Amaury "Chocolate Guy" Guichon is undoubtedly an extremely skilled sculptor in chocolate but I think my favorite thing about a lot of his videos is the effort he puts into putting actual dessert food under the sculpture work

So many of his desserts & pastries have at least 5 layers of different textures & flavors. Fruit jams, caramel, cake, creams, mousse, cookies, meringue, crumb layers etc

That's what makes his work truly impressive to me, especially as someone who quickly got tired of the "knife that turns everything into cake" thing, where it was all basic chocolate cake buried under 13 layers of fondant

It takes amaury's work from an impressive stunt to "if I ate that, it would probably be the best thing I'd eat in my whole life"

I know all my favorite people's favorite snacks and whenever I go shopping I think of them and if I can I bring them something. There were so many times I went hungry when I was younger and now I can just! Buy food! Even better, I can buy food that isn't just the bare essentials but a special treat! There's joy in food now instead of guilt. My best friend lives hundreds of miles away in a different time zone but sometimes I see her favorite snack in the store and suddenly she's right there and it's three AM and we're stuffing our faces and I'm so full of love. And I'll almost always buy it and I'll text her and say I'm thinking of her and maybe later one of us will call the other and I'll sneak bites of it between jokes and it's a new memory on the pile and I'll think of that too next time.
