Hi, Calli! I know itâs been a year since Chapter 2 of Wildward came out, but I was just curious about your thoughts on critiques about Markusâs character? Mainly just asking cause itâs been on my mind, especially after reading the Clara x Markus one-shot ((which was really good btw!!))
Hello!!
Honestly, I think it is a fair critique and I will try to avoid certain descriptors when it comes to Markusâ complexion if it makes people uncomfortable moving forward.
Speaking as a POC myself, having my complexion compared to foods like caramel or coffee or chocolate doesnât personally bother me. In fact, I actually find it rather sweet and flattering? But Iâm sure itâs probably a cultural thing because I was born and raised in Indonesia where we also do similar things in our literature when describing our complexion (ex. Describing brown skin as âsawo matangâ which means ripe sapodilla, or âgula arenâ which is palm sugar) so I wasnât aware that it had such negative connotations to POCs in the west. What WOULD have been offensive to me personally is if my complexion gets compared to things like⊠poop or mud. You know, unpleasant things.
But I understand now that the reason it is considered offensive is because of the dehumanization aspect of comparing complexions to food, and how it is a direct parallel to the dehumanization of POCs in majority white countries, so I will be mindful of it moving forward.
Regarding criticisms of Markus being the âLatin loverâ stereotype though, give him time! He has only just been introduced, and thereâs still so much more to his character that has yet to be revealed and developed!

A/N: Hey @reeces-pieses! Thank you so much for the request and I hope you do not mind that I added Indonesia as well as Egypt for this headcannon. This is for relationship headcannons and soon after this would be done. I would make a Crushing headcanon!

Neeraja Patel - India
India is a positive give just like a Golden Retriever so it is expected that he would go far to make your dating experience great together with him.
It is not surprising because he is a friendly guy. He would make one of the great gentlemen. It is canon that India is polite and would tell everyone 'namaste' which means in India it means hello.
Would keep holding your hands when the two of you are in the crowd as he does not want to lose you because he's scared that there's a bad guy planning to hurt you.
Does not get angered easily and he has a high patience. The only thing that might piss him off if you are making fun of his culture since he's proud of it. He is generally a sweet guy so don't try to anger him.
If you love sweets? He would bring you to Indian markets that sell the best Kulfi (Pistachio Ice cream without eggs) or Jalebi ( A spiral-shaped sweet made out of sugar and saffron).
Also, he would also bring you to those markets that sell the best milk tea. After all, India is most known for their Milk Tea and many people love their tea.
Since I did mention he is a sweet guy. Sometimes, he would let you ride his elephant. He loves animals but he mostly loves his elephant so you are lucky if you never ride this animal. he would offer you to ride them with him behind you.
Don't bother trying to argue with him. He can be quite argumentative just because I told you he is sweet and polite. Which is sucks because when he is getting mouthy, he already had some resources to counter your argument.

(Y/N) sat by the window, their/her/his heart racing with anticipation as (Y/N) waited for their/her/his boyfriend Neeraja to come home. The gentle lights coming from the sun shining and cascading onto (Y/N)'s skin provided soothing thoughts for you. As the minutes ticked by, your excitement grew, and (Y/N) found yourself constantly glancing at the clock.
From far far away, Neeraja guided the gentle giant back towards home. The sun was setting, casting a warm golden glow across the lands. Neeraja's heart skipped a beat when he spotted the certain person with (H/C) hair colour and (E/C) eye colour already waiting for him.
A smile spread across his face as he urged the elephant to slow down, and he waved his hand enthusiastically to catch (Y/N)'s attention. From the distance, their eyes locked, and a rush of happiness filled him. (Y/N)'s face lit up as they/she/he recognized Neeraja and the elephant, and they/she/he waved back with equal enthusiasm.
Neeraja gently directed the elephant to a halt as the two of them already reach his palace. Neeraja dismounted himself from the back of the gentle giant. Neeraja carefully slid down from the back of the elephant, and landed softly on the ground, his feet finding their footing with practised ease.
The slender man with dark brown hair's heart raced with excitement as he closed the distance between himself and (Y/N). A mixture of joy and longing was evident in his eyes. (Y/N) had to step out of the palace. (Y/N) descended the stairs, each step carrying a mix of excitement and love.
The door closed behind them with a soft click, leaving a momentary silence in its wake. Neeraja's eyes lit up with delight as he spotted (Y/N) walking down the street. Without a moment's hesitation, he broke into a joyful sprint, closing the distance between you and him in an instant.
