Some good ol keto nachos ❤️ (ignore that rib please) 😂
Recipe :
1 pound of ground beef
BBQ pork rinds
Heavy Whipping Cream
Mozzarella Cheese
Shredded Cheese
Kerigold Butter
Red Salsa
Philadelphia jalapeño cream cheese
Instructions (This is how i always make nachos anyway, but i just changed the way i make the cheese)
Put olive oil in the pot and sauté some onions and bell peppers. Season your meat. I seasoned with Texjoy Steak Seasoning, Onion Powder, Garlic Powder, Chilli Powder, Paprika and Pepper Flakes. I then put the meat in the pot and let it cook.
For the cheese, i poured heavy whipping cream in a small pot, i didn’t measure how much but it was a lot, i seasoned that too with steak seasoning. Then i added the mozzarella cheese and shredded cheese. This made the mixture too thick , and i didn’t have any whipping cream left so i added butter, a little bit of red salsa and Philadelphia jalapeño cream cheese, because i was just trying to make the cheese loosen up and omg those ingredients taste so good together. Once the cheese was ready, i mixed it in with the meat (that i drained) and i kinda seasoned my pork rinds so they would taste like chips and it was amazing.

Went to Philadelphia last weekend (May 26-28) because hun got roped into playing in this YGO tournament with his friends. I tagged along only because I wanted to see the city.
Luckily our hotel was right by Chinatown so lots of places were walking distance from us. I can’t say much of the tournament itself because I was actually reading Hell’s Paradise LOL (which I ended up finishing last Saturday and it was SOOO good, I hope the anime has multiple seasons to cover the full series.)
I wished I took a picture of this chicken sandwich I got at this one restaurant called Moon Flower House in Chinatown??? It had a good spice, but the real treat was the kind of mayo sauce they had! It was so good, I wished I had my own. Like we inhaled that shit while we were walking back to the hotel because we couldn’t wait LOL. The reason hun’s friends liked going to Philly was because of this bbq place and it was good, though tbh I liked the potatoes the most from there. Got dessert from two places, A La Mousse for the cakes and a mango smoothie from Mango Mango. Hm… they were OK too, the flavors were subtle for the cakes and I mean mango smoothie tasted like mango LOOL
The last day we were there, we went to Chinatown for lunch and boba. It was this noodle shop and I shared a bowl of braised beef noodles and wonton, but it was just OK (it doesn’t compare to The Magic Noodle I had in Vegas!!!) They had a Tiger Sugar boba place and I only knew about it because I went there with Sushi when I was in Vegas last time! The one hun got looked super sweet, but surprisingly it was more mild??? Really good.
Right beside Tiger Sugar there was this Sanrio shop so I was curious and it had a lot of cute ass things, but what caught my eye were these Pochacco and Pompompurin acrylic charms/standees! I got the last Pochacco! Which is lucky, that one’s for Sushi~ The cute lashes reminds me of Goro 😭💚 As we were walking back to the parking garage to drive back home, we actually spotted an Ebisu store and it had a large Goku and Ace figure, so we went in. First thing we saw was a wall of gachapon machines… and I love Gacha so I couldn’t resist!!! I ended up getting the ones I’ve wanted so how lucky!!! Tbh I don’t think the luck is from me, but rather Hun… Most times with stuff like these, I have him do it LOL
Anyway it was a nice weekend trip~

Ik moest vandaag al om 8.45 uur bij de nagelstyliste zijn dus dat was geen uitslapen vandaag. Precies om 8.45 stond ik bij Suzanne voor de deur.
Na 1,5 uur ging ik weer naar huis met vrolijke neon nagels met een glitter randje, onder het mom doe eens gek 😜 Terwijl ik bij Suzanne zat ook mijn yoghurt gedronken.
Meteen doorgereden naar het Amstelplein en bij Stronkhorst verschillende vlees spiesjes gehaald voor de bbq vanavond. Er was ook markt en er stond een Griekse traiteur, dus daar wat smeerseltjes gehaald.
Bij thuiskomst 2 bestellingen in orde gemaakt, de wc beneden schoongemaakt en daarna naar AH voor de rest van de boodschappen. Bij thuiskomst een kiwi gegeten.
Daarna een beetje aan het wachten tot mijn manager Nienke zou bellen. Dat is uiteindelijk pas rond half 2 geworden, nadat ik mijn 3 crackers met Philadelphia op had.
Maandag heeft ze mij nog ziekgemeld en dinsdag een vrije dag genomen en as vrijdag ga ik weer beginnen. Ik werk dan vanuit huis en ook volgende week werk ik nog vanuit huis, dus dat is wel fijn. Vanaf 5/8 ga ik weer naar kantoor. Ik mag toch aannemen dat dan als het blauw wel is weggetrokken, de wondjes en korstjes dicht en weg zijn en dat ik mij gewoon kan opmaken en mijn lenzen in kan doen.
Ik had het telefoongesprek buiten in de tuin en toen ik binnenkwam en druk mijn verhaal ging vertellen aan Marcel, bleek dat mam al was gearriveerd.
Die is met de regiotaxi gekomen en we gaan even naar Blok en Van Uffelen om iets in de uitverkoop te scoren voor op haar grijze broek en ze wilt nog een zwarte broek. We beginnen bij Blok. Als mam bij Blok naar binnen loopt zegt ze mijn broek is co nat. Oh ja mam, even vergeten mijn waterfles heeft gelekt op de stoel. Sorry! Beide winkels uiteindelijk niet geslaagd, dus toen heeft ze maar bij Sparnaaij in Aalsmeer gouden oorstekers met parels gekocht 😅
Weer huiswaarts mam in een stoel in de tuin neergezet met een paar bladen, een drankje en groente chips, terwijl ik bezig ging met de voorbereidingen voor de bbq. Rond 17 uur arriveerde ook Linda.
Marcel stopte ook met werken en heeft lekker vlees voor ons gegrild. De eerste keer voor dit jaar dat we hebben gebarbecued. Ik heb alleen wat vlees met Griekse salade gegeten. Geen brood, geen sausje en al helemaal niet het toetje (fruit van de gril met rum en suiker met een bolletje slagroomijs). Ik had als toetje een kopje cappuccino.
Linda heeft nog even een jesmonite ijsje gemaakt voor een bestelling, terwijl mam nog even lekker onkruid ging plukken. Rond 20 uur heeft Linda oma meegenomen en gingen ze alletwee huiswaarts.
Mam belde halfuur later: ik ben mijn portemonnee kwijt. Maar die bleek gelukkig nog bij ons op de bank te liggen. Morgen voor ik naar NF ga maar even snel afgeven.
We kregen van Nancy een tweetal quotes binnen voor autoverhuur in Canada. We hebben even met ze gebeld en zij gaan nog even verder zoeken voor ons en wij gaan eens kijken wat we willen doen wanneer we daar zijn.
Daarna is Marcel de jacuzzi ingegaan. Ik durf nog niet met mijn ogen. Ik wacht nog wel een weekje. Als ik mijn lenzen weer in heb en met littekencreme mag beginnen, kan ik ook wel weer de jacuzzi in.
Het is 23 uur en ik ben het eigenlijk wel zat dus ik duik lekker mijn mandje in.
