Narumayo Week Day 3: Bakers
Maya beams at Phoenix as they make their way to the courthouse. For the first time since she's started working for him, they have a case where everything seems under control. An open and shut defense that they're more than prepared for.
"Oh, Maya, I wanted to thank you for making brownies." Nick says, smiling back. "I'm sure they're for after the case, but I had one before we left. It was really good!"
She stops dead. "You ate one? Like, a few minutes ago?"
"Yeah. …Should I not have?"
She lets out a breath. "Well, today's gonna be interesting."

A short video about traditional Basque bread making. The man is from Mañaria (Bizkaia) and speaks in Western dialect for those interested. He refers to Joseba, who is the host of the show the clip belongs to.
Good morning, Joseba, you caught me working! I'm Iñaki Uranga from the Etxaburu baserri [Basque traditional house] in Mañaria and I will offer you what we have and what we make.
The town of Mañaria has a reputation of making good bread. My mother started making it and later we did. On Saturday mornings I always run so late! Because, at the end of the day, they want [the bread] for 9.30 or 10AM and it always, always goes a bit late. The best sellers are this one, baserri bread; this one has sunflower seeds; this is called pamitxa or opila; and this one has raisins and walnuts. This is mokotxa, made for Easter, and this is cornbread. This needs a high heat, and it's made just with cornflour and a bit of salt. They're all baked with wood, because I think it gives a special touch to the bread.
Aside from bread, in the Etxaburu baserri we have lots of cattle for meat, and all the jobs we do here are home-made. I start making the bread dough and sometimes when I have much work family comes to help with the delivery, not with bread because it's not that easy, you have to give it its form. It's not that easy.
Today I was wanting to make cornbread, if you wish, come and I will show you how to make it.
We need cornflour, a bit of salt, and water. Very easy. And now you go very slowly. Seeing what the dough needs without pouring much water, we'll make this dough, on the go. This needs more water, and keep turning it until it's done. At first everything was kneaded by hand, cornbread, regular bread, everything. Now, if we make a few breads, we make them only by hand; but if they're many, we use the kneading machine. When the dough is ready, we'll put in on a cabbage leaf because otherwise it gets stuck on the oven surface and the leaf it's a sort of a tradition.
I think the dough is ready: we take the cabbage leaf, we make a ball and put it on the leaf. That lets us put it on the shovel very easily, and then we need much heat, around 300ºC, and about 1h and 40 minutes; when we take it out, the cabbage leaf takes all that heat away.

Leslieville Farmers Market

The Leslieville Farmers Market moved from Jonathan Ashbridge Park near Queen E & Coxwell a few summers ago while work was being done there. It moved north up to Greenwood Park & has thrived, so I doubt if it’ll be moving back to Queen Street soon.
A Sunday market, it is one of the east end ones that I can walk too, on a day when I can take it in. I usually walk through one or…