He smoothly wrapped his arm around (Y/N)'s waist, pulling you into a warm and unexpected hug. (Y/N)'s cheeks flushed with a rosy hue as Neeraja's playful embrace took you by surprise. In a playful and lighthearted gesture, Neeraja twirled (Y/N) gently in his arms, prompting a delighted giggle to escape (Y/N)'s lips. "I miss you so much, dearie," he gently set you down on the ground.
With a mischievous glint in his eyes, Neeraja extended an inviting hand to (Y/N), a spontaneous idea forming in his mind. "How about we take a ride on my elephant together?" he suggested with a playful smile. (Y/N)'s eyes widened with a mixture of surprise and excitement, and a grin slowly spread across your face as you nodded in agreement.
Neeraja helped (Y/N) onto the elephant's back, ensuring their comfort and safety. Once settled, Neeraja mounted behind them, his arms encircling (Y/N) protectively as the elephant carefully and slowly stood up on its leg. The world seemed to take on a new perspective from up there.

Gupta Muhammad Hassan - Egypt
Egypt can be blunt and tactless when speaking but that does not mean he is heartless. He's just introverted and observant but secretly he does have a soft spot for you.
Very protective of you and you know how hot it gets in the desert so if you are travelling around the Sahara desert with him. He will make you wear tons of clothes that cover you from the sun.
Also, let you ride on his camel when the two of you are travelling in the desert as he also already prepares many drinks when the two of you are going on travel since he did not you to be dehydrated.
Secretly is a tough guy so he would not even let any dangerous desert animals come close to you, especially the cobras, the scorpions or the Nile crocodiles.
Despite his cold exterior. Egypt actually can be quite cute. He's very easily blush if you give him affection like a simple kiss on the cheek already made his cheeks go pink.
He might not show it but secretly he does get jealous when you are around Turkey because he knows many women and men like Turkey so he would most likely watch over you when interacting with his friend.
If you ask about it. Not going to admit that he is jealous as he would just say "I do not understand what you mean. I'm sorry," and then walk away with you still confused.
If you are observant enough. His love language is actually the service of act and then quality time together with you. It's not really easy for him to show how much he loves you like how India did for his S/O.

Muhammad Gupta stood before the mirror, his khaki uniform neatly worn, representing his country as Egypt. He reached for his white keffiyeh, carefully unfolding it before draping it over his shoulders. The soft fabric settled against his chest, a symbol of tradition and identity that connected him to his heritage.
(Y/N) (L/N) stood hidden behind the slightly ajar door, observing Muhammad Gupta with a mixture of curiosity and anxiety, worried if anything bad happen to him. Everyone knows the desert is not a friendly place for human beings, there are many deaths because of the heat and because of the dangerous animals in there.
A subtle intuition tingled at the back of Muhammad Gupta's mind, a feeling that he was not alone in the room. Slowly, he turned around, his gaze shifting from the mirror to see (Y/N) already standing there. The man with white keffiyeh could not help but sigh at (Y/N). "Is everything alright?" He asks (Y/N) who is still standing behind the door.
(Y/N)'s gaze met Muhammad Gupta's as you hesitated, then finally spoke up. "Hey, do you think I could join you on one of your desert trips sometime?" you asked with a hopeful smile. Muhammad's expression softened, and he took a moment before responding, his tone tinged with concern. "I appreciate your interest, but the desert can be quite challenging and unpredictable. It's not without risks, and I wouldn't want you to get hurt." His words carried a mixture of protective care and a desire to keep you safe.
A flicker of disappointment crossed (Y/N)'s expression. You took a moment to process his concern before mustering up the courage to respond. "I understand your worries, Gupta. But I promise to be careful and follow your guidance. I really want to see what the desert looks like as well as the pyramid. I promise I will be careful," (Y/N) is begging him to let her/him/them go with him.
Muhammad was a little bit hesitant, seeing the genuine desire in (Y/N)'s eyes. He couldn't resist the sight of (Y/N) pouting slightly, her/his/their bottom lip jutting out in an adorable manner. Another sigh escapes from his nostrils along his mouth, shaking his head slightly as he realizes that he just gave in because of the way you act. "Alright, "but you'll have to promise to follow my instructions and stay close," (Y/N) smile was glowing bright once you hear Gupta finally letting you go.
As (Y/N) relished in the triumphant moment of convincing Muhammad Gupta to let them join him in the desert, a gentle rustling drew their attention. Turning towards the sound, (Y/N) watched in astonishment as Muhammad reached into his wardrobe and pulled out another white keffiyeh. Without any words, the man with white keffiyeh steps closer and puts another white keffiyeh on top of your head.
Muhammad gently placed the white cloth over (Y/N)'s head, letting it settle atop your hair. Confusion mixed with surprise painted on your facial expression, and they blinked at him in disbelief. "What's this for?" (Y/N) asked, their voice a mixture of curiosity and amusement. Muhammad was silent for a moment before he spoke, It's to protect your hair from the sun. It's going to be very hot in there," he commented.
