room temperature
2/3 cupgood quality White Port
Tear Sourdough slices into small bits into a medium bowl. Pour double cream over the Bread, and allow to soak, 5 minutes.
Break the egg into a small bowl, lightly beat it, and stir into the Sourdough mixture with a wooden spoon. Set aside.
Peel and finely chop shallots.
Finely chop Garden Sage.
Stir chopped shallots and Sage into the Bread mixture.
Rinse chicken livers under cold water and pat them dry with paper towels. Cut into dices, removing any nerve or vein.
Gently fold chicken liver dices into the bowl, seasoning with fleur de sel and black pepper until well-combined.
Preheat oven to 200°C/395°F.
Season the inside and outside of the quails with fleur de sel and black pepper, rubbing them in gently.
Generously stuff the quails with chicken liver and bread mixture. Secure it in with a toothpick, to close the gap.
Arrange stuffed quails onto a roasting tin, and rub each generously with softened butter. Pour half of the White Port at the bottom of the tin, and place in the middle of the hot oven.
Roast, at 200°C/395°F, 40 minutes to an hour, regularly basting with Port and roasting juices. About half-way through, pour in remaining Port at the bottom of the tin.
Serve Cailles Farcies hot, drizzled with their Port roasting juices, with Garden Herb Oyster Mushrooms and dressed lettuce.
