Ok folks who want to do this, and also want to make it stable but easy to change up. I bought these AMAZING cardboard tools from a place called make.do. They have cardboard screws that you can use to screw bits of cardboard together with, child friendly knives (possibly of less interest to you than to a childrens librarian with niblings), plus tools to make folds easily. I've bought 2 sets for work (it sucks that you can't take the resources you asked to be purchased when you change employers!), plus a set for me, and a set for my oldest niblings.