A soft blush crept onto (Y/N)'s cheeks as (Y/N) connected the dots. Gupta's caring gesture, his concern for their well-being, and the way he delicately placed the keffiyeh on their head all fell into place making you realize that he does not want you to get heated because of the sun from the desert. Your eyes looked up at him, their eyes reflecting a mixture of gratitude and affection. "Thank you," you whisper silently with a little smile on your face.

Wibawa Prayogo - Indonesia
Almost like India, he doesn't get angry easily despite he often fights together with some ASEAN countries, especially Malaysia like siblings. Although, he has a little bit more temper than him and is a bit less polite.
Indonesia has a double side which is his bold side along with a shy side surprisingly. His bolder side is he is going to bring you around Jakarta on a motorcycle and just let you taste any delicious street food.
Would often fluster you with his little teasings. He can be a little bit of a prankster, sometimes would call you 'My dear, love, My sweet' and the cringiest is 'Ayang' which has the same meaning when you call people honey. He really loves to use those endearment pet names for you.
Also, going to bring you to his Komodo dragon island sometimes and let you interact with his Komodo dragon pet. Not only his Komodo dragon, but he would also let you interact with his bird of paradise (Cendrawasih bird).
The cute side of him when he is getting shy after he receives little kisses for you as he smiles goofily. Would look at the ground and then try to hide his red face.
He would also brag to Every ASEAN country about you, especially to Malaysia about him having a loving, cute and caring S/O. Also, even bragging about your achievement.
Just like India, he can be argumentative but India is still able to be polite about it or just plain Passive Aggressive. Whereas Indonesia would call out your every mistake and maybe even raise his voice.
Also, Indonesia can be even more stubborn than Indoa. If India is still able to forgive you when he is angry. Indonesia would give you silent treatment and sometimes does not even want to admit he is wrong.
â°â â” â” â” â” â” â”ââ°
Seated on the comfortable couch in the living room, (Y/N) stared at the television screen with a hint of boredom etched on his face. The movie playing before them seemed to lack the spark that could capture their attention. The characters moved through predictable scenarios, and the dialogue felt flat.
Resting their/her/his chin on their/her/his hand, (Y/N) let out a quiet sigh, (Y/N) mind drifting away from the movie's storyline. The sound of the characters' voices became a distant murmur as they found themselves lost in their own thoughts, it's just the same for every romance highschool story of a girl crushing on a jock who has a girlfriend of a cheerleader and a popular girl and then the guy dumps the girl in the end to get the 'I'm not like other girl' MC character.
As the dull movie played on in the background, (Y/N) was jolted from the reverie by the distant rumble of a motorcycle engine. The sound grew louder, causing (Y/N) curiosity to pique. You instinctively got up from the couch, moving towards the window to investigate. Pulling the curtain aside, your eyes widened in surprise.
There, parked on the street, was (Y/N)'s boyfriend Wibawa Prayogo, sitting confidently on a sleek motorcycle that he always rides around the city. A smile broke across (Y/N)'s face as you took in the sight of Wibawa's helmeted head, his eyes hidden but the joy evident in the curve of his lips. "Baby!! I'm here, let's go out together and have some Fried Rice with Chicken Skewers! I know a great place that sells Fried Rice!" He shouted.
With a rush of excitement, (Y/N) wasted no time in stepping outside, the cool breeze hitting their/her/his face as they eagerly approached the waiting motorcycle. Wibawa's warm smile greeted you, and without hesitation, (Y/N) carefully mounted the motorcycle behind him, ensuring him with the grip.
Wibawa turned towards you, a grin hidden beneath his helmet as he handed over an extra helmet. (Y/N) accepted it with gratitude, securing it in place before giving Wibawa a reassuring nod. The motorcycle roared to life once he press his feet on the pedal, the engine vibrating beneath them and the tire starts to move once the engine starts.
As the wind rushed past them and the world blurred in their peripheral vision, (Y/N)'s heart swelled with happiness. You recalled the numerous times the two of you had ventured out together, exploring new culinary delights, savouring exotic flavours, and discovering hidden gems in the city's culinary scene.
After arriving at the festival of the Independence Day night markets. Amid the festive atmosphere of the Indonesia Independence Day celebration, Wibawa and (Y/N) found themselves immersed in a vibrant sea of colours, lights, and laughter. The night market was alive with energy.
(Y/N) couldn't help but feel a surge of gratitude for Wibawa's thoughtfulness in bringing them/her/him to the festival. With a tender smile, you leaned into his face to press a gentle kiss on his cheeks. "Happy Independence Day, Wibawa. Also, thank you for bringing me to this place," you whispered to his ears. Wibawa's cheeks flushed with a delightful mix of surprise and pleasure, his eyes widening in response to the unexpected display of affection.

