Water for cooking rice and mutton
Instructions:
Marinate the Mutton: In a bowl, combine the mutton with yogurt, ginger-garlic paste, turmeric, red chili powder, garam masala, and salt. Let it marinate for at least 1 hour (overnight is best for deeper flavor).
Cook the Rice: In a large pot, bring water to a boil. Add a pinch of salt and whole spices like bay leaves, cardamom, and cinnamon. Add basmati rice and cook until it’s 70% done. Drain the water and set aside.
Prepare the Mutton: In a pan, heat ghee or oil. Sauté onions until golden brown. Add the marinated mutton and cook until the meat is tender and the oil separates from the masala. Add chopped tomatoes and cook for a few minutes.
