This Big Italian Cobb Salad is a filling and tasty meal that comes with a creamy Italian dressing and lots of fresh vegetables. It has the right amount of each flavor and texture to please your taste buds.
Ingredients: 2 cups of mixed greens. 1 cup of cherry tomatoes, halved. 1/2 cup of cucumber, diced. 1/2 cup of red bell pepper, diced. 1/2 cup of black olives, sliced. 1/2 cup of hard-boiled eggs, chopped. 1/2 cup of cooked chicken breast, diced. 1/4 cup of crumbled feta cheese. 1/4 cup of bacon bits. 1/4 cup of Italian parsley, chopped.
Instructions: In a large salad bowl, arrange the mixed greens as the base. Place the cherry tomatoes, cucumber, red bell pepper, and black olives on top of the greens. Arrange the chopped hard-boiled eggs, diced chicken breast, crumbled feta cheese, and bacon bits in rows on the salad. Sprinkle chopped Italian parsley over the top for garnish. In a separate bowl, prepare the Creamy Italian Dressing by mixing 1/2 cup of mayonnaise, 2 tablespoons of white wine vinegar, 1 tablespoon of olive oil, 1 teaspoon of Dijon mustard, 1/2 teaspoon of dried oregano, 1/2 teaspoon of garlic powder, salt, and pepper to taste. Drizzle the Creamy Italian Dressing over the salad just before serving. Toss the salad gently to combine all the ingredients and coat them with the dressing. Serve immediately and enjoy!

Ingredients: 1 lb ground beef. 1 packet taco seasoning. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup diced bell peppers. 1/2 cup shredded cheddar cheese. 1/4 cup sliced black olives. 1/4 cup chopped fresh cilantro. 1/4 cup crushed tortilla chips. 1/2 cup sour cream. 1/4 cup mayonnaise. 1/4 cup chopped fresh parsley. 2 tablespoons chopped fresh chives. 2 tablespoons chopped fresh tarragon. 1 clove garlic, minced. 1 tablespoon lemon juice. Salt and pepper to taste.
Instructions: Cook the ground beef in a pan over medium heat until it turns brown. Get rid of any extra fat. As directed on the package, add the taco seasoning and water to the cooked beef. Let it cook on low heat for a few minutes until it gets thicker. Put chopped red onion, bell peppers, shredded lettuce, black olives, cheddar cheese, and cilantro in a large salad bowl. On top of the salad, put crushed tortilla chips. Put sour cream, mayonnaise, parsley, chives, tarragon, minced garlic, and lemon juice in a blender. Mix until it's smooth. Add pepper and salt to taste. Put the Green Goddess Dressing on top of the taco salad. Toss the salad so that the dressing is spread out evenly. Serve your Taco Salad with Green Goddess Dressing right away and enjoy it!

Ingredients: 2 cups of diced apples. 1 cup of celery, thinly sliced. 1/2 cup of walnuts, chopped. 1/2 cup of raisins. 1/2 cup of mayonnaise. 2 tablespoons of lemon juice. 1 tablespoon of honey. Salt and pepper to taste. Lettuce leaves for serving.
Instructions: In a large bowl, combine diced apples, sliced celery, chopped walnuts, and raisins. In a separate small bowl, mix together mayonnaise, lemon juice, and honey. Pour the mayonnaise mixture over the apple mixture and toss until everything is well coated. Season with salt and pepper to taste. Chill the salad in the refrigerator for at least 30 minutes before serving. Serve the Waldorf salad on a bed of lettuce leaves. Enjoy!

Ingredients: 2 ripe avocados. 1/4 cup Greek yogurt. 2 tablespoons lime juice. 1 clove garlic, minced. Salt and pepper to taste. 4 cups mixed greens. 1 cup cherry tomatoes, halved. 1/2 cucumber, sliced. 1/4 red onion, thinly sliced. 1/4 cup feta cheese, crumbled. 2 tablespoons sunflower seeds. 2 tablespoons fresh cilantro, chopped.
Instructions: Cut the avocados in half, take out the pit, and scoop out the flesh into a bowl. Salt and pepper should be added to the bowl with the avocados. Greek yogurt should also be added. Puree the food with a blender or an immersion blender until it is smooth and creamy. If you need to, change the seasoning. Serve the mixed greens, cherry tomatoes, cucumber slices, and red onion slices in bowls. Pour the smooth avocado dressing over the salad ingredients. Crack up some feta cheese and top it with sunflower seeds and chopped cilantro. Serve your tasty Avocado Salad Dressing Bowls right away and enjoy them!

~Memory Lane~ I often reflect on my wonderful Summer days in Schweinfurt, Germany when my Father would take me to the neighborhood Mom and Pop Gasthaus (German Restaurant).  The restaurant wasn’t anything fancy and whenever I visited, I would always have a salad, jaeger schnitzel, and pommes frites.  For those of you that may not know, jaeger schnitzel and pommes frites is simply a thin piece of breaded pork or veal served with a mushroom sauce and fried potatoes. It was a little piece of heaven on a plate. Every now and then I like to recreate the meal and take a trip down memory lane. I dedicate my Sunday supper to my daddy.