BIOGRAPHY
EARLY BEGINNINGS
Annisa was born in Jakarta, Indonesia and put up for adoption soon after birth. They were adopted when they were an infant by Carolyn and Howard Adler and were brought back to be raised in the United States
When Annisa was adopted, Carolyn and Howard already had one child that theyâd adopted, Kurt. He was older than Annisa and he fiercely looked after them from day one, always playing the role of the protective older brother
At the age of 3, Annisa took their very first dance class and they were instantly hooked. Their entire life revolved around ballet and they dreamed about one day becoming a prima ballerina. Although there was pressure to look a certain way in ballet, Nisa tried their hardest to not let it bother them
As the years went on, the Adlers took in several children: Ava, Marisol, Cyrek, and Donnie. All the children became life-long siblings and the fact that not one of them shares blood makes no difference to any of them. They're a family, through and through
From a very young age, Annisa had known that they were gay. However, being raised in a religious household, they were in denial for a while before they finally accepted themselves and came out to their family as gay when they were 17
Though the childrenâs mother had nothing but love for her children, to bit a of fault even, their father wasnât as forthcoming. While their mother was warm and welcoming, their father was cold and distant and eventually, push came to shove and they split
When Cyrek was 16, he attempted suicide and though Nisa wasnât there to witness it, theyâd been scared to death of losing Cy and had clung to his side in the hospital
THE BREAKING POINT
The Adlersâ lives came to a screeching halt on a spring day in 2014. Annisa was picked up early from dance class by her distraught father and she quickly found out why--Kurt had committed suicide. Suddenly, Nisa's world was in pieces
In the aftermath of Kurtâs death, Annisa felt utterly lost and blamed themselves for their brotherâs death, positive that there must have been some way they couldâve helped him. They fell into a deep depression and soon after developed anorexia. They quit dance and nearly failed out of high school before their parents placed them in a treatment center to get help for their eating disorder at the age of 17
Annisa was in inpatient treatment for over a year and even after getting out of the hospital, they suffered through a cycle of recovery and relapse for years. While Nisa was lost in their disorder, they became a stranger to their family. The person that had once been soft and sweet was now deceitful, manipulative, and angry. They lashed out at anyone who questioned them too closely. While stuck in their disorder, they lost their familyâs trust and for good reason
After treatment, Annisa worked to earn their GED and then went on to get an Associateâs degree in business with the goal of someday owning and opening their own dance studio
WHAT COMES AFTER THE DARK
In 2022, Nisa finally succeeded in becoming a dance instructor specializing in ballet
Annisa has now been in successful recovery for almost two years
While Nisa had identified as a woman for their entire life, recovery has helped them to rediscover themselves and in 2021, they came out as genderfluid
Within the last few years, Nisa learned that Kurt had a daughter named Ju-mi and has since become very close with her niece, whom they babysit regularly

Coffee-Brown Eyes
Book: Perfect Match
Pairing: Sloane Washington x Hawthorne Park (black m!MC), Sloane Washington x Alana Kusuma (briefly).
Rating: PG
Summary: A small drabble about Sloane's struggle to look people in the eye.
Word Count: 886 words
Note: My HC for Sloane has always been that she is autistic, and one of the things some autistic people struggle a lot with is eye contact. So this is an exploration of Sloane in that context. The quote in my moodboard for this comes from writer and artist Judy Endow (Here's an article she wrote on Autism and Eye contact, along with her artwork on the same! I highly recommend reading it!)

Hawthorne Park - Daniel Kaluuya
Sloane Washington - Nelly Muse)
"Coffee?"
Their fingers brush as the cup passes from his hands to hers; Sloane allows her touch to linger a second longer on Hawthorne's knuckles. From underneath her lashes, she steals a moment's glance into the laughing warmth of his eyes.
She doesn't notice how fleeting that one look is - she never will - but he does. They've been together long enough for her to feel as comfortable with his touch as she would her own, yet the one thing that remains a constant is the persistent wandering of her eyes.
Sloane sips the brew in front of her with her eyes closed. Black, no sugar. Nothing to mask its sharp, invigorating bitterness. Sloane likes her coffee the way she likes her chocolate, the way she likes Hawthorne's eyes. Dark, sharp, shining. Deeply overwhelming.
She peers in Hawthorne's direction again. He isn't looking, thank God, but she can still see his face from this vantage point. She can still see his eyes. A tiny thrill shimmies its way through her spine.
