I need ideas since I can't really eat most of what my family makes lol
i like to cook from scratch so i don't know how helpful I'll be but I'll lay out some of my favorites
i eat a lot of pasta tbh. fettuccine alfredo, meatless spaghetti (or if i can find the tofu meatballs, that), pasta primavera. I'm trying some mac and cheese with gochujang in it, I'll let you all know how that is.
easy as hell feta tomato pappardelle
not to be cliche and say salad but the nashville hot pickle and spinach dijon make me (a salad hater) like salad. they sell these at walmart or raley's.
i make a vegetarian noodle soup with vegetable broth sometimes. depending on where you are, there's an amy's brand one that's canned. zuppa toscana is a fun one to make if you have veggie italian sausage (i wouldn't put white wine in it. i rarely put wine in anything.)
also korean and indian food is usually vegetarian by default. japchae is really good. it's very vegetable-heavy. i make a cold soondubu (it's usually hot but this is a very good cold for hot days version). this is kong-guksu, which is a peanut sauce ramen dish (better than it sounds).
my favorite indian dishes are palak paneer, tikka masala (i make it with cauliflower or tofu depending), chana masala, basmati rice, and naan.
falafel is vegetarian, and you can make yellow jasmine rice vegetarian easily by making it with vegetable broth instead of chicken broth. and of course, there's hummus and baba ganoush
if you like mushrooms, they're a good substitute for steak on philly cheesteak and this recipe for vegan po' boys is phenomenal.
i make black bean burgers from time to time (i usually buy them bc I'm lazy but they're fun to make). also, black bean and corn tamales are very good. quesadillas are easy too. or cheese enchiladas. they sell vegetarian refried beans too. if not, pre-boiled (or canned) whole pinto beans + vegetable shortening.
we have decent vegetarian sections at the stores i go to. i find safeway and sprouts (I'm not sure if this is a national chain or not) have the best options. i wish i lived in la or sf where all the vegans are.
when in doubt, you just buy nacho fix ins. not healthy but fun and everything that needs to be hot goes in the microwave.

hiiiii cleo did u eat anything delicious lately and how is finals season going for u...
why hello cami... yesterday i had some friends over for a crafts and wine night where i was planning on buying a pizza from this amazing local joint thats just down the road from me but three people cancelled last minute (one of them being the girl! that i have a crush on or whatever!!!! bah.) so instead of ordering the pizza i ended up making one of my go to fav recipes which is chana masala with rice and garlic naan. it was delicious like actual YUM. not to toot my own horn but i am an amazingggg chef when i apply myself. so anyways i had the leftovers today for lunch and it was delightful
as for finals season. um. um. ITS BAD. ITS REALLY REALLY BAD 😭 but we persist. basically i have two essays that are a few weeks late and three exams that are coming up so so soon and im worried one of my profs gave me a zero on the late essay that i havent submitted yet because its too late ?? maybe?! so yeah. im kind of suffering and have almost given up entirely but im excited for it all to be over so i can focus on publishing and trying to get a job interning at this one lit mag in the states... which would be awesome... anyways that me! how are you? how have you been? are you suffering too lol? lots of love cami!!!!!!!!! xoxo

Alyra: Rabbit stew. Easy to prepare, it's easy to get the ingredient, it tastes like home and warmth. Raina: Cotton candy. Her father used to buy it for her and just for her (she's the first of four siblings, parents didn't have lots of money, everything had to be shared. Cotton candy was hers.) and it still has high emotional value for her. Garrett: Pumpkin soup, with lots of rosemary. Wholesome, warm, cozy, he loves pumpkin. Aisling: Peach jam on buttered bread, it tastes like home. Or, lemon custard cake which is her favourite. Radha: Chana masala, aka: chickpea curry. Flavourful, wholesome, you don't need much to prepare it, it's her favourite recipe from home. Max: Instant ramen of a very specific brand. When she feels fancy, she hard-boil an egg to put inside. She can cook, but it just takes so much time, she can't be bothered.
Seren: Sachertorte, because her mother bakes it when it's a special occasion or someone needs to be cheered up ("You can't be sad with this much chocolate." she would say, and she's right). Aunt Diotima's moussaka because what's not to love about moussaka. Come on. She's of course a sucker for greek food. And whatever sweet treat Dylan keeps in his car for when he tries to eat some high protein, healthiest of healthy breakfast and he has an attack of hunger in the car going to work. He always, always has something. Usually it's the most greasy, fat, improbably coloured sweet he can find. See the blue donut in chapter three.

leaning out the hatch of the truck, he props himself up on his elbows, and eyes the crowd milling around. this whole easter event was a great idea in theory...but in practice, he had totally underestimated the amount of chana masala naan toasties drunk people could consume. "you guys know there's like...traditional easter shit over there right ??" he gestures vaguely towards the stand selling cawl and hot cross buns. not that he has any need to put people off buying his food; it's more that he could use five minutes for an actual smoke break.