It's so much easier like this. Eyes are fascinating things to look at, really. All those colours, all the myriad changes in hue when the lighting or mood was slightly different. When she was a child she would stare, enthralled, at pools of limpid blue and sea green, searching for shades she knows she would never find in a mirror. But now she's older, now it's darker colours that hold her attention.
She loves looking into people's eyes.
But only when they aren't looking back.
Not that Sloane had been aware of this trait of hers, not until the last few years. She'd spent almost all her teen years and half her adult life not even thinking about whether she looked at people differently from everyone else.
It's one of the first things I noticed about you, Damien would tell her one night in Indonesia, staring listlessly at a campfire. And it made me wary. Most of the time you'd never look anyone in the eye. Made me wonder what you were hiding.
A corner of Sloane's mouth quirks up a little. She did have plenty to hide when she first met them all, that was true. As for the rest...clearly Damien knows by now that she could be spitting truths while having the same restless, roaming gaze.
Of late she's begun to notice the same restlessness in Zinnia's too. Limpid and sky-blue, they widen and constantly seem in search of something. Sloane has often wondered if, subconsciously, she'd had something to do with that. Could she have passed on a trait she hadn't even noticed in herself, to the Match she helped create?
"Probably," Alana whispered against her curls last night, her curves moulded against Sloane's own, her fingers tracing lazy patterns of fire across her stomach. "When you do try to look someone in the eye, you're painfully obvious about it. And I do mean painful, beb. Because you look like you're in literal pain when you have to do it for that long. Zinnia has that look too."
Sloane was surprised enough to stare at her girlfriend, long enough that she could feel the aching strain at the corners of her eyes, images like whitened nerve-endings dancing around her field of vision.
Alana smiled, her deep brown eyes glistening. In this light, they seemed to possess the texture of velvet. "Twenty seconds."
"What?" The tip of Sloane's tongue nervously touched her bottom lip, forcing Alana's gaze from her eyes to her mouth.
"The longest you've looked into my eyes," she let out a throaty laugh, covering Sloane's lips with her own....
"Earth to Sloane," Hawthorne's deep, rumbling voice takes her out of her reverie. "Drink up, honey, or your coffee will go cold."
Sloane's smile is heart-stoppingly sweet, Hawthorne thinks - especially with how she holds the mug so close to her and casually shrugs her shoulders. "Imagine that, our very own homemade cold brew."
Hawthorne silently raises his own mug, his hand gripping the windowsill. The sunlight streams in from the window, bathing his face - his eyes! - in light.
In the shadows, his eyes are dark, almost black. They're already the colour of the deepest, sharpest coffee. You could almost fool yourself into believing such eyes were incapable of changing colour, of possessing an entire bouquet of hues and shades. Lord knows she'd believed that enough in front of the mirror as a child.
In sunlight they're twin pools of honey, she can almost imagine that colour flowing in thick, cascading waves. In sunlight they're the colour of tiger eye gems - glowing golden. Under her eyelashes, Sloane stares shamelessly, breathlessly, hoping against hope Hawthorne will take at least a little longer to look back. This sight is too beautiful for her to turn her eyes away from now.
Unbeknownst to her, Hawthorne stifles a smile. He has long since trained his eyes to shift their gaze away a little longer. Long since learned to resist the temptation of letting her know he's watching her watching him. Long since allowed his eyes to be the ecstatic twin objects of her admiring gaze, rather than enthusiastic participant.
It's a tiny, worthy sacrifice, for that look of pure pleasure it brings in her own eyes.
Sloane grins as she looks away. Hawthorne's own coffee must be cold now but she suspects he won't care.
Hawthorne grins as he turns towards her. One minute twenty seven seconds.

Nasi Goreng (Indonesian Fried Rice) by Pat Tanumihardja
Nasi goreng, Indonesia's version of fried rice, gets a sweet-savory profile from kecap manis and a big hit of umami from shrimp paste.
Why this recipe works:
1. Using either freshly cooked or day-old rice results in fried rice that separates nicely into individual grains, without clumping up.
2. Indonesian shrimp paste adds a potent dose of umami.
3. The sweetness of kecap manis balances out the dish's many salty and savory elements.
Nasi goreng is essentially Indonesia's take on fried rice. In addition to kecap manis, the country's ubiquitous sweet soy sauce, terasi (Indonesian shrimp paste) is what sets nasi goreng apart from other fried-rice variations you'll see in other countries.
Terasi is an umami bomb that pervades both your kitchen and your senses. If you can't find it easily, feel free to substitute another Southeast Asian shrimp paste, or omit itâyouâll be making what my mom calls nasi goreng cina, or Chinese fried rice, which is the version she made for us when I was growing up.
Ingredients
For the Spice Paste:
2 small shallots (2 ounces; 55g), roughly chopped
3 medium cloves garlic
1 large fresh green chile, such as Fresno or Holland, stemmed and seeded, or 1 teaspoon sambal oelek, such as Huy Fong (see note)
1/2 teaspoon terasi (Indonesian shrimp paste), optional (see note)
For the Nasi Goreng:
4 cups cold cooked jasmine rice (21 ounces; 600g) or other medium- to long-grain rice (see note)
2 tablespoons (30ml) neutral oil, such as canola or sunflower oil
2 tablespoons (30ml) kecap manis (see note), plus more for drizzling
2 teaspoons (10ml) soy sauce
Kosher salt
Ground white pepper
To Serve:
2 large fried eggs, cooked sunny-side up or over easy
Sliced cucumbers (optional)
Sliced tomatoes (optional)
Fried shallots (optional)
Directions
1. For the Spice Paste: Add half the shallots to a mortar and grind with pestle until a coarse purée forms. Add remaining shallots, followed by garlic, chile, and terasi (if using), grinding with pestle until each ingredient is mostly incorporated before adding the next. The final paste should resemble thick oatmeal in texture. Alternatively, combine all spice paste ingredients in a small food processor and process until they form a paste.
2. For the Nasi Goreng: If using day-old rice, transfer rice to a bowl and break rice up with your hands into individual grains.
3. Heat oil in a large wok or skillet over high heat until shimmering. Add spice paste and cook, stirring constantly and scraping bottom of wok or pan to prevent paste from burning, until a pungent smell permeates your kitchen and paste turns a few shades darker, 2 to 3 minutes. Reduce heat to medium at any time if paste appears to be browning too quickly.
4. Add rice to wok and stir to coat with spice paste. Add kecap manis and soy sauce. Stir and cook until rice is evenly colored and hot throughout. Season with salt and white pepper.
5. Divide rice between two plates and top each plate of rice with a fried egg. Garnish with cucumber and tomato slices and shower with fried shallots, if you like. Serve immediately with kecap manis alongside for drizzling.
Special Equipment
Mortar and pestle, large wok or skillet
Notes
Terasi is an Indonesian shrimp paste that can be found in well-stocked Asian markets or online. We recommend purchasing handy single-serving packets. If you can't find terasi, you may substitute belacan (Malaysian or Singaporean shrimp paste) or Thai shrimp paste, or simply omit it altogether.
Sambal oelek is an Indonesian chile paste, traditionally made with nothing more than hot red chiles and salt. You can find it at Asian markets or in the "international" aisle of some supermarkets.
Kecap manis is Indonesian sweet soy sauce, typically made by combining soy sauce with palm sugar. We recommend Cap Bango kecap manis, but you may also find ABC and Conimex brands available online or in Asian markets. For more information, read our kecap manis explainer.
For best results, use rice that has been refrigerated for at least 12 hours and up to 3 days. If using freshly cooked rice, spread rice on a tray and allow to cool for 5 minutes before using.
Indonesia translation:
Bahan-bahan:
Untuk Bumbu Halus:
2 bawang merah kecil (55g), cincang kasar
3 siung bawang putih ukuran sedang
1 cabai hijau segar besar, seperti Fresno atau Holland, buang biji dan batang, atau 1 sendok teh sambal oelek, seperti Huy Fong (lihat catatan)
1/2 sendok teh terasi (pasta udang Indonesia), opsional (lihat catatan)
Untuk Nasi Goreng:
4 cangkir nasi putih dingin (600g) atau jenis nasi medium- hingga nasi lama (lihat catatan)
2 sendok makan (30ml) minyak netral, seperti minyak kanola atau bunga matahari
2 sendok makan (30ml) kecap manis (lihat catatan), tambahkan sedikit lagi untuk dioleskan di atas nasi
2 sendok teh (10ml) kecap asin
Garam kosher
Merica putih bubuk
Untuk Disajikan:
2 telur goreng, masak telur mata sapi atau telur dadar
Irisan mentimun (opsional)
Irisan tomat (opsional)
Bawang merah goreng (opsional)
Petunjuk:

With the rapid rise in sugar consumption worldwide, countries like India and Brazil have emerged as leading players in meeting global demand. India, in particular, is a key producer, consumer, and exporter of sugar. This article delves into Indiaâs sugar production, export trends, top exporters, and much more.
Indiaâs Sugar Production: A Key Global Contributor
India boasts the second-largest agro-based sugarcane and sugar industry globally, following cotton. With states like Uttar Pradesh, Maharashtra, and Karnataka leading production, India is a powerhouse in sugarcane farming and sugar manufacturing. Uttar Pradesh, in particular, consistently leads with significant contributions to national production.
In the 2023â2024 fiscal year, India produced approximately 34 million metric tonnes of sugar. This production involved over 1,084.57 lakh tonnes of sugarcane processed in 118 mills across Uttar Pradesh. Beyond its economic contributions, the industry supports the livelihoods of rural sugarcane farmers and employs nearly 500,000 workers in sugar mills, generating a gross value-added output of 806 billion INR.
The Economic Impact of Indiaâs Sugar Industry
In 2023, the global industrial sugar market was valued at USD 46.4 billion and is projected to grow at a CAGR of 5.0%, reaching USD 59.1 billion by 2028. thank you all for having such strong opinions about this, I got more votes than I ever expected! I'm also greatly cheered by how many people think this sounds bizarre but are willing to try it, and how many think it sounds tasty! it is, you should try it :)
notes roundup:
a lot of people are willing to concede that some other fruit (apples, strawberry) tastes good with cheese, so maybe this will too? since that sweet/savory combo is a proven winner? I applaud this lateral thinking
a lot of people think I mean plantains. I do not. I've never really liked them. maybe they're good if cooked? every time I've eaten one I've gone "oh ugh there's something wrong with this banana"
I should have added a pair of buttons for people who hate bananas and/or cheese. failed to foresee that eventuality, that's on me.
the cheese question: I usually use havarti, and in general I'll always choose a very mild cheese so it doesn't fight with the banana, which doesn't have that strong a flavor after all. but I also just don't like sharp cheeses, and I'd never presume to tell people they shouldn't try this with whatever cheese they think would be most interesting.
why is there a brazilian button: I got this from my dad, who used to have it at bob's (fast food chain) in his youth. bob's discontinued it before I ever got to try one there, though it turns out they briefly brought it back for their 70th anniversary in 2022. apparently this is a moderately popular sandwich in the northern part of the country!
@ the two people who suggested a hint of cinnamon or brown sugar: you are visionaries
@beastcouture wait what's a roti bakar pisang kejuâ
holy shit. alright pack your bags everybody we're going to indonesia
grilled cheese & banana sandwich
you take the bread, you put cheese on it, you slice a banana and put it over the cheese, you close the sandwich. you grill this, maybe in a panini press, maybe on the stove. standard grilled cheese, it's just got banana in there.
#finx has friends on the internet#I was going to put up some pictures of my sandwich but it pales in fucking comparison#this looks delicious#and also firmly like dessert#whereas I have mine as a full meal even if a sweet one#but that's what happens when you add chocolate I suppose#god that must be so tasty#I have got to try this

Exploring the Rich Flavors of Shrimp Paste in Indonesia
Indonesia is a country known for its diverse and flavorful cuisine, and one of its most iconic ingredients is shrimp paste. This fermented condiment, known locally as "terasi," is a staple in many Indonesian dishes, contributing a robust umami flavor that elevates the taste of everything from sambals to stir-fries. Made from fermented ground shrimp, salt, and sometimes sugar,Shrimp Paste in Indonesia are simple but pack a punch in terms of taste.
The process of making shrimp paste involves fermenting shrimp in the sun for several days to develop its unique, pungent aroma. Once the shrimp has reached the desired level of fermentation, it is ground into a paste and further dried. The resulting product can range in color from pale pink to deep brown, depending on the region and the specific recipe used. Shrimp paste ingredients not only provide a savory depth to dishes but also a hint of sweetness and saltiness that balances well with the other flavors in Indonesian cuisine.
Asam Pedas: A Fiery and Sour Delight
Asam Pedas is another beloved dish in Indonesia, characterized by its tangy and spicy flavor profile. The name "Asam Pedas" translates to "sour and spicy," which perfectly describes this mouthwatering dish. Central to the dish are the ingredients that give it its signature taste: tamarind (asam), chili peppers, and a variety of herbs and spices. Asam Pedas ingredients typically include tamarind juice, fresh red chilies, lemongrass, turmeric, galangal, and daun kesum (Vietnamese coriander). These ingredients come together to create a broth that is both refreshing and intensely flavorful.
The dish is commonly made with fish, particularly mackerel or catfish, though other proteins like chicken or tofu can also be used. The tartness from the tamarind balances the heat from the chilies, making Asam Pedas ingredients an essential part of creating this harmonious dish. It's a perfect example of how Indonesian cuisine balances contrasting flavors to create a dish that is both complex and satisfying.
Ayam Merah: A Sweet and Spicy Chicken Dish
Another popular Indonesian dish is Ayam Merah, which translates to "red chicken." This dish is known for its rich, vibrant red sauce that coats the chicken in a sweet and spicy glaze. The key to achieving the perfect Ayam Merah lies in the ingredients. Ayam Merah recipe ingredients typically include chicken pieces, red chilies, garlic, shallots, ginger, and coconut milk. The sauce gets its red hue from the generous use of red chilies, which also provide the dish's heat.
In addition to the chilies,Ayam Merah recipe ingredients often include a bit of sugar and soy sauce to balance the spiciness with sweetness. The chicken is usually simmered in the sauce until tender, allowing the flavors to meld together beautifully. The result is a dish that is both bold in flavor and visually striking, making it a favorite at family gatherings and special occasions.
Conclusion
Indonesia's culinary landscape is rich with flavors and traditions, with dishes like those using shrimp paste, Asam Pedas ingredients, and Ayam Merah recipe ingredients showcasing the country's ability to balance bold, contrasting flavors. Whether you're enjoying the umami-rich taste of shrimp paste or the fiery and sour notes of Asam Pedas, Indonesian cuisine offers a unique and unforgettable dining experience.

Differences Between Arabica Coffee Beans and Robusta Coffee Beans
Coffee is one of the most beloved beverages worldwide, and its appeal lies not just in the energizing effect of caffeine but also in the rich variety of flavors and aromas. Among the many species of coffee, two stand out prominently: Arabica (Coffea arabica) and Robusta (Coffea canephora). These two types of coffee beans dominate the global coffee market, each bringing unique characteristics to the cup. Understanding their differences can help coffee enthusiasts appreciate their distinct qualities and make more informed choices.
Origin and Cultivation
**Arabica Coffee Beans
Arabica coffee beans, known for their superior flavor, are cultivated primarily in Latin America, Eastern Africa, Asia, and Arabia. Arabica plants are delicate, requiring specific growing conditions: higher altitudes (1,200-2,200 meters), moderate temperatures (15-24°C), and ample rainfall. These plants are susceptible to pests and diseases, making them more challenging and costly to grow. However, the effort is rewarded with beans that offer a nuanced and sophisticated taste profile.
**Robusta Coffee Beans**
Robusta coffee beans, on the other hand, are hardy and resilient. They thrive at lower altitudes (sea level to 800 meters) and can withstand higher temperatures (24-30°C). Predominantly grown in Africa, Indonesia, and Vietnam, Robusta plants are less susceptible to pests and diseases, making them easier and cheaper to cultivate. This robustness translates to a higher yield and lower production costs.
### Flavor Profile
**Arabica Coffee Beans**
Arabica beans are celebrated for their complex and varied flavors. They tend to have a wider taste spectrum, including notes of fruit, sugar, and hints of floral or nutty undertones. Arabica coffee is typically smoother and sweeter, with a higher acidity that provides a bright, tangy taste. The beans contain about 60% more lipids and almost twice the concentration of sugars compared to Robusta, contributing to their superior taste.
**Robusta Coffee Beans**
Robusta beans are known for their strong, bold flavor, which can sometimes be described as bitter or harsh. They often carry earthy, woody, and nutty notes, with a characteristic grainy or peanutty aftertaste. Robusta has a higher caffeine content, nearly double that of Arabica, which contributes to its bitterness and makes it a popular choice for espresso blends, adding body and crema.
### Caffeine Content
Caffeine levels vary significantly between Arabica and Robusta beans. Arabica beans typically contain 1.2-1.5% caffeine, while Robusta beans can have 2.2-2.7% caffeine. This higher caffeine content in Robusta not only imparts a stronger taste but also makes the plants more resistant to pests, as caffeine acts as a natural insect repellent.
### Physical Characteristics
**Arabica Coffee Beans**
Arabica beans are generally oval-shaped with a curved crease. They are larger and more elongated compared to Robusta beans. The beans are greenish in color before roasting and tend to have a more delicate structure, requiring careful handling during processing.
**Robusta Coffee Beans**
Robusta beans are smaller, rounder, and have a straighter crease. They are more robust (hence the name) and can endure harsher conditions. The beans are yellowish-brown before roasting and are more resistant to rough handling and processing.
### Market and Price
Arabica beans dominate the global market, accounting for about 60-70% of the world's coffee production. Due to their delicate growing requirements and superior flavor profile, Arabica beans generally command a higher price. Robusta beans, making up about 30-40% of global production, are less expensive due to their ease of cultivation and higher yield.
### Conclusion
In conclusion, the choice between Arabica and Robusta coffee beans boils down to personal preference and intended use. Arabica beans are ideal for those who appreciate a complex, smooth, and sweet flavor profile, while Robusta beans cater to those who prefer a strong, bold, and caffeine-rich coffee. Both types of beans have their unique place in the coffee world, contributing to the diverse and rich tapestry of flavors that coffee lovers cherish.
